• Duck Race • Is the Humboldt River big enough to hold races? …it is if you’re a duck!

Duck races have been popular fundraisers in many communities worldwide for years. According to Wikipedia, a duck race is when money is donated to the sponsoring organization by adopting ducks. The ducks are dumped into a waterway and the first one to float to the finish line wins a prize for the person who adopted it. The Freestore Foodbank Rubber Duck Regatta in Cincinnati, Ohio was first run in 1994 and currently features more than 100,000 racers. In the last 20 years, the organization has raised $4.6 million, with $500,000 just last year alone. The Great Humboldt Duck Race in Elko is not quite that grand. Elko’s a bit smaller than Cincinnati and the Humboldt River is very much smaller than the Ohio River. However, what we lack in size we more than make up for in enthusiasm! The Northeastern Nevada Museum will hold the 10th annual Great Humboldt Duck Race again this summer. The exact date can’t be determined until just before the race, because of Mother Nature’s capricious attitude. The starting line for the race is the 12th Street Bridge and the finish line is traditionally at the Errecart

Bridge, although that did have to be moved to 9th street in 2014 because there wasn’t enough water in the river. That was the first part of June. Three years before, the race was the middle of August and the water was still very high and swift. This year, it may have to be held in May, if there’s even enough water then. The Humboldt River always makes for interesting race conditions. In 2014, the Museum teamed up with local 4H Clubs to help sell the ducks. They will be helping again this year.

The ducks are all numbered and put into the bucket of a front-end loader, furnished by Modern Concrete. Elko’s police department stops traffic on the 12th Street Bridge and the ducks are under-way, as they are dumped into the river. Through the years, there has always been a clear-cut winner, with one duck out-swimming the others and arriving at the finish line well ahead of its competition. The lucky person who purchased the winning duck receives $1,000. There are several ways to adopt ducks.

Spring greens and local summer vegetables are appearing in farmers’ markets. (There were moments this past winter when we wondered if this moment would ever arrive!) But, as tasty as these fresh harvests are on their own, it’s the marriage with a great dressing that makes them sparkle and satisfy our taste buds. A good salad dressing enhances the dressed food while awakening and tantalizing as many taste buds as possible with every forkful. You’ll find sour, salty, sweet, and bitter happening all at once in a well-composed dish. The dazzling burst of flavors makes vegetable and salad preparations alluring and satisfying.

OIL+VINEGAR

Oil + Vinegar, (like oil and water), don’t mix physically, but their flavors do in the perfect vinaigrette! They are the Yin and Yang of the salad world, opposing liquids that complement each other in perfect harmony on the salad plate.

THE PERFECT RATIO 3:1 With some vigorous shaking or stirring, oil and vinegar can combine for a few seconds in an emulsion, albeit, temporarily. The perfect balance of oil to vinegar is 3:1, three parts oil for every one part vinegar. From here, the type of oil, the kind of vinegar, and the choice of seasonings customize the experience. With so few ingredients involved in a good vinaigrette, choose the best quality available. Understanding a little more about oil and vinegar will assist your choices. Olive oil is the default standard for vinaigrettes and with good reason. Olive oil excludes a natural fruitiness and clean taste. EVOO = Extra virgin olive oil This acronym is common parlance for Extra Virgin Olive Oil and is from the first pressing of olives. Its acidity is less than 1% and has superior taste. Cold-pressed extra virgin olive

oil is preferable since heat processed versions can damage the delicate flavors. Know your olive oil terms “Virgin Olive Oil” and “Pure Olive Oil” are names for lower quality olive oils; avoid them in the kitchen. “Light” and “Extra Light” refer to the color of the oil, not a lighter caloric content. Lightly colored oils are often preferred out of habit, but light olive oils lack taste and many aromatic characteristics. Vinegar is a naturally fermented food possessing great dimension and versatility with its unique acidity. Vin aigar = sour wine Vinegar, whose name is derived from the French phrase, “vin aigare,” meaning “sour wine,” commonly starts as grape or other fruit juice and develops its acidity and piquancy courtesy of a two-step fermentation process.

OIL + VINEGAR + AROMATICS & HERBS + SA


Balsamic vinegar is a delicious, nearly magical, form of vinegar that has been aged to perfection. There are two types of balsamic vinegar, “Aceto Balsamico Tradizionale,” and “Condimento Grade.” The former begins with a reduction of grape juice to 30% of its original volume. Like other vinegars, the juice goes through fermentation processes, but differs from everyday. “Condimento grade balsamics” by virtue of a special aging process that passes the liquid through different wooden casks and a curing time that may be 12, 18 or 25 years in length. True “tradizionale balsamics” are made only in the Modena or Reggio Emilia regions of Italy and reflect their rarity in the price point. Using Olive Oil – Due to its high level of monounsaturated fats, olive oil claims a nutritional high ground. Used in moderation, (120 calories per tablespoon), olive oil is universally recommended as a substitute for butter, and other saturated fat sources. Experiment with different olive oils from different regions and different producers; you’ll notice and enjoy the differences. Other common cooking oils such as canola, soybean, or safflower, may also be used for vinaigrettes. These plants yield a light tasting oil nearly neutral in flavor. Other oils such as avocado, walnut, or other nut oils will lend their distinctive personalities to vinaigrettes.

WHITE WINE VINAIGRETTE Start here with your exploration of fresh dressings! Use this basic vinaigrette on fresh greens, steamed or roasted vegetables or grilled seafood. Savory, Tangy, Tart, Fragrant - Makes about 1/3 cup 1 SMALL SHALLOT 1 TABLESPOON BEST-QUALITY WHITE WINE VINEGAR, SUCH AS BANYULS 1 TEASPOON FRESHLY SQUEEZED LEMON JUICE, OR AS NEEDED KOSHER SALT 3 TO 4 TABLESPOONS EXTRA-VIRGIN OLIVE OIL

Save seasoning oils such as sesame oil or hot chile oils for flavorings and not as the primary oil for a vinaigrette.

BLACK PEPPER IN A MILL

OIL + VINEGAR Opposing liquids that complement each other in perfect harmony.

Put the shallot in a small bowl, add the vinegar and lemon juice, and season with salt. Let sit for 15 to 20 minutes. Mix in the olive oil. Season with several turns of black pepper. Taste, and correct for salt and pepper as needed. Use immediately.

Other common vinegars such as a fruity apple cider vinegar, or a delicate rice wine vinegar may also be used in vinaigrettes. White, distilled vinegar seems to be overly harsh for most salads. Lemon juice is a good substitute for vinegar just as vinegar is often a good substitute for lemon juice.

ALT & PEPPER = THE PERFECT VINAIGRETTE

VARIATIONS: GARLIC VINAIGRETTE: Add 2 minced garlic cloves with the shallots. PARSLEY VINAIGRETTE: Add 1 tablespoon minced fresh Italian parsley after adding the olive oil. SIMPLE MUSTARD VINAIGRETTE: Stir 2 teaspoons Dijon mustard into the shallotand-vinegar mixture before adding salt. CAPER VINAIGRETTE: Rinse 1 tablespoon capers, chop them, and add along with the shallots.

SPICED VINAIGRETTE: Add about 1 teaspoon of an individual spice or herb. The best choices with this vinaigrette are ground coriander, cardamom, celery seeds, chervil, fennel seeds or pollen, and mustard seeds. RASPBERRY VINAIGRETTE: Replace the white wine vinegar with raspberry vinegar, preferably low acid (5 to 6 percent, no higher) and add a pinch of sugar along with the salt. If the raspberry flavor is too mild, add another pinch of sugar, not to make it sweet but to heighten the raspberry flavors.

GINGER-MUSTARD VINAIGRETTE Sweet, Fragrant, Spice, Hot - Makes about 1 cup On the scale of nuanced to dramatic, this vinaigrette leans to the dramatic side. The strong flavors of fresh ginger, mustard, and Serrano pepper dominate the emulsion. The acidic component pairs apple cider vinegar with fresh lime juice. The resulting vibrant personality of this vinaigrette makes it a perfect partner for hearty slaws, steamed vegetables, noodle salads, and main dish preparations. We found that this dressing was even better the next day – the flavors had a chance to meld into something quite special.

Recipe Note: Salad dressings require the aromatics to be small pieces with a maximum quantity of flavor released. Grating with a fine hand grater is an ideal technique for preparing ginger, onion, or garlic.

KOSHER SALT 1 TABLESPOON DIJON MUSTARD 2/3 CUP MILD EXTRA-VIRGIN OLIVE OIL, OR 1/3 CUP ROASTED PEANUT OIL AND 1/3 CUP MILD OLIVE OIL BLACK PEPPER IN A MILL Put the shallot in a medium bowl, add the chile (if using ), garlic, vinegar, and lime juice, and let sit for a few minutes. Stir in the ginger and sugar, season with salt, and stir in the mustard. Using a small whisk or a fork, pour in the olive oil, mixing as you do. Add several turns of black pepper. Taste, and correct for acid and salt as needed. Use within 30 minutes or refrigerate, covered, for up to 2 days.

One of our favorite additions to the salad plate is a final sprinkle of flaked finishing salt. The large flakes provide an unexpected burst of flavor at random moments during the salad experience.

Q: How can I keep greens crisp and fresh with minimal wilting? A: A few key handling tips ensure fresh, crisp greens will reach the table. 1. Choose the freshest produce available. Whole lettuces are almost always fresher than bagged lettuces. 2. Keep them chilled in the crisper drawer. 3. Wash in cold water. 4. Use a salad spinner to dry the greens quickly. 5. Refrigerate washed greens, undressed, until ready to serve. 6. Apply vinaigrettes and dressings at the table. Adding dressing too early will wilt greens. 7. Serve leafy greens on chilled plates to retain crispness.

Q: What’s the best way to clean leafy salad greens? A: It’s essential that your greens are impeccably clean! Heads of lettuce capture dirt and natural garden bacteria as rain splashes and heads develop. It’s important for food safety to wash and rinse any freeloaders away. Remove the core from the lettuce head and separate the leaves. Immerse the leaves in cold water and swish around. Rinse the leaves under running water and place in a salad spinner basket. Spin the greens to remove the water and chill until ready to use.

Q: Why are ceramic blades often recommended when preparing produce? A: Ceramic blades are made from zirconia compounds fired at high temperatures. The result is a blade that is chemically inert, unlike a

Q: Are bagged lettuce mixtures ok to use? A: The “invention” of bagged lettuce has been great on the one hand, but with a few drawbacks on the other hand. Bagged lettuces have introduced us to a broad range of greens and flavors previously unavailable. Even though the bag may say “triple-washed,” it’s essential to wash the leaves yourself. This will minimize exposure to food-bourne diseases and help to freshen jet-lagged leaves.

Put the buttermilk, mayonnaise, crème fraîche, and mustard in a small bowl or small wide-mouthed Mason jar. Stir with a fork or small whisk to blend thoroughly. Put the onion and garlic in a small suribachi or mortar, season generously with salt, and use a wooden pestle to grand them to a paste. Pour in the lemon juice, swirl to loosen the paste, and add to the buttermilk mixture. Stir in the paprika, celery seeds, parsley, and chives and season generously with black pepper. Taste, and correct for salt as needed. Cover and refrigerate for 30 minutes to let the flavors marry. Use immediately, or refrigerate, covered, for up to 2 days.

Be a Part of the Arts Community Take Classes Offered by Local Artists at GBC

You and your family may be more accustomed to seeing art in our community now more so than ever before. You may not even be aware of it, or the many opportunities there are to become an artist yourself. Next time you are in your favorite place for a drink or treat, look around and see what art is displayed around you. You may be surprised by how many local businesses and organizations display art produced by local artists. The Great Basin College Art Gallery recently displayed “One is Silver, the other is Gold: Celebrating 25 years of Nevada Folklife Apprenticeships,” a traveling exhibit organized by Nevada Arts Council and “Jack Malotte’s Silkscreen Magic.” Beginning May 7, the gallery will display the “Spring Student Art Show,” featuring art published in the 2015 Argentum, Great Basin College’s art and literary magazine. If you frequent the downtown corridor, perhaps you’ve seen or visited The Western Folklife Center, Duncan Little Creek Gallery and The Elko County Art Club Gallery, which are sure to display art by locally and internationally recognized artists. Soon, summer will allow for more art-filled events to take place in our city parks and fairgrounds, including Art in the Park and the Elko and Lamoille County Fairs. While all these events and galleries foster education in the arts, you may feel motivated to become hands-on yourself, creating your own masterpiece.

From painting to metalwork, you can learn the process behind many pieces of art in classes offered at GBC throughout the year. Great Basin College Continuing Education offers onesession and weekend art courses for beginners to advanced students. Local artists who are nationally recognized for their craft and talent instruct the workshops at Great Basin College, including jewelers Kristen Orr and Gail Rappa, and painter Lynne Kistler. This early spring and summer, Continuing Education is offering “Learn Chalk Pastels” on May 23 and June 2 -3 by local artist, Lynne Kistler. On June 27-28 Gail Rappa will teach a “Weekend Jewelry Sampler.” Students will complete at least three wearable projects to take home. The workshop will cover the basics of fabrication, sawing, forming, wire wrapping, soldering and cold connections with metals. Beginners are welcome. “Rappa will also be teaching an intensive course on July 18-19. Kristen Orr will be teaching “Glass Bead Making” on July 15-16. Students will handle torches to create the glass bead bracelets. Art classes are also offered during the academic year for credit by instructor and local artist Patty Fox. Eight Facts About Mountain Goats You Should Know 1. MOUNTAIN GOATS ARE ACTUALLY NOT GOATS. Mountain goats are not in the same genus as goats. In the bovidae family, mountain goats are associated with antelopes, gazelles and cattle. 2. HEAD TO THE SKIES IF YOU’D LIKE TO SEE ONE. Mountain goats live in alpine and subalpine environments. In the highaltitude environments, sometimes above 13,000 ft, they are the largest mammal. The high elevation protects mountain goats from predators. In the summer, they’ll stay above the tree line and migrate to lower elevations in the winter.

Did you know that within Nevada, mountain goats are found only in Elko County? The Ruby Mountains and East Humboldt Mountains are home to a small population of mountain goats (Oreamnos americanus). Not native to Nevada, they were introduced into the Ruby Mountains in the mid 1960’s with the release of 12 goats obtained from Washington State. In 1981, 11 goats, also obtained from Washington, were released into the East Humboldt Mountain Range (source: NDOW). Sure footed and agile, the mountain goats can often be seen on the high mountain peaks and canyon walls of these two mountain ranges. 3. JUST NORTH AMERICA FOR MOUNTAIN GOATS. Mountain goats are only found in North America. In the high reaches of the Rockies and Cascades, mountain goats bounce around the rocks. In Canada, you could see one throughout British Columbia, Alberta, and Yukon. Alaska is home to mountain goats in Southeast Alaska and the Chugach Mountains. Nine western states including Nevada have populations in many mountain ranges. 4. INTERESTING NOMENCLATURE ALL AROUND. Most people know that baby mountain goats are “kids” and males are “billies” but did you know a female is a “nannie”? 5. KIDS (HAVE TO) GET THE HANG OF IT PRETTY QUICKLY. After a day or so of being born, young goats are scrambling around rocks with their mother. 6. THE SECRET IS IN THE HORNS. Just shy of their two year birthday, you can tell the age of a mountain goat by counting the rings on their horns. Not unlike trees! 7. MOUNTAIN GOATS ARE WITH US FOR ABOUT A DECADE. The average lifespan of a mountain goat is 9 to 12 years. 8. WATCH OUT – MOUNTAIN GOATS CAN BE AGGRESSIVE. Nannies can be protective of their territory and food and will fight other nannies. In the mating season, males will fight with each other to mate with a female. Mountain goats may also become hostile towards humans. 2011 TREFETHEN MERLOT 2011 got off to a late start with a cool and wet spring. A surprise rain in our typically dry June was followed by a more seasonable, but cooler summer. We were delighted by a very warm and dry September. October was a rollercoaster with some rains early on and then, thankfully it was dry and warm. Being 100% estate grown, we opted to drop fruit affected by the colder weather and produce our wines from only the remaining ripe and well-balanced grapes. Thus, our yields were considerably smaller and the grapes rich in flavor. WINE | Begins with rich savory aromas of cherry, cinnamon, cedar & leather. The mid-palate brings lush flavors of ripe raspberry & molasses, finishing with a lingering hint of pepper. Bright & complex, this is a balanced wine that will continue to develop. NATIONAL HOSPITAL WEEK MAY 10-16 From May 10-16, 2015, we will recognize National Hospital Week, an annual commemoration that celebrates the people, organizations and technologies that make trustworthy, reliable healthcare available in communities nationwide. A healthcare tradition since 1921, National Hospital Week commends the contributions that hospital physicians, nurses, staff, and administrators make in big cities, small towns and rural regions across the United States each day. This year, the team at Northeastern Nevada Regional Hospital (NNRH) will unite with the American Hospital Association and 5.6 million healthcare workers from around the county to reflect on our work with a common theme: “Where Miracles Happen Every Day.” Northeastern Nevada Regional Hospital is delighted to be part of this celebration. Since 2001, Northeastern Nevada Regional Hospital has served northeastern Nevada with a singular mission of making communities healthier. Estee Cole is a mother of two teenage girls that has lived in Elko for 20 years. Formerly a dental assistant she decided to quit her job and pursue her passion for making homemade beauty products. She has been in business for just over a year now. I love coaching and chose to continue out in Spring Creek even after I moved to Elko.” Chuck has 8 kids’ total, 7 daughters and one son. “I have a big family.” “I grew up in Las Vegas and moved here to give my kids a better life and give my kids a different environment to grow up than I did.” Chuck said he loves coaching and enjoys being a part of the growth and being able to watch the girls succeed. “Being a Director gives me the opportunity to not only watch my own team grow but every boy and girl involved in PAL.”Throughout the interview Chuck was very adamant about how he wanted to leave an impression on the girls and guide them towards a brighter path. He broke it down to me using three words throughout our conversation; Teamwork, academics and dedication.

“I want to stay involved and keep providing these opportunities. Let them have fun, learn, and watch them succeed in life and utilize what they’ve learned.” Chuck brought up that there is a limited amount of things to do here and that providing things like PAL Basketball and volleyball are very crucial for our youth, although Elko is getting bigger we are still a rural area. Growing up in Spring Creek I can relate closely to his testament, it’s activities such as Pal Basketball, PAL volleyball, flag football, tackle football, T-ball, softball and baseball that keep our kids active and teach them to work together, teach them to accept constructive criticism and strive to be better, to work harder, to work as a team. Chuck also brought up the importance of academics and how he constantly is encouraging the girls to keep sports and grades balanced. “I always tell the girls they can’t be a great athlete if they don’t try academically. Grades are important too.” “If you don’t work your butt off you’ll never get it” Chuck says his teams have always been close knit and stick together from the beginning (4th grade) to the end of their years in PAL (8th grade) “That’s how you win, not only on the score board, but by sticking together as a team” He said it’s always hard to say goodbye to his teams but that he sees them go on to high school and carry on with basketball or choose other sports and utilize their skills. “I try as often as possible to go watch games and see how the girls are doing. My daughter played on Spring Creek’s basketball team last year but was injured and unable to play this year so I try to


stop in and watch when I can.” Some of chucks team members have even come back to help with PAL and volunteer.

is very supportive. “Many Saturdays are spent with my kids and wife there helping me with what needs to be done including running books, managing the clock and even refereeing.”

“The girls will always be part of the team.” Passion and drive are things that some lack, Chuck is not a part of those few. He loves being a part of the PAL association and when they needed a director a year ago he stepped up and tackled the challenge. Chuck is a shifter at Newmont and works 12 hour shifts “Everybody contributes.” He expressed that he receives a lot of support from his co-workers “If I’ve ever needed to leave a little bit early for a game they’ve help make it work, and some have even got involved with helping officiate.” His family also

Chuck is very invested in PAL and in ensuring our youth is provided with an outlet that instills values that will last a lifetime. This, in itself is a gift that cannot be repayed. I can’t express how grateful we are to people like Chuck. I asked Chuck how long he would continue to volunteer and he said; “My youngest daughter is 2 so I’ll be there a while.” Chuck you are a Good Neighbor and we appreciate all of the time you’ve spent and lessons you taught.

Mark your calendars for Saturday, May 2, 2014 from 5:30 – 8:00pm to partake of the offerings of Just Desserts at the Elko County Library! Are you ready for Spring? Do you want to start the warmer weather with a great event? If you answered “yes” to those two questions then you must be ready to attend the 27th Annual Just Desserts fundraiser hosted by The Friends of the Elko County Library! This is the 27th year that the Friends have held the annual fundraiser, and we are anticipating it to be the best yet. Tickets for the event are $15 and can be purchased at the Elko County Library prior to the event or at the door the night of the event.

wine, balloon rides, blankets, pictures, guns, and jewelry are among some of the many items that the Friends have auctioned off in past years. Items donated are available for viewing now. As usual, there is a wide variety of items to please everyone! The silent auction opens at 5:30 and will close at 7:30 the night of the event. This year’s lineup for entertainment includes the local band Southwind and Singer/Musician Debby McDaniel. Southwind’s trio has been playing together for about 20 years and have entertainment Just Desserts attendees for a number of years. They have recently recorded their first CD, “It’s About Time”! Debby McDaniel has been performing in Nevada for the last thirty years. Her repertoire covers music from the ‘50s to now, both country and contemporary.

and their ticket will be entered into the drawing. The Friends of the Elko County Library is a volunteer group that was formed in 1990. The Friends meet every third Tuesday at noon at the Elko County Library. The Friends have raised and donated almost $200,000 to the library since its inception. These funds have been used to purchase books for adults and children, magazines, reference materials, audio books, downloadable materials, and furniture such as shelving. Funds have also been used to purchase public computers, assisted in the purchasing of the bookmobile and the operational costs of the bookmobile, adult and children’s programming as well as other library needs. The Friends of the Elko County Library have a scholarship that is awarded each year in memorial of Julia Doren who was a member of the Friends Group. “Without the Friends of the Elko County Library, the library would not be able to provide all the services available to the community. The library is extremely thankful for the support it receives from the Friends”.

j Learn about Dutch oven cooking. Listen to the hammering of the blacksmith. Visit a traditional Shoshone summer camp. Other events include: Historic firearms exhibit, Native American lifeways, black powder demonstrations, gold panning, Dutch oven cooking, and 30 re-enactors and living historians that bring pioneer history to life. Kick up your heels on the evening of May 30, 6:00 – 8:00 p.m., for a traditional pioneer dance. Throughout the summer history interpreters at the California Trail Interpretive Center will present daily programs featuring pioneer skills that would have taken place while on the Trail. Many of these are hands on including biscuit making, flint and steel fire starting, beginning crocheting, tomahawk throwing, knife sharpening and more! And… chores for the kids – water carrying, clothes washing, and cow pie fetching. There was fun in the evening for all ages – horseshoes, cat’s cradle, hopscotch and others. Life wasn’t all work at the pioneers traveled west! The California Trail Interpretive Center is located eight miles west of Elko on I-80, Hunter exit 292. The Center is open Wednesday - Sunday, 9:00 a.m.- 5:00 p.m. Admission is free.
