Hemingway knew the city of Bilbao very well. In fact, in ‘The Dangerous Summer’, he affirms that it is a city where he has many friends. In ‘Fiesta. The Sun Also Rises’, he names it as the end of the 2nd Cycling Tour of the Basque Country, on the stage that joins the city with San Sebastian. Hemingway also adored Biscay gastronomy. One of his favourite dishes was elvers a la bilbaína. He mentions this in ‘For Whom the Bell Tolls’ and ‘The Dangerous Summer’. Another of his favourite dishes was cod a la bizkaina, a recipe that his wife prepared for him to celebrate his 60th birthday.
