WG Foodservice, part of leading Irish wholesale and retail group BWG Foods, has secured a €15 million three year contract from First Choice Purchasing following a competitive tender process.

The deal will see BWG Foodservice partner with First Choice Purchasing to become the primary supplier of chilled, frozen and ambient goods to Ireland’s

New Cork Body to Promote Region

New entity to entice business tourism.

ork City Council has announced the establishment of new a entity to promote and grown tourism in the region, to be known as Cork INC (Innovated, Networked, Connected).

The body was discussed and agreed upon at a Cork County Council meeting on Monday March 24th. Initial intentions are for Cork INC to provide three main functions: Leisure Tourism (working title “Visit Cork”) Strategic Economic Marketing B to B Tourism (Cork Convention Bureau) Cork INC will be run under the joint auspices of Cork City and County Councils and will include several other organisations including Fáilte Ireland, IDA Ireland, University College Cork and others.

Declan Daly, the temporary Cork County Manager, told Monday’s meeting of Cork County Council that “This proposal strongly reflects the unified commitment of Cork City and County Councils to jointly achieve the most for the region in terms of tourism, visitors, investment, marketing and economic development”.

Increased Profits but no Signs of Retirement for Charlie Chawke

ublican Charlie Chawke has stated that he likely can’t afford to retire despite increased profits at two of his nine bars, recently released accounts show.

Mr. Chawke, 65 in June, also revealed that the Orchard Inn pub – bought for a record-breaking €99m in 2005 – is probably worth half that amount today.

Accounts filed recently for Goat Bar and Grill in Goatstown and the Bank on College Green in Dublin show that both establishments increased their profits in 2013.

Goat Bar and Grill operator Charjon Investments has accumulated profits amounting to €1.55m to the year end April 2013, an increase of

€97,117 over the previous period.

College Inns Ltd, which operates the Bank in Dublin, show a €124,601 increase in accumulated profits to €384,326 in the year to the end of April 2013, with a total cash pile of €645,507.

As part of the filings, Mr. Chawke said that his overall pub group experienced a 10% increase in revenues.

In total there are 400 people employed across all his establishments.

However, as a result of repayments to the Orchard Inn pub, currently running at €500,000 per annum, Mr. Chawke claims he cannot afford to retire. “It is my name on the bank loans,” he said.

Largo Foods to Close Donegal Factory with Loss of 140 Jobs

ayto manufacturer Largo Foods has announced intentions to close its Gaeltacht-based production facility in Gweedore Co. Donegal with the loss of 140 jobs.

In a statement, Largo Foods said it intends to transfer all production from Gweedore to its main plant in Ashbourne, Co. Meath. 70 of the full time and 30 of the part time employees will be offered new roles in the Ashbourne facility.

“Our proposal to transfer manufacturing from Gweedore has been made necessary by the need for the

Good4U Secures €1m Funding, Pledges Creation of 25 Jobs

ligo based health food company Good4U has announced a successful funding round of €1m, with plans to create 25 new jobs over the coming two years.

The money will primarily be used to open new R&D and production facilities in Sligo, in addition to its existing plant in Cookstown, Co. Tyrone, which employs 18 people. 12 of the new roles have already been filled with the remainder coming online over the coming year.

Good4U secured the funding from the Western development Commission, a body created to promote social and economic development in the western region, with additional money sourced from Enterprise Ireland, AIB, and Good4U’s own internal investment.

The family-owned and operated company produces a unique range of nutritional snacks based around various types of seeds, wheatgrass products and bean shoots.

Their products have won multiple awards including several Gold Great Taste Awards.

“Underpinning our success is our ability to innovate and lead the market with products that meet and exceed consumer expectations,” said Bernie Butler, co-founder and managing director of the company.

“Today, more than ever, it is about building partnerships and aligning ourselves with people who believe and share our vision.”

amie Oliver’s Dublin-based Italian restaurant racked up losses of €367,834 in its first year of trading, accounts recently filed show.

Enforge is registered in the Isle of Man and is owned

by Irishman Gerard Fitzpatrick, who franchised Jamie’s Italian from the TV chef in 2012. The restaurant is located in Dundrum Town Centre.

Noted in the filing is that its directors expected a “Negative balance sheet” in year one owing to the costs of setting up such a high profile restaurant, and that accounts

for 2013 will be more positive.

Aside from helping Fiztpatrick set up the well-received eatery, Jamie Oliver’s main involvement in the restaurant is ensuring it adheres to his standards. Oliver’s business partner Marcos Georgiou also visited numerous farms and suppliers in Ireland while sourcing produce for the restaurant.

Currently there are more than 30 outlets of Jamie’s Italian globally, including Singapore and Sydney. Oliver is currently busy preparing for the launch of a franchise in Hong Kong.

New Irish Whiskey Museum to Open in Dublin

ours operator Extreme Event Ireland has announced the planned opening of a new Irish whiskey museum in Dublin city centre with an investment of €1.9m.

The museum is set to open this August at the corner of Grafton Street and College Green, opposite the main gates of Trinity College.

The ground floor is occupied by the well-known James Fox cigar and whiskey store and the museum itself will be housed on the first floor. 25 jobs will be created as a result of the museum opening.

Extreme Event Ireland owner Keith McDonnell said he hopes to attract 100,000 visitors in the first year, rising

to 230,000 by year five.

“We’re always looking for new ideas and we felt there was a gap in the market for a whiskey museum that would tell the story of Irish whiskey and unite all the brands,” Mr McDonnell said in an interview with The Irish Times.

“Every brand will be represented.”

Project funding came from a combination of the company itself, private investors and a loan from Bank of Ireland. Irish whiskey distillers, including giants such as Diageo and Pernod Ricard, are supportive of the project however have not provided financial assistance.

Plans for the museum include hour-long guided tours

This is led primarily by major brands such as Jameson and Bushmills and is leading to a number of new distilleries opening up, including a new Tullamore Dew venture in Offaly and a Teeling Whiskey distillery in Dublin

What Does Artisanal Mean to You? FSAI Launches National Consultation Discussion on the nature of labelling.

W

hen is an artisanal beef & kidney pie not an artisanal beef & kidney pie? When does natural become artificial and just how old really is traditional?

These are the types of questions the Food Safety Authority of Ireland is hoping to answer in a public consultation on the use of food marketing terms in Ireland.

The consultation is aimed at protecting the integrity of certain marketing terms on food and thereby protecting the interests of consumers and the small food industry.

The draft Code of Practice was developed for consultation by a working group consisting of the FSAI, the Food and Drinks Federation of Ire-

land, the Artisan Forum and the Consumers Association of Ireland. This code, once agreed upon, will outline a set of rules for the food industry concerning the use of the following terms to describe foods on sale in Ireland: • Artisan/Artisanal • Farmhouse • Traditional • Natural Although these rules are not legally binding, the FSAI expects food businesses to adhere to them having been involved in their development.

According to Dr Wayne Anderson, FSAI, the Code of Practice will go a long way to addressing concerns raised by small businesses which rely on such terms as an identifier for them versus larger producers.

“Marketing terms are designed to resonate with consumers. However, when they are used incorrectly they

have the potential to mislead.

This is a concern that needs to be addressed so we are encouraging all parties to take part in the consultation process,” said Dr Anderson.

“In particular, it is important that consumers are confident that the foods they buy are accurately and truthfully described. Food businesses should also be confident that genuine descriptions of their food are not diluted by the spurious use of undefined marketing terms by other food businesses.”

The consultation will run for 8 weeks and the closing date for responses is 14 May 2014.

All feedback and comments will be considered in advance of the FSAI publishing a final industry Code of Practice later in the year.

All interested parties including consumers, regulators and the food industry are urged to visit the FSAI website to have their voice heard.

Company bought Tonic Bar in November 2013.

K pub chain JD Wetherspoon has began building renovation work on its first outlet in the Irish Republic, having bought the premises of the former Tonic Bar in Blackrock last year.

The company bought the Tonic Bar on Temple Road, Carysfort Avenue in Blackrock last November for €1.5m with a pledge to spend as much in redeveloping the site for a total investment of €3m.

The new pub will be named the Three Tun Tavern and is scheduled to open on July 8th.

The name was chosen from a list of suggestions submitted by local residents. In total, 60 full and part time jobs will be created as a result of the investment.

It has also been announced that the pub will be managed

by John Hartigan, who currently manages a Wether-

spoons outlet in London.

John is originally from Kerry and has worked for Wetherspoons for over 13 years.

“I am excited by the prospect of managing JD Wetherspoon’s first pub here and am confident that the Three Tun Tavern will prove popular with people of all ages and that it will act as a catalyst for other businesses to invest in the area,” said John in a statement.

The purchase of the Tonic Bar is the company’s first foray into the Irish market with plans to ultimately expand out to upwards of 30 pubs across the country over the coming decade. In addition, Wetherspoons bought the former Newport Cafe in Cork city centre late last year and has reportedly approached a number of other potential locations in Cork, Limerick and Dublin.

Being a barista takes a lot more than pushing buttons on a machine or pulling espresso shots.

Today’s generation of baristas are stepping up their game in coffee preparation and presentation by tapping into the science and creativity that lies behind crafting a cup of coffee.

M

any baristas get a kick out of preparing and serving high quality espresso to the masses every day, citing that their passion in life is to introduce people to “real” espresso. For others their life is a quest to practice, learn and create real coffee masterpieces, with the ultimate goal being to compete against their peers in a quest to be crowned the world’s greatest.

In February 2014, the Irish Latte Art Championship was held at the Food & Bev Live show in Citywest where Bewley’s Barista Seivijus Matiejunas, aka Elvis, was crowned the Irish Latte Art Champion. This month we caught up with Elvis at Bewley’s Training Facility in Northern Cross as he gets ready to represent Ireland in the World Latte Art Championship that takes place in May in Melbourne, Australia.

FFT: So, how many hours practice do you have to put in to become a champion barista or latte artist?

Elvis: I’m spending all weekend – Saturday and Sunday practicing. About 3 hours each day, then twice a week I practice again for 3-4 hours.

in the training room here in Northern Cross in the lead up to a competition.

FFT: And, that’s including the day job?

Elvis: [laughs] Yes! I also work as a Coffee Trainer for Bewley’s. I am on the road a lot calling into customers that serve Bewley’s coffee, showing baristas or staff on site how to make great coffee.

FFT: What does a typical practice session look like?

Elvis: There are three different pours I have been practising – free pours, pouring macchiatos in the small espresso cups. I am also working on my etching and developing ways to add colours to the designs.

FFT: Your winning latte art design at the Irish competition you titled “Geisha”, where do you get the inspiration for your designs?

Elvis: I look for simple designs, like animals. Something with shapes that are easy to form while pouring the milk and that you can do in a few minutes. It’s difficult to do detailed designs with milk so it needs to be simple.

FFT: Have you a different design planned for

the competition in Melbourne?

Elvis: [laughs] I have something in mind. I’ve been working on four designs, all of which are different than what I have created previously.

I can’t tell you what they are though because it’s a big secret!

FFT: What does winning the title of World Latte Art Champion mean to you?

Elvis: Well, I have been competing for 5-6 years in a row now and I have enjoyed every minute of it. But I’d like to achieve more in the industry and I’d like to go into judging after the competition. It would be great to win in Melbourne and go out on a high!

FFT: What advice do you have for other Baristas who want to compete at this level?

Elvis: Working in a busy café helps you to understand what’s involved in preparing and serving an espresso in a fast paced environment, but competing has really opened my eyes up to how pressure, my own nerves, and a crowd can make something that seems so easy much more difficult. I only placed 3rd or 2nd during the first couple of competitions I entered because I wasn’t used to doing it

on stage and the pressure got to me.

I had to find my own way of dealing with that by practicing in front of my colleagues at work or by asking my friends and co-workers to participate in my practice sessions and asking their opinion on my performance.

What I would say to other baristas that feel they are ready to take on a new challenge is to step out of the comfort zone, never give up and don’t stop trying to be the best at something you feel really passionate about.

Next Event: World Championship Shearing The technique of sheep shearing is one of the oldest in traditional animal husbandry, a skill handed down from father to son for generations. The challenging practice of shearing wool from a live and kicking sheep, by hand, must be learned, practiced and honed. At the highest levels, competition is rife, with pride and family expertise at stake.

From Thursday 22nd May to Sunday 25th May, Ireland will host the World Sheep Shearing Championships, in Gorey, Co. Wexford. Kildare, a county whose towns in recent years have often become associated with commuting, has far more to offer than just its proximity to Dublin. Rich in a horseracing tradition and well known for hotels that attract world sporting events, this beautiful part of Ireland has developed a reputation as a superb destination for both tourists and locals alike.

Carton House One of the Kildare’s most popular hotels is Carton House in Maynooth. The building itself dates back to the 18th century and sits on 1100 acres of a fully walled estate that stretches for eight kilometres and crosses the border into Co Meath. The house was fully restored between 1999 and 2005 by the Mallaghan family and opened as a hotel in 2006.

As well as its architecture, Carton House boasts two championship golf courses (it hosted The Irish Open in 2013), a purpose built events centre with 14 beautifully decorated meeting rooms, leisure facilities that include two tennis courts and on-site fishing.

The hotel is also convenient for overseas visitors, located just 30 minutes from Dublin airport.

Kate Burke, Sales and Marketing Co-ordinator with the hotel, says they get a good range of clientele; “Although it’s mostly business, we have become a very popular choice for leisure and we are now considered an exclusive wedding venue. Carton House is the ideal choice for companies and event planners searching for that special destination to host an important event.

“The location is both unique and charming and we see ourselves as a different class of venue because of the professional facilities and service we can offer. It’s the perfect blend of historical grandeur and modern sophistication,” she said.

The hotel hosts many other events aside from sporting ones. This year marks the return of The Vanishing Art Exhibition to Carton House and with it the launch of the Artist in Residence programme. Kilkenny based self-taught painter Eoghan McGrath commences his residency at the hotel in April and it will run through until December. The artist will engage with the people, architecture and grounds of Carton House through painting and portraiture in various mediums, culminating in an end-of- year exhibition.

Carlton House Monica O’Byrne, director of Sales and Marketing at Carton House believes that the hospitality industry in Kildare is an ever growing one. “The proximity to Dublin city centre and the airport is a major advantage but yet Kildare is a getaway from the hustle and bustle of city life. The area has much improved infrastructure and a very active local community. In the Maynooth area, for example, we are developing strong relationships with the university, with local GAA clubs and with other hotels,” she said.

Picaderos In the town of Maynooth is the family-run restaurant Picaderos. This offers mostly Spanish and Latin American food and is owned by Antonio and Valeria Cascella, a couple from Naples who have been running Italian restaurants for 25 years and wanted to branch into something different.

This lively and authentic restaurant boasts a number of different menus; lunch, early bird, spanish tapas and a la carte. They also run a Mexican themed night every Wednesday with a full Mexi-

can menu, thanks to the addition of a new chef with a background in Mexican food.

General Manager and son-inlaw of the owners, Martin McMahon believes there’s quite literally a melting pot of various foods and cultures to be sampled at Picaderos. “The whole concept is a Spanish and Latin world and now we have dishes from Portugal, Cuba, Brazil, South America, Spain and Mexico. Some of the dishes are slightly adjusted for the Irish palate. For example we do classically Irish dishes with a Spanish or Mexican twist, such as a shank of lamb with a Rioja jus, or a chorizo oil and bean stew. We have a full gourmet burger menu as well – although you may not associate burgers with Spain or South America, we add our own stamp to it, including a chicken tequila burger,” he said.

Picaderos has added a lot of colour to its restaurant in order to keep customers entertained. There’s live music five nights a week with five different artists and live Flamenco dancing every Thursday. You’ll be treated to popular live Spanish music on weekends while an Irish musi-

cian plays jazz on a Tuesday.

Martin believes one of the big selling points of Picaderos is its friendliness. “We have a lovely blend in our staff – we are inviting you into dine with us and that’s our ethos. We want everyone to feel that we are having our friends over for a night. We have six Spanish staff between floor and kitchen, two Brazilian waitresses and a Venezuelan waiter. They all speak Spanish and I speak Spanish myself.

People come in for a completely authentic experience and they feel like they are on holidays,” he said.

Martin sees Maynooth and the greater Kildare area as thriving at the moment.

“Mayooth is one of the most unique towns in Ireland as it’s the only university town – that’s a massive pull. On top of that we have other boosts, with industries like Hewlet Packard and Intel within a five kilometer radius.

“We find with PIcardors we get people coming from West Dublin, Mullingar, Kinnegand and Enfield. Maynooth is generating a name as a gastro town,” he added.

The Jolly Café In the town of Naas lies The Jolly Café, a coffee shop, deli and restaurant all rolled into one. This relatively new premises opened only in 2012 and has been doing a busy trade since. Owner Mark Condron already looks after Zest in Clane and wanted to bring a similar model to Naas.

They now have 20 staff, and are open from 8am until midnight with last orders at 10pm.

As well as offering food and a wide range of coffees, Jolly has a full bar with an extensive wine list, serving mostly the glass. The premises also boasts a cocktail menu along with Irish and foreign craft beers.

“What we are is an allday eatery – we don’t really close, you can have breakfast lunch and dinner. We found that during the day, people love sandwiches and it’s very difficult to get them away from that. So we have an extensive sandwich menu for our daytime customers. But we also have a fish of the day, so if someone wants to come in and have fish and a quick glass of wine they can do that too. But 70% of our day-time customers will have a sandwich,” he said.

Also on offer during the day at The Jolly Café are noodles, salads and other healthy options, with the owners aiming for casual dining up until about 4.30pm, after which time the premises is trans-

formed into evening and night time dining.

Mark feels they transform they place quite well from its day time atmosphere. “The lighting does dramatically change the feel of Jolly. The difference is noticeable and we turn it into a place for a nice meal. During the day it’s designed for children and families, and we think we transform it very well,” he said.

He finds Kildare a good place to do business and one that’s growing all the time.

“There are a lot of people who want to eat out in Naas. We have two types of clientele; firstly it’s a market town, with a lot of people working in the area, and then you have the commuters from Dublin, who come back in the evenings. I consider it country town with a suburban element,” he said.

“If people want to come in for a coffee and a scone we can offer that. Likewise you can come in at the evening for a fun night. We try not to take ourselves too seriously, we are very proud of what we do,” he said.

McCormacks The oldest pub in Naas, and indeed the longest running business, McCormacks is centrally placed in the centre of the town. The establishment is over 100 years old and has been passed down through four generations of the McCormack Family. The pub was a onestop-shop up until the 1970s with a grocers and a bakery on site. McCormacks doesn’t serve food in the bar and never did, but has undergone a major revamp

in recent years so as to cater for the changing tastes of the Irish pub-goer.

Conor McCormack is the son of the current owner William who has recently retired.

Conor now runs the pub and says it’s a very transient market. “We’re forever changing, we had to build a new smoking area before Christmas, and in general we’re always looking to do different things.

Its non-stop really, you can’t become stale. We sell craft beer by the bottle and we’re in the process of getting in a local Kildare beer on draft.

People are definitely looking for a wider range of drinks.

We have an extensive wine menu that we do by the glass and we have a cocktail bar.

It’s completely changed from ten years ago,” he said.

The pub is so renowned in the area that to celebrate 100 years in existence in 2012, McCormacks held a festival called ‘Bill’s Eclectic Picnic,’ erecting a marquee with live music at the back of the pub. “We fitted about 800 people in the marquee.

We filled the pub, we gave out food for St Vincent de Paul and the Hospice in Naas and we gave something back to the community. It was a great weekend. We did the same for the races at Punchestown last year as well,” Conor said.

Conor acknowledges that there are huge challenges for the pub industry in general at the moment and he meets with a lot of young publicans who are struggling.

However he feels that McCormacks attracts a wide range of customers through its long establishment, its many sporting associations and by virtue of the fact that Naas is a good town in which to trade.

“People in Naas feel at home here, and we’ve made the people welcome too. A lot of people from other counties have moved to Naas. It’s a real melting pot. We get all the race goers, and the GAA is great for craic and banter.

We have a lot of GAA fans in the pub in the summer, before and after the matches.

We love all that light-hearted rivalry,” he said.

Irish Farmhouse Cheese Best Practices on Show in Paris to Maximise At the end of February, Bord Bia took one of the few Menu Profits international stands at the leading French cheese and Author: Sergio Furno

dairy show Le Salon du Fromage, which ran concurrent to the National Agricultural Show.

T

he sense of connection from farm to fork was tangible as the 169 French cheese exhibitors walked into the cheese hall, against an audible backdrop of “mooing” livestock being herded into the agricultural halls across the road.

Representatives from Cooleeney Farm, Cahill’s, The Little Milk Company and Cashel Farmhouse cheese makers made the trip in person to Paris as did Sheridan’s Cheesemongers with their savoury biscuit range, including their well received Brown Bread Crackers. Bord Bia represented a further 10 producers.

In sum there was a true representation of the breadth of cheese styles produced in

Ireland today by our 55 farmhouse cheese makers, including cow’s, goat’s and sheep’s milk cheeses. On tasting to the 6,000 strong crowds of professionals were many different styles of cheddar: smoked, seaweed added, organic and the French favourite Cahill’s Bheddar with Porter.

Then came a range of blues from the mild milky flavours of Wicklow Blue Brie to the robust full creamy richness of raw milk Bellingham Blue and our own cow’s milk Cashel Blue and sheep’s milk Crozier Blue. Great respect was expressed for our natural rinds and balance of flavor.

Also attracting attention was the range of Irish wash rind cheese including the West Cork wash-rind cheese tril-

ogy of Milleens, Ardrahan and Durrus, joined by a new Irish Farmhouse Cheese: Brewer’s Gold, an organic cheese whose rind is washed in O’Hara’s Craft Irish Beer.

There was a great sense of interest in the provenance of our cheeses where typically each cheese is only made in one place by one family, often with the milk from their own herd of animals. Today in France few cheese makers have their own animals.

Professionals interested in Irish farmhouse cheese included those seeking out novelty – amazingly we met a French man intending to open a shop purely focused on imported cheese! Hats off to our French cheese making colleagues who couldn’t have been more welcoming, taking great pleasure in our whiskey and cheese pairing – Teelings and mature Cooleeny went down a treat!

It is estimated that four tons of Irish farmhouse cheese will be sold into the French market in 2014, with the main market being independent cheese shops and restaurants. In our next article we will focus on an insight to the classic cheese families and classifications.

Believe it or not, the layout and design of your restaurant’s menu can have a huge effect on potential earnings. A confusing and awkward layout over laden with dishes is remarkably off putting, and a poor design reflects badly on everyone.

W

hy spend thousands on decor, refitting the new open plan kitchen and buying in the latest glassware when you’re going to skimp on the menu? It’s arguably the single item customers will spend the most time examining in detail, so don’t sell yourself short and make sure to engage with an experienced designer who can create a quality product.

The extra cost will pay for itself.

Specials are an integral part of any menu and can be used as a testing ground for dishes that could end up on the full menu. Producing one or two new dishes every week and seeing how they fare can not only lead your kitchen down new avenues but also keep regular customers interested. Printing out slips and attaching them

to the main menu with a paperclip gives an impression of immediacy. Don’t have servers recite out specials to customers, nobody remembers them and therefore nobody orders them!

Keep euro symbols off the menu – simply list the price as a number after the dish description. Currency symbols are a reminder of what customers are paying, and are more likely to go for the cheaper option with that in mind. Price points at €.95 are also recommended.

People tend to perceive €3.50 and €3.95 as the same price, so you may as well aim higher!

See the menu as an extension of your restaurant’s atmosphere and you will dial both in at the same wavelength to maximise their presence and profitability.

Mackerel on the Menu?

The plight of the European mackerel fishery was well documented by the Irish fishing press in the latter part of last year and throughout January. There was much disquiet over the actions of the Icelandic and Faroese fishery councils, who unilaterally implemented a substantial increase of catch volume (an increase of 23%) well beyond their previous agreements.

nitially predicted stock volumes and set Total Allowable Catches were calculated without consideration of this additional fishing effort, which then exceeded the Total Allowable Catch by 200,000 tonnes and beyond the safe Maximum Sustainable Yield of the total stock.

changed their mackerel status from “Best Choice” to a “Fish to Eat Occasionally,” throwing previously written sustainable menus into turmoil. To make matters worse the mainstream press misreported in the situation, and on many occasions mackerel were suggested to be endangered.

So where do we go from

here? There is still hope for mackerel fishery - hand line caught mackerel are available, however it will cost to make this choice. Currently line caught mackerel is coming in at a premium of about 30% over the price of trawled or tank boat mackerel and will not really come up to speed until the summer.

The question now is

whether or not environmentally conscious customers will be put off all mackerel in light of this recent bad press and if not, will they be willing to put their euro where their principals are. From my experience in our two retail outlets for the majority or customers I don’t believe so, but there will always be some who are both informed

and care who will pay a premimum for a quality sustainable product.

My key piece of advice as always is be sure your supplier is providing you with exactly what you think you are receiving, and always advertise it correctly on your menu!

Molise: a Hidden Gem to Discover Thanks to the Flavour of Italy Group The Chamber of Commerce of Campobasso, in collaboration with the Flavour of Italy Group, organized a unique project called Typical Products & Mediterranean Diet, aimed to promote the beautiful uncontaminated area of the province of Campobasso and its excellent food and wine products.

T

he project has been developed through a series of events in the premises of the Flavour of Italy Group. The Group has been funded by Marco Giannatonio and Maurizio Mastrangelo, who are both from Molise.

The opening press conference was held on the 24th of March at the Italian School of Cooking.

The President of the Chamber of Commerce of Campobasso, Amodio De Angelis, greeted the guests presenting Molise as a small chest that contains a great treasure of food, wine and

culture.

After that there was a cooking demonstration and preparation with audience’s help of two recipes from the Memory Archive of Italian Cuisine in the Province of Campobasso, followed by a lunch based on the prepared dishes.

The idea of the project was that the rediscovery of regional recipes is a way to strengthen ones roots that allows to spread an essential culture of healthy eating and cooking.

While nobody doubts the influence that France has had on restaurant cooking, many of us overlook the influence of Japan, particularly in fine dining. But now it is not just Japan but other Asian cuisines that are having an influence worldwide, from Singaporean and Vietnamese street food to Korean coffee houses.

to be found everywhere from Pierre Gagnaire in Paris to The French Laundry in California to Thorntons in Dublin.

While Japan’s economy has stagnated for the past couple of decades, there has always been enough money for eating out. Tokyo still holds the record as the city with the

most Michelin stars with seventeen 3-star, and over 200 one-star restaurants.

“Japanese people have a very refined palate and live to eat out, especially as they work so hard,” says Trevor Allen originally from Athlone and a long-time resident of Tokyo who now runs one of Japan’s largest beer-importing businesses - Ikon-Europubs.

“We are selling more craft beers than ever and new bars and restaurants seem to open every week, with new ideas from soul food to southern barbecue to deep fried pies from Puglia (www.Panzerotteria.com). Western food here is sometimes dialled down a little for the Japanese palate, but Tokyo is easily one of the best cities in the world to eat in,” he continues.

And what of the current trends in Tokyo? - “Affordable gourmet is the big thing these last six months with high quality espresso bars, gourmet burgers and even gourmet pancakes,” says Tokyo-based American Robb Satterwhite who runs the online restaurant guide Bento.com and is the author of What’s What in Japanese Restaurants, now in

its third edition.

“Standing sushi bars are popping up everywhere and heirloom vegetables are now on many menus with elaborate vegetable dishes and some restaurants are even employing vegetable sommeliers. Restaurants at all price levels now boast of their direct relationship with small farms and this is not just at the high end of the market but in mid-price chain restaurants,” continues Robb.

Cat cafés have long been popular in Japan but in recent times the concept has been expanded, with owl and parrot cafés and recently a goat café. Cat cafés have also opened in the UK and Germany, however I suspect goat cafés may take a little longer.

One Asian city that matches Tokyo for its dining-out culture is probably Seoul. Koreans were once dubbed “The Irish of Asia” (it was intended as an insult!) and it is true that this is a culture that loves to socialise and eat out.

Seoul’s Noryangin fish mar-

ket is almost as big as Tokyo’s Tsukiji and you can eat in Buddhist temple restaurants or experience the creations of hot new chefs just back from a stage in Noma.

Twenty years ago I think it is unlikely that anyone would have predicted that kimchi would be found on a menu in Ranelagh (Dillingers), but I suspect that bibimbap may not be far behind.

Kimchi has been helped by the current return to fashion of fermentation (e.g. sourdough) but that does not explain Seoul’s Café Bene phenomenon, with branches on Times Square and in LA serving sweet potato latte, spiced pumpkin latte and misuaru (a health drink made from sesame seeds, black beans and rice).

Korean Barbecue (Goji-Gui) restaurants, where marinated meat is cooked at the table, are now found in most major cities so it is only a matter of time before they also hit Dublin.

New Restaurant Fit Out

for Percy French

Bunzl McLaughlin’s new Catering Design Service (CDS) recently completed the design and fit out for Percy French restaurant, Newcastle, Co. Down.

T

he Hasting Group, owners of Percy French, asked CDS to look at the existing restaurant and offer solutions on improving the layout with a view to bringing in the kitchen as part of the dining experience. The old kitchen was also struggling to keep up with the current demand.

View of the Mourne Mountains CDS came up with a design that suited exactly what Hastings required. They proposed an open plan look that allowed customers to see the chefs at work and bring an element of the kitchen into the restaurant. One key feature was the back wall graphic of the Mourne mountains. This is a big step away from the usual clinical white walls in a kitchen. It can not only be seen and enjoyed by the din-

ers, but it also brightens up the kitchen for the chefs who spend many hours in there.

Knocking Down a Few Walls CDS also proposed a 20m2 extension and offered solutions on how to reconfigure existing spaces by knocking down some walls and giving the restaurant an open planned area.

CDS Project Management The project started the second week of January when the extension was started and built externally. The restaurant only closed down just after Valentine’s weekend on 17th February and reopened in time for St. Patrick’s weekend on 14th March.

The benefit of using the CDS service is that the entire project is managed, from design, architect drawings,

planning and building control submissions down to fit out and installation. This means that all the hassles involved in a project such as this were taken away from the customer and they could get on with their job.

Kitchen Equipment Some of the other key features include a bespoke beverage station and the red glass fronted panels with the Percy French logo. Bunzl McLaughlin provided all of the equipment for the kitchen, such as the two ranges, the self filtering fryer, the freezer and cold room suite, bespoke stainless steel fixtures, water boiler and kitchen pass.

Get in on the Ice Action!

Maybe it’s all this wet weather we’ve been having but here at Bewley’s we are longing for the warm days of summer and the opportunity to delight consumers with our refreshing and indulgent cold coffee drinks range. It might seem a little early but operators that want to capitalise on Bewley’s cold beverage programme really need to start planning now.

aria Cassidy, Bewley’s Coffee Quality Standards Manager gives her tips on how to get your beverage menu ready for summer.

At a very basic level, freshly brewed coffee can be left to chill and then served over ice. However it seems Irish consumers are developing more of a taste for frappe style cold coffee drinks where brewed espresso is blended with ice and other ingredients to make a drink very similar to a milkshake (and tastes even better!). For this reason, we’ve found that

cold coffee drinks are most popular amongst younger consumers. Here are my tips on how you can get ready now to tap into the summer food and beverage trends: 1. To offer frappe style beverages, you need a good blender. I usually recommend Blendtech’s.

2. There is an endless range of frappes you can offer, some of which don’t even include coffee! However, your staff will need preparation space. I would recommend that you have a look at where

you currently make your hot beverages and, if possible, dedicate a space for cold coffees. Usually what we find is that locating the blender close by the coffee machine allows baristas to prepare a cold coffee quickly without impacting too much on their standard serving time.

3. Like I said there is a pretty extensive range of frappes but you will need to decide on 3-4 core frappe beverages that can be promoted throughout the summer. By focusing on only 3-4 drinks your staff can feel confident in preparing each one and promoting the full range to your customers.

Talking about beer styles is a difficult task because there are many variations and new beer styles seem to emerge all of the time. According to the BJCP (Beer Judge Certification Program), there are 23 general styles of beer with each style consisting of a number of sub styles. But let’s back up a moment.

lager, typical examples are bohemian pilsner, Munich helles, bock and many more.

Ales cover a more diverse range of styles such as pale ales, porters, stouts, browns, wheats and many more.

In reality, the number of modern styles can run in to the hundreds. We also have some older styles that are little brewed today such as gruit, which is a beer brewed without hops. Hops are a relatively recent ingredient in the beer world – they only

brought to you by customers so, if you feel your staff might need to see how frappes are made Bewley’s can help with that too.

5. If you don’t feel adventurous enough to offer frappes, don’t worry! There are other cold beverages you can promote and that operationally, are very easy to prepare.

ll beer styles will come down to two factors, is it an ale or lager? The difference between the two is really how the yeast behaves. Lagers ferment at cooler temperatures and therefor take longer to produce. The word lager is simply the German word for storage. Typically a lager beer is lagered for six weeks before packaging. Everything else is an ale and these ferment at warmer temperatures. If we take a

started to make a real impact in the 13th century but since beer has been around for at least 10,000 years, you can see what I mean by recent!

While some beer styles can be very similar, there are always differences and in some cases, these differences are major. An example of this would be to compare the difference between a pale lager such as a bohemian pilsner and compare that to a blonde ale. On the face of it they look very similar but where a pilsner is clean and crisp, a blonde ale is a little more malt forward and slightly heavier. Both are very refreshing though.

Differences become very evident when comparing a standard lager to an American IPA. The lager will have a lot less flavour with the IPA bursting with citrus or tropical fruits and a much bigger body. And then there are the spontaneously fermented beers, another topic entirely.

What is reward and recognition, and does it really affect our business?

There is an age old conundrum as to whether one should reward employees over and beyond their basic wage. If you read last month’s article you will be aware that there are two approaches to employees, one which believes they are basically lazy and the other which believes that motivated staff benefits business. For the purposes of this article I will assume that you are the latter – the enlightened. least two categories of staff in the catering business. All this means is there will be more standardisation of pay rates in the industry and that employers will need to look at some differentiation to ensure good staff stays.

Remember your menu planner each week – ensure the word ‘thank you’ is very much the special and the main course combined!

Note * EBITDA - a company’s earnings before interest, taxes, depreciation, and amortization (commonly abbreviated EBITDA) is computed by considering a company’s earnings before interest payments, tax, depreciation, and amortization are subtracted for any final accounting of its income and expenses. The EBITDA of a business gives an indication of its current operational profitability, i.e., how much profit it makes with its present assets and its operations on the products it produces and sells.

oney is not necessarily the motivator we think it is, though a base salary, particularly for established employees, is key. I believe that the roistering of employees is critical as it can determine the person’s basic income, and employees will drift to someone who will offer regular hours.

It is important to ensure such considerations are taken in to account as they show employees if you care about them.

Career development and progression are crucial to the psychological contract with your employee. We have introduced simple skill matrices to incentivise employees to gain additional skills and this is often rewarded by increases in the hourly rate. It allows for progression and development and is a form of lateral promotion.

I believe that recognition is key, and consistently with clients I notice that the more successful ones are those

who know who the staff are and engage with them on a daily basis. The mere fact that the ‘boss’ knows the person’s name is motivating and people want to feel they belong.

The GM I admired when I was young was a man who actively engaged with employees, found out how they were and was there anything he could do to help them do their job better. It was interesting to see the feedback, the issues raised and how this led to genuine improvements.

I have always believed in the idea of spot bonuses or recognition and this can be done on a planned basis.

I remember an employer recently who was very impressed by a new employee and discovered that it was her 21st birthday the following week, so he rewarded her the day off with pay. Another employee complained and she replied if I see you doing what she does I will not be shy about rewarding you either!

I worked as HR Director for a large US multinational and they ensured that bonuses etc. were paid fairly by doing position in range analysis and recalibrating rewards, thus ensuring that soft managers were not too soft and hard mangers were not too hard.

In terms of middle management and line management, the old reliable of labour cost, food and beverage and gross profit can provide incentive schemes to ensure business is run in accordance with the plan. Other elements or KPIs (Key Performance Indicators) can be factored in. For example you may consider customer satisfaction, rating the absence of complaints, or hygiene and health and safety standards.

In terms of General Managers of enterprises, I was involved in developing a GM bonus scheme for a large establishment. The GM had been used to a purely sales driven scheme, but in this

case EBITDA (see footnote) was used. In this case, in the first year the GM was surprised how much he lost as he had not controlled his costs as well as he could have. The following year there was no such problem and the profitability of the business increased dramatically. Remember the cost of sales!

Clients often ask what they should reward. I answer what actions or behaviours are critical to the success of your business – reward those!

Going Mobile at Your Hotel

For consumers, the internet has revolutionised the hotel booking process. Last year alone over 50% of hotel bookings were made online, be that via desktop or smartphone. An even higher percentage of same day bookings (up to 65% by some estimates) are made on smartphones. It has in turn created a fluid, fast-moving marketplace where often the lowest price wins out. How can hoteliers benefit from this?

ong gone are the days of searching through travel booklets, selecting a hotel, calling up for availability and starting all over again if the selected destination is booked out. A quick search on websites such as Hotels. com and Booking.com not only brings up a multitude of hotels in an area but also displays results based on availability, price, user reviews and so on.

This has shifted the dynamic of the hotel trade completely, however for hoteliers it can also be used to your advantage to get the maximum benefit from emerging technologies.

Last minute apps are on paper a win-win situation guests staying in a city an extra night can grab a bargain, hoteliers can fill up otherwise empty rooms. Popular examples include Hot Hotels (who recently secured $1m in funding) and Hotel Tonight.

Packaged holiday hotels typically have rooms set at various price levels, and so offering the cheapest at the last minute is no different than offering the same room at the same price 6 months in advance. Smaller boutique hotels don’t have such flexibility and in this regard, last minute apps can be quite damaging.

For the hotel it’s important to not sell yourself short.

These apps should not be seen as a relied-upon revenue stream, rather a last-ditch attempt to offload a few spare rooms. Ultimately you’re getting less money per room and that’s not the ideal situation.

At worst you could even be training customers to wait until the 11th hour, safe in the knowledge that not only will they find somewhere to stay but that it will definitely be cheaper than booking in advance. Long-term loyal customers could also be upset.

There is a valid argument that

most hotels should never use these apps for fear of gutting out their bottom line.

Certainly, the apps are doing great business. Market leader HotelTonight’s app has been downloaded over 5 million times and is tapping into the growing trends of holidays on a whim, footloose business travellers staying an extra night and those holding out until the plane lands to decide on accommodation. Clearly, there is a slice of the market here that hoteliers need to capitalise on in order to flourish in the digital age.

What’s crucial here is understanding your guests and catering to their individual needs. Last minute apps aren’t going anywhere yet if overused will simply cannibalise existing business.

Hotel offers need to be managed very carefully across all mediums (be that directly, in local advertising, through online fronts such as Hotels.

com and indeed on last minute apps) to avoid conditioning guests into expecting that rooms will be available on the night.

Offering strong deals in advance and doing your best to ensure your hotel is booked up is ultimately the best solution. Having rooms available every night on HotelTonight points to other issues that won’t be solved by way of fire

sales.

If consumers consistently see a pinch in your hotel, and indeed across the board, a swing back towards advance bookings will inevitably happen while still leaving a healthy market for late night travellers. Don’t get caught up in a trend but do make sure you take it on board and get the most of it.

Travellers have changed their habits and hotels need to keep pace.

Your Letters I run a busy restaurant in Cork and had the misfortune of losing my chef recently she was offered a big job in London that she couldn’t refuse.

My background is in kitchens so I’ve been filling in until I find a replacement. However the workload is killing me as I’m also trying to manage the dayto-day running of the place along with other staffing issues and finance etc. On top of all this I’m trying to hire a new chef whenever I get the time to actually meet people for interview.

I know I was spoiled with my last chef – she was second to none – so my expectations may be slightly coloured. But I’m not completely impressed with the calibre of who I’ve met so far.

A nearby restaurant, which would have a relatively similar menu to us, has a chef with a great reputation. It’s been suggested to me that I try and poach him (excuse the culinary pun). I could probably afford to offer slightly more than what he’s earning but I’m worried about creating a bad vibe between my restaurant and that restaurant.

Last thing I want is to make enemies. Any advice?

I agree that making enemies in the restaurant industry, or indeed any industry, is not a situation you want. However from reading your letter it strikes me that you’re in a pickle (another culinary pun) and unless you want to make yourself ill or exhausted from stress, you need a good chef quickly.

the kind of relationship you have with the other restaurant. Is it simply a case that you’re close in terms of proximity or do you help one another out by dropping over ingredients or utensils if the other is stuck? If so then it’s a matter of weighing up whether the loss of this relationship would be greater than the gain of a great chef. If not then I say go ahead. Business is business at the end of the day and in any industry talented people get poached all the time.

There may be slight bad feeling for a time if the chef switches across, but it’s unlikely to be lingering and other restaurant owners probably expect this sort of thing if they have a top class chef in their kitchen.

You need to also be prepared for the fact that attempts may have been made previously to poach this chef, he may not be willing to leave due to his own loyalties, or he may play hardball so be ready to negotiate.

I run a B&B in a coastal area of Co. Clare. I’ve had a number of calls recently asking if I accept dogs, to which my answer has been ‘No’ as it’s not something we do. However after speaking with a number of friends who have pets, they say that it can be a nightmare to get a dog minded when they’re away, especially in the Summer as kennels tend to book out fast and paying to have a dog boarded in a kennel over the period of a week or more adds a lot of extra expense to a trip away.

From the small amount of research I’ve done among people I know, the reaction has been

quite mixed as to whether I should consider making my B&B pet-friendly. Some people say they would jump at the idea, while other non-animal lovers say they would steer clear of a guesthouse that was full of barking dogs. I know some places in Ireland allow pets, but I’m not sure if this is the right move for me? My B&B does a good seasonal trade so I don’t know if I should meddle with this, but as an animal lover myself I like the idea of it. Our family dog is allowed in our own living quarters, but not anywhere else.

It seems to me that this is a battle between your heart and your head.

Clare, I’d imagine it’s heaven for dog-owners with beautiful walks on your doorstep. The fact that you already have a dog means you’re well aware of the extra work involved in keeping a house clean when there’s a pet around, as well as all the other responsibilities they bring.

There are already six places in Co. Clare doing pet-friendly accommodation, according to www.staydoggy.com.

This is a tiny percentage overall in terms of places to stay in Clare, but relatively high compared to other counties.

You need to consider the very important fact that if you become known as a pet-friendly B&B, you may be deterring a lot of potential guests. The last thing you want is to gain a reputation as a place that’s over-run with dogs where people can’t sleep at night with the noise of barking. And your own local research has already brought up that issue.

I would advise you to think long and hard about it. Perhaps pay a visit to other places in Ireland which allow pets, talk to them and find out how it all works.

I run a pub in Donegal, where believe it or not country music is making a huge comeback!

At the moment I have live music in the bar with a local band on a Friday and Saturday night, and a Sunday afternoon. They do the usual mix of Irish stuff with a few contemporary Kings of Leon / Killers style songs thrown in. They’re a good band but I feel it’s all becoming a bit

stale and they don’t tend to shake up their set list too much. I was thinking of cashing in on the country music craze. Any advice?

There’s no harm in shaking things up a bit, and three sessions a week from your local band is quite a lot as it is. Introducing a new band on one of these days would be a good way to get a bit of foot-fall into the pub. Just be careful not to overdo it. Country music, while popular at the moment, does tend to polarise people and if you become known as pub that specialises in it, you could have people leaving in their droves to find a quiet pint elsewhere.

Why not get a good country band / singer in on what’s generally your quietest night for music and see if it brings a bigger crowd? That way the band won’t be too disgruntled at losing a night as they still get to play on the busier two. It’s a matter of trial and error in general with music in pubs so a softly-softly approach is probably best.

Less Serious Stuff The Ulti-Meat Challenge: 10k Calorie Burger Packs Ultimate Punch

A chipper in Preston, England has hit the headlines for selling a 10,000 calorie ‘ulti-meatum’ burger, on sale for the remarkably reasonable price of £20.

Mister Eaters Fish and Chips Shop will even serve up the gastronomic explosion for free, provided the customer succeeds in finishing the burger in one go on the premises. Those less inclined take on the challenge can order the individual burger parts from the chipper, for later assembly at home.

The burger itself is inspired by the Cartoon Network TV series The Regular Show and is at its core a burger within a burger – a fully cooker burger with mince meat packed around it, cooked again and itself packed between two burger patties, stuffed into giant burger buns.

Interspersed between each layer is plenty of cheese, tomato, lettuce and ketchup.

In total the arguably unappetising creation contains five pounds of beef, six slices of cheese and three burger buns.

It took John Clarkson, owner of Mister Eaters, four attempts to get the burger right, having been inspired by numerous failed attempts on Youtube.

It’s not the first time Mister Eaters has come up with an oversized culinary creation – recently, they put together a 11lbs version of a Ferrero Rocher caked in batter.

To Boldly Brew Where no Beer has Gone Before

Time to break out the rubber Mars bar foreheads as a Canadian based brewery has announced the launch of a Star Trek themed beer to be sold across North America.

The beer, called Warnog after a Klingon drink in the long-running sci-fi series, will be brewed by Tin Man Brewing in Indiana under license from The Federation of Beer, a Canadian Company. This is the second Star Trek themed beer, the first, an Irish red called Vulcan Ale, is currently on sale in Canada.

Warnog was enjoyed by Klingons in The Next Generation and Deep Space Nine TV shows and while the fictional beverage no doubt went well with the blood lust associated with Klingons, this altogether more tempting brew is being advertised as a modern Dunkelweizen made with rye. Warnog’s aroma is predominantly mild banana and clove produced by the German wheat yeast, supported by subtle sweet malt character from the use of Munich malt.

For the impatient, a handy online guide is available detailing some of the drinks enjoyed in the Star Trek universe along with blending instructions.

Commenting on the statistics, Edel Smyth, Information Manager, FSAI stated that the increase in contact made to the FSAI is a positive development.

“On one hand, more food businesses are contacting us seeking to raise their food safety standards while, on the other, consumers are increasingly vigilant and aware of the need to report bad practice or experiences they’ve had where food safety has been compromised,” said Ms Smyth in a statement.

Similar to the last few years, of the 13,269 requests to the FSAI Advice Line in 2013, approximately 60% were received by telephone and 30% were received by email. The remainder resulted from walk-ins, attendance at exhibitions, staff requests and through the FSAI’s facebook and Twitter pages.

Jamie Oliver Opening “A Submarine” in Hong Kong

Celebrity chef Jamie Oliver is apparently opening “An amazing Italian submarine” in Hong Kong, according to a promotional video released for his latest Asian restaurant venture.

In the video, which you can watch below, the chef can be seen twisting his way around some Cantonese to varying degrees of success, at one point saying the restaurant would be “Very slippery”.

The restaurant will be situated in Causeway Bay, a heavily built up area, noted for having some of the world’s most expensive property rental prices. Oliver’s attempts to say Causeway Bay in Cantonese first come across as “Car crash,” then later as “Bronze bed,” much to the chef’s laughter.

The new restaurant, part of his Jamie’s Italian chain of outlets, is his first foray into the Hong Kong market after an initial attempt in 2009 fell through.

The venue will be able to seat up to 200 at a time and aims to build on a successful restaurant opening in Singapore Singapore last July.
