summer Summer livin’, happened so fast. Like a late-into-the-night chat with a dear friend, summer never lasts quite as long as we’d like it to. But we’re determined to make the absolute most of it, whether we’re in the city, in cottage country or even abroad. Our Summer Living issue sets out to inspire sunny style that will emanate warmth and joy long after the season is over. Take advantage of your outdoor space like a designer – two pros give us a glimpse into their exterior “rooms” and how they use them. Erin Feasby’s cleverly compartmentalized backyard in Etobicoke, Ont., suits the needs of kids and adults alike (“Fair Play,” page 56), while Vancouverite Ami McKay brings a relaxed West Coast attitude to entertaining on her waterfront deck (“Barefoot Fancy,” page 60). I want to let you know how much I enjoyed the April 2018 issue. After a winter of white and grey palettes, it was such a nice surprise to see the cover filled with lovely hits of pink. INGREDIENTS MAKES 16 SQUARES

Cherry Sauce 12 oz pitted sweet cherries ½ cup granulated sugar 2 tbsp amaretto (or water) 1 tbsp cornstarch 1 vanilla pod, split, seeds scraped Crust 5 oz gingersnap cookies ½ cup roasted unsalted almonds ¼ cup dark brown sugar ⅓ cup melted butter Filling 16 oz cream cheese, at room temperature ½ cup granulated sugar ½ cup sour cream 2 large eggs 2 tsp pure vanilla extract

tip To switch up the flavour of the crust, swap the gingersnap cookies for graham crackers or shortbread cookies.

DIRECTIONS Preheat the oven to 350°F. Line a 9" square baking pan with two sheets of parchment paper, crossing them so they run along the bottom and neatly up and over the sides of the pan. To make the cherry sauce, place the cherries, sugar, amaretto and cornstarch in a blender and purée until smooth. In a medium saucepan, cook the fruit mixture with the vanilla pod and seeds over medium heat, stirring constantly with a rubber spatula until thickened, about 4 minutes. Discard the pod and allow the mixture to cool. To make the crust, place the cookies, almonds and brown sugar in a food processor and pulse until the almonds are finely ground. Add the butter and pulse to combine. Remove from the food processor and press into the bottom of the prepared pan. Bake for 10 to 12 minutes. To make the filling, beat the cream cheese in a large bowl until light and fluffy. Add the sugar, sour cream, eggs and vanilla and continue beating until smooth. Pour the filling over the crust. Drop ½ cup of the cherry sauce by the teaspoonful over the filling. (Reserve the remaining sauce in the fridge for serving.) Using a knife, gently swirl the sauce into the filling in a decorative pattern. Bake for 25 to 30 minutes or until the filling is just set (it should be slightly jiggly in the centre). Allow to cool at room temperature and then refrigerate for at least 4 hours or up to overnight before using the parchment paper flaps to lift the cheesecake out of the pan; slice into 2" squares and serve with the reserved cherry sauce.

DREAM MAKER If you could be a fly on the wall when Victoria is discussing a new decor project with a client, you’d never hear her ask, “What do you want your space to look like?” Instead, she queries, “How do you want it to feel?” “Interiors are more than a picture – they’re interactive,” says Victoria, who also examines lifestyle priorities and adapts her designs accordingly. “I always ask for three words that describe how my clients want their home to feel at the end of the day.” The most common answers? Comfortable, timeless and calm: aesthetics the designer has certainly mastered. “I interpret a client’s wishes – their dreams – and work to make them a reality.”

NURSERY TALES “My mom hates this story, but I swear I remember looking out of my crib and not liking my nursery floor – a sparkle-patterned pink tile,” says Victoria of design being in her blood. “I’ve always been aware of how spaces can make you feel.” Case in point: A visit to the Dorothy Draper-designed cafeteria at The Metropolitan Museum of Art in New York City when she was young. “I remember thinking how incredible it felt to eat lunch there.” From there, she began her decor journey, much to her parents’ chagrin. “I used to move the furniture around all the time, and I’d hear my father come in and say with a sigh, ‘Not again.’”

heaven on earth In Victoria’s Palm Beach home, 11-foot-high walls of glass slide open, blurring the line between indoors and out. “I wanted it to be completely modern and open to nature,” says Victoria. “We kid that it’s our cabana.”

1. MESH & FABRIC Plastic-coated textiles stand up well to the elements. Clean them regularly with a softbristled brush and dish soap; rinse fully and allow to air-dry. Standing water can cause mildew to develop; eradicate it by spraying with a mild bleach solution and rinsing. 2. RATTAN & BAMBOO When lacquered, these sustainable natural materials can be used outdoors, but cover or keep inside when not in use. Clean as needed with a mild soapy solution; promptly wipe dry with a clean cloth.

3. POWDER-COATED METAL When plated with plastic, metal becomes weatherproof. Wash frequently with a microfibre cloth and soapy water; hose down and air-dry. To avoid rust, keep an eye out for nicks and scratches, and treat promptly with touch-up paint. Handle tough stains with a wax or cleaner intended for cars. 4. RESIN WICKER These woven plastic cords are totally waterproof but can trap dirt. Wash regularly using a soft-bristled brush and a non-foaming cleanser; hose down and air-dry.

We've all been there. The in-laws are coming, but the house isn’t ready for company. You frantically sweep and dust, fluff pillows and shove things in drawers. Four years ago, this all-too-familiar scenario played itself out in the extreme for one West Vancouver family, who bought a house with a visit from outof-town relatives just around the corner. The 4,015-square-foot four-bedroom new build was sufficiently clean, of course. But it lacked furniture and accessories – not to mention the lived-in feel that makes a home inviting for a family and their guests. Seven weeks shy of the visitors’ arrival, the homeowners accepted that they were well out of their depth and called in designer Nancy Riesco, who plunged right in. Strapped for time, Nancy had to be pragmatic. The designer worked with and enhanced what the house had to offer. That is, neutral walls (only one got a lick of charcoal as an accent), grey-washed wide-plank oak flooring on the main floor (which Nancy copied on the previously carpeted upper level) and simple drapery throughout.

Nancy took an equally practical approach to sourcing furnishings. The homeowners gave her four inspiration photos, which shared a black and white scheme. “So I took that and ran,” says the designer, who literally rushed to her favourite shops and bought up every stocked piece that fit the bill. “If something was a disaster, I would have just taken it back.” Luckily, the elements of good design – balance of scale, pattern play, textural juxtaposition and more – come as second nature to this veteran of the trade (Nancy’s been in the biz for more than 25 years), so every pick proved pitch perfect. “We dashed like mad crazy people, but we got it done,” the designer recalls. When presented with the space, the clients felt instantly at home, settling in just in time to welcome their guests – the very next day.

LEFT Before this reno, designer and homeowner Jillian Harris had always bought budget-friendly prefinished cabinets at big-box stores, but this time she splurged on professional help and hired Clarice Maidment of Home Image Interiors to plan and design them. “Clarice measured everything, from how long my wrapping paper roll was to how many coats we needed to fit in the closet,” says Jillian. “Then, she tweaked the plan to fit it all perfectly.”

J

illian Harris’s laundry room is as pretty as Grand Central station – but only slightly less busy. The bustling hub also acts as a mud room, coat closet, dog-feeding station, gift-wrapping centre and storage spot, plus a passageway to the garage, pantry, powder room and one of the back doors. While it’s the epitome of funtional, it’s also effortlessly charming – a lot like the bubbly co-star of HGTV’s Love It or List It Vancouver and W Network’s Jillian and Justin herself. Washed in a serene pale blue and accented with luxe marble and vintage elements, the stunning space almost makes doing laundry fun. It’s so pretty that you’d never guess the inviting decor totally breaks the mould when it comes to Jillian’s style. In fact, the designer, based in Kelowna, B.C., is famous for creating white-on-white interiors. “My fiancé thought I was crazy to do something so different here. He was terrified I’d regret it,” she says with a laugh. STYLEATHOME.COM JULY 2018

But Jillian was undaunted. “Prior to renovating this house, I got a lot of flak from my Instagram followers for using too much white,” says the Alberta native, who shares the 1980s house with her fiancé, Justin Pasutto, their son, Leo, who turns two in August, and their boxer, Nacho Cilantro. “So I said, ‘You know what? I’m going to go for something new!’” To create the nostalgic look she wanted for the hard-working room, Jillian paired Shaker-style cabinetry in robin’s egg blue with retro accents like gold-toned hardware, a farmhouse sink with a gooseneck faucet and plenty of wicker baskets and lidded glass canisters. Even though it’s a departure from her usual all-white look, it works. “Our house is a little vintage, a little rustic Cape Cod,” she explains. “This room fits in thanks to the pale blue and gold, the louvred doors and the shiplap walls.” Though Jillian loves the results, she does have one regret – which involves the kitchen, just upstairs from the laundry room: “I wish I’d put a pullout hamper in the kitchen,” she says. “I end up throwing dirty clothes down the stairs and having them pile up on the floor outside the laundry room.” Even the experts learn from their mistakes.

LEFT & BELOW The private leafy backyard allowed Joanna to forgo window coverings in most rooms, including the kitchen. With the homeowners’ input, the designer planned out custom cabinetry with everyday living in mind. “The top drawers are shallow for storing cutlery, utensils and napkins, while the bottom ones are deeper to house pots and dishes,” she says. The white finish creates an expansive feel, while the hardware adds definition. “I chose black pulls and handles because they give the eye a focal point,” says Joanna. The stainless steel range also helps break up all the white. Picking up on the appliance’s silvery hue and referencing the living room’s fireplace for continuity, a marble-look porcelain slab backs the range wall. At the other end of the room, the framed piece by artist Toni Onley was the initial inspiration for introducing touches of blue throughout the house. A STROLL THROUGH Vancouver’s newly revitalized Kensington-Cedar Cottage neighbourhood is an apt prelude to visiting one of its coolest houses. Like its vibrant buzzy surroundings, this newbuild home is contemporary, inviting and familyfriendly – adjectives that please designer Joanna Vagelatos. “When I first saw the plans for this 2,700-square-foot house, I imagined a space that was welcoming yet streamlined,” she says. “Sort of modern and warm at the same time.”

The designer worked closely with the homeowners, a couple with two small children, to get the balance right. “One of the owners loves design and was fully involved in every aspect of the build,” says Joanna. “Her vision to keep the space bright and white became mine.” The pair began by making minor tweaks to the first floor’s open plan. “In the living room, there were small upper windows on either side of the fireplace,” says the designer. “It may seem counterintuitive to remove windows, but doing so achieved STYLEATHOME.COM JULY 2018

a cleaner look and allowed us to maximize storage by building a floor-to-ceiling cabinet on one side that now hides the TV and its components.” The other side was fitted with a floating shelf and a built-in storage bench that keeps the kids’ toys and games out of sight. In the kitchen, they added an island, which was built to both satisfy aesthetic desires and accommodate the wear and tear of little ones. “With kids in the house, an all-white island was a recipe for disaster – it would show every little kick and scuff mark,” says Joanna. Not wanting to sacrifice white, she came up with a savvy solution. “I created a recessed panel on the front of the island, where the children sit, and covered it with the white oak used for the floorboards but applied in a herringbone pattern. It worked out perfectly.”

Mindful of maintaining the sleekmeets-laid-back dynamic, Joanna chose Benjamin Moore’s Simply White for the walls, saying, “It’s super clean yet has a slightly warm undertone.” For contrast, the owners’ inherited art collection suggested the introduction of a cool colour. All of the works have blue tones, which subtly wound their way into every room. In the living area, it’s cornflower-hued toss cushions; in the master suite, it’s a dreamy azure wallcovering. Blue is even an undertone in the show-stopping marble-esque porcelain slab used in the kitchen backsplash and on the fireplace’s dramatic facade. “We planned on using real stone on the fireplace, but when we saw this look-alike, we fell in love,” says Joanna. Its veining and generous proportions create a spectacular effect that’s luxurious and livable, an equation the designer nails. “I’d describe this house as transitional modern. It’s got classic and contemporary features, but it’s still casual enough for a young family. Oh, and it’s pretty cool, too.”

RIGHT The master bedroom’s peaceful wall mural brings the blue accents upstairs. “The owners love skiing, so this paper was perfect. When large limbs from a troublesome

backyard maple tree started to fall on their house, designer Erin Feasby and her husband, Sam, took it as a sign that it was time to take the tree down and finally create an outdoor retreat that would meet their needs. There wasn’t much to the yard of their Etobicoke, Ont., home, apart from the huge tree, a stretch of grass, a tired wooden deck and some nondescript interlocking stone. What they wanted was an area that would extend their living space into the outdoors during the warmer months but also be a fun spot for their three young children, Max, 7, and twins Emmy and Lola, 5. The result is a stylish two-level deck, equipped with zones for cooking, dining and hanging out that doesn’t sacrifice any enjoyment for the little ones.

LEFT Family meals are a breeze at the long dining table. Bench seating on one side makes it easy for kids to come and go between games of soccer on the lawn. The table was finished in super-durable waterproof marine paint, so cleaning up is painless and spills are never an issue. In the end, they decided a hot tub was the more practical option, since their family would be able to use it year-round, and it would require way less maintenance. Champagne and ripped jeans, fine food and raucous laughter, bone china and bare feet: When the duo behind Pure Design, a Vancouver-based design firm, throws a party, it’s all about bringing out the best and enjoying it in the most effortless way possible. Because even though Ami McKay and husband Don Thomas entertain their closest friends (a.k.a. The Usual Suspects) almost monthly, they want each and every shindig to feel elevated, organic, intimate and fun – it’s the West Coast way. Here’s how they do it. 2 SUN’S OUT, FUN’S OUT

5 SEA TO TABLE

“Vancouverites tend to take advantage of every dry and beautiful day they get,” says Don. Sometimes, that amounts to an impromptu party, with favourite neighbourhood friends enjoying cocktails and feasting on local fare. Other times, it’s a relaxed catered meal or a boat ride to a nearby island for dinner. The most consistent aspects of this crew’s almost-weekly hangouts is the loud laughter and camaraderie.

Serving up fabulous fresh eats is essential to Ami and Don’s entertaining style, so whether or not they’re doing the cooking themselves, the menu will always feature whatever’s in season. Prep work involves a trip to the local farmers’ market and, when it’s spot prawn season, a visit to the sea. “Spot prawns are a delicacy unique to the West Coast and they’re bountiful in front of our house, which is right by the Pacific Ocean,” says Don. “We can see the buoys for our traps from our deck.” Once the prawns are plucked right from the water, he sautées them in their shells with garlic and white wine – it’s one of his specialties. “Then, we eat with our hands and make a mess,” says Don.

3 FLOOR SHOW To keep this catered afair feeling casual and cozy, Ami and Don chose to serve dinner on a low table and seat guests on plush floor cushions surrounding it. Under the cushions, layered Moroccan rugs ofer a comfy, colourful, bohemian flair that inspires guests to sit back, relax and dispense with fussing about formalities so they can focus on good food and great fun.

4 EYE CANDY The floor surrounding the table makes such a bold and colourful statement that Ami chose to set a minimalistic tabletop. Instead of formal place settings, flatware sits atop the plates with sprigs of just-picked greenery. The real eye candy comes from a spattering of fresh flowers and gorgeous glassware. “I like to collect glasses, plates and napkins so my dinner table looks diferent every time,” says Ami, who recommends visiting the sale sections of your favourite stores to amass enough to mix and match. And most importantly: “Use the pieces you love best and create memories with them rather than letting them sit in a cupboard and collect dust!”

6 BAR CODE When it comes to stocking the bar, Ami and Don only have one rule: Don’t run out. They always stock up on ingredients for a signature cocktail and a special wine or two. “We want to have enough to accommodate the mood. If everyone is enjoying a certain wine we’re serving, we don’t want to run out of it and force people to move on to another drink,” explains Ami. T

he design inspiration for this cottage far exceeded the usual mood board. Forget paint chips and fabric swatches – it was all about dirt paths strewn with pine needles, arrestingly blue lake water and rugged outcrops of pink-veined igneous rock. “The whole catalyst for this project was nature and its awesomeness,” says designer Cory DeFrancisco, principal of Muskoka Living Interiors. “It grew organically. I visited the property, sat on the amazing lot and just stared at it. I knew right away that the cottage had to be integrated into the rocks. It was dictated by the land.” Cory drew up plans for a 7,500-squarefoot cottage that would respect the mature two-acre waterfront setting. “The property has its own island and, at some points, the cottage would be only 35 feet from the water,” he says. “It was critical that it fit seamlessly within the landscape.” The structure also had to merge with Cory’s aesthetic vision. “I wanted a contemporary take on traditional coastal living,” he says, adding that his aim was to stay true to the macro features of traditional waterside architecture but to also include a modern spin in the micro elements. Cory designed the cottage’s doublegabled facade – a macro element – to speak to tradition, while the windows – a micro element – are fresh and current, thanks to both their scale and the sheer number of them. He finished the structure with copper eavestroughs and downspouts, painted cedar siding and cedar shake shingles for a meticulously crafted exterior that feels natural and inviting. It was important to continue that energy inside. “The interior is highly detailed,” says the designer. “The white oak floors were installed raw and then

hand-finished. There are antiques imported from Europe and original artwork from Los Angeles.” Yet it’s the kind of space you want to walk around in barefoot. The open plan of the first floor has a make-yourselfat-home feel that’s furthered by casual features like slipcovered furniture and sliding barn doors. The mostly white interior gets contemporary contrast from dark elements. Black pendant lights run along the width of the first floor and, in the kitchen, deep brown paint punctuates the upper cabinetry and island base. Perhaps the most graphic use of dark tones is in the windows. “Their black hue, meant to mimic the modern look of steel, literally frames the view of the lake and trees, almost bringing them into the room,” says Cory. The effect is only fitting, given that nature planted the seed for this spectacular cottage. LEFT A contemporary pendant light illuminates an antique dining table, which Cory imported from Belgium. “Mixing natural tones, textures and various eras pulls the dining area together,” he says. “The chairs are slipcovered in machine-washable Belgian linen, so they’re easy to keep clean.”

hen destructive Hurricane Sandy came barrelling up the eastern U.S. seaboard in 2012, a young family’s Bay Head, New Jersey, beach house suffered critical damage. The New York-based family had owned the dwelling for only one month – and had spent only two weekends there. They were devastated, but determined to return it to its former glory so they could start building new sunkissed memories. Enter a trusted resource with whom the family was already familiar: interior designer Susana Simonpietri of Chango & Co. She teamed up with contractors to reconstruct the beach house on a larger scale and transform it into a five-bedroom 2,118-square-foot raised bungalow-style retreat. “I’d worked with the family on their primary residence,” says Susana, “so I easily understood

their mandate: They sought a comfortable getaway that felt relaxing yet fun.” It took one and a half years of hard work, wrestling with mould that had set in and dealing with insurance companies. But now, the quaint cottageinspired architecture encompasses sloped ceilings, cozy bedrooms and an open-concept main living area that sets the scene for this casual coastal space that’s just a block away from the Atlantic Ocean. To honour the seaside locale, a white-painted shiplap envelope was enlivened by punchy nautical patterns and fresh bold hues – evidenced by the bright red lobster-patterned wallpaper in one of the bathrooms, the blue-painted front door and the vivid toss cushions in the guest rooms. “Throughout the house, we maintained a contemporary nautical look that focusses on a primary palette against a crisp white background, set off with shiny polished nickel fixtures and rope accents,” says Susana. Natural materials, from the bleached-wood floors to the jute rugs to the woven baskets, temper the bolder elements, warm up the space and make it feel like a place you can comfortably enter after a day at the beach. No rooms are off-limits – which is perfect for this family with STYLEATHOME.COM JULY 2018

two young daughters. “Jute and hardwood can withstand wear and tear (they look great as they weather), while shiplap is easy to wipe clean,” says Susana. “Sandy wet towels and sticky sunscreened fingers aren’t a problem.” Meanwhile, the furniture throughout is minimal and comfortable, with hard-wearing Sunbrella fabrics and washable slipcovers. Determined to design a place that maximized every square inch and was easy to keep shipshape, Susana incorporated lots of practical built-ins. These include an L-shaped banquette with storage space in the seat in the breakfast nook and a kitchen island with cupboards. And most functional of all is the mud room that runs the length of the entryway hall. It boasts hooks and cubbies for storing the family’s beach accessories, as well as benches with cushions in a durable material. “Barefoot and carefree summer living is what we had in mind,” says Susana. And, in the decor, at least, the home’s hurricane-struck history is long forgotten and the path is open for new memories to be made.

Cyclists glide along the country roads, and vineyards appear in vast stripes across sun-soaked fields. Wine-tasting tours, farm-to-table restaurants and markets featuring local produce, meats and cheeses appear around the bend. Birdwatchers traipse through the nearby woods, and kids take to the waves. In fact, on certain summer days, the white sands and turquoise waters of Lake Ontario around Prince Edward County look almost tropical. “There’s so much natural beauty here,” says designer Jennifer Garnett. No wonder she, along with husband Joe Strolz and 11-year-old daughter Zara, make this place their getaway almost every weekend. “Joe and I have been coming to the area for about nine years,” says Jennifer. “So when an opportunity came up to buy a year-round cottage, we had to take it. When we walked into this house, a sense of calm came over me,” she continues, referring to the effect

of the wooden ceilings, open-concept layout and big windows. “A home should add to a family’s sense of well-being, and surrounded by all this acreage, I knew this one would do exactly that.” To celebrate the 2,000-square-foot house’s country setting, Jennifer opted for natural materials, such as woods and metals, and a subdued organic palette of greens, browns and greys to blend with the outdoors. “I wanted this to be a place where the three of us could reconnect and where we could play board games, sit by the fire and hang out with friends on the deck,” she says. To that end, every part of the house was designed for togetherness. The main living space is one open room; the master bedroom leads out onto the communal deck; and lots of outdoor seating makes it easy for friends and family to join in on the fun. Combining vintage elements with modern furnishings is one of Jennifer’s hallmarks. As a result, the home manages to be appealingly uncluttered, but has a lot of heart, too. Antiques appear in unexpected places, such as in the living room, where a coffee table that suggests Asian antiquity occupies the space between a Mid-Century Modern-style leather sofa and a woven settee. “Theoretically, the table shouldn’t match,” says Jennifer. “But its lines are perfect.” In fact, this was something she noticed the moment she laid eyes on the piece. “I saw this guy pulling it out of the back of a van, and I hopped out of the car, ran over to him and said, ‘Hey, will you sell that to me?’” she says with a laugh. Industrial elements and small hits of black play important roles in the home’s look, as well. “You don’t need a lot,” says Jennifer. “But small dark touches in every room provide a texture and grounding.” This is echoed in the home’s black exterior, too. Linear and slim, the modern cottage makes an architectural statement in the daytime. But at night, it assumes an enchanting tone. String lights swing in the night air. The scents of summertime blow in through the open windows. And laughter filters up toward the starlight.

Stir the sugar and water together in a measuring cup until the sugar is dissolved; sprinkle the yeast overtop. Let stand until frothy, about 10 minutes. In a large bowl, stir together the flour, Asiago, fennel seeds, salt and red pepper flakes; stir in 2 tbsp of the oil. Stir in the yeast mixture to form a ragged dough. Turn the dough out onto a lightly floured work surface; knead until smooth and elastic, 2 to 3 minutes, dusting with more flour as necessary. Place the dough in a greased bowl, turning to grease all over. Cover with plastic wrap; let rise in a warm draft-free place until doubled in size, about 1½ hours.

Preheat the oven to 375°F. Punch down the dough. Turn out onto a lightly floured work surface and divide into 16 pieces. Using your fingertips, roll each piece into a 10"-long rope. Arrange on a parchment paper-lined baking sheet; brush with the remaining oil. Bake, rotating halfway through cooking time, until the edges are crisp and golden, 12 to 15 minutes; let cool to room temperature. Arrange a few arugula leaves over a slice of prosciutto; place the tip of one bread stick on top and roll the prosciutto around the bread stick. Repeat with the remaining bread sticks, prosciutto and arugula; serve immediately.

½ tsp each: salt and freshly ground black pepper ½ cup chopped fresh parsley or mint 4 Greek-style pitas, lightly toasted 2 cups packed baby spinach or baby kale 16 cherry tomatoes, halved Grate the cucumber and wrap in a clean tea towel; squeeze to remove any excess liquid. In a small bowl, stir together the cucumber, yogurt, 2¼ teaspoons of the garlic powder and 1 tablespoon of the lemon juice; set aside.

Add the oil to a large nonstick skillet set over medium-high heat; cook the beef, onion, remaining garlic powder, oregano, lemon zest, salt and pepper, breaking up the beef with a spoon until no longer pink, 5 to 6 minutes. Remove the pan from the heat; stir in the parsley and the remaining lemon juice. Spread the cucumber tzatziki over each pita and add the spinach; divide the beef mixture evenly over the tzatziki. Top with the tomatoes, season to taste with salt and serve warm.

In a large bowl, whisk together the oil, honey, tahini, lemon juice, salt, if using, and pepper. Add the chicken, turning to coat. (The chicken can be covered and refrigerated for up to 24 hours.) Place the Dukkah Spice Blend in a shallow dish; transfer 1 tablespoon to a small bowl and set aside. Remove the chicken from the marinade, letting any excess liquid drip off; discard the marinade. Dredge the chicken in the Dukkah, pressing lightly to adhere. Alternately thread the chicken pieces, zucchini ribbons and onion pieces onto six metal or soaked wooden skewers. (The skewers can be covered and refrigerated for up to 24 hours.) Place the skewers on a greased grill over medium heat; cook, turning once, until the chicken is browned and no longer pink inside, about 15 minutes. Transfer to a serving platter and sprinkle the reserved Dukkah overtop; serve.

Dukkah Spice Blend In a food processor, pulse 1 cup skinned toasted hazelnuts, ½ cup toasted sesame seeds, 6 tbsp coriander seeds, 2 tbsp cumin seeds, 4 tsp peppercorns and 2 tsp salt until finely chopped. Store in an airtight container in the refrigerator for up to 1 month.

Wrap the grated cucumber in a clean tea towel; squeeze to remove any excess liquid. In a small bowl, mix together the cucumber, yogurt, harissa, honey and lemon juice. In a large bowl, mix together ¼ cup of the yogurt mixture, the chicken, garlic, egg, mint, coriander, cumin and salt. Shape the mixture into four ½"-thick patties. (Patties can be layered between squares of parchment paper in an airtight container and refrigerated for up to 24 hours.) Place the patties on a greased grill over mediumhigh heat; cook, turning once, until an instantread thermometer inserted sideways into the patties reads 160°F, 8 to 10 minutes. Place the pitas on the grill, turning once, until warmed through, about 1 minute. Spread some of the remaining yogurt mixture on the pitas. Top the pitas with the patties and desired toppings; serve immediately.

To make the salad, cook the green beans in a large pot of boiling salted water until tender-crisp, about 2 minutes. Drain the beans and transfer to a bowl of ice water to chill. Drain well; pat dry with a clean towel. (The beans can be refrigerated in an airtight container for up to 24 hours.) To make the dressing, combine the oil, vinegar, anchovies, honey, pepper and salt in a large bowl. Purée with an immersion blender until smooth. Place the green beans, cannellini beans, croutons, dill and radicchio in a large bowl; drizzle with the dressing, tossing to coat. Arrange the salad on a platter. Top with the tuna and lemon zest. Garnish with Parmesan and pepper, if using, and extra dill sprigs.
