Tuna Tartar 10 portions Ingredients 500gr Red Tuna (small dice) 30g Chives ½ tsp Lime Juice ½ tsp Olive Oil 100g Avocado (small dice) Salt & Pepper to taste 150g Avocado Puree 60g Citrus Jelly 4 slices Thin Baguette Croutons

Method Cut the tuna loin into small dice and mix with the chopped chives. Drizzle with the olive oil and lime juice and season with salt and pepper. Using two dessert spoon, prepare two quenelles per plate and arrange as shown in the photo. Garnish with the avocado puree, citrus jelly and croutons as shown in the photo, and serve.
