Troy Terrington I’ve lived in the area for nearly 14 years now, having moved up north from Cambridge at the age of 18, eager to discover a new region. Now, as chef-patron at Dobson & Parnell, I can’t think of a better place in which to live and work – the people, atmosphere, natural landscape and breathtaking scenery all make Tyne & Wear an incredible destination. From a chef’s perspective, the produce that surrounds us is phenomenal; we’re lucky to have some fantastic beef and lamb to our west, amazing potatoes to the north and a fantastic array of seafood to the east. At Dobson & Parnell and our sister restaurants Hinnies and Blackfriars, we work together with local suppliers and take advantage of the incredible produce that’s right on our doorstep. I have built up great relationships with local producers over the years, and with these relationships comes an understanding – they know when something isn’t good for us and will tell us so. I feel that if I were sourcing produce from further away, I wouldn’t get that personal service. As Dobson & Parnell approaches its second anniversary, our team is delighted to have achieved a Michelin listing. We couldn’t have done it without our trusted suppliers, and I’m excited to continue developing our refined British and European menu to showcase their produce. Food trends tend to develop a bit slower as you travel further north, but good trends seem to stick for a long time. At the moment, there’s more emphasis on food that’s low-fuss and simplistic, but packed with flavour. Letting the produce shine is the most important thing chefs can do for our customers. Good, honest food is definitely more nutritious and better for our bodies. All of Tyne & Wear’s local food festivals and farmers’ markets are great for getting people together to celebrate the region’s foodie scene and introduce people to new things that they might not have realised were going on in this part of the country. I‘ve taken part in several Living North food demonstrations as well as the Tynemouth Food Festival, and really recommend these sorts of events to visitors and chefs alike – it’s a great day out and you’re sure to come away having learned something new and interesting. If there’s something you haven’t tried before, go for it, be adventurous and go to every restaurant with a totally open mind. You’re sure to discover some local gems through this guide, and help Tyne & Wear’s culinary scene to continue to thrive.

Dobson & Parnell

Ne Situated on Newcastle’s vibrant Quayside, Dobson & Parnell offers an exciting British and European fine dining menu at an impressively reasonable price, which has earned it a coveted place in The Michelin Guide. The restaurant was named £20 to after the architects who designed the building, and the interior combines Victorian £35 elegance with old-school glamour. On the menu you’ll find dishes including seared sashimi-grade tuna with togarashi seasoning and puffed wild rice; roast pigeon breast with duck liver parfait, charred sweetcorn, apple and chervil; and rare-breed pork chop with spiced tabbouleh. To finish, try the delicious peanut butter and blackcurrant jam ice cream sandwich. Chef-patron Troy Terrington, formerly head chef of Dobson & Parnell’s sister restaurant Blackfriars, is one of a new cohort of talented young chefs in the area. The restaurant offers an excellent-value lunch and early-evening set menu as well as Open: Tues-Sat noon-2pm, an impressive à la carte. For a culinary adventure, the five- and seven-course tasting 5.30pm-late; menus with wine to match are some Sun noon-4pm of the best in Newcastle. There’s a delightful kid’s menu and a sumptuous Sunday lunch is served from noon until 4pm – perfect before or after a stroll along Newcastle’s Quayside, or a visit to Sage Gateshead. The restaurant holds regular wine dinners and ladies’ lunches – check their website for more details or join the Whole Hog Food Club to receive exclusive monthly offers. If you’re looking for a memorable culinary experience in Newcastle, Dobson & Parnell is a must-visit.

In the heart of Hexham stands The Beaumont, a hotel and restaurant overlooking the historic abbey and the gorgeous greenery of Sele Park. This grand building, with its floor-to-ceiling windows, is impressive both inside and out; on warmer days the elegant frontage opens up to provide a comfortable al fresco feel.

The restaurant feels light, airy and boasts classical touches with a modern twist. We visited on a Sunday and enjoyed the attractively priced high-quality set menu. This is no ordinary Sunday lunch – head chef Daniel and his hand-picked brigade serve up the best local produce. To start, we sampled Cheviot cheese soufflé with Parmesan sauce and tempura king prawns with zingy crème fraîche. We followed with local Longhorn roast beef served perfectly pink with all the trimmings and shellfish linguine brimming with seafood and enhanced by rocket pesto and a Open: Mon-Sun noon-9pm hint of chilli. Our desserts of lemon tart with cherry sorbet and delectable sticky toffee with ice cream were elegantly presented and a joy to devour. The Sunday set menus are just one of the many strings to The Beaumont’s bow. This is a gastronomic treasure that’s perfect for every occasion. Just waiting to be discovered are the impressive and affordable lunch and dinner menus, or you might simply drop by for an artisan coffee, slice of homemade cake or a tipple from the extensive bar. Restaurant 17 burst onto Durham’s dining scene five years ago, and has become a firm favourite because of the unique gastronomic experience it offers. This modern British restaurant can be found inside one of Durham’s most historic buildings, right in the heart of the city centre and minutes away from the River Wear and Durham Cathedral.

This multi-floor venue focuses on cuisine from around the world and boasts a relaxed atmosphere. The charming boutique-style interior boasts a luxurious blend of low-level chandelier lighting, velvet seating and solid oak tables perfect for bringing people together for a spectacular candlelit meal. Restaurant 17 is a sustainable restaurant that has earned a reputation for the creative way it transforms and showcases local produce from farms and fields just a few miles away. The menu offers an extraordinary array of cuisine. Those who love seafood will delight in delicious starters such as seared scallops atop creamy corn and chorizo chowder with Parmesan and chorizo crisps, and mussels and squid moqueca with peppers, spring onion, chilli and lime leaves. Jump into mains and enjoy Sicilian-style chargrilled tuna steak with mussels or sesame-seared pork loin with wild mushrooms, mung beans, tenderstem broccoli and asparagus in a spiced black bean sauce – this demonstrates a completely different side to the chef’s extensive repertoire. You must end with one of the indulgent desserts; the mocha brownie with berry compote and hazelnut praline is hard to resist, as is the blueberry and lime frangipane tart with vanilla ice cream, honeycomb and elderflower syrup. There’s also a 1950s-inspired ice cream parlour on the top floor and a traditional tearoom below – exploring all six floors is a must. With all these hidden gems in one venue, it should come as no surprise that Restaurant 17 has been mentioned in TimeOut’s list of top Durham restaurants and was awarded a Certificate of Excellence on TripAdvisor. Nb At the gateway to Northumberland National Park sits the magnificent Riverdale Hall, a country house hotel with a wonderful restaurant. Just a stroll up the Tyne from the nearby town of Bellingham, the setting epitomises rural £13 to Northumbrian tranquillity. £35 The restaurant boasts an impressive selection of locally sourced produce, from meat and poultry, to cheese and ice cream. You will often find locally reared venison, pheasant and partridge on the menu too, and all lamb, beef and steaks come from local farms. The hotel also grows a large proportion of vegetables and salads in the summer months. How better to finish off your meal than with some delicious Northumbrian cheese served with homemade chutneys and jams, and a delicious glass of Port? The daily changing menus are carefully created by a team of experienced Open: Mon-Sun noon-2pm, chefs – each of them with their own area of expertise. Iben Cocker has been a chef 6.30pm-9pm at Riverdale Hall for 36 years – you might recognise her from her time cooking with Keith Floyd on the television series Floyd around Great Britain and Ireland. Dining at Riverdale Hall is a remarkable experience as the chefs are unafraid to adapt. Their skill lies in blending new flavours and ideas with what Riverdale knows best – honest traditional food and humble English greats. This is all complemented by an extensive, well-priced wine list with many favourites and a few less familiar bottles to choose from. With local microbrewery cask ales and a good selection of Continental beers, there’s something for everyone.

Find a slice of the seaside in the heart of the city at George’s Great British Kitchen in Newcastle. Here, diners can expect to be treated to the freshest catches of delicious fish and other produce, all used in the preparation of tasty dishes that are cooked to order. On arrival, guests instantly feel as though they’ve been whisked away to the British coast on a glorious sunny day, thanks to gingham tablecloths, stripy parasols and soft lighting, and the friendly team.

Even a cursory glance at the menu leaves no uncertainty that quality speaks for itself Open: Sun-Thurs at George’s. The bill of fare is bursting with enticing options, with something to suit 11am-8.30pm (last orders); all tastes. The range spans burgers, fish, speciality pies and grilled options such as Fri & Sat 11am-9.30pm steaks and surf and turf. Why not begin with charcoal-grilled halloumi served atop (last orders) sweet potato, spinach and chickpea curry, or perhaps George’s deconstructed Scotch egg? Next, opt for a fresh fish dish, such as wild ocean cod in onion bhaji batter drizzled with Coronation mayo and served with Kashmiri pilau rice and homemade curry sauce. George’s desserts are dreamy – think warm cherry Bakewell or steamed sticky ginger pudding. There’s a great selection of vegan options and little diners are catered for with their own menu. A visit here is made all the more special thanks to the upbeat, accommodating staff and the decidedly reasonable price tag – this is outstanding fare at a great price. Tyne & Wear Guide 2019

Located on the stunning seafront in Whitley Bay, Hinnies offers a rustic and earthy Geordie-influenced British menu. On the menu you’ll find delights such as North Sea mackerel pâté with pickled cucumber and toasted sourdough, and ham terrine with pease pudding. Blackfriars Restaurant dates back to 1239 when it served as a refectory for the Dominican Friars, so it’s unique to the city and of historical significance. Today it offers gutsy, traditional British cooking at its best, which has earned it the Taste of £19 to England Gold accolade in the North East England Tourism Awards. There’s no doubt £27 Blackfriars is a great choice, offering fantastic value for money and outstanding cuisine. Blackfriars serves excellent-value lunch and early-evening set menus, as well as an impressive à la carte. The Sunday roasts have earned the proud owners a nod from readers of The Independent, who voted Blackfriars’ Sunday lunch as the best in Newcastle. The chefs (chef profile page 38) focus on seasonal produce sourced straight from local farms and markets, serving up a real taste of the North East. The menu mirrors the sheer elegance of the dining room. Using only the best local produce, the talented kitchen team turns the ordinary into the extraordinary by enhancing the natural flavours of every single ingredient to create flawless dishes you will still be thinking about years from now. Start your meal right by ordering the Lindisfarne oysters. Plump and juicy, these beauties are a joy to eat on their own, but the ceviche oysters with spicy lemon and garlic sauce and crispy oysters with chilli are a whole new kettle of fish that provide the perfect combination of flavours. As you might expect from a steak and seafood restaurant, you’ll find an abundance of the finest seafood and steaks, and 1910 have spared no expense. From the sea, you have to try the lobster Thermidor. The lobster shell is filled with perfectly cooked lobster, queenie scallops, tiger prawns covered in a Dijon, Cognac and Isle of Mull Cheddar sauce served with a side of buttered heritage potatoes. It both looks and tastes spectacular. For meat-eaters, the côte de boeuf and the Chateaubriand to share are the ultimate mains for special occasions. The beautiful prime cuts are cooked to perfection and served with French fries, watercress and Béarnaise sauce. You can even add a sauce or compound butter; the bone marrow sauce and smoked garlic and thyme butter are pure luxury. To round things off, you’ll find a wealth of delectable treats to choose from. Perhaps you’ll plump for the baked vanilla custard with salted crumble and fresh rhubarb, praline parfait with raspberry consommé and chocolate tart. Having served us artisan gin and tonics, our friendly and attentive waiter allowed us to peruse the delightful menu that had us hooked from the outset. The scallop starter with pea and chorizo gremolata, charred gem lettuce, blue cheese and honeycomb was incredibly flavoursome and looked pretty as a picture. Each dish we sampled echoed current food trends. The smoked Carpaccio of venison was a true showstopper, arriving in a glass cloche, which contained a revelatory wisp of wood smoke. Our mains of sea trout with crab and heirloom tomato broth, and lamb rump with a pistachio crumb were equally divine. For dessert, we thoroughly enjoyed the cherry chocolate mousse and sumptuous plum posset. The Cellar Door is an established foodie sanctuary, serving memorable and inspiring food in an effortlessly sophisticated but suitably relaxed environment. The 13th-century cellar conversion is a triumph and the food is all locally sourced, thanks to excellent relationships with producers. What really makes this establishment stand out is the passion and creativity with which the food is created and served. For mains, my partner and I enjoyed a trio of dishes including idivettu irachi vatichathu – delicious tamarind lamb – which married beautifully with the cheena chatty meen, comprising fish in a zesty sauce with tapioca root, and moru kachiathu, a sweet and sour dish of sweet mangoes and green bananas cooked in yoghurt. Finishing with cardamom-spiced rice pudding, our tastebuds were most certainly invigorated. We’re already planning our next visit as food this exciting should be celebrated.

If you’re looking for something a bit richer in flavour you must order the Mongolian lamb shank; braised in an intense savoury tomato and oyster sauce, the lamb melts in the mouth – it’s the perfect dish to enjoy in the wintry months alongside a robust and punchy red wine. Since entering the hospitality industry almost 20 years ago, Gareth has honed his skills at renowned venues across the North East, including Alnwick Castle and Sage Gateshead, before moving to London to work for Gordon Ramsay. Gareth subsequently became head chef at Jamie Oliver’s restaurant in Bath. Moving back to the North East, Gareth was attracted to Hinnies for its novel concept of focusing on rustic, earthy, Geordie-influenced food. He prepares dishes using fresh, seasonal, local produce, and relishes the freedom to be creative in the kitchen. Hinnies, owned by Andy Hook of Blackfriars and Dobson & Parnell in Newcastle, has received a number of accolades including the OpenTable Diners’ Choice Award, being nominated North Tyneside Best Small Business and named The Journal’s Best Value Restaurant.

Patrick Mckenna – The Cellar Door – Pg 9 Patrick loves discovering different ingredients and cooking styles from around the globe and uses this to experiment with flavours and textures to create unique and exciting dishes. What Patrick most enjoys about being a chef is the challenge and exhilaration of a busy service. He also relishes the opportunity to turn raw ingredients into spectacular plates of food. Patrick appreciates the winter months, when the lack of diversity in fruit and vegetables available allows him to be more creative with his chosen ingredients. Skrie cod is his favourite seasonal ingredient, as he says that the flavour profile is intense when compared to standard cod fillets, and it’s only available for a short period of time.

Nicolas Kleist – Bouchon Bistrot – Pg 12 Nicolas has been interested in food for as long as he can remember. He began his training in France, first in a brasserie and then in a Michelin-starred restaurant. There’s never a dull moment for Nicolas in the kitchen, where he thrives in every section. He describes his cooking style as uncomplicated and classical. For Nicolas, good food is simple, tasty and uncomplicated yet well executed. Spring is Nicolas’ favourite season as it produces some beautiful ingredients like asparagus. His favourite ingredient is butter, which he uses in all of his dishes in one way or another. To be a good chef, Nicolas believes you need to be able to work hard and to listen to the people around you, as everyone has different points of views, likes and dislikes.

After experiencing the thrill of cooking in a busy kitchen, Alan Baker was hooked and began pursuing a career as a chef. A short while after, Alan discovered his love for making pasta when he began his training at Marco Polo Newcastle with the talented Michael Johnson. As the owner and chef of Zucchini Pasta Bar, Alan uses traditional cooking methods to create super fresh pasta dishes with minimal ingredients and maximum flavour. Alan loves that there’s no rulebook for chefs, and he believes good food should be tasty, accessible, fresh, affordable and honest. For Alan, tasting during and after the cooking process is vital, as he says that more often than not a sauce is only a little salt away from perfection.

Aniello Russo – Angelo’s – Pg 15 & 16

Chef Profile

Aniello began his training at culinary school in his native Italy, and began his career working in restaurants in Positano and other parts of the Amalfi Coast. He also worked in northern Italy, which gave him a chance to learn different regional cooking traditions. He has since brought exquisite Italian cuisine to the North East with his two restaurants, Angelo’s Ristorante and Angelo’s Trattoria, and was named Best Chef at the English Italian awards in both 2015 and 2016, as well as coming runner up in 2017. Aniello enjoys exploring his creative side and appreciates how no two days are ever the same. The pasta section is Aniello’s favourite part of the kitchen and he particularly enjoys making filled pasta and putting modern twists on classic flavour combinations. As a true Italian, Aniello’s favourite ingredient is olive oil and he uses it to enhance the flavour of pretty much everything.

Michael Eames – Barrasford Arms – Pg 27

Chef Profile

When Michael was 15 years of age, he had a part-time job washing dishes at the Elk’s Head in Whitfield, located in one of the largest shooting estates in the country. It was the hustle and bustle of the kitchen doing large shooting parties that inspired Michael to have a go at being a chef. What Michael enjoys most about being a chef is seeing people enjoy his food as well as the buzz and atmosphere of working in a busy kitchen. Having taken over the pub with his wife just over a year ago, Michael has led the Barrasford Arms in the right direction, earning it an AA rosette and an ever-growing reputation. Michael believes that to be a good chef you need to be hard-working, honest with yourself, and always prepared to work that extra hour.
