METHOD

Place sugar, water and grapefruit zest in a saucepan and stir over medium heat until simmering, swirling the pan until the sugar is completely dissolved. Remove from heat and let it sit until cool. Stir in the grapefruit juice and Champagne and mix well. Strain mixture and place strained liquid into glass dish (a Lamington tray works well). Freeze until almost hardened, about 1½ hours. Remove from the freezer and use a fork to scrape over the surface and place back into the freezer. Repeat this process every so often for three hours (2-3 times) until granita is light and fluffy. Fork again just before serving. Spoon into chilled Champagne saucers and serve immediately.
