Pistachio Cupcakes • 1 box of white cake mix • 2 pkgs. (3.5 oz) instant pistachio pudding • 1 c. vegetable oil • 3 large eggs • 1 c. club soda • 2 c. heavy cream • 1/3 c. white sugar

Now I know this isn’t a traditional St. Patrick’s Day recipe, but a former co-worker made these for us every year. They will always be my favorite treat for this holiday!

1. Preheat oven to 350⁰F and place cupcake liners in cupcake pan. 2. Mix cake mix, eggs, oil, 1 pkg. of pistachio pudding & club soda in a large bowl. Beat for 3 minutes. 3. Pour into cupcake liners, about 2/3 of the way full, and bake for 18-22 minutes. Allow cupcakes to cool completely. 4. In a small bowl, add cream & white sugar. Beat until soft peaks form. Add remaining pkg. of pistachio pudding and mix until incorporated. 5. Frost cupcakes with pistachio cream mixture and store in the refrigerator until serving.

Jay Gordon is the proud coach of his daughters’ teams in the North Port Youth Soccer League. He has been coaching his daughters’ teams for several years, and probably enjoys it as much as the girls enjoy playing! This past season was particularly successful as both teams were crowned champions in the President’s Cup Tournament in their respective divisions. Jay and his girls are looking forward to another exciting season this Spring!

FGB opened our new North Port office on Thursday, February 19th! We are excited to offer a second location for our clients.


Community Spotlight... Our first Spotlight edition is a two for one! We are really excited about the recent opening of our North Port office, and two local businesses in particular helped us launch. First, Coastal Property Group of Florida built out our office space just the way we wanted, and did it within budget. If you are looking for an honest contractor for residential or commercial construction work, we recommend Jerry and his team at Coastal Property Group of Florida. Second, anyone who has driven North Port’s “Golden Mile” (U.S. 41 between Salford and North Port Blvd.) during the last few months probably has noticed our new monument signs. We have Dave at Rothco Signs & Design to thank for creating our terrific signage. Dave gave us a fair price and timely completed the job. We are grateful for Jerry and Dave, and are happy to “Spotlight” their excellent work.
