A Message from your General Manager It’s early June and unlike prior years the staff is not experiencing the usual lull to catch our breath following a huge Memorial Day weekend. And we are good with that…we actually prefer the continued action! We again saw record participation at all of the social events over the weekend. In our efforts to “serve all,” we moved Saturday and Sunday’s big events (Lobster Bake and Burgers & Beach Music respectively) outdoors under a large tent and were blessed with beautiful weather. The need for nourishment and refreshment was strong, and seemed to be fulfilled with lots of beer and wine, smoothies, lobsters, burgers and grilled fish sandwiches, the occasional margarita, and lot’s of ice cream with the kick-off of “the island scoop” for the summer! Serving close to 500 for “Burgers & Beach Music” and the start of Kids Camp are two clear indicators that life on F8I is “hyper normal.” While the “official” results of this year’s board of director’s election are unknown at this press time, I think it is pretty safe to congratulate Austin Stephens as your newest board member. Also, thank you to Valerie Gammage and Phil Waugh for agreeing to serve second 3 year terms. I am grateful to Steve Williams for his support and guidance to me, and his service to the club over these past six years. It has been a pleasure working with Mr. Williams. As I put the finishing touches to this article for the July newsletter, the Annual Member Meeting and Father’s Day are right around the corner. These two occasions, especially this year, remind me of how fortunate we are, and me in particular, to be on this beautiful island. Partaking in, and providing to a very proud and supportive membership. makes all of our jobs more than worth the effort. I am proud of my “yacht club children” ----- my staff, and privileged to be a part of this family. It’s now prime time on Figure 8 Island! In speaking for “all my children,” we hope to see you ALL, soon and often over these precious few summer months.

LAUREL PHILLIPS Lifeguard

Laurel has been on deck with the Yacht Club for the past 5 years as a lifeguard and is our July staff spotlight! Club-famous for her pool deck dance moves and contagious smile, Laurel is a vital part of our Figure 8 team. A native to Wilmington, Laurel graduated from Laney High School and currently attends UNCW where she is majoring in elementary education and minoring in theatre. Eventually, Laurel hopes to become an elementary school teacher and, one day down the road, become a high school theatre teacher. When asked what she loves about working at Figure 8 Island Yacht Club, her immediate response was “The views! Being at the pool and seeing the sun rise every morning is just pristine.” You’ll be seeing a lot of Laurel at the pool this summer, but when she’s not at the club, you can find her doing improv, roller skating, and watching movies (most likely something by Disney or a musical). Next time you see Laurel, make sure to say hello and thank her for making Figure 8 an even brighter place to be!

How to Sign Up Email Beth Howard at ehh1@mac.com or call/text 910-398-3632 An email will be sent out each Friday to find out who plans to play the following Wednesday. The earlier you sign up, the more you are assured a seat at the table. The deadline to sign up is no later than Tuesday morning. (You do not need to respond if you are not going to play). Little Rules to Remember The group was formed to provide a bridge opportunity for players of all levels to meet new and old friends, play fun bridge and learn from each other. We do talk across the table and sometimes will even ask someone at an adjoining table for help with a bid. We score “Chicago” style, playing 4 hands at a table then rotating tables until we have completed 16 hands. Scores will be tallied per player after each 4 hands and then a final score after 16 hands will let us know our winner for the day.

ONLINE COURT & CLINIC RESERVATIONS F8IYC offers tennis court and clinic reservations through a system called Court Reserve. This reservation tool is available online through Court Reserve's website or by downloading the Court Reserve app! We have a monitor set up at the tennis shack that shows court reservations for the day. Members also have the option to show up and play but must check the monitor to see court availability.

CHEF'S CORNER

Summer Orzo Pasta Salad Ingredients

Preparation

2 lbs Orzo Pasta 1 English Cucumber, peeled and diced 1 Cup (8oz) Feta Cheese, crumbled 1 15.5oz Can Garbanzo Beans, drained 1 Pint Cherry Grape Tomatoes, halved 1 Red Onion, peeled and thinly sliced 1 Cup Fresh Sweet Basil, chiffonade 1/2 Cup Spearmint, stemmed and chiffonade 1/2 Cup Italian Flat Leaf Parsley, chopped

Cook the orzo according to package recommendation. In a Large mixing bowl, add the cucumber, tomato, feta cheese, garbanzo beans and red onion. Gently toss or stir to combine. Add the ingredients for the salad dressing to a stainless steel mixing bowl or blender and whisk or blend the ingredients together. Add the cooked, chilled orzo to the vegetables and mix well. Pour half the dressing over the salad and stir to incorporate. If serving immediately, sprinkle the herbs into the salad and gently stir to combine.

For the Dressing 2/3 Cup Red Wine Vinegar 2 Lemons, juiced and zested 2 Tsp Honey 1 Tsp Salt Ground Black Pepper, to taste 1 1/3 Cup Extra Virgin Olive Oil Chef’s Note: I suggest using half the dressing to see how it tastes. You can always add more as needed. I also like to jazz up this salad with julienne red bell peppers, diced zucchini and a handful or two of Arugula or just about any combination of vegetables, according to preference. A great accompaniment to this salad is grilled chicken cut into strips. 14
