Only 8 weeks post birth and I'm back. Juggling children and work is what I do best, but until things at home settle down a bit I'm pleased to say that I'm only working part-time. Saying that, I could still do with a little help from Peter Andre! If you're wondering what I'm talking about then read up on our TV pages about his new show, where Peter helps out members of the public. I feel obliged to take up some space with a huge congratulations to my husband who successfully completed the 100 mile Macmillan charity bike ride - sleep deprivation (thanks to the new baby!) and no training proved no match for Chris. Well done and congratulations to the rest of the AFC Bournemouth team. We've been busy again this week packing in as much as we can and my highlights are the stunning barn conversion story on page 26, which has a bitter sweet tale to be told, the Summer Shoes feature on page 150 (yes I'm a

sucker for sexy pair of shoes) and our Tom Hanks interview - you can't say we don't work hard on our editorial here at HOUSE towers! One thing I've really missed whilst I have been away are the emails I used to get from readers sharing with me thoughts about the magazine and various local topics! Local businesses ride for Macmillan Sunday 3rd July saw hundreds of people, including the AFC Business team, get together for various length cycle rides in aid of Macmillan Cancer care. The AFC team, organised by Commercial Director Rob Mitchell, made up of some 26 local business people, took part in all available lengths of the ride, including many taking on the 100 mile challenge. As we went to press, the total raised by the AFC Business team topped a whopping £6,800! All for a very worthwhile cause that makes a real difference to the life’s of people suffering from Cancer and their families. It was all very innocent and all too easy to get myself wrapped up in cycling 100 miles

for charity! We’re big supporters of AFCB at House magazine and it was at one of the AFC Business – their business networking events – breakfasts that I was chatting to Rob Mitchell from AFCB and Chrissie Wathen-Neal, fundraising manager for Macmillan in Dorset. It turned out, Rob had decided to enter a team for their Dorset cycle ride and thought I might be up for a challenge, ‘sure’, I said rather naively, ‘how far?’, anything from 10 miles to 100 was the response. Of course, never one to do things by halves, I jumped straight in volunteering for the 100 mile ride, after all, it’s for a good cause, and how hard can it really be I thought. Pretty hard as it turns out! That was several months ago when it all seemed very distant and easy, but the months passed incredibly quickly and before we knew it, it was show time! Fortunately, the team had been lucky enough to have use of the spinning room at the Club at Meyrick Park, along with the superb tutoring of Amanda Burger. Although I’m a pretty keen cyclist, I’ve never ridden close to 100 miles, so promised myself lots of training to prepare for the day. My plans however, were somewhat scuppered by the arrival of our second child, with that

momentous event, went my training time, straight out the window. Don’t get me wrong, this was no surprise birth, so I really should have been better prepared! So there I was, morning of the ride and about 3 hours worth of training under my belt in preparation, well done, I thought, this is really going to hurt. There was no backing out for me though, having lost my mother to cancer only four weeks before, the amazing care that Macmillan give was right at the front of my mind as I set off alongside hundreds of other cyclists, some clearly more used to distances like that than others, but all with bundles of passion for the cause. To cut a long ride short, there was lots and lots of hills and it was incredibly hard work, 100 miles, really is a long way to ride. We were helped along the way though, by some fantastic volunteers manning the refreshment stations along the route, the help of which, we really couldn’t have done it without. Thanks to everyone who came out to support us riders, thanks to everyone who sponsored anyone riding, and thanks to all those riders for putting in the effort to raise so much money for such a good cause. Well done everyone.

The Modernist Barn of Glass and Oak


Nestling in the Kent countryside this modernist barn conversion is a masterpiece of glass and oak. It was built by Liana Fox and her late husband Nigel in the grounds of Poldhurst Manor near to Canterbury. The couple bought the large manor property, which came complete with numerous barns and outbuildings, for ÂŁ450,000 in 1995. Its previous owners had been farmers and the house hadn't been touched for years while the outbuildings were converted for agricultural use. It was while considering their options that the Foxs first began to consider renovating the nearby barn, which dated from the 1300s, as opposed to the manor house. After to two years of discussions with planners they eventually sold the manor for ÂŁ1.55m and began work converting the barn. Their aim was to create something remarkable and modern juxtaposing 13th Century external wall with acres

of glass. With most of the work complete the couple finally moved in June 2008. Shortly afterwards Nigel was diagnosed with a brain tumour and sadly passed away in January 2010. However, he lived to see his dream for the barn come to life. Today the property actually consists of two different barns. Manor Barn contains the main living space, consisting of five bedrooms and four reception rooms. Meanwhile, New Barn is set just across the garden and is home to a home office and a gym. The oak frame of Manor Barn has been carefully restored so that it forms an integral part of the design - acting as a contrast to the huge walls of

I have recently secured planning permission for a residential development and the S106 contributions (open space, heathlands and transport) seem very high (over £7000 a unit!) – is there anything I can do about these?


. Unfortunately, this is an all too common question that we are asked in the office. But the answer is very often yes! In law the contributions demanded by the Council have to meet certain tests and very often on appeal Inspector’s find that the Council’s evidence that these tests are met to be lacking. Recently Planning Solutions have been successful in either reducing the Open Space and Transport Contribution payable on developments or in large number of appeal cases removing the Transport Contribution altogether. In terms of this transport contribution in South East Dorset (Bournemouth, Poole, Christchurch and East Dorset) this is based on the The SE Dorset Transport Contribution Scheme (SEDTCS) 2009. This scheme uses a cumulative impact approach to mitigate the impact of new development on transport infrastructure and the payments are to be spend widely across the districts. However, Bournemouth Local Plan Policy only seeks contributions for highway improvements that are directly attributable to the development proposed. And one of the legal tests of a Section 106 is that it must be “directly related to the development;”. Inspectors frequently conclude that the South East Dorset scheme fails to demonstrate that the payments would be spent on transport infrastructure that is directly related to the development. Thus Inspectors have removed the transport contribution – a saving of circa £5000 a unit! So if you have a planning consent with a hefty Section 106 attached why not contact us to talk about the possibility of reducing it? . In our next issue we will follow on from this topic and discuss how Planning Solutions are successfully negotiating a reduced or in some instance the removal of the Affordable Housing Contribution – particularly in Bournemouth.

To tone and strengthen your biceps, triceps and chest muscles. Try to change hands when using the drill, so you work both arms, and stretch your arms and shoulders between drilling sessions.

Vacuuming – Front-to-back vacuum cleaning tones and strengthens your shoulders, chest and core muscles, arms, and lower and upper legs, while side-to-side vacuuming works out all of the above muscles and the large group of muscles in your back. When vacuuming up your DIY mess, see it as a whole-body workout, as you're bending down to change the attachments, pushing the machine around and twisting your body to move it into hard-to-reach places.

Sawing – To tone and strengthen your waist, abdominal muscles, biceps and triceps. Pull in your stomach and buttock muscles when sawing, & flex your upper body as you push the saw.

Painting walls – To tone, strengthen and lengthen your waist, and work your biceps, triceps, abdominals, buttocks, lower and upper legs. Make sure you stretch and flex when painting your walls using a paint roller is a great way to get a full upper-body workout.

Seasonal task... Give your shed some TLC, or even a new look - paint your shed in soft shades for a trendy beach-hut vibe.

Sanding – To tone and strengthen your biceps, triceps & shoulder muscles. Flex and relax your upperarm muscles when using an electric sander.

Ask the expert... I seem to have damp at the top of the chimney breast in my kitchen. My partner thinks it's historic - work was done to the roof last year, so there shouldn't be damp, but the chimney breast is directly below the roof. What should we do about it? Damp can take a very long time to dry out once the cause has been rectified, so it may just be a case of waiting. If you're worried, why not use a damp detector to give you a better idea? Try the Moisture Meter, from £65.64, from Stanley, which comes with a handy pouch and can be used on both masonry and wood. It's really simple to use - just touch the plaster with the prongs and look at the reading on the LCD display. Lots of lines indicate moisture (anything above 1.5% on the display is suspicious for masonry). If there's no improvement in the reading over the next few months or so, the cause of the damp may not have been rectified, so you should probably consult a roofer or specialist damp company.

The mop uses just water & heat - no detergent necessary - & kills 99.9% of germs. All you need is tap water - pour it into the tank, turn on the mop and it filters the water and heats it in seconds. You can see at a glance when it's ready to go because the light changes from red to blue - it's really quick. The cleaning's done by a washable microfibre pad, which attaches to the mop's 180-degree swivel head. The head makes it easy to manoeuvre the pad around the room & under furniture, & there's a very long power lead, so you're not restricted. . I generally like my kitchen but the layout of my sink and hob isnâ&#x20AC;&#x2122;t particularly convenient for cooking. Can I move things around without having to rip out my whole kitchen?


. It is difficult to answer your question without seeing your kitchen, as the flexibility to move things about is going to vary from case to case. Generally speaking sinks can be moved a reasonable amount as long as the sink can still connect easily to the supply pipe and you have a waste solution in place. They say that people have just 25 seconds to make a first impression when meeting someone new. The same is true for visitors coming to your home and seeing your front garden for the first time. Local estate agents are all agreed that updating your front garden and driveway with good landscaping design can improve your property value and make it much easier to sell. Projects that improve the kerb appeal of your property don’t have to be costly either. In this article Janine Pattison MSGD, Dorset’s leading garden designer, shows you how to create a unique and welcoming front garden and entrance to your property with the minimum of expense and fuss. The first thing to do is to take a good look at the front of your house. Does it have any kerb appeal? Be honest with yourself and compare it to neighbouring properties.

Write down the problem areas on a notepad. Is the planting overgrown? Do the plants look healthy and well-cared for? Is the path wide enough and is the surface safe to walk on? Assess everything with a keen eye …..The lawn , trees and flowers beds, even the house condition. Be brutal here. Take the time to think about what you have now and the vision of what you really want to create. Sometimes we live with things and we don’t realise (or are in denial) about how shabby or outdated our homes can get. The view of the front garden should also be exciting from the inside looking out. Go inside your house and look out the main front windows. If you don’t like what you see, neither will a potential purchaser. Is there an opportunity to screen the neighbour’s house for more privacy? Do you have year round interest in the plants?


Look through garden and lifestyle magazines for ideas. Decide on a garden style, and focus your efforts to keep to that style. It’s easy to get distracted.

Play up the focal point – Paint the door a contrasting color complimentary to the house color. This helps draw the eye to it. Make the path flow easily up to the front door. You don’t want someone to be confused about which door to use. The front path should be a direct walk from the driveway to the front door. A soft curvy line is good - but you don’t want your visitors wandering around and wondering if they took the right path to the house. Freshen up the planting. Sometimes all that is needed is a good pruning and shaping to help revitalise your planting. Soften the corners and base of the house with plants and shrubs. If you need to replace some bushes and hedges, and want something different, consider some new evergreen shrubs which have good foliage colour. Photinia x fraseri ‘Red Robin’ is a great low-maintenance evergreen shrub that has bright red new foliage in the spring while Aucuba japonica ‘Crotonifolia’ has evergreen variegated foliage in yellows and creams; ideal for brightening up a shady corner.

Carefully pick a colour theme. When deciding to add flowering plants like herbaceous perennials (ones that come up every year) keep to a limited colour range to create a calm, contemporary feel to the garden. Keep the beds free of weeds and apply a good mulch of shredded bark as this sets off the plants very well and looks great. Dress your front door with two matching planted containers flanking either side. Fill the planters with clipped evergreens or low maintenance annuals like geraniums and petunias. Using large single plants in the containers is a trend that’s becoming popular. Transform these containers cheaply with different plants as the seasons change. Add some outdoor lighting for security and also to bring your house and garden to life after dark. You can use low voltage LED lights for a quick and easy transformation. Ideas like shining the lights onto the path or using up-lights underneath trees for a cool effect have real impact. One last note. Before making any major changes to the paths or driveway surfaces in your front garden, check with your local authority to make sure that your proposals comply with all regulations relating to surface water drainage as the rules have changed in the last few years. As a lover of classic 60’s, 70’s and 80’s music, I have been thrilled to see so many of my favourite artists making a come-back in recent months and, in particular playing within the local area. Duran Duran, Paul Simon, Ringo Starr, Adam Ant and Roger Daltrey have either booked or performed gigs here. My fellow Wave 105 presenter Mark Collins was lucky enough to interview the timeless Stevie Nicks on his show last month and I was very envious. Now pushing 63, the singer of Fleetwood Mac fame has hardly aged at all, in fact she just seems to look better year on year. She recently released a new song “Secret Love” which is the first single from her seventh studio album “In Your Dreams”. The music is her first release in ten years, however she originally wrote the song in 1976 and recorded a demo for Fleetwood Mac’s 1977 album, “Rumours”, but it didn’t make the cut for the album back then. I am looking forward to hearing and seeing more of what Stevie produces. Another sprightly ‘60 something’, Roger Daltrey is currently fronting a marathon performance of the band’s 1969 rock opera, Tommy. As lead singer with rock and roll British super-group The Who, Daltrey sold around 100 million records. “Hope I die before I get old” he memorably sang on the classic 1965 hit “My Generation”, but 46 years on and Daltrey is showing that he is clearly not ready to collect his pension anytime soon with a challenging, back-to-back 12 night solo nationwide tour, at venues including the stunning Broadlands in Romsey. Ringo Starr and his All-Starr band visited Bournemouth in June in what was part of his first European tour since 1998. Replacing his former Beatles band-mates with new musicians creating All-Starr it was his 13th solo tour. It is hard to believe that Ringo turned 71 this month; he has the stamina of a man half his age, putting the rest of us to shame. Eight years spent as the drummer of the world’s most famous boy-band must have been good training. This year’s Glastonbury saw a fantastic line-up of golden oldies including; Paul Simon, Kool & the Gang, U2, Morrissey, Primal Scream competing with the young acts. In fact Paul Simon must have given his performance some welly as he was unfortunately taken ill following his performance at the festival. After just recovering from a respiratory infection, the recent illness meant he was sadly forced to cancel his planned gig at the BIC in Bournemouth in July. As much as I love the radio business, I have to wonder whether I’ll still be going as strong as these music legends by the time I reach my twilight years. Eating outdoors is one of the delights of the summer whether it's lazy meals with family and friends in the garden, afternoon tea parties on the lawn, or festival feasts. Celebrity chefs including Ed Baines, Mark Hix and Antony Worrall Thompson give their advice on creating successful al fresco occasions and Gabrielle Fagan picks out a hamper full of smart table products and accessories. "If only our climate would oblige I'd eat out all summer," enthuses chef Antony Worrall Thompson, author of The Essential Low Fat Cookbook (Kyle Books, £20). Al fresco high "I love Jamaica! On my last visit, I went to Trenchtown to watch local fisherman catching fish," he recalls. "They throw the fish onto the beach where they're picked up, gutted and slapped straight onto BBQs. They're the best

tasting, freshest fish I've ever had, and perfect to eat on a beach with a cold beer, looking out over the sea as the sun sets. "There were also men with machetes, who appeared a little menacing, until I realised they were chopping down coconuts and offering the milk as a refreshing drink!"

Serving tips Preparation is key. Marinade meat overnight, prepare vegetables and make dressings beforehand, and always keep raw meats separate from cooked meats. "I use large decorative jugs to add colour to a table, which is simply dressed with a cotton cloth," he says. "Fill the jugs with delicious punches that are heavy on flavour and light on alcohol. You don't want guests getting too rowdy before they've got to dessert."

Serving tips Two perils of al fresco meals are "wilt and melt" warns Gizzi. "Salads never fare well in the heat. Instead, opt for grilled or roasted vegetables, keep butter surrounded by ice and avoid chocolate." The table, she believes, should be as visually appealing as the food: "Nothing should be too matchy matchy, so I have a mixture of vintage plates, chunky glass tumblers and jam jars filled with flower posies arranged on a scrubbed wooden table. "If you haven't got an outdoor table, an old door put on trestles works just as well," she suggests.

Our tenants have just left the house we were renting to them. They had lived in the property for four years in total. Prior to them moving in we had new carpets put in throughout and have invoices to prove this. At the check out it was noted that there were some heavy stains on the lounge carpet, an iron mark in the hallway and hair tong marks in one of the bedrooms. My question is that as the carpets match throughout, are we legally entitled to ask them to replace the carpets in its entirety or just the rooms where the damage is caused? First of all if the tenant moved in after April 2006 and entered an Assured Shorthold Tenancy, then the deposit should be with one of the protected schemes. If you have not, then the tenant is entitled to 3 times the amount they have given you. And secondly, hopefully you have a detailed Inventory and dated photos taken at the commencement of the tenancy? On the assumption that all is in order your end then the rules are as follows. ‘The landlord should not end up, either financially or materially, in a better position than he was at the commencement of the tenancy or as he would expect to be at the end of the tenancy.’ In other words the deposit in not like an insurance ‘new for old’. We have to look at what is fair wear and tear or beyond fair wear and tear and the most appropriate remedy.Appropriate remedies could be; 1. Replacement of damaged item where it is either severely and extensively damaged beyond economic repair, or its condition makes it unusable. 2. Repair or clean. 3. Compensation for diminution in inherent value of the item or the shortening of its useful normal lifespan. With the damage of the iron mark and hair tongs to the carpets, this is negligence and if heavily marked should be replaced, if not heavily marked then compensation may be more in order. With regards to the stains, can this be professionally cleaned and with regards to the carpet being replaced throughout, highly unlikely? That said, replacement for ‘like for like’ costs will not be given. The adjudicator will take into consideration the life span expected of the carpets in question. For example if the carpet should have a life span of 10 years and your tenants have brought that forward by six years then the cost will be divided likewise. For example: Cost of carpet = £500.00 Actual age now = 4 years Expected lifespan of carpet = 10 years Which means; £500 divided by 10(years) = £50.00 £50 x 4 (years) = £200.00 £50 x 6 (years)=£300.00 Therefore the Landlord pays £200 towards the cost and the tenant pays £300 as he has shortened the lifespan of the carpets life. Up to 10,000 people including sports enthusiasts, party people and celebrities descended on a sun drenched Sandbanks Beach this weekend for one reason - to enjoy the spectacular British Beach Polo Championships.

VAN SHORTAGE LOOMS Slower new van sales three years ago are now starting to impact the current used van market according to British Car Auctions. With fewer vans entering the contract hire market in the second half of 2008 as the recession began to bite, there are fewer coming back to the market today on three year cycles. The situation has been exacerbated by subsequent contract extensions, causing further delay in stock reaching the market and when it does it is older, higher mileage and often poorer condition, says BCA. Duncan Ward, BCA’s General Manager, Commercial Vehicle Sales commented “We are now reaching the three year anniversary of the onset of decline in new LCV sales, when the rolling annual figure fell from nearly 350,000 units in June 2008 to a low point of around 180,000 by the end of 2009 – a drop of over 40%. “What it means is that for the next 18 months to two years, there is a potential for the market to be short of 3 to 5 year old one owner used LCV stock. If demand begins to surge in line with the expected economic recovery over the same period, we could see prices rise sharply in the used market. “We are effectively at the beginning of an extended supply squeeze in the used LCV market."


Pricing for the new Abarth Fiat 500C convertible, with manual gearbox, has just been announced – and it’s cheaper than the current car with ‘Competizione’ paddle-shift transmission. But the frugal unit returns 43.5mpg fuel economy on the combined cycle and has a CO2 figure of 155 g/km. Cottonwood boutique hotel This weeks HOUSE magazine food review was at the Garden Restaurant at The Cottonwood Boutique Hotel. By Ross Stallion

On walking in to the hotel it's immediately apparent that this isn't like the average shoreline run of the mill hotel you tend to find across Bournemouth.The wow factor is truly evident and the decor is truly amazing and very pink. You first stumble into the uber cool Bar Vista and terrace garden which is most definitely the ideal meeting place for all ages enjoying breathtaking panoramic bay views from its spectacular location metres from the cliff top and it offers contemporary, exciting brasserie food all day. You can also hire the library for an intimate private family meal or event which I thought was a great idea. If could describe this place in two words they would be contemporary decadence. It seriously has the wow factor. The Garden Restaurant is located downstairs just past the suit of armour! The incredible views over the gardens and cliff top strike you as soon as you enter. The decor is again pink and floral but very striking and welcoming. We were warmly greeted by the restaurant manager and the staff who were very friendly and helpful, it was a breath of fresh air as to how nice everyone was. The menu looked amazing and you get 3 courses for only £19.95 and even I ,who normally makes instant decisions struggled to decide what to choose, in the end I chose the seared scallops on a butternut squash puree with sauce vierge, whilst my fiancé had ham hock and parsley terrine and piccalilli with toasted granary bread, these were both cooked to perfection and tasted delicious. For the main courses I chose the chargrilled 21 day aged English sirloin with hand cut chips and bordelaise sauce, this was very tasty and I knew I had chosen wisely, my fiancé had the tagliatelle pasta with spiced chicken and chorizo topped with a fried duck egg, she is a big pasta fan and this dish made her day.

We did not think the food could get any better until we had the desserts, I ordered the warm chocolate fudge cake and berry ice cream whilst my partner had the rum and raisin parfait and shortbread biscuit these really were to die for. Overall, I honestly believe that we have discovered Bournemouth's hidden gem, a great place to eat, great value for money, amazing service with fantastic decor and views of the sea - what more can you ask for? Clog capers Chanel's reincarnation of the humble wooden sole last year brought clogs back into vogue. Thankfully, this summer, the heavy closedtoe mules that left people hobbling in the street have been become much more bunion-friendly. "Clogs have made a massive comeback, worn by the likes of Alexa Chung," Smith-Start explains. "Look for styles with a mini heel to make them a bit more elegant." Heel maven Sarah Jessica Parker recently replaced her trademark Manolo Blahnik stilettos with a very walkable pair of Swedish Hasbeens clogs. Other modern clog brands with wooden soles worth investing in include Sanita and Maguba. If you do prefer the old school-style, give them a 2011 twist: "Wear in an unexpected colour, like silver, if you're going for the classic closed-toe clogs," Smith-Start advises. "It all gets a bit too 'granola' rustic if you go for the natural ones."

Wedge walk Towering wedges are in the style spotlight once more as fashion focuses on the Seventies trend. Revive that retro vibe in cork or raffia for daytime bohemia or go for corsage adornments, or glitzy leathers, for Studio 54 glamour. "This season's wedges hit on the Seventies trend but, although they're high, they can be really light and comfortable," Smith-Start reassures. "Make sure you assess the weight so they don't pound your feet as you're strutting the pavements." If you get the wobbles with wedges, check out their little sister this season - the 'flatform'. A hybrid of platforms and flat shoes, these new-wave wedges were spotted on spring/ summer 11 runways. Boasting all the height of platforms without the pain, what they lack in elegance they make up for in the comfort factor.

"If you want more coverage, Gladiator bootie sandals are in. Or if you've got a good pedicure to show off, there are even jelly gladiators," says Smith-Start. "The gladiator shape makes jellies look more grown-up. Go for a bright shade or, for extra glamour, a metallic." Recipe â&#x20AC;&#x201C; Stein's Spanish conquest If Rick Stein is a typical senior citizen, it's no wonder we're thinking of raising the age of retirement. At 64 years old, the 'Padstein' chef and presenter is still going strong, and more likely to be found searching out Spanish cheese in a mountain cave for his latest TV show (or working out the last-minute details of his wedding to Australian fiancee Sarah Burns) than pondering his pension. "I've been going to Spain all my life, but for many years the word tapas in Britain didn't refer to anything remotely Spanish," he explains, as we chat about his latest series and book, Rick Stein's Spain. "In this country you'll be in for a wait, whereas in Spain, the prep's done beforehand and the actual service is like lightning. But proper tapas is appearing in Britain at long last," he says, sighing happily. To make his four-part series, Stein left his famous Cornish seafood restaurants behind and travelled across Spain, from Galicia round to the Basque Country, and on to Catalonia and Andalusia, to find the heart of Spain's rustic, ingredient-led cuisine - fuelled by plenty of white Ribeiro wine, of course. "The food relies on very fresh fish or excellent meat, and in that way it's similar to British food, which is far too much maligned," says Stein. "When you get fish, like a piece of John Dory cooked with a parsley sauce, it's as good as anywhere. That's the kind of food I found. "The way to spot a great tapas bar is to check out the menu. It's got to have Iberico ham. When I was in Seville, in allegedly the oldest tapas bar there, El Rinconcillo, I met a Welsh guy who made me eat jamon iberico de bellota [acorn ham]." For the last five months of their life, the pigs this comes from are fed exclusively on acorns, and you drink it with a cold glass of Fino sherry. "That's absolutely the centre of any tapas, you've got to have good ham." Also on his list are seafood ("maybe mussels in the shell"), breaded deep-fried squid, a prawn dish, deep-fried peppers and croquettes. Stein grasps at the air passionately as he talks, like he's trying to grab these foods and start cooking. "And you've got to have sausage - chorizo. Possibly Morcilla. It's blood sausage, but you'd hardly know because it's so spicy with pimenton [Spanish paprika] and often smoked." Thankfully these days, such exotic ingredients aren't hard to source. Companies such as Unearthed ( sell specialist produce to mainstream supermarkets. Stein also insists that you shouldn't be afraid to try out new recipes. "While cooking in Spain, the locals let me get on with it. I found that liberating. Much as I love the way people, like Italians, insist on doing things a certain way, I quite like to work these things out by myself." Here are two recipes from Rick Stein's book to get your teeth into...

Fresh Broad Beans with Black Sausage and Garlic Shoots

White Gazpacho with Garlic, Sprinkled with Grapes

Serves 6 as a starter

Serves 6

Ingredients: 225g rindless streaky bacon or pancetta, in one piece 2-3 salad onions or 12 spring onions 100ml olive oil 20g garlic, finely chopped 625g fresh broad beans, shelled 2 fresh bay leaves 1 small handful mint leaves, chopped 2tbsp Pernod 225ml chicken stock 150g black pudding Salt Crusty fresh bread, to serve

Ingredients: 200g slightly stale, crustless white bread 800-900ml ice-cold water 15g garlic, thinly sliced 100g blanched almonds 150ml good quality olive oil, plus extra to serve 4tbsp sherry vinegar 24 seedless white grapes, halved Salt

Method: Cut the bacon or pancetta into 7mm-thick slices, then again into small dice. Trim the salad or spring onions, cutting the white parts in half, then across into thick slices, and thinly slice the green. Gently heat the olive oil in a shallow flameproof casserole dish over a medium heat. Add the diced pancetta and fry until lightly golden. Add the white part of the salad or spring onions and the garlic and fry until the onion is soft. Add the broad beans and cook gently for two to three minutes. Add the bay leaves, mint, Pernod, chicken stock and a little salt to taste. Add the black pudding and push down into the beans, then cover and leave to simmer for four minutes. Uncover and continue to simmer until the liquid has reduced and almost disappeared. Lift out the black pudding and place on a board. Stir the green part of the onions into the pan and cook for a minute until just wilted. Thickly slice the black pudding, lay them on top of the beans and serve straight away with the obligatory crusty fresh bread.

Method: Break the bread into a bowl and sprinkle with 400ml of the ice-cold water. Set aside to soak for at least 30 minutes. Put the bread into a liquidizer with the garlic and almonds, and blend to a smooth paste. Then, with the motor still running, gradually add the olive oil, followed by the vinegar, one teaspoon of salt and enough of the ice-cold water to give the soup a good texture, neither too thick, nor too watery. Tip the soup into a large mixing bowl and add more vinegar if necessary and seasoning to taste. Chill for at least two hours. To serve, ladle the soup into small, chilled bowls and sprinkle grapes into the centre of each. Drizzle over a little more olive oil and serve straight away.

Hank goodness for Tom— Tom Hanks is multi-tasking in his latest film Larry Crowne, as director, writer and actor. Hollywood’s Mr Nice guy tells HOUSE about mid-life crises, tweeting & tackling tough issues on screen.


Just a couple of bites into our afternoon tea, and I feel like I’ve known Tom Hanks for ever. “I’m going to talk with my mouth full, but you’ll figure out what I’m saying!” he announces, through a spray of crumbs, making it slightly harder to understand the memorable voice that breathed life into Forrest Gump and Toy Story’s Woody. Having grown up in the presence of this warm, likeable everyman, it doesn’t really seem that unusual to be enjoying a relaxed cuppa with Hanks. At one point, he clutches my arm, trying to remember the name of a film that’s eluded him, just like an old friend, and then insists on taking our picture to tweet to his followers. And Hanks’s latest role certainly serves to cement his image as Hollywood’s Mr Nice Guy. He plays the eponymous hero in Larry Crowne, a Navy veteran who gets fired from his job at a superstore and goes back to college, transforming his image and falling for his disillusioned teacher, played by Julia Roberts, along the way. It’s a feel-good movie that touches on issues such as home repossession, marriage breakdown and the importance of education. Hanks, who co-wrote the script with Nia Vardalos (of My Big Fat Greek Wedding fame) and directed, had been mulling over the story of Larry for years. “When I was in junior

college, a 17-year-old guy out of high school, there were retired businessmen and mothers whose kids had grown up, in my sociology and zoology classes. “Just by coming to school their lives were much larger than they would have been. I always thought that would be a very interesting journey for a character to go through.” From this small seed of an idea, Hanks and Vardalos began work on bringing it to the big screen six years ago, and then the banking crisis took hold, giving it even greater relevance. “The downturn in the economy affects people personally, it’s not just something you read about on the business pages,” says the 54-year-old father-of-four, who’s just become a grandfather for the first time. “The trick is making a movie that doesn’t turn out to be the most depressing film you have ever seen.” It’s been 15 years since Hanks first went behind the camera as director of Sixties-set comedy That Thing You Do!, which he also wrote and starred in. He’s directed a couple of episodes of his own TV productions, including Band Of Brothers in 2001, but was waiting for the right project to tempt him again. “It’s like you have to be infected with a certain type of E.coli that takes you over until you’re like, ‘The only thing I can do now is direct a film’, because it’s two years of your life. “Quite frankly, being a movie star is a much better gig: it pays better, you don’t have to work as hard and they let you go home early sometimes - directing requires a personal investment in telling a story.” While wearing three hats at once as writer,

director and actor may have saved him some valuable time, he admits multi-tasking occasionally takes its toll. “About four o’clock in the afternoon, those three people got very tired, they got cranky and they needed to have a few moments to themselves and a nice cup of tea - and just enough scone - to make it through the rest of the day,” he says, flashing the full Hanks grin. Perhaps appearing to be the happiest man on the planet is Hanks’s way of making up for an unsettled childhood. Born Thomas Jeffrey in California, his parents split when he was barely five years old and he was brought up by his father and two successive step-families. He made his way to New York in 1979 to follow his dreams of acting after studying at college and California State University. As UK students face rising tuition fees, Hanks is adamant about the value of an affordable education. “My community college cost just 15 dollars, to register. Then state university cost 95 dollars a semester. This was a magnificent educational machine that made for an entire generation of educated people. “As soon as quality education becomes unreachable for a segment of society, you’re starting a domino effect that could tear down your republic quite frankly.” In 1980 he was cast in a short-lived sitcom, Bosom Buddies, and a guest appearance in Happy Days caught the eyes of director Ron “Richie Cunningham” Howard, who cast Hanks in mermaid romcom Splash, which proved to be his big break. The pair would team up again for The Da Vinci Code and Angels & Demons, with Hanks playing Dan Brown’s professor

He met his second wife Rita Wilson on Bosom Buddies, they married in 1988 and had two sons, and he credits his two families with helping him to avoid a Larry-style midlife crisis. “I had my first kids when I was in my early 20s and my second kids when I was in my mid 30s, so I always seemed to be in my child-rearing years no matter what,” he says with a guffaw. “When my 15-year-old decided to go to boarding school, all of a sudden Rita and I were empty nesters. But, hey, that’s not a crisis, that’s a celebration! “The standard version of a midlife crisis is that people wake up one morning and realise they’re unhappy even though they have everything. I might wake up tired but I don’t wake up unhappy.” Perhaps as a way to ‘get down’ with his younger kids, Hanks has taken to tweeting. “It’s kind of like sending out cool telegrams to your friends about once a week,” he says. But, left to his own devices, he tends to be more like the pre-college dowdy Larry than the scooter-riding cool guy we see at the end of the film. “I tuck my shirts in, wear bad sandals and buy pants that I think look great and as soon as I get them home, Rita says, ‘They’re too short!’” And he’s certainly not about to take on baddie roles just to make sure we know he can deliver them. “I don’t need to explore the dark side just for the sake of it, because that ends up meaning you play a role with lines like, ‘Before I kill you Mr Bond, perhaps you’d like a tour of our installation’. “This is my countenance, this is who I am and I get to explore an awful lot of really great things that are recognisable to everybody.”

Ingredients 140g Salmon Fillet 1 Fennel 1 Leek 1 Carrot 3 Peppercorns 100ml White Wine Vinegar 2 Lemons 1 Bay Leaf ½ Celery

2 New potatoes ½ Cucumber 2 Spring Onions 2 Cherry Tomatoes 5 Asparagus

200g Mix Leaf Salad 200g Herb Mayonnaise

Method Start by Making a Court Bouillon by boiling the carrot, fennel, leek & celery in water with the peppercorns, lemons, bay leaf and white wine vinegar. When the bouillon is boiling remove it from the heat and drop in your salmon. Allow the liquid to cool down and remove the salmon. Peel the skin off the salmon and mix sliced cucumber, spring onion, tomatoes and asparagus tips together with the mixed leaf and dress with a honey mustard dressing. Members of the public can contact Peter and the production team with whatever they would like help with, whether they are a single parent struggling to cope, a youth centre in danger of closure, a teenager who needs Pete's help rebuilding her life, or a whole town whose carnival needs re-invigorating. In episode two, Peter and his team are Here 2 Help in Harrow, North West London, a place close to Peterâ&#x20AC;&#x2122;s heart as he was born here and the Andre family lived here until they emigrated to Australia. Peter has come here to answer a request from the IGNITE TRUST, a youth centre which provides support, activities and outreach work for thousands of disadvantaged young people in the area, from young mums to teenagers heading towards a life of crime. Peter comes up with an idea that will involve all the young people in the centre by harnessing their talent and putting on a fundraising concert to raise funds through donations and ticket sales. To help, Peter uses his celebrity status to pull in top choreographer, Karamel and singing coach David Grant to mentor some of the aspiring musicians and dancers.

At the Claringdon Hotel in the centre of London a debutante has slipped away from her engagement party to make a phone call. Across town an academic is on edge, having spotted a familiar face watching him during his lecture. When Freddie is asked to cover the engagement party he discovers that the debutante is Ruth Elms, an old childhood friend. Ruth seems unhappy and when Freddie later receives a visit from her, she asks him for help

investigating a murder. As Freddie's suspicions grow, he realises his only hope of pursuing the story is to join the team of The Hour. But having found out that Bel will be producer, his pride burns. Matters are compounded when Freddie and Bel meet Hector Madden, the charismatic new presenter of the programme, to whom Bel is irresistibly attracted. As The Hour team is assembled, Freddie will be forced to decide where his priorities lie. What's more, he'll find a vital clue in the investigation of the academic's death and will find himself thrust deep into a darker tragedy.

Jason Manford hosts a new stand-up comedy competition which sees ten comics competing for a £100,000 prize, their own DVD and the chance to headline a nationwide tour. The series starts in Liverpool where the comedians are sent out to get to know the city and it’s people so they can write five minutes of brand new material to perform at a nervewracking gig in front of an all female audience. They then face a panel including comedian and actor Alan Davies, comedy critic Kate Copstick and this week’s guest judge, Liverpool legend Jimmy Tarbuck, who will decide which comedians survive to play next week’s gig and who will be sent home.

Shaun Dooley, Miranda Raison and Tom Ellis are among the ensemble cast of Sugartown, a new three-part comedy-drama series for BBC One revolving around a small seaside hamlet in the north of England which once enjoyed a heyday as the "stick-of-rock" capital of Britain. As the series begins, the staff at Sugartown's famous rock factory are busy preparing for Jason's surprise engagement party to local hairdresser Emily. Jason's glad to give them something to celebrate, because, frankly, "rock ain't rolling" any more and he's only just keeping the business afloat. But the party – and the whole town – are set to be derailed by the unexpected return of Jason's suave, prodigal brother, Max. Emily and Max had been childhood sweethearts but that was before he walked out on the fading seaside resort for the big city and broke her heart. But all that's behind her now and she loves Jason. Max's reappearance can only spell trouble, though, and he swiftly proves her right by announcing his big plans to redevelop the town and cash in on Britain's new wave of holiday-at-homers, starting with a controversial casino. Worse, he wants to close the family rock business to take his share. As the town's main employer and claim to fame its closure would devastate the community. However, the eccentric, loveable gang of Sugartown locals don't plan to take things lying down. With unlikely help from another newcomer, a spirited young dancer, Carmen, who's fallen in love with the town and its resident bad boy, Travis, they discover Sugartown once had another claim to fame – dance – and they may just have found a way to save it.
