Sciurus carolinensis, sounds double yummy I know. Probably one of the fastest selling meats on the market. Elvis got through a few in his time, the humble Grey Squirrel, brash American bully to its cuter redder native cousin. I recently put these on the menu at the mustard bistro and despite my reservations, we couldn’t prepare them quickly enough. Well done good folk of Chelmsford for giving something different a bash. The recipe was a simply one, squirrel legs, stuffed with garlic and ginger coated in an egg wash, then rolled in seasoned breadcrumbs and deep fried for 2 minutes. Any more and you’ll spend most of the evening chewing. The King of rock and Roll must have had more biting power per square inch than a hyena. As winter draws in local game will start appearing on menus around the country. Whilst staples like venison and pheasant are delicious why not try something a tiny bit unusual? Mallard instead of duck, partridge instead of pheasant. The best thing is, all the wonderful and largely unconsidered bounty is perched/floating/soaring on our proverbial doorsteps just aching to be shot. Indeed why not give squirrel a try or pop over to the bistro for a breast of mallard salad with a poached red pear and winter berry compote. Winter doesn’t have to mean just casseroles.
