Vintage
Clare Valley’s 2021 vintage was calm, cool and consistent. The growing season began with late winter and early spring rainstorms, followed by a long temperate summer. Sun-loving Cabernet grapes enjoyed warm days filled with generous sunshine before relaxing in cold evening temperatures. The serenity of a perfect growing season can be detected in each sip of this wine as refreshing aromas, ripe fruit flavors and tender textures present an exceptionally balanced profile.
Region
Clare Valley lies north of South Australia’s coastal capital, Adelaide. This small wine region is notably cooler than the surrounding area. Its vineyards are planted throughout rolling hills between 900 and 2000 feet in elevation. Long, sun-filled summers drag leisurely into autumn, with warm days tempered by afternoon breezes and brisk nights. This climate shapes aromatic expressions of Cabernet Sauvignon with soft acidity and smooth tannins. These styles stand out for their fresh character and age elegantly in the cellar.
Tasting notes
Our Cabernet Sauvignon is aromatic and layered. This wine offers an evolutionary tasting experience as it opens in your glass. Violet, vanilla and blackberry aromas create an uplifting and fragrant introduction, a signature of Clare Valley Cabernet. This freshness continues as scents of sandalwood and coconut husk join the bouquet. The palate offers smooth acidity and tannins with a touch of jammy character found in ripe black cherry and cassis flavors.

Pairing logic
Though this is a softer expression of Cabernet Sauvignon, it is still a big wine. Vegetarian dishes should feature hearty root vegetables or starches to balance the wine’s boldness and harmonize with its earthy characteristics. Select tender, marbled cuts of salted red meat to highlight Cabernet’s dark fruit flavors and allow the wine’s acidity to shine as it slices through fatty textures. Choose herbal rubs or tomato-based sauces to play into its fresh aromatic profile.

Winemaking
With some of the best weather conditions Clare Valley has experienced in the last ten years, this vintage showcases a true regional expression. Winemaking maximizes these qualities by utilizing techniques that enhance the grape’s inherent fruit flavor rather than mask it, like using less oak influence than many popular Australian styles. This attention to detail and trust in nature is the key to capturing a classic Clare Valley Cabernet.
