Having spent 10 years working as a chef including a spell for Keith Floyd, Tony Quick set up Forest Produce with his wife Caroline 15 years ago. Tony knew the only way to meet the expectations of chefs in such a high pressured industry, was to do it himself so he set about scouring the markets sourcing amazing produce. 15 years on, Forest Produce is forever growing - with a large new unit space in Devon, a fleet of refrigerated vans and a committed team of delivery drivers, warehouse operatives, accounts and marketing teams and a sales team with years of combined experience working in the kitchen themselves - they can inspire and guide you in the right direction to getting what you need. Let’s not forget our committed night manager who will be taking your orders throughout the night. handcrafted like true artisans... we have a range that we cure using only salt and natural exe and clyst valley air in these we use no nitrates or nitrites. we also have a range made in the traditional fashion with a minimal amount of nitrite. we do it the traditional old fashioned way. like true artisans in the correct sense of the word. good game supports local producers. we have our own pigs at a farm on the powderham estate and we also buy pigs from friends who have native breed pigs locally. our game is either shot by us or local devon folk we know. we buy sundries and kit from from mk ingredients in devon who are a local family business. where possible we get spices from one of the devon producers or a small specialist importer who has direct contact with growers and can ensure quality levels.

Palate: Sweet and tangy, rich with tangy acidity, flavours of dried fruit, vanilla, pineapple and notes of olorosso sherry; this leads to a sweet, piquant finish.

IP8 Vinegar begins with beer made in the style of IPA (India Pale Ale). A blend of aromatic and flavourful hops are used to enhance the hop characteristics in the vinegar.

The rich, sweet, delicious wine made of these grapes is converted into vinegar. This conversion takes months with traditional methods - so crucial for maintaining the true style of icewine.

Palate: Richly sweet and balanced with zingy acidity, exhibits a palate is as expansive as the aromas; intense flavours of roasted barley, browns sugar and sweet caramel.

Palate: Sweet/sour, quite viscous but well balanced and lively on the palate, with honey, citrus rind, raw nut, apple sauce, overripe pineapple and toffee; a long, lingering pleasantly sour finish.

minus 8 is a family-owned vineyard in niagara, canada, where the hot summers and cold winters allow us to craft exceptional vinegars and verjus from our grapes. our first and flagship vinegar, minus 8, was named after the temperature at which the grapes were harvested. many tasters find difficulty in tasting vinegar. this is due to the fact that by their very nature vinegars have acetic acid as a component. acetic acid is classified as a volatile acid. this means that it is an acid that you can both smell and taste. the truth is that even a little bit of this compound can overwhelm most other aromas and flavours. for a good idea of what acetic acid is like - think about the smell of commercial white vinegar. about the only thing you will smell in this type of vinegar is acetic acid and not much else. better vinegars will add further layers of aroma, flavour and concentration - and most importantly complexity and balance. for the novice taster, the acetic acid in the vinegar can overwhelm their ability to taste and fully appreciate the nuances of fine vinegars. in other words, it gets in the way of tasting the additional aromas and flavours that make the vinegar distinctive and complex. but like all things worthwhile, a little effort and practice will pay dividends in the end.

why wasabi co? We are watercress growers and watercress has been grown on our Dorset and Hampshire farms since the 1850s. It was watercress that led us to wasabi. A chef visiting one of our watercress farm in May 2010 remarked how the only other crop he had seen growing in similar conditions was wasabi in Japan. That was enough to plant a seed in our minds and we began looking at what it might take to grow wasabi in the UK. We discovered a lot of similarities between the conditions required for watercress and wasabi. We also discovered plenty of warnings that wasabi was a difficult crop to grow and that it had never been successfully cultivated in Europe. The gauntlet duly laid down we began growing wasabi in some previously abandoned watercress beds and after a good deal of trial and error we brought our first wasabi crop to maturity two years later. It has been a steep learning curve and we are still given plenty of surprises by our wasabi crops. Each year we see something different and any mistakes take a long time to put right with a two year growth curve. Harvesting a fully mature plant is always an event as it is only when you pull the whole plant you can see what you have yielded.

a traditional, creamery, blue cheese. the greenish-blue penicillin mould imparts a sharp, spicy flavour and provides an excellent contrast to the rich, creamy cheese. caramel.

SPHERIFICATION DIRECT SPHE RI FI CATI O N three basic baths are used to elaborate direct spherification: the first bath consists of incorporating alginate in the product we want to create the sphere with alginat. the blender will be used for this, leaving it to rest until its total loss of air. the level of acidity of the product must be taken into account: if its ph is lower than 4, the right quantity of sodium citrate has to be added in the same bath. if we add too much, the product will acquire a bad taste. in the second bath we put clorur, 5 to 8 g per litre, depending on the size of the sphere. in the third and last bath, water will be used to rinse the spheres, basically to clear the bad taste given by calcium chloride. the reaction of alginate occurs when both products (alginate and chloride) start forming a jelly-shaped sphere which will gradually gel in the inside too. the more time it is left in the bath, the more it will gel, until it completely turns into gelatine. the ph of the sphere liquid must be taken into consideration. if the ph of the liquid is not between 4 and 6, it will have to be rectified by using sodium citrate (ph kit). once the ph is between these two parameters we can elaborate the sphere without any problem.

REVERSE SPHERI FI CATI O N if we want to create spheres of liquids which by nature contain calcium, such as dairy products, we have to apply the reverse spherification, inverting the first two baths. the same applies to products to which we add gluconolactat. we work with 3 different baths: in the first one we put the product with own calcium or mixed with gluconolactat. if the product does not have a proper density, we incorporate 6 g of gelespesa (2 g xanthan)/ kilo, in order to have enough weight to immerse into the second bath. in the second bath, we mix one litre of mineral water (without calcium) with 5 g of alginat. in the third and last bath we put water to wash the spheres. to the reversed baths, the spheres will always remain liquid in the inside, since the reaction is contrary to direct spherification. keep in mind that, if we elaborate spheres before head, they have to be preserved in a slightly dense liquid, as they tend to stick together. this technique produces osmotic spheres, that is to say, its membrane has microscopic holes which absorb the flavour of the medium.

liquid paste that hardens as the catalyst acts. a flexible, soft, non-stick material resistant to a wide range of temperatures is obtained.

use:

the surface of the original must be clean and residue-free. pour 100 g of component “a” and 10 g of component “b” in a clean container and mix well until component “b” is completely dispersed throughout the base. do not mix for a long period of time and do not expose the mixture to temperatures over 35 °c. it is always preferable to mix small amounts in order to guarantee a good mixture of component “a” and component “b”. the catalyst material will cure within a period of 18-24 hours at a temperature of 22-24 °c forming a flexible rubber mould that can easily be separated from the original.

application:

manufacture of silicone moulds, suitable for food use, freezing and cooking.

observations:

we recommend removing trapped air by putting the mixture in an empty chamber, leaving it to fully expand and immediately thereafter it will collapse. keep the mixture in the empty chamber for a further 1-2 minutes and then inspect it; if no air bubbles appear, then you can use it. when you de-aerate the mixture into the vacuum, there will be an increase of 3-5 times the volume, so you should use large enough container. if you do not have a vacuum de-aerator, you can minimise air blocking by mixing a small amount of component “a” and component “b” and then immediately use a paint brush to apply a 1 or 2mm layer over the original. maintain room temperature until the surface is free from bubbles and the layer has started to cure. mix another amount of component “a” and component “b” and pour the mixture over the original as soon as possible, preventing air blocking.
