TWO-DAY GOLF EVENT IN AID OF DIVERSE ABILITIES Diverse Abilities, Dorset’s disability charity, is hosting its first two-day golf event this September, alongside Peter Alliss, former professional golfer and now TV presenter and commenter, plus many other celebrities. Sponsored by Golden Arrow Marine, the event is being held on 27 - 28 September. On the evening of 27 September guests will enjoy a three-course gourmet dinner at the Haven Hotel in Sandbanks. The evening will also comprise of an auction, raffle and entertainment. The following day (28 September) the shotgun start golf tournament will take place at Parkstone Golf Club, which will include a bacon butty breakfast on arrival and post-golf buffet lunch. Tickets for this exclusive two-day golf event for a team of three is £850, which includes the gala dinner and golf tournament. Teams will be allocated a celebrity as their fourth team member. Fantastic fish dishes, a Michelin-starred chef and the opportunity to raise vital funds to help save lives at sea await those who want to sink their teeth into a special event at the RNLI College in Poole on Thursday 5 October. The evening is being held in support of the Royal National Lifeboat Institution’s (RNLI) Fish Supper fundraiser and will see Alex Aitken, chef patron of the award-winning Christchurch restaurant The Jetty, recreate two of his favourite fish dishes for 150 guests. Diners will have the pleasure of enjoying Alex’s Cannelloni of Smoked Salmon starter followed by his Cod and Crab main dish, as well as enjoying a talk from the man himself. A dessert of RNLI lime and lemon bavarois will be served, as well as coffee and dark chocolates. A vegetarian option of Cannelloni of Carrot followed by Mouli and Mushrooms will also be available. These mouth-watering fish dishes have appeared on the menu of Alex’s Michelin-starred Le Poussin restaurant and are currently served at The Jetty in Mudeford. The RNLI’s Fish Supper fundraiser, which runs over the weekend of 13–15 October,

encourages people across the country to host a fish meal with friends and family to raise funds to support the charity’s lifesaving work. Alex Aitken said: ‘I’m really looking forward to cooking two of my favourite fish dishes at the RNLI College. ‘The evening is for a really great cause and I’d encourage others to take part in the RNLI’s Fish Supper fundraiser. Whether you’re an expert cook or an absolute novice, give it a go and enjoy serving up a tasty fish dish while supporting such a vital charity.’ There will also be after-dinner talks from Poole-based experienced yachtsman Dr Tim Howard and the RNLI’s Glen Mallen. Dr Howard has been rescued twice by RNLI lifeboat crews. The first time was in 1961 when he was caught in Force 7 winds off Falmouth and the second rescue was 20 years ago when he capsized a catamaran off Brownsea Island. Glen Mallen is a Lifesaving Manager at the RNLI and was a volunteer crew member at Poole Lifeboat Station for 20 years, serving in the roles of coxswain and helm.

EMPIRE CINEMAS SIGNS UP TO OPEN AT THE DOLPHIN SHOPPING CENTRE Empire Cinemas has signed a 25-year lease with Legal & General to open at the Dolphin Shopping Centre in Poole. The proposed nine-screen attraction will be the first multiplex in the town centre. Together with four new restaurants, it will create a strong daytime and evening attraction for the south coast town. Planning permission is being sought to redevelop the former Argos store and adjoining units into a new-build cinema complex, complete with four casual dining restaurants. Due to open at the end of 2018, the scheme, at the heart of the shopping centre, will help generate more vibrancy and appeal for the town centre as a whole. Poole is a major holiday destination and tourist spend within the Dolphin centre is consistently high. Subject to final planning approval, one of the nine screens will be open-air on the rooftop, giving a memorable experience for holidaymakers and locals alike. Justin Ribbons, Chief Executive Officer of Empire Cinemas, commented: “We are delighted to be partnering with Legal & General and to be returning to

Poole as part of the Dolphin Shopping Centre, Dorset’s largest covered shopping destination. With 9 screens, including Empire’s own large format IMPACT® Screen, D-Box and an open-air, rooftop screen, we hope Empire Cinemas will further improve the area’s leisure offer and evening economy, alongside a host of new dining choices arriving to the Centre.” Legal & General bought the largest covered shopping centre in Dorset in 2013 and is working on an 18-month improvement programme that will be completed at the end of 2018. It recently reached agreement with the Borough of Poole to restructure the existing headlease arrangements into a single, longer lease, unlocking a £26 million programme of investment. The improvement programme will focus on an internal mall refresh, as well as improvements to the open-air Falkland Square and Kingland Crescent including work to the public realm and eye-catching shop facades. John Grinnell, centre manager at the Dolphin Shopping Centre, said: “The introduction of this exciting multiplex cinema together with an array of dining choices will provide significant


additional amenity for visitors to the Dolphin centre. This latest investment will further shift the shopping centre towards a truly family-oriented offer, and bring an element of trade that will extend into the evenings, giving more reasons for residents and tourists alike to visit throughout the day.” Covering some 530,000 sq ft, the Dolphin Shopping Centre is home to over 100 retail, restaurant and leisure brands from independent boutiques to top national names. It is anchored by Marks & Spencer, Primark and Beales department store, and is home to popular brands such as River Island, New Look, Next, Boots, Clarks and Pandora. Local special school Langside, part of Dorset disability charity, Diverse Abilities, will be attending the ‘Enabling access to an interactive world’ conference this year on 14-15 September at Bournemouth University. Linwood Teaching School Alliance, which Langside is part of, presents two days packed with opportunities for parents and professionals to engage in presentations and workshops about children and young people who experience profound and multiple learning disabilities (PMLD) or complex learning difficulties and disabilities (CLDD). It will have a focus on sensory stimulation and interaction. Other local schools part of the Linwood Teaching School Alliance include Linwood, Victoria and Montacute. The group have structured the conference over two days to enable delegates to attend workshops of their choice on either or both days, and engage with a range of exhibitors who will be sharing the latest in adaptive, switch and interface technology. WHAT HAS A HOLIDAY COTTAGE AGENCY EVER DONE FOR US? Are Airbnb and it’s competitors the meteorite that will wipe out dinosaur agencies? From time to time I’ll meet someone and talk about what I do and they’ll shake their head and say something like ‘Enjoy it whilst you can’. The implication is that the wave of technology that has wiped out bookstores and DVD rental shops is about to break over us. The new ‘sharing economy’ has seen near riots where taxis are being put out of business by Uber and clampdowns on unregulated letting in cities across the world but in the free market UK there’s no holding back with Airbnb becoming exponentially larger and the established directories scrambling to adopt the same model. The original concept of Airbnb was very different from what it has developed into today. The principle was that if you had a spare room or even a couch you could offer it to independent travellers so they got cheap accommodation, you could make a little money plus there would be a fantastic interaction between like minded people. Staying with a local in a foreign city or remote village has the potential to be a fantastic experience and the critical early decision was that Airbnb would take care of the financial transaction removing an awkward part of the process. Like Ebay reviews by guests and owners on both sides of the transaction mean that poor quality accommodation or people behaving badly are weeded out and just don’t get the business. Venture capitalists poured money into the company with last year’s raise of $1.5 billion one of the biggest private funding rounds ever valuing the company at $25.5 billion and even seeing the logo appear on F1 cars

In 2017 the experience is very different, certainly in established holiday locations. Search for accommodation for 2 people in any resort and about 75% of the results will be for entire cottages or apartments and about half of the others are professional bed & breakfast rooms so although there are opportunities for the original spare room or surf shack experience most accommodation offered is standard self-catering - in other words the site has become a directory for cottage owners who don’t use an agency and is also used by some property managers with small portfolios. So the death knell is tolling for agents - all an owner has to do is list their property answer enquiries and wait for the bookings to roll in. The charge is just 3%+ vat for owners and a modest booking fee of 12% charged to guests. WHOA WHOA hang on a minute - rewind! Did you say 3% + vat to owners and 12% to guests making a total of 15%? isn’t that the same as an agency charges anyway? Well it’s the same as we charge for booking only and not a lot less than we charge for full service including cleaning and call out. Unsurprisingly the other accommodation directories have looked at the mountains of cash being made and are scrambling to change their model from annual fee to ‘taking care of the transaction’ for you. Holiday lettings introduced ‘Free’ listings in the last few years initially charging 3% to owners and

3% booking fee which was quietly and steadily increased to 3% + 12% (surprise surprise). We had listings on these directories on an annual fee basis and noticed a severe dropoff in enquiries and it was apparent that we were being moved to bottom of the list. I spoke to my rep and was told that ‘Ranking depends on a number of factors of which the ability of a customer to make a safe payment through us is a significant factor’. A cynic might conclude that as they had our money already there was little incentive to send us traffic over properties that would earn commission. Then Expedia had bought the Homeaway group for $3.9 billion which includes Owners Direct - the biggest UK site offering annual subscription listings. No prizes for guessing that part of the announcement was that they would be changing their business model to mirror that of Airbnb and the others except they chose to impose the charges on those of us who had already paid an annual fee causing uproar. There’s no doubt that Airbnb has been a phenomenal success and in its original concept of letting a spare room or a shack in the garden the impact has been huge allowing people to travel cheaply and hosts to genuinely make extra income which could be very significant in a poorer country. Surely the work of absolute genius though is that they have managed to persuade owners of holiday rentals

to do almost all the work themselves whilst charging the same as an agency. So if you want to write your own web content, take your own photos, answer your own emails, deal with your guest both happy and not, organise your own cleaning, linen, welcome packs and maintenance, be on call 24 hours a day and pay pretty much the same commission anyway then maybe it will work for you. So what has a holiday agency ever done for us - quite a lot actually!

Thinking of buying a Beach Hut? A familiar part of the British seaside scene, beach huts are a great escape from the stresses of everyday life, however with price tags up to £275,000, it’s important that you know what you are getting for your money. With basic beach huts, you generally buy the wooden structure, with the site it stands on belonging to the local Council. They grant an annual licence (for a fee) to you for the beach hut to remain there, with the right to renew at their discretion. If you want to sell, your licence may automatically terminate and the buyer would then re-apply for a new licence. You may also want to consider other on-going costs such as general upkeep as well as restrictions on when and who can occupy the beach hut.

HARBOURWOOD HOMES History in the making It all started with an idea. Owners ‘Steve Courtney’ and Dean Gaffikin had shown an aptitude for the construction industry from a young age. Having both attended the same engineering apprenticeship at a local college, it was destined that the two would go onto great things together. After studying they each set up their own respective companies. Steve a successful carpentry business, and Dean an equally successful plumbing firm. But fate brought them back together, after they were both brought in on the same job one summer. Q: You both come from a trade background, that’s quite rare within the development world… Absolutely. I ran a plumbing business for 7 years. That experience – as well as Steve’s within his own carpentry business – has authenticated our approach to development. Having that inside

knowledge allows us to shape projects more efficiently and get it right the first time. Q: What excites you about the development industry? I really enjoy seeing a project go from nothing to this amazing finished product and I love to help landowners. The way we work, everyone wins. They get a premium for their land, and we get a site to develop, and furthermore more property for the community. Of course it’s always nice to get permission granted too. It’s really a testament to our team’s skill and attention to detail, when submitting planning and we often get the desired results first time. Q: What are your priorities when it comes to a project? Aside from planning, it has to be design. We’ve just started working with our neighbors over at Anders Roberts Cheer architects, because design is so important to us. We don’t want to just churn out ‘box houses’, so we work with the best in the business to make exciting and unique properties.

Q: Are you working to address any of the current issues in today’s property market? We don’t have a target audience as such. Though a pattern that seems to be emerging is a need for homes for young working families. Many of the late baby boomers were left out of the property race, leaving many of them still in rented accommodation, for lack of suitable available property. We’ve also noticed a real rise in the retired community selling their land and buying new property. A lot of people have worked hard all their life and aspire to live in something shiny and new. Ultimately, we are open to all opportunities. Q: What benefits would you offer to someone for selling his or her land to you? We are incredibly open. There is a kind of grey cloud surrounding developers – with this idea that we’re all a bit devious, but we like to be honest and as transparent as possible. Where we are a small business, without huge overheads, we can generally offer that little more and with our existing backlog of tradesman from our other businesses, we don’t have to contract any work out to a third party.


Q: …and likewise for investors? We are able to significantly reduce build costs while maintaining quality, due to our previous experience and contacts, in turn making more profit and a greater return for the investor. Again, we are totally transparent, so what we say will happen will happen – nothing is hidden. We regularly meet with our investors, so that everyone is kept in the loop regarding progress on site.

TENANT GIVEN CHEAP RENT FOR LIFE DUE TO 1925 PROPERTY ACT A couple in Sussex bought their neighbours 3 bed bungalow in 2001 for £143,000 under a buy to let mortgage and agreed the neighbour could stay in the property for a fixed £800 per month rent. According to the couple they purchased the property to help their neighbour out as he was struggling to pay the mortgage. The couple sold their own property and moved to Spain in 2002. Then 3 years ago, they tried to sell the bungalow, first offering it back to the tenant, who declined and then to an investor so the tenant could remain in occupation, however, the prospective purchaser would only purchase the property on the condition the tenant would pay £1200 per month rent – a £400 increase! The tenant refused and the sale fell through. The couple then tried to claim the £310,000 property back through Brighton County Court. The tenants solicitor used two laws passed in 1925 and 1948 under the 1925 Property Act. The tenant claimed he sold the property to his neighbours at a reduced price on the condition he could remain in the property for life for a fixed monthly rent of £800. The solicitor cited a case from 1948 where a woman was allowed to live rent-free in a property she had sold to her brother for under the market value. The tenant won the case with a legal right to remain in the property for 90 years at a fixed rent of £800 per month. The tenant who was 68 years old at the time could pass it on to a family member. He was also awarded £11,000 towards costs. The couple told The Mail, “We own it, we pay the mortgage on it, we bought it but due to a nearly 100-year-old law he gets to live in it on the cheap. We have nowhere to turn to and can’t believe it has turned out like this. We went into court told by our solicitors that there would be no problem and walked out with him winning the case and us owing him costs. It’s ludicrous. There is nothing more we can do. We want to warn other people who are thinking of entering into any kind of agreement like this. We did everything by the book and look where it ended up. Nobody had ever heard of the law the solicitor used but it has cost us dearly. We’re stuffed.” Have a good week! FORAGING: 7 OF THE BEST FREE, FRESH FOODS IN PARKS AND WOODLAND NEAR YOU From elderflower and blackberries, to crab apples and garlic, there’s a host of wild treats out there just waiting to be picked. Ella Walker reports. Food prices seem to be forever rising but there are some nifty ways to boost the contents of your fridge and the freshness of your diet without hurting your bank account. You just need to know where to look.

hedgerows are overrun with frothy white sprigs of the flat, star-shaped flowers. Boil the flowers up with water, lemon wedges and citric acid, then leave to cool for a straightforward cordial recipe. There’s even a craze at the moment for deep frying the flowers in tempura, until crisp. Just make sure not to confuse elderflower with cow parsley...


Wild strawberries

Here are seven edible plants to look out for:

With white flowers and red fruits, wild strawberries are almost identical to your usual pickyour-own, except they’re rounded and the external seeds are more knobbly. Find them in woodland, low to the ground, then eat with cream or, if you come across a bountiful crop, use in home-made jam.



Parks, woodland, hedgerows - even the verges of roads and paths - can all provide a free source of food. So why not grab a basket, locate some green space and go gathering?


Buying bottled elderflower cordial can be pricey, but it’s pretty easy to make yourself. And in early summer (May and June),

into a red ant nest. However, rip them up, apply heat to the spiky leaves, and they lose their bite. Wilted in a pan with lots of butter they make a good alternative to spinach or kale; brew some up for a cup of nettle tea, or stick with a classic, restorative nettle soup. Just wear gloves when collecting them.



Crab apple

Oddly, crab apples tend not to be grown for commercial fruit supply, but you’ll often find the trees used in street planting (the white blossom is a quick fix for smartening up grey urban areas), and they make great jelly - in fact, you can swap them like-for-like in any recipe that includes apples. Start collecting them in late August and September. Some are red, others a more yellow/orange; to determine whether they’re ripe, slice one open and if the pips are brown, it’s ready to eat.

From July to September, hedgerows and scrubland become jungly with brambles encrusted with tart blackberries. You’ll pay £3 for a handful in supermarkets, but go for a walk with a couple of Tupperware tubs, and you’ll easily come back with enough fruit for a crumble or two. Avoid picking berries from the branches nearest the ground, though, in case a dog has already marked them as its own...


Wild garlic

You’ll know when you’ve come across a patch of wild garlic because it’ll be springtime and you’ll smell it before you even see the crowds of delicate, drooping, bellshaped white flowers, all swaying atop skinny green stems. More subtle than your usual garlic bulbs from the supermarket, chop up the stems (like you would a spring onion) and chuck into any dish that needs a garlicky hit.

are much higher than if you’re just snaffling elderflower sprigs. However, if you’re confident you know what species you’re looking for, it’s incredible what types of mushroom you can discover in British woodland, from ceps and giant puffballs, to morels and bright orange birch boletes. Stay clear of death cap (looks like a field mushroom but has a bronze/green tinge to it), and your classic toadstools, which can cause hallucinations, sickness and death. The Mercedes-AMG GLC 63 4MATIC+ is now available to order, with prices starting from £68,920 for the GLC 63 4MATIC+ SUV. The more powerful S variant costs £75,670. As well as the SUV model, the sleek new GLC 63 4MATIC+ Coupé is also available for £71,410, and the S model for £78,160. Both models come with a handbuilt 4.0-litre biturbo V8 petrol engine, mated to an AMG Speedshift ninespeed sports transmission as standard. Non-S variants produce 476 hp and can sprint from 0 to 60 mph in just four seconds. The GLC 63 S has an output of 510 hp – it can reach 60 mph from standstill in 3.8 seconds. All models have an electronically limited top speed of 155 mph (although this can be increased to 167 mph or 174 mph). Standard specification includes AMG highperformance braking system; AMG sports suspension; AMG mechanical rear axle differential lock; Comand Online infotainment system; AMG sports seats with Nappa leather upholstery; ambient lighting; memory package (including electrically operated front seats, steering wheel and exterior mirrors); and 19-inch AMG 10-spoke alloy wheels in titanium grey. S variants add 20-inch AMG five-twin-spoke alloy wheels in titanium grey; AMG performance seats; AMG Track Pace app; and AMG electronic rear axle differential lock.

VW ARTEON DEBUT Volkswagen’s stylish new flagship the Arteon is now available, priced from £34,305. The new five-door, five-seat model “combines sports car detailing with luxury motoring,” says VW. Luggage space is 563 litres with the rear seats in place, rising to 1,557 litres when the rear seats are folded. In the UK, the Arteon range will initially feature three turbo charged direct injection engines: a 276 hp 2.0 TSI (petrol); and two 2.0 TDI (diesel) engines with outputs of 237 hp and 148 hp. All the transversely mounted four cylinder engines can be combined with an automated dual clutch seven-speed gearbox while the most potent versions also boast Volkswagen 4MOTION all-wheel drive as standard. All other models have front-wheel drive.

The Arteon has a 0-60 mph time of 5.4 seconds in 2.0 TSI 276 hp guise, while the 2.0 TDI 148 hp model returns 62.8 mpg combined. Offered in two trim levels – ‘Elegance’ or more sporty ‘R-Line’ – all versions feature the latest Discover Navigation system with eight-inch colour touchscreen, eight-speaker sound system, Bluetooth audio and telephone connectivity, and Volkswagen Media Control which allows remote control of the infotainment system via compatible smartphone or tablet device. Other standard-fit highlights in the Arteon include: digital instruments via the 12.3-inch Active Info Display; minimum 18-inch alloy wheels; LED self-levelling headlights; and Nappa leather upholstery.

ROAD TEST: MITSUBISHI L200 BARBARIAN Mitsubishi began developing cars 100 years ago and has a long-proven reputation for producing tough vehicles - none more so that its L200 pick up, writes NICK FLETCHER. There are several body styles available and the doublecab is popular because it overlaps the trendy SUV market, combining family transport with rugged workhorse capability. The pick-up sector is surprising crowded, with rivals models from Toyota, Ford and Nissan among others in the mix, yet Mitsubishi’s robust brand image and competitive pricing ensure it maintains a loyal following. Prices start at £18,300 excluding VAT though high-spec double cab versions can top £30,000. One attraction of the pick-up is the tax break available to drivers using one tonne-plus capacity commercial vehicles for private mileage. My test model was an L200 double-cab in high-spec SVP Barbarian trim and priced at £28,775 excluding VAT. For that you get 17-inch black alloys with all-terrain tyres, leather seats, roof rails, wheel-arch extensions, side-steps, premium HD navigation and audio system, dual zone climate control, keyless operation, rear view camera, selectable 4WD, and even front and rear mood-lighting among its kit. The modern efficient 2.4 litre 178 hp diesel engine is mated to a 6-speed manual gearbox (auto transmission is an option) and the acceleration figure is very good by class standards, 0-60 mph in 10.4 seconds, similar to many cars. Fuel economy is also good for such a large vehicle – 39.8 mpg combined. The L200 has a payload of just over one tonne and a 3,100 kg towing weight (3,000kg for single cab).

More sleekly styled than most rivals, the L200 has stable handling characteristics, with less ‘bounce’ than you get on some pick-ups.The engine is chattery on start-up but quiet on the move and the overall driving experience is smooth and easy, with a slick-shifting manual gearbox and precise steering. The cabin, with leather upholstery and large central touch-screen looks impressive and there is plenty of room for five adults. Only downside is minimal cabin s towage space. With eye-catching styling, good all-round performance, five-year warranty and robust reliability record, the L200 double-cab pick-up is an attractive alternative to more conventional commercial vehicles for those who want dual-purpose versatility for family and business use.



ROAD TEST: VAUXHALL CROSSLAND X Vauxhall’s new Crossland X model is a practical family car with trendy styling which aims to bridge the gap between SUV and MPV models, writes NICK FLETCHER. Based on a modified Peugeot 2008 platform - the French company now owns Vauxhall - the Crossland X offers a choice of engines. The entry level versions have a 1.2 litre petrol unit and there are also turbo-petrol versions and diesels in the range. The starter models have a five-speed manual gearbox though up the range you get six-speed box, and auto transmission is also available on some models. Prices start at £16,555. The overall size of the Crossland X is very neat, managing to be quite roomy but with a smaller footprint than many SUV and MPV rivals. It is agile, easy to park, smooth to drive and has a light-touch feel which makes it pleasant to in be in. With slightly raised ride-height and softer suspension set-up than many in the class, the Crossland X is a very comfortable car. My test model was in SE EcoTEC trim, with a 108 hp turbo petrol engine. This version costs £17,875 and has plenty of

standard kit including stop-start system, 7-inch touch screen, Bluetooth, Apple CarPlay and Android Auto, cruise control, climate control and auto lights and wipers. You also get 16inch alloy wheels, and front-camera system. Sat-nav is a £710 option. The 0-60 mph time is 10.6 seconds, fairly typical of models in this class, and the top speed is 117 mph. Fuel economy is 57.6 mpg combined, decent for a petrol model. Designed to maximise interior capacity, there is good space for five adults and the boot holds 410 litres, larger than most rivals, and there is the option of a sliding rear seat which can boost space to 520 litres. Rear seats fold and an adjustable boot floor means no load lip so larger items can be loaded with minimum hassle. With its potent looks and muscular body-cladding, the Crossland X stands out in an increasingly crowded SUV/MPV marketplace and with the charisma to attract new buyers to the Vauxhall brand, is likely to be a very strong seller.

The SEAT Leon has shattered all the sales records set by the two previous versions. Since the end of 2012, the carmaker has sold 682,567 units of the SEAT Leon. This is the highest selling compact car in the history of the company. In total, SEAT has sold 1,893,279 Leon models. SEAT says: “In the 18 years since its launch, the Leon has become one the brand’s flagship models and has yielded major results. The performance of the current generation Leon has encouraged the transformation experienced by the company in recent years and has been a significant factor in boosting SEAT sales.” SEAT launched the Leon facelift this year, in January. Together with the Ibiza and the Arona, the Leon is part of SEAT’s biggest ever product offensive. The expansion and upgrading of the range are boosting SEAT sales, which have grown by more than 13% so far this year. SEAT Leon prices start at £17,455.

HONDA NSX ON THE WAY! Only 100 of the latest Honda NSX models were made available to the UK when the supercar was launched last summer and they were quickly snapped up. But now Honda has announced that a further 50 have been allocated to the UK, but won’t be here until next summer as demand is still far exceeding supply. Powered by a 3.5 litre V6 engine and three electric motors, the NSX offers 573 hp, has a top speed of 191 mph and a 0-60 mph time of under seconds. It costs from £150,000. It has four different modes to adjust the driving experience, with an integrated dynamic system featuring Quiet, Sport, Sport + and Track, all of which alter the engine, motor, transmission, chassis response and engine sound level to differing levels. Dave Hodgetts, managing director of Honda UK, said: “The NSX represents both the pinnacle of engineering for Honda when it comes to road cars and also continues the heritage of Honda’s original NSX supercar produced between 1990 and 2005, which makes it all the more sought-after.”



NADIYA HUSSAIN: EVERYONE’S FAVOURITE BAKE OFF CONTESTANT A good grounding, a wise head, and a heart full of love makes this cook so inspiring, says Claire Spreadbury. Nadiya Hussain is, without doubt, The Great British Bake Off’s most successful winner. Two years ago this month, the Luton-born motherof-three first appeared on our TV screens, all wideeyes and eyebrows, and won the hearts of the nation as well as the competition. You might not remember anything she actually cooked all series, but there isn’t a single Bake Off fan who wasn’t stirred by her victory speech. “I’m never going to put boundaries on myself ever again,” she declared, as we all watched on teary-eyed. “I’m never going to say I can’t do it. I can. And I will.” And she has. From fronting her own TV programmes and appearing on talk shows, game shows and cookery shows, to releasing four cookbooks and

being asked to bake a cake for the Queen, it’s been a decidedly busy 24 months. She’s as lovely in person as she comes across on TV. Those big brown eyes beaming back you as she talks so passionately about food and family life. Claiming “British food has become a melting pot of cuisines and cultures”, Nadiya wanted to find out what was being eaten in the hubs of our homes, before getting creative in her own kitchen and coming up with her take on Brit-style cooking. “Because I’m from Bangladesh, from England, Muslim, a mixture of a little bit of everything, I’ve always asked myself, ‘What makes me British?’ And if somebody asks me what British food is, I’d say it’s what I eat at home. Cooking has always been a big part of Nadiya’s life. She started around age 8, “copying her dad”, who used to run restaurants, and asking her mum questions in the kitchen.

Asked what it is that makes her so likeable and Nadiya is stuck for words. She shrugs her shoulders, cracks a beautiful open smile and says: “I don’t know, I’m just me. Whether I’m talking to you, on telly or whatever it is I’m doing, I don’t ever try to be anything other than myself. Perhaps that’s what people see? Summer Fruit Semifreddo (Serves 6)

400g frozen mixed summer fruits 100g caster sugar 3tbsp water 7 slices of white bread (about 170g), crusts removed, halved lengthways 600ml double cream 2tbsp golden syrup

Method Put the frozen fruit, sugar and water into a medium pan and bring to the boil, then take off the heat. You don’t want the fruit to break down too much but you want to extract as much liquid as possible. Drain the fruit through a sieve, making sure to catch all the liquid in a bowl. Use the back of a spoon to push through as much liquid as possible. Then leave the liquid to cool completely. Line a 20cm round Pyrex dish with cling film. Dip each piece of bread quickly into the fruit juice mixture and place around the edge of the dish vertically, slightly overlapping each piece with the next to prevent leaking. Do this all around the edges - you should have one piece left. Break that piece down to size, then dip it in the fruit juice and place it in the base of the dish. Set aside. Whip the double cream to soft peaks, then add the golden syrup and mix well. Add the fruit and ripple through gently. Put the cream mixture into the lined bowl and spread it level on top. If any of the bread pieces come up higher than the top of the cream, simply fold them over. Cover the top with cling film and place in the freezer for three hours.

To turn out, tip on to a plate and remove all the cling film. Cut into wedges and serve.


Beef Skewers with Puy Lentil & Chickpea Salad (Serves 4)

For the beef skewers: 4 beef fillet steaks (approx 600g), very thinly sliced 4tbsp olive oil Peeled rind and juice of 2 lemons 2 small green chillies 30g fresh coriander, chopped 1tsp salt

Soak eight wooden skewers in cold water for 15 minutes. This will prevent them burning during cooking.

For the salad: 1 large clove of garlic, crushed and finely chopped 1 large red onion, diced 15g fresh coriander, finely chopped 1 small chilli, deseeded and finely chopped 1tbsp wholegrain mustard 3tbsp olive oil 250g cooked puy lentils (buy a ready-cooked pouch) 2 x 400g tins of chickpeas, drained Juice of 1 lime 1/4tsp salt

Slice the steak lengthways as thinly as possible and set aside in a bowl. Put the oil, lemon rind, lemon juice, chillies, coriander and salt into a food processor. Blitz to a smooth paste, then add the paste to the bowl of steak pieces. Mix well, then cover and set aside for 20 minutes. Meanwhile, make the salad. Put the garlic, onion, coriander, chilli, mustard and oil into a bowl and mix well. Add the lentils and chickpeas. Squeeze in the lime juice and mix through the salt, then cover and set aside.

Preheat the oven to 240°C/220°C fan/gas 9 and lightly grease a roasting dish. Or if you prefer to cook your skewers on a griddle pan, grease it lightly and put it on a medium to high heat to start warming up. Meanwhile, skewer the beef pieces in a zigzag pattern. Do this until you have filled all eight skewers. If you have any leftover marinade, just dab it on top of the beef. Line the skewers on to the greased roasting dish and bake for eight to 10 minutes, making sure to turn them over halfway through. Or, if griddling, put them on the hot pan and cook for three to four minutes on each side. Once cooked, serve the warm beef skewers with the salad alongside. 147


Ploughman’s Cheese & Pickle Tart (Serves 8)

350g shortcrust pastry 1tsp paprika Plain flour, for dusting 4 medium eggs 150ml whole milk 200g Branston pickle (small chunks) 250g mature Cheddar cheese, grated

Take the block of shortcrust pastry, flatten it out slightly and sprinkle all over with the paprika. Fold the edges in over the top, then knead the pastry until all the paprika is incorporated. If the pastry starts to stick to the worktop, dust with flour. Wrap the pastry in cling film and place in the fridge for 15 minutes. Meanwhile, preheat the oven to 180°C/160°C fan/gas 4 and put a baking tray in to heat up. Dust the work surface with flour and roll out the pastry to the thickness of a pound coin and large enough to cover the base and sides of a 23cm diameter, 3-4cm deep, loose-bottomed flan tin. Line the inside of the tin with the rolled-out pastry. Press it into the edges, right into the grooves, leaving some overhang. Pierce the base all over with a fork. This stops it puffing up while baking. Cover the base and sides with a large piece of baking paper and fill with baking beans to weigh


the pastry down. Take the hot baking tray out of the oven and place the prepared tart tin on it. Bake for 25 minutes, then take out of the oven, remove the paper and baking beans, and bake for another 15 minutes. Meanwhile, put your eggs into a jug and lightly whisk. Add the milk and stir. Once the tart shell is out of the oven, spread the pickle all over the base and cover evenly with the grated cheese. Pour in the milky egg mixture and place the whole tray back in the oven, on the middle shelf, for 2530 minutes, until the filling is set and golden, with just a very slight wobble in the middle. Once the tart is cool enough to handle, slice off the pastry overhang using a sharp serrated knife. Leave to cool in the tin for 30 minutes, then transfer to a wire rack to cool completely.

SAINT JAMES LASH BAR We’re obsessed!

They say eyes without lashes are like cakes without frosting – perish the thought! So in the pursuit of bettering my ‘selfie-ready’ self, I thought I’d visit the expert. Among the antique stores of uptown Boscombe, lies a chic whitewash shop front. With two ornate bay windows, dressed with calligraphic decals, and the glimpse of a crystal chandelier through the door, the tone was set, even before entering. I gently pushed the door to reveal owner and operator ‘Victoria Hill’. Her beaming smile and enthusiastic greeting made for a great first impression. As I looked around I thought, wow! The interiors are so gorgeous. With a striking mixture of white wooden cladding and exposed brick, you feel as though you’re in a trendy Soho loft. The on-trend grey furnishings, fresh-cut flowers and the smell of eucalyptus scented candles, are little lavish extras that add to the overall elegant feel of the place. As I sipped my complimentary coffee and filled out the relevant consent forms, I got to chat with Victoria about how she started her business. From a young age, Victoria saw herself working in the beauty industry. To the point where she couldn’t imagine doing anything else. It was always her dream to own her own salon; to put


all that she had learnt into practice in a place she could make clients feel special and glamorous. Moments later I was led down a corridor into the treatment room. A white coach lined with a soft cotton towel was waiting for me. I lay down and got myself comfortable, whilst Victoria talked me through the treatments. First, a brow tint and shape. Using the popular threading method (quite literally thread that pulls out the tiny hairs), Victoria gave me a whole new set of stylised brows. I have had my brows done countless times. Threading, plucking, waxing – you name it, I’ve done it. But, I have to hold my hands up and say that Victoria really transformed them. They were perfect! She assessed my face shape and framed it accordingly. She even went a little darker on the tint then I would usually go, but she knew best, as they looked fabulous! The next step was the lashes; a fullset of natural looking, yet amplified, extensions. I went into Saint James having had a couple of prior bad experiences elsewhere (having had my top and bottom lashes glued together before), but I was keen to have my faith restored. Having super sensitive eyes, I always dread a bright light beaming into them, but to my delight this wasn’t the case – and it

made the world of difference. I must admit the process did take a little longer than previous experiences, but I later realised why. Around 100 or so extensions were added to each lash, and to each eye I might add. Victoria was so thorough and it really showed in the results. The entire process had been so peaceful, with the sound of tranquil music playing in the background and before I knew it, it was time for the big reveal. I opened my eyes to a set of perfectly fanned voluminous lashes, though if I hadn’t had seen them in the mirror I would have never known, as they were so lightweight.

Before leaving, Victoria handed me a goodie bag, packed with a collagen eye-mask, lash brushing wands and a divine smelling Saint James candle – which I will be stocking up on my next visit! I headed back to the office full of newfound confidence – it’s amazing what a little beauty therapy will do to a girl. Now two weeks in, my lashes are still full and fabulous. I’ve already booked my infills in anticipation for an upcoming holiday and I’m so excited to go back to be pampered once more! By Charlotte Williams

ONE FOR ALL, AT BE AT ONE! Anyone that lives (or grew up in) Bournemouth will tell you that its night-life scene has changed rapidly over the last ten to twenty years. Most of the clubs from our partying years have gone and not much – if anything – has stepped in to replace them. Whilst the existing bars serve a purpose to Stags and Hens hoping to get lathered with liquor, the question remains: what’s left for locals? Over the years the basement bar of Richmond Hill has housed the likes of several different brands; Consortium, Kukui, Lola Lo, Sakura – all of which came to an untimely end, thanks to the decline of nightclubbing and the rise of ‘bar-hoping’. Well, allow us to introduce the latest (and maybe greatest) newbie to take over the premises, the ‘Be At One’ group. We had been invited (courtesy of our friends over at Route Pr) to a cocktail masterclass and the subsequent launch of the new it bar.

We arrived at the red-neon lit entrance – the glow calling to us much like the sweet siren of booze – where a smiling host was waiting. She led us down the stairwell into the basement below, pushed open the doors and lo and behold; a buzzing throng of post-work drinkers, press and flaring bartenders galore. On mission as always, we headed to the bar to start our sampling. “What will it be?” cooed the suave server. Unable to choose from their seriously extensive menu, we implored him to choose for us. He took our flavour and alcoholic preferences and soon after two picturesque cocktails arrived – such service! Each taking our seats, we scanned the room; everyone was smiling, drink in hand. As soon as the rest of the group had sat down and made their introductions the class began. The masterclass was a whirlwind of alcoholic history. Taking us through Be

At One’s making, I learnt that the same guys responsible for the brand had all previously worked at TGI Friday’s – known for it’s fun-loving approach to cocktails. Which was no surprise having seen the incredible comprehensiveness of Be At One’s drinks menu. I also learnt that each and every bartender undergoes an enormous £5,000 worth of training before being allowed to serve a single drink. Our host taught us how to make five or so cocktails from each category: rum, tequila, vodka and whiskey – nothing was spared (and nor were our heads the next day). A particular favourite of mine was the appropriately named ‘Pain Killer’; rum, pineapple, orange, rum, coconut cream, oh and more rum. If you like Pina Coladas (aka holiday in a cup) then you’ll love this! It was a wonderful way to get to know our new local. Their incredible menu, along with their skilled barkeeps and new-york loft atmosphere will have guests (including, no, especially us) coming back time and time again. WELCOME TO THE BRAND NEW WASSMUFFIN MIXED MARTIAL ARTS ACADEMY It is finally here, Wassmuffin Mixed Martial Arts Academy. At Fitter Than Fit we are proud to introduce our new gym to you all. It has been a long time coming, we have been the littlest Hobos of the Thai boxing World for so long it seemed like a distant dream to get our own place at times. It has all come together for us now at a new location in Boscombe on the main Christchurch Road, a shiny new gym with all the trimmings (well some of them, still a few little things to finish) after a massive renovation, which was a huge job. A lot of people thought we had bitten off more than we could chew, but hard work prevails and after two months an old charity furnishing shop was turned into a great new Wassmuffin Academy. It is a spacious gym with Ladies and Gents toilets, changing rooms, one full wall of hanging bags, a large reception area, a 12ft ring at the back and various fitness equipment including kettle bells, sandbells, steps, dumbbells, core and med balls. We also have a large number of pads, gloves, shin pads and head guards that can be borrowed. We will also start selling merchandise in our shop. We are lucky enough to be ambassadors for the very popular and ever-growing Combat Dollies fitness

wear, run by someone in the industry who also trains and fights, so she has full awareness of what woman want and need when training, which is incredibly important. Recently we were given a second set of exclusive Limited Edition Wassmuffun/combat Dollies leggings and sports bra set which was so popular it sold out within a day. So, watch this space for more training gear coming in stock in the future. Wraps are also always available in the shop as an essential with gloves, Thai shorts and Shin pads to follow. As well as a small collection from the Clean Freak range to keep all your kit fresh and clean. We will soon also be selling protein shakes and drinks. As always, we have a wide variety of classes and have added a lot of new ones to the time table as well as courses. These courses last 6 weeks ranging from once to twice a week for the cost of £50, it’s a fantastic price and we are pleased to be able to offer these with amazing experienced instructors for a price that means all people can train with us. Each class ranges between an hour and an hour and a half so more than worth your money. We also offer a platinum membership which includes all classes on our timetable and free membership for one child between 5 -10 years old. We have some unbelievable membership deals

which give the opportunity to train in just our fitness classes which I will talk more about in the next issue. We have children’s classes every day now with Thai boxing 4 days a week and a Thursday Capoeira which is a Brazilian martial art and includes gymnastics and Thai boxing moves. Our ever popular bootcamp is still running every morning which is a mixture of fitness, strength, toning and core using the Thai boxing basics on pads and bags and circuit and body weight training. Thursday is the only morning we don’t have bootcamp, at the moment, as we have our wonderful Yoga Instructor Rachel teaching an early morning Vinyasa yoga class, which develops strength, flexibility and agility all things athletes and others could do with in everyday life. All this and our 9.30am Thai fit class which has become so popular we have now made it a mixed class three days

a week. Our Thai boxing class also takes place in the evening with our usual evening bootcamp and boxing classes. Take a look at our time table and see for yourself our new and old classes.
