The Tap Room The Atlantic City Country Club Chef Ed Daggers Fun, relaxing, casual, and friendly are just a few of the words used to describe your dining experience at the award winning Tap Room located at The Atlantic City Country Club. The golf course most notably known for coining the term “BIRDIE” in 1903 is now home to one of the area’s most award winning chefs, Executive Chef Ed Daggers. Executive Chef Ed Daggers of the Atlantic City Country Club is a graduate of the Culinary Institute of America and the recipient of numerous awards and accolades including several gold medals and “Best in Show” from the American Culinary Federation. Chef Daggers began his career at the four star - four diamond Innisbrook Golf Resort in Florida, was the Executive Chef at Kingsmill Golf Resort and Conference Center in Virginia and The Memphis Country Club. He has been published in The Flavors of Kingsmill and The Burgermeisters, by noted culinarian/author Marcel Desaulniers. Chef Daggers was owner of Austin Creek Grill and Austin Creek Baking Company in Hatteras, North Carolina before joining Harrah’s Entertainment in 2007 as an Executive Chef. Atlantic City Country Club is honored to have Chef Daggers as we encourage you to stop in and sample some of his fine culinary delights. Chef Daggers was kind enough to give us some insights into his career, some of his favorite dishes, the ACCC, and of course his golf handicap. What makes ACCC a transcendent dining experience? First and foremost is the food at The Tap Room Bar and Grille. We like reinventing old-world classics, utilizing the highest quality of products, and keeping some traditional food options always on the menu. For years, our dining customer has come back time and time again for our Crab Cakes, Choice-Cut Steaks and Potatoes Au Gratin. We also placate to a new crowd seeking regional and local seafood prepared with a “twist,” wine pairings, and themed dinners. Add that to the most historic clubhouse dining room in the nation, that has a gorgeous view of the Atlantic City sky-line, exceptional service and it’s an unbeatable experience. What accolade or accomplishment in your career are you most proud of? I have been privileged to work at some outstanding Golf Resorts. My first position out of The Culinary Institute of America was at Innisbrook Resort in Tarpon Springs, Florida. I then took the Position of Exec Sous Chef at Skytop Lodge in upstate Pennsylvania and then was recruited to be the Assistant Exec Chef for the opening of Kingsmill Resort in Williamsburg, Virginia. Kingsmill was the home of the Anheuser Busch and Michelob Golf Classic for the 7 years when I was there, during which time I was promoted to Executive Chef, took the property to a 4 star rating, 4 diamond status and won the “Nation’s Top Ten Resorts” award. I have competed in many American Culinary Federation Competitions, winning 3 gold, 3 silver and two bronze medals and 2 best-in-show. All of these prestigious honors are proud moments for me. What is the signature dish at Tap Room Bar and Grille? I would say our must-have are the Jumbo Lump Crab Cakes, Miso Glazed Chilean Sea Bass,

White Chocolate Banana Cream Pie, and Red Velvet Waffles with Buttermilk Ice Cream. What famous people have you cooked for and what did they order? I’ve had the privilege of cooking for President Clinton and First Family, and of course they wanted some Southern Classics: Fried Chicken, Buttermilk Mashed Potatoes, Collard Greens and Chesapeake Crab Cakes. President Clinton also has quite the sweet tooth, so I also made him my Butterscotch Pie. Yes, a Butterscotch Pie. Other than that I have been the Chef Host for The Democratic Senate and Republican Senate Retreats. During the Atlanta Summer Olympics I opened a new resort and conference center and hosted the Crown Prince and Princess of Brunei for a week. He had a constant rotation of a Buffet with selected items chosen by his butler. Some of the items ranged from Pad Thai to Filet Mignon and Lobster and always had to have Vienna Sausages and Franks in Blanket! We would change out this buffet 4-5 times a day based on his estimated time of getting out of bed. I had the great pleasure of doing lunch for Arnold Palmer and his wife here at the Atlantic City Country Club a few years back - a very nice time for all. Arnold has had many memories here, as this is where he used to come practice as a very young man when he was stationed in Cape May while he was with the Coast Guard. Being a HUGE baseball fan, I was elated to cook for Pete Rose. I got to meet him and spend some one-on-one time with him here last summer; I made him lunch and he invited me to sit down and shoot the breeze. In addition to these folks, over the course of my career I’ve gotten to cook for Goldie Hawn, The Smothers Brothers, Tony Bennett, Flip Wilson, Jimmy Buffet, Andre Agassi, Brooke Shields, Buddy Guy, Ron Jaworski, Adam Levine, Michael Phelps, Mike Trout and numerous others. What do you recommend? We do a Burger Dog – What’s that you say, well it’s literally a Hamburger shaped like a Hot Dog, perfect playing food. One hand goes on the bun and another on the club; Chicken Caesar Wraps, Turkey Club Sandwiches are popular and of course, actual hot dogs. In the morning, our guests love the Taylor Pork Roll and Egg Sandwiches or Egg, Bacon and Cheddar on Kaiser and Breakfast Tortilla Wraps. Do you golf? If so what handicap? Yes I do for fun. Again, I have been fortunate to work at some of the best golf courses in the country, but have never had the time to stick with it for any length of time. My career choice does not lend itself to being a top notch golfer. I shoot in the 90s; for me, it’s all about getting out on the greens with some good buddies and enjoying a gorgeous day (and ACCC is spectacular). My favorite golf partner is my 12 year old son Sam who is, if I say so myself, quite the athlete! What is one thing about yourself that most people do not know? I am a frustrated artist. I paint in oils, watercolors and acrylics (again when time permits - mostly in winter). Besides food, painting is my other artistic outlet.

DJ JASON E

DJ Jason E is a 13 year veteran of the Philadelphia and South Jersey Nightclub Scene. Jason is best known for his 10-14 hour marathon DJ sets at the legendary Studio Six in Atlantic City. In addition, Jason has performed at some of the east coast’s hottest nightclubs ranging from New York City all the way down to Miami Beach. DJ Jason E spins a unique style of high energy music with hard hitting bass lines fused with a wide range of music genres. DJ Jason E was voted Atlantic City’s #1 Resident DJ in 2012.

You’ve worked with a lot of celebrities – Who has been your favorite to work with and why? My personal favorite was working alongside the cast members of HBO’s hit series “Entourage”. Those guys were just as cool and funny as they were on the show.

What formats have you found are most popular?

The Society Page recently sat down and spoke to Jason E.

By far EDM. Especially because it has successfully forged a fusion of Hip Hop, R&B, and Rock artists to help create a new and amazing sound that has broken down the previous barriers that once divided many audiences.

How did you get started in this business? I began as an intern at Equity Communications in the summer of 1998 at the age of 17 working in promotions and programming. From there, it eventually led me to working live remotes in nightclubs like DeJaVu where I fell in love with the idea of being a DJ and moving an audience to the way I heard the music in my head. I then played my first residencies at clubs like Speak Easy Sports Bar on South Carolina & Boardwalk and H20 in Wildwood. Then thanks to Steve Sagan I got my first big break at Studio Six Video Dance Club where my career took off. What do you like about performing in Atlantic City? Primarily, I love playing in Atlantic City because it is my hometown. Many of those who define themselves as “Atlantic City DJ’s” aren’t from the area. It has been a special honor to grow up here and to have made the majority of my career here. Secondly, I love the fact that I have had the opportunity to play in the old era of Atlantic City as well as to be an integral part of the wave of mega

What sets me aside is that I have multiple identities musically. To those who listen to radio I am identified as DJ Jason E of 99.3 WZBZ who caters to the Urban Rhythmic audience. However if you are among those who have come to see me spin at Studio Six, Deco, or more recently at Sound Garden Hall or after hours at The Social in Revel Resort you would know me as a House Music / EDM DJ. Then there are those who remember me being one of the only non-Hispanic DJ’s spinning Latin Nights in AC. But to those who know me best they know my heart bleeds Rock n’ Roll. You spin open format music, but what would be on YOUR ideal playlist?

House of Pain - Jump Around What does “A Day In The Life Of DJ Jason E look like? I spend the majority of my day promoting myself, scheduling gigs and networking. Then in the evening I spend about 4-6 hours working on music. Finally on my overnights I’m predominantly spinning, practicing or working in the studio. Being a DJ is an around the clock lifestyle for me. What do you hope your life looks like 10 years from now? I hope to achieve higher success as an accomplished producer / remixer and to tour the country, or maybe THE WORLD.

As one is coming into Atlantic City, you may see a large glass dome as you look off to the left towards Brigantine. What you are seeing is the tropical oasis that was built six years ago as a part of Harrah’s Resort’s expansion and the crown jewel of the “Waterfront Tower.” The Pool at Harrah’s is located under a large glass dome, surrounded by palm trees and other tropical plants, and its vegetation is the oasis of Atlantic City.
