Nigel Roberts Paramount Office Interiors and NG Properties Chairman of the Cardiff Business Council.

“Cardiff is one of the fastest growing cities and its reputation is steadily growing. I am proud of this city and want to make it even more successful. Now is our time to make our mark internationally so we can all benefit from economic success. We need the input of local businesses to sign up to the Business Council to collaborate on opportunities and overcome issues; and help us to promote the Cardiff capital city region on a global scale.”

Marie Fagan Chairperson, Cardiff Hoteliers.

Paul Webber Business Director, ARUP

“It’s never an easy task to develop your business globally, but with an organisation like this behind you, a lot can be achieved. With its excellent political and business contacts, there is no better support network in Cardiff than the Business Council for local businesses. In some cases, full colour reproduction may not be possible. The greyscale or mono logos shown here must be used in these cases. In some exceptional cases, the logo may be used on a colour background. In this case you must use the reversed out version.

Below is a selection of complementary colours that can be used within a document that hosts the WDWT brand. Please ensure that unless creating graphs or tables for example that may require a range of colours, a maximum of two extra complementary colours from this palette may be used (in addition to black). will give your document a tasteful visual presence; please ensure you use no more than two of these colours as your document may start to look crass and the visual presence may take over from message delivery.

Croeso i Bythefnos Bwyd a Diod Cymru 2013

We are fortunate to have a wealth of quality Welsh food and drink produced in Wales. This will be showcased across the fortnight in a range of SPAR and Eurospar stores who have partnered with award winning Welsh producers. We have organised the fortnight in partnership with the Food Chains project which is delivered by Menter a Busnes with support from the Welsh Government and part funded by the European Regional Development Fund (ERDF) through the Ireland Wales Programme (INTERREG 4A). So we invite you to enjoy a taste of Wales, and look forward to seeing you in store where you will find free tasty samples, offers and competitions with £100 worth of vouchers to be won. Bydd y rhain yn cael eu harddangos am bythefnos mewn nifer o siopau SPAR ac Eurospar sydd wedi ffurfio partneriaeth â chynhyrchwyr o Gymru. Rydym wedi trefnu’r bythefnos mewn partneriaeth â’r prosiect Cadwyni Bwyd sy’n cael ei weithredu gan Menter a Busnes â chymorth gan Lywodraeth Cymru ac yn cael ei ariannu’n rhannol gan Gronfa Datblygu Rhanbarthol Ewrop (ERDF) drwy Raglen Iwerddon Cymru (INTERREG 4A). Hoffem eich gwahodd i fwynhau blas Cymru, ac edrychwn ymlaen i’ch gweld yn un o’r siopau lle cewch samplau am ddim, cynigion arbennig a chystadlaethau, a chyfle i ennill gwerth £100 o dalebau. Seafood paella Shannon Diponio, Coleg Meirion-Dwyfor

Student Recipes

A

s part of the celebration of Welsh Food fortnight, Catering and Hospitality students at Coleg Meirion-Dwyfor’s Dolgellau Campus took part in a competition to devise a recipe using local fish and produce. To help the students with their culinary quest, they visited the fish counter at EuroSPAr. After a taste test of all the dishes that took part in the competition, the winner was Shannon Diponio from Dolgellau with her Seafood Paella. EuroSPAr were so impressed with the standard of all the recipes that they wanted to share them with you here. Coleg Meirion-Dwyfor also have their own restaurant called Bwyty’r Gader, which provides training facilities for Hospitality students, offering gourmet lunches and dinners for special occasions. Telephone 01341 422827 for bookings.

Serves 2 • 1 tablespoon olive oil • 1 onion, sliced • 2 garlic cloves – peeled and crushed • 1 red pepper – cut into strips • 110g chopped chorizo • 300g paella rice • large pinch of saffron • 100ml dry white wine • 750ml vegetable/chicken stock • 4 tomatoes – skinned, de-seeded and diced • 100g peas • 400g seafood mix • salt and black pepper

1 Heat the oil in a paella or large sauté pan, then soften the onion and garlic for 5 minutes, without browning. 2 Add the chorizo and fry until the oils are released. 3 Stir in the pepper strips and continue cooking until the pepper strips are tender. 4 Add the rice and saffron and stir until it coats in the oils. 5 Pour in the stock, stir well and bring to the boil. Season with salt and pepper. 6 Lower the heat and simmer for 10 minutes stirring occasionally. 7 Add the peas and tomatoes and continue to cook for 5 minutes. 8 Add the seafood and cook gently for a further 10-15 minutes or until the rice is tender, the mussels have opened and the fish is cooked. Add more stock if the paella seems dry. Season to taste. Serve immediately.
