ROPE-HUNG SIDES OF SMOKED SALMON THE CONNOISSEUR’S CHOICE

A side of H. Forman & Son London Cure Smoked Salmon is the ultimate expression of this gourmet delicacy. In smart restaurants such as Bellamy’s of Mayfair – see page 37 – our Grade One rope-hung sides are carved as part of the theatre of dining, and we’re more than happy for you to do the same at home. All you need is a good board and a carving knife, available to order on page 6, and some basic knife skills. To thoroughly impress your guests, however, you may want to attend one of our carving masterclasses, or watch Lance Forman demonstrating his carving skills online. Why are sides rope-hung? Sides are rope-hung by hand in the kilns – we are one of only a handful of smokers to continue this tradition – to stretch the flesh and improve the texture for hand carving. As the sides dry in the kiln, carefully controlled amounts of pure oak smoke are released, drifting between the sides until enough smoky particles have adhered to the flesh to allow an outer crust known as the pellicle to form. It is this barrier that preserves the wonderful salmon flavours beneath.

REASONS TO CHOOSE A ROPE-HUNG SIDE

salmon tastes better when carved as close to ➻ Smoked the time of eating as possible. Carving is fun – there’s an art to cutting long slices or ➻ “D-cut” slices (see page 7), but even if you end up with chunks they still taste great.

What are the notches? When your side is delivered you may notice a notch cut into the skin. We cut them during the cold-smoking process to allow the salt to cure from back to front. The notches also help us identify the size of each fish. Fillets from smaller fish weighing 3 to 4 kilos are marked with one notch, medium fillets weighing 4 to 5 kilos have two notches and those weighing 5 to 6 kilos get three. Trimmed or untrimmed? Sides ready for slicing at home can be delivered untrimmed, straight from the kilns – trimming in front of guests adds to the theatre – or fully trimmed with bones and pellicle removed. We also offer whole sides hand-sliced by our experts (see page 6). 4

My plate of Forman’s London Cure Smoked Salmon arrives without fuss. The menu promised me one, and that’s exactly what I’ve been served — a pristine bone china plate covered in expertly cut slices of translucent smoked Scottish salmon with some brown bread and a muslin-covered half lemon on the side. Perfect. Such is the pure joy of Bellamy’s, favourite London restaurant of renowned Spectator columnist Taki and rumoured to be Her Majesty the Queen’s most visited Mayfair eatery: classic brasserie food at its very best. How many times does your heart sink when you read a menu and find nothing of interest, just a bunch of disparate ingredients flung together by a tattooed chef who has spent too much time trying to impress Instagram devotees with whips and spume and wacky ways with foraged dock leaves? Well, mine sinks all too often. That’s why I love brasseries, proper brasseries like Bellamy’s in the Franco-Belgian tradition that make you wish you could spend all day in your banquette working your way through the menu. Whitebait, iced lobster soufflé, foie gras au sel, smoked eel mousse, halibut meunière with gloriously simple sides of haricots verts and broad beans. Broad beans. Untouched. Perfect little green beans, the way your pernickety father-in-law liked them. It doesn’t get better, and Bellamy’s is where to find those unheralded, unsequinned, smug-free gems. How can this happen, you may ask, in a day and age when freeze-dried hispi cabbage in volcanic soil in a rat-infested Peckham estate is touted as the coolest thing since Jay Rayner’s beard? Gavin Rankin has the answer. Actually, he is the answer. It takes a certain kind of restaurateur to stick to his guns and say: This is the food I like, the food my friends like, the food that made Paris a culinary destination and we’re going to serve it, quietly, in a lovely room in Mayfair. The great Parisian brasseries might have failed us — resorting to centralised

kitchens and faded glories — but Gavin hasn’t. “My mother is a great cook (she supplies the restaurant’s sublime chocolate cake, although her prices are constantly subject to negotiation...) and I’ve always enjoyed wonderful food. Stéphane Pacoud and I have worked together for a quarter of a century and he understands brasserie food like no other chef I’ve known. He has perfect culinary pitch.” An exemplary steak tartare with chunky pommes pont neuf confirms this. The best I’ve had, although the smoked salmon was a hard act to follow. So why Forman’s London Cure? “Funnily enough, I once ran a smoked salmon producer so Lance’s father, Marcel, and I were competitors for a while but that was long ago and I have to say Forman’s is far and away the best smoked salmon you can buy. We slice it fresh from a whole side in the Oyster Bar because it has to be cut there and then, in my opinion.” How often does he enjoy it? “Oh, not more than once a day.” It’s a year round fixture on Bellamy’s menu. I could chat to Gavin for hours about his Franco-Belgian roots, his years managing private clubs—he was Managing Director of all Mark Birley’s Annabel’s clubs in their golden period — or the simple pleasure of discovering perfect ingredients (he recommends Jack Hawkins tomatoes from Waitrose) but he is keen to make sure his luncheon guests are being looked after. As for the Queen, he won’t be drawn; discretion is everything in a brasserie and a patron’s lips must remain sealed. Marina’s Chocolate Cake arrives on cue and I start planning my return. Tian of Forman’s Smoked Salmon with Orange Confit Ingredients, to serve 4: 200g Forman’s Smoked Salmon 225g fresh salmon (to make 200g cured salmon) 2 unwaxed oranges 1 unwaxed lemon Olive oil 1 shallot, finely chopped 6/7 chives chopped, plus a few extra stalks Mascarpone Keta caviar 50g sugar 50g sea salt 2 teaspoons brown sugar Salt/pepper EQUIPMENT: Two metal rings. If you don’t have them fashion your own from the card inner of a kitchen/aluminium roll, cut to 5cm high then line the inside with aluminium foil. Place the fresh salmon in a dish and cover with a mix of 50g sea salt and 50g sugar. Put in the fridge for at least 5 hours to cure (preferably overnight). To make the confit, sweat the chopped shallot in a drop of olive oil until soft, then add the pithless segments of two oranges, the brown sugar and a tablespoon of water and cook over a medium heat for 15 to 20 minutes until you achieve a jam-like consistency. Allow to cool. Roughly chop the cured salmon into a tartare together with the smoked salmon and mix together with the chopped chives and a dash of olive oil. Add the zest of one lemon and one orange and a little squeeze of each (approx. 1 teaspoon each). Season with a pinch of salt and freshly ground black pepper. To compile, half fill each metal ring with the salmon mix and make a small well in the centre, allowing the salmon to remain on the base. Place a teaspoon of orange confit in the well and top with the rest of the salmon mix to approx. 3 to 5mm below the top of the ring. Spread the mascarpone on top and decorate with a spoon of keta and long stalks of chive. If you want to be very cheffy, serve with some additional orange segments around the outside and a mustard and dill sauce. 40

Here are a couple of recipes you may wish to try at home, involving two of our favourite smoked delicacies: London Cure Smoked Salmon and our fabulous smoked eel.


Smoked Eel with Cauliflower PurĂŠe Ingredients, to serve 2: 150g H. Forman & Son Smoked Eel 200g Jersey potatoes 1 shallot diced finely 1 medium cauliflower 100ml double cream Zest of a lemon 15g capers 2 bay leaves Chives Olive oil Steam then crush the potatoes and add half the shallots, capers, lemon zest, a dash of olive oil and some chopped chives to a bowl and mix together. Place the potato mixture in a serving ring. Boil the cauliflower in water with 2 bay leaves for 12 minutes; once cooked and strained add the cream and cook for another 5 minutes. Blitz and pass through a sieve. Pop the smoked eel in the oven for 3 minutes at 180 degrees to warm through. To plate up, spoon the purĂŠe into a deep plate then add the ring of potato on top and balance the eel on top. Garnish with a pea shoots and watercress. Feel free to add some keta caviar too.

What’s the difference between gravadlax and smoked salmon? Smoked salmon is cured in salt and then air-dried prior to smoking – two sequential methods of removing water. It’s an east European tradition. The Scandinvians never used to smoke their fish, but buried salmon in salt; hence grav-lax (grave – to bury; lax – salmon). As there is only one method of curing, ‘lax’ needs extra salt, and therefore sugar too to counterbalance the saltiness. Smoked salmon shouldn’t have sugar. What wine should I serve with smoked salmon? Your favourite wine. There is no doubt that a dry fizz works well with fatty fish, but a nice crisp dry white is good too. I love our Biddenden Ortega. Sour cream or cream cheese in a smoked salmon bagel? Definitely cream cheese — bagels are chewy; they need a dense cheese. With sour cream it would all squidge out. Squeeze of lemon? If you like lemon, no problem at all. We generally make a point of not showing our salmon with lemon as people often use lemon to counteract the inferior quality of slimy salmon that isn’t properly cured. So whilst our smoked salmon doesn’t need lemon, it certainly works — but don’t put it anywhere near the wild salmon! D-cut or lateral slices? The traditional way is the long, lateral slice; it’s very elegant and theatrical to watch being sliced. It also allows the carver to separate the leaner, drier slices from the fattier ones lower down near the skin. D-cut became popular when salmon slicing machines were invented as this is how they operated. But once you feed sides of salmon through a machine, rather than hand slicing, the passion is gone and

quality disappears. All our salmon is handsliced — D-cut or Lateral. The advantage of a D-cut is you get all the flavour profiles on one slice. Can I cook with London Cure? Or should I cook with a cheaper brand? Of course you can use London Cure! If you want the best end result, you need the best ingredients. Why compromise? Can I freeze London Cure? Yes – it freezes brilliantly. Most smoked salmon doesn’t because it isn’t properly cured with all the water taken out. This is for commercial reasons. Water is heavy and if it can be sold for the price of salmon, it’s good business, but the salmon ends up slimy and when you freeze it, the water turns to ice crystals, breaks down the texture of the fish so when defrosted the water falls out leaving the fish mushy. Because London Cure Smoked Salmon is properly dry-cured with the water removed, it’s only the flesh that freezes, which means it defrosts beautifully and quickly too – 15-30 minutes on the kitchen counter. Is the best salmon from Scotland? In the UK absolutely – because we can get the fish within 24 to 48 hours of coming out of water. We want to preserve the freshest fish possible. No point in preserving an old fish! 75% of salmon sold in the UK is from Norway – they take four days just to arrive in the UK, so the fish being preserved is not so fresh to start with. Even Scottish smoked salmon producers use Norwegian salmon and call it Scottish Smoked Salmon, because it’s smoked in Scotland. Not the same at all. Is London Cure a sustainable food? We’ve been doing this for 114 years — so yes! We make every effort to conserve everything we do. Every day we fillet our

salmon (3 tons of it!) we literally scrape every bone with the back of a spoon so not an ounce of flesh is wasted. We are even working on a project now to tan our smoked salmon skins — very exciting; watch this space! Is smoked sea trout worth trying? The EU has put a ban on wild salmon. Only the River Tweed has escaped. This is frustrating as only recently, the same EU awarded Wild Scottish Salmon PGI status! Wild Sea Trout is a delicious alternative – more delicate than salmon, but equally flavoursome with that same gamey flavour you get in wild smoked salmon. Serve in the same way. How do you eat your smoked salmon? Really depends. If I was trying to impress friends at dinner, I would always serve the wild smoked salmon as the taste is so different, but now it’s always the Royal Fillet — whether plain, truffled (amazing), beetroot (beautiful) or our new G&T version; everyone falls in love. Are your family smoked salmon fans? My wife adores it. I have two sons and a daughter. My eldest son used to prefer it really lean and my second son loves it really fatty. My daughter is happy either way. I say “used to” for my eldest son, as he’s going through a vegan phase. At least I hope it’s a phase! Do you ever get bored with salmon? Never. I eat a slice of it every single day when I arrive at the smokehouse. I worked out recently that with those small slices alone, I have eaten three times my body weight in smoked salmon since I’ve been involved in the business.
