Full details on deliveries can be found on our website but here it is in a nutshell: How long does it take? Most items can be delivered within 2 working days and many can be delivered the next day if you place your order by 10.00am.

When do you deliver? Tuesday to Saturday, on the day you choose. We charge an extra £3 for Saturday delivery. Christmas orders and deliveries We are a relatively small, family run business and everything is produced in strictly limited numbers so please order early to avoid disappointment. For Christmas 2016 the last order date is 16th December. Can I pick a time slot? No, but you can pay an extra £2.50 for a morning delivery. Will it be fresh? Absolutely. Every item is wrapped by hand and we use the very best insulated packaging, complete with ice packs, to keep food fresh. 2

Can I track my delivery? Yes. You will receive a tracking number by email from our courier once goods are dispatched. Can you deliver to a different address? Yes. ish has long held an important role in Jewish culture, being associated with fertility and eaten on the Sabbath, so when Aaron ‘Harry’ Forman, Lance Forman’s great-grandfather, set up his fish smoking business in London’s East End in 1905 he was extending a tradition that dated back centuries. An émigré from Russia he had established his new home in what became known as the ‘Jewish East End’, the small area roughly two miles square in Whitechapel and Stepney where thousands fleeing persecution in Poland, Romania and Russia would arrive by ship to start a new life, make a conscious effort to integrate and become ‘proper Englishmen’. Food was at the core of this new community. Making it, trading it, sharing it. Their non-Jewish neighbours grew to appreciate this ‘heimishe’ cuisine: schmaltz herring, rye bread, onion bagels, potato latkes, chopped liver and, of course, the smoked salmon that was Harry’s speciality. Curers and smokers like Harry started to flourish around Spitalfields and the Thames, importing barrels of brined salmon from the Baltic. The game changed when they discovered sumptuous fresh Scottish

appointments at London’s foremost culinary establishments. The reception was euphoric and Forman’s clientele soon included The Savoy, Harrods, Selfridges, the Ivy and Mirabelle. Smoked salmon was now seen as a delicacy alongside caviar and foie gras, its enjoyment a sign of culinary refinement, and arguably Britain’s first gourmet food was born. Lance Forman continues the family tradition and continues to innovate – try our new Salmon Jerky – but H. Forman & Son is the only smokehouse still alive in London’s East End where once there were dozens. In fact Forman’s today is the oldest commercial salmon smoker, not just in London, but across the four corners of the globe. You can read more about the history of H. Working together, Harry and Louis’ instinct was to take the product upmarket, and they made

In the early 1900s fish were smoked in a smoke hole, a brick chamber roughly five feet wide and twelve feet high in which sawdust would be strewn and set alight. Atmospheric conditions and temperature could make a big difference, with smoked salmon produced on a cold February morning generally superior to that smoked on a hot and humid summer’s day. Today we use state-of-the-art kilns that circulate air and burn very precise amounts of smoke – less romantic perhaps but less wasteful, and our characteristic mild London cure is guaranteed. Even so, every salmon is different so what you’re eating is completely unique 3

ime is of the essence when producing smoked salmon. It’s a race to capture the flavour. The whole point of curing is to preserve that magnificent salmon flavour. It’s important to remember that curing, as a means of preserving food, was devised centuries before we had refrigeration. The wild salmon season is short, a few weeks each summer, so before the days of fish farms it was vital to lock in that freshness for the months ahead. Also, unlike meat or cheese, fish doesn’t mature. As soon as it is landed it starts to degrade, which is why sourcing the freshest fish has been a priority since the days of Aaron Forman. Nowadays all farmed salmon arrives at our smokehouse within 48 hours of being harvested or, in the case of our wild salmon, within 24 hours of being netted. Trust us, you won’t get fresher unless you catch it yourself. No time is wasted. We start preparing the fish the moment it arrives – usually around four in the morning. Our team inspect, clean and split every fish immediately, then salt the fleshy sides with pure rock salt to start the curing process. The idea of curing is to draw out the moisture that causes deterioration. It’s much the same process as drying fruits or meats. As water leeches out each side of salmon can lose up to 15% of its weight so less

During burned oak drying, a pellicle or outer crust logs seals forms to seal in the flavour. the air-dried Then the smoke is released salmon. to form an anti-bacterial seal. If a pellicle doesn’t form the smoke will permeate deep into the flesh and all you’ll taste is smoke, so if you taste very smoky salmon from another supplier you’ll know it wasn’t dried properly. The smoke itself comes from whole oak logs, as opposed to wood chips or sawdust that can be contaminated with chemicals during processing. With whole logs we know it’s only oak. The logs are friction-burned with digital precision so we never under- or oversmoke our salmon. It comes out exactly as we want it – mild, succulent and subtle, the way it has been since 1905. From the kilns it’s over to our slicing team. The secret behind our London Cure

What’s unique about the London Cure? Well, it’s from London for a start. This is where Smoked Scottish Salmon started – in East London smokehouses, of which we are the last remaining, at the beginning of the 20th century. But there’s no real secret, other than we use only two ingredients: pure rock salt and a little smoke. As Harry Forman used to say, nobody wants to taste smoke, they want to taste salmon.

Everything by hand

Our whole production line is very hands-on. Because people are better than machines. We know that every salmon is different, as we are, but machines don’t discriminate. With machines precious flesh is ripped to shreds or simply discarded. Our highly skilled knifemen and women waste nothing; their precision with a blade is quite remarkable to witness. The backbone of a salmon or whole tuna can be removed as clean as a whistle. Whole sides of smoked salmon can be sliced, interleaved with cellophane and reassembled in less than a minute. Can you taste the difference? You be the judge. 8

ssentially, we offer two qualities of salmon – wild and farmed. Both are the same species, the Atlantic salmon, the king of fish, and both come from Scottish waters. Wild salmon, which we label Genuine Wild, is slightly leaner and firmer because these ocean-crossing animals are phenomenal athletes, and some describe the flavour as more ‘gamey’. For many connoisseurs it’s the ultimate smoked salmon. However, there are many who prefer our Grade One farmed salmon, which is more yielding in texture, more translucent due to a higher fat content, with a lovely rounded flavour. Both qualities, Genuine Wild and London Cure, are cold-smoked in the same way, in the

same kilns, and both can be ordered lean or fatty. The fattier slices are cut from the belly of the fish, the area revered by sushi fans. Which one should you buy? It’s very simple: The one you like the best. But how would you know, without tasting all four?
