A Message from your General Manager The 4th of July is an exciting time to be on Figure 8 Island, especially this “Independence Day!” After a couple of unusual years, again…. life, liberty, and the pursuit of happiness were on grand display on Figure 8 Island. The “7 Days of the 4th of July” kicked off with the traditional “Red, White & Bingo” on the Wednesday prior to Independence Day, and culminated seven days later with the Annual Food Truck Rodeo. With the exception of some threatening weather dampening our plans for Saturday (Beach Boogie Bash) and Sunday (Family Game Show Night), all events were well attended and good times were had by all. We broke bread and pulled BBQ, together! We chomped on “Yacht Dogs,” Frogmore stew and watermelon, and washed it all down with sweet tea and maybe something bubbly. I sensed we all felt privileged to be here; proud of our country and proud of our community. At the start of this year we kicked off our Student Financial Assistance Program, one of many new initiatives to strengthen our staff recruitment and retention efforts. I am pleased to report we wrote our first tuition reimbursement checks to three very deserving, hard working “student staffers.” Please join me in congratulating Daniel Beshai, Emma Overly and Heather Reynolds. I owe a tremendous debt of gratitude to the board for their guidance and support of the new "SFAP" mentioned above, and for allowing us the resources to perform to your high standards. I know I speak for the staff when I say the membership makes us proud to be a part of the F8 community. Speaking of community, I want to pay special recognition to our two “island partners” …the Figure 8 Island Homeowners Association staff and Figure 8 Island Realty. Both entities make substantial contributions to the welfare of our community, AND our Club, and all are a joy to work with! Finally, I would be remiss were I not to pay recognition to our club staff for their service over the course of these past few months. Each and every month this year has produced record operations revenues. The compliments we’ve received about the food, the service, the activities, and the care and conditioning of our clubhouse and grounds have been abundant and inspiring. For the staff, we thank you for your support, and for choosing to come back again and again, and have fun with us at your club. Summer is not over yet. We have lots of exciting activities planned over the course of August and September, so make your plans now to join us, AND invite lots of family and friends.

CHRIS SIERZEGA Culinary Team Member & Yacht Dog Crew Meet Chris, our August & September staff spotlight! Chris has been a part of our F8IYC team since October 2020 and has worked in both front and back of the house positions. Chris’s F8I resume is filled with different ways he has served our members, his most recent being a key member of the Yacht Dogs crew! Chris was born in North Carolina. He's lived all around the east coast, including Charlotte where he worked at a few different restaurants before eventually moving to our area. When asked what his favorite part of working at the Yacht Club is, Chris said “the wealth of experience shared between team members, both front and back of the house. Hearing stories of past personal and professional adventures has been something worth taking along with me in my own life and career.” When not at work, Chris can be found around town enjoying the scenery and history of the great Port City. He also indulges in his passion for music and food at home with friends. Next time you see Chris, say hi and thank him for being such a great asset to our crew!

Little Rules to Remember The group was formed to provide a bridge opportunity for players of all levels to meet new and old friends, play fun bridge and learn from each other. We do talk across the table and sometimes will even ask someone at an adjoining table for help with a bid. We score “Chicago” style, playing 4 hands at a table then rotating tables until we have completed 16 hands. Scores will be tallied per player after each 4 hands and then a final score after 16 hands will let us know our winner for the day.

ONLINE COURT & CLINIC RESERVATIONS F8IYC offers tennis court and clinic reservations through a system called Court Reserve. This reservation tool is available online through Court Reserve's website or by downloading the Court Reserve app! We have a monitor set up at the tennis shack that shows court reservations for the day. Members also have the option to show up and play but must check the monitor to see court availability. 10
RULES AND REGULATIONS SUMMER SEASON SUPPLEMENT Effective Memorial Day Weekend Through Labor Day Members, their spouse (or partner) and their dependent children under the age of 26, shall be defined as Club Members, thus entitled to the same privileges as the Member-Of-Record (M-O-R). Member's or spouse's (or partner's) parents, children 26 and older, and grandchildren shall be defined as Extended Family Members, and shall have limited access to the Club from Memorial Day to Labor Day as further explained below.
DINING Members of Record shall have priority seating in the Helm from Memorial Day through Labor Day between the hours of 6:00 and 8:00 PM. Likewise, when accompanied by a Member of Record, extended family members and guests shall enjoy the same privilege. When extended family members are NOT accompanied by the Member of Record between the hours of 6:00 and 8:00 PM, they will be allowed seating only in the dining room, by reservation, or on a first come, first serve basis at the Helm Bar or Deck. Guest use in the absence of a club member has been suspended until further notice.
SWIMMING POOL COMPLEX All individuals accessing the Swimming Pool Complex must sign in at the designated Sign-In area. All entrances and exits to the Pool area will have signs posted to inform everyone of the requirement for signing in. Sign-In requires the designation of the M-O-R or Extended Family Member, their Figure 8 Island Address, and the number of people accompanying them.
TENNIS At the discretion of the Head Tennis Professional and Club Manager, participation in the daily Tennis Clinics may be controlled on the basis of "type of member," (M-O-R, Extended Family Member, or Guest of M-O-R). At the discretion of the Head Tennis Professional and Club Manager, to ensure for an enjoyable playing experience, for tennis clinics, the number of participants may be limited.
HOUSE GUESTS All house guests must be accompanied by the Member of Record. Unaccompanied guests are not permitted at this time. As a reminder, all transactions, sales or services for Club use will be charged to the Member of Record's Club account. Club invoices are due in full by the last day of the month in which they are billed. Payments are not accepted from Member's business accounts, non-members or family relatives. 11

1 Lb Ground Beef ¼ Cup White Onion, minced ½ Cup Panko Bread Crumbs 2 Eggs ¼ Cup Milk 1 Clove of Garlic, peeled and minced ¼ tsp Dried Thyme 1 tbsp Parsley, chopped ¼ tsp Dried Oregano ¼ tsp Fennel Seeds, ground Pinch of Salt Pinch of Pepper
Preparation Place the ground beef in a mixer fitted with a paddle attachment. Add all the ingredients and mix until fully incorporated. If you prefer to use fresh herbs in place of dried herbs, double the measurements. I like to use fresh fennel tops that look similar to dill. If you’d like, you can soak the breadcrumbs in the milk first to soften them before adding them to the ground beef mixture. Roll balls into preferred size and bake in oven until brown.

2 - 10oz Tomatoes, crushed 1 - 10oz can Whole Tomatoes 2 Cloves of Garlic 1 lb Yellow Onion, finely diced 4 oz fresh Basil Leaves, chopped (or 1 tbsp dried) 1 oz fresh Oregano, chopped (or 1 tsp dried) .5 oz fresh Marjoram, chopped (or 1 tsp dried) 1 tsp Crushed Red Pepper Flakes 2 Cups Red Wine 2 Bay Leaves ¼ Cup Olive Oil 1 tsp Granulated Sugar 1 tbsp salt and ground white pepper 1 tsp Fennel Seeds, ground Parmesan Cheese Rind – Optional
Preparation Sweat the onions and garlic with the olive oil for several minutes until soft and aromatic but not browned. Add the herbs, sugar, red wine and crushed red pepper flakes. Let the mixture reduce by half. Add the tomatoes, fennel, and the parmesan rind. Taste and adjust the seasoning to your preference. Simmer for 20 minutes. Let sauce cool, cover, then ladle.
