She developed an appreciation for simple street foods from Mexico, Europe and the Mediterranean as well as the Middle and Far East, and has combined that with a deep understanding of contemporary fine dining. Her formal chef training was in the classic French tradition at several of New York City’s finer restaurants. From New York she branched off to specialize in her own style, which she calls Global Eco-Fusion, evolved through experience in restaurants in Europe and Mexico. The menu changes weekly to reflect availability of fresh produce and ingredients. Hobos

pays attention to vegetarians, vegans, gluten-free and anyone with special dietary requirements. Hobos are as organic, clean and green as possible. They support green local farmers first and outsource as little as possible. They have contracted with seven local farmers to buy produce throughout the season.
