With many budgets being slimmed down, do you find that people are beginning to use their wedding cake as a dessert replacement rather than having both cake and dessert? It is a great idea having the cake as the dessert, as it means you are not paying for your guests to essentially have two desserts, though I only knew of one of my brides doing this last season. If they do, do you have any guidelines for cake/people ratio? The guide below (courtesy of www.cookiescupcakesandcardio.com) is for cutting wedding cakes vs party cakes, and I think a dessert slice would be about the size of a party slice. Keep in mind a wedding cake is normally quite dense (ie mud cakes and rich fruit cakes) to enable it to carry the fondant icing and complement the ganache so, even if you are serving your cake for dessert, your guests may not need large slices.
