Ingredients: 2 cups of semolina (coarse)

2.5 cups of sugar

1 cup of corn or vegetable oil

4.5 cups of water

Preparation: Boil the water with the sugar for about 5 minutes to make a syrup.

In a larger casserole add the corn oil and semolina and cook, stirring to prevent sticking. Stir and cook until it takes a deep golden color.

Then, carefully add the syrup into the semolina mixture. The semolina is going to sizzle, bubble, and spatter so be careful not to burn yourself. Stir the mixture until the semolina absorbs all the liquid.

Cover the casserole with a kitchen towel to cool for about 5 minutes

Then fill out a pudding mold or individual ramekins and allow it to cool to room temperature before serving.
