What’s the best part about your weekend? The best part of my weekend is knowing I can wake up late as hell! The worst part of my weekend is waking up and knowing I have to catch a flight, I hate that.

If money wasn’t an option where would you go and why? I’m content with this planet, so I don’t wanna go to another planet. I don’t know how much it would cost to go to purgatory and just hang out for a little while, but for sure heaven.

And which country? So on this planet, the only place I would wanna go that I haven’t been already would have to be, well I really wanna go to Haiti but that’s an easy thing, I’ve been everywhere man, the only place I haven’t been to is Eithiopia. It’s historical, it’s what most people consider the origin of man. I wanna go to other parts of Africa too, like I wanna go to Sierra Leone where I believe a lot of our Jamaican slave ancestors are from, and some of those African places that slave history comes from, all of that. But definitely Eithiopia.

The first one was Guyana, I DJ-ed for the Easter event at the sea wall and that was a Black Chiney event and it was maybe ten thousand people. Guyana’s a poor country and the sea wall is a huge wall, I’m talking about super huge wall, and there were so many people wanting to see Black Chiney that you could see them somehow scaling this wall, that’s like three stories high and then just dropping off the wall, just jumping down. And we were just like ‘Oh my God, these people are going to kill themselves, just to see us.’ The second one, would be Trinidad carnival, the first year that I went and I played on a truck and I had DJed all day long, I had burned my right arm, third degree from the sun. When the music start touch you you just don’t realize that four hours just went by, you just out there in the sun. I was there in the truck and the sun is just burning on one side of the truck so my arm literally scabbed and of course as a brown man I’m supposed to put on some form of skin protection but I was just too into it. And at the end me and two of my bredrins sat on the truck, we were on the last truck that year and the last truck usually gets all the people who were on the early truck, they keep coming back and I just remember us sitting there and just looking at thousands and thousands and thousands of people. I’m looking at people until I can’t see people anymore. It was night and I don’t mean to get all dramatic but it was just one of those moments where it was like wow, I’m so glad to be alive and doing what I do. I just leaned back on the truck and looked into the stars and I could hear the music pumping and I just zoned out completely and it was just one of the best moments of my life. And the third one, the most important one, would be when I got to Ibiza, Spain with Major Lazer and we rented a villa on top of a mountain and the villa had this roof terrace and it had a 360-degree view and I was just in Ibiza and I cant believe that this yute from Molynes Road, how far I have come. To be somebody who just used to walk up and down Half-Way Tree selling cassettes, to now be on top of a building in Ibiza, looking at the entire island, it was just the best moment of my life.

The New Hope Zoo Have you taken a trip to the newly renovated Zoo at Hope Gardens? The Zoo of yesteryear was a staple in many of lives on weekends. Today, it has been transformed as if by magic into a state-of-the-art facility with new animals walking, crawling and flying in everyday -- the latest addition includes three zebras with monkeys and lions slated for arrival later this year. The grounds are immaculately manicured, animal housing upgraded and gazebos have been strategically set up across the compound to facilitate relaxing, meetings or small parties.


A $25m partnership with FLOW will yield a technology-driven Learning and Resource Centre which will be the centrepiece of the zoo’s education programme and will enable integration with the science curriculum in Jamaica’s schools.

Summer Caliente The ‘Summer Caliente’ is a signature drink brought to us by St. Aublyn Kidd of Top Shelf Professional Food & Beverage Service. Kidd, the 2010 Appleton Showcase champion has been in the professional bartending game for over 7 years and leads the team at Top Shelf. 1 oz Cocomania ½ oz Peach Schnapps 1½ oz Pure Country Cherry Juice ¼ oz Lime Juice 1 oz Appleton Genesis ½ oz Blue Curaçao Liqueur ½ oz Pure Country Orange Juice 3 thin slivers Scotch Bonnet Pepper Combine the first four ingredients in a shaker. Serve over ice in a cocktail glass. Mix and shake the latter four ingredients. Add to glass. Garnish with a scotch bonnet pepper.

Saltfish Fritters Recipe with a twist brought to courtesy of Chef Oji Jaja of Ashebre Modern Caribbean Cuisine.

1 cup saltfish (presoaked, blanched and flaked) 2 cups self rising flour 2 cups water 2 cups vegetable oil 0.5 cup onion (small diced) 0.5 cup red bell pepper (small diced) 0.5 cup yellow bell pepper (small diced) 1 tbsp garlic (minced) 0.5 tsp scotch bonnet pepper (chopped) 0.5 tsp fresh thyme (chopped fine) 0.5 tsp allspice (ground) salt (to taste)

In a heavy saucepan or deep fryer, preheat oil to medium. Combine flour, saltfish, onion, peppers, garlic, thyme and allspice. Add water, one cup at a time, until a paste is achieved. Adjust seasoning and let stand for thirty (30) minutes. Using a spoon or scoop, carefully drop one (1) ounce portions directly into the hot oil (be careful not to overcrowd the pan). Once a golden brown colour is achieved, remove from the oil and place on a paper towel to absorb excess oil. Store in a warm place without being covered. Serve with your choice of accompaniment.
