Brings Fresh Seafood and Fun to Brandon

The man at the helm of the new Crafty Crab seafood restaurant, 704 E. Brandon Blvd., Brandon, is Steve Beltz, of Lakeland. His roughly 20 years of experience as sous chef and executive chef in restaurant kitchens prepared him well for this first voyage out to the front of the house to run an eatery the way he wants to. Although Crafty Crab stores are franchised to individual owners, each restaurant is unique. General managers have the freedom to create their own specials and add their own flair. “They’ve given me the keys to the car,” Beltz said. “I’m helping the community become familiar with the brand, advertising and maximizing its social media exposure. I’m improving the store’s landscaping, exterior lighting, working on the parking lot, building the operating structure and shift duties, like having staff check bathrooms every 30 to 60 minutes, empowering them to fix issues they see. A clean bathroom is the sign of a clean kitchen.” The gregarious Beltz said, “Customer service is our number one priority, for without customers, this would just be an empty building with walls.” He enjoys talking with and listening to customers, especially as the restaurant navigates its first year in Brandon. He must be doing something right. People often wait up to an hour for a table on weekend nights. Crafty Crab is known for its boils. King, snow or Dungeness crab legs, lobster tail, shrimp, crawfish, clams or mussels are weighed and prepared to the customer’s preferences. After selecting the meat, there are a variety of seasonings—crafty Cajun, buttery garlic, lemon pepper, or the BOOM!!! which combines all of them—to choose from, and customers can request the amount of spicy heat they desire. Fried shrimp, catfish, tilapia, chicken-tender and oyster baskets are served with a choice of a side. The menu includes calamari, wings, oysters, scallops and gumbo, too. Any meal can be capped with a slice of cheesecake or key lime pie. Lunch specials are offered 11 a.m. to 3 p.m. Monday through Friday. Crafty Crab sells domestic and imported beer, craft beer on tap (Free Dive, from Coppertail Brewing Co.) and wine. Their signature beach wines contain eight percent alcohol and no added preservatives or sulfites. They PAGE
