UM PEDAÇO DE HISTÓRIA A PIECE OF HISTORY

Sobranceiro ao mar que rodeia a Ilha de Moçambique, deste singular hotel avistam-se múltiplas paisagens, ora tangíveis pelos sentidos, como as Cabaceiras e os dhow rompendo o horizonte, ora fabricadas pelo imaginário que inspira a fantasia dos que por ali se demoram em justo descanso. No Terraço das Quitandas, os viajantes encontram, mais do que um hotel de charme debruçado sobre o Índico que jaz, manso, a seus pés, um lugar de beatitude introspectiva e no qual reverbera, em cada recanto do edifício, a História da própria Ilha – esse singelo repositório de culturas que é, hoje, Património da Humanidade.

As grossas paredes, articuladas em torno do amplo pátio interior, são elas próprias documento dos tempos áureos em que o Terraço das Quitandas se fez feitoria pelos alvores do século XVIII e a dois passos do coração da Cidade de Pedra e Cal. Foi demorada, a intervenção.

“Quando foi adquirido, em 2000, não tinha, sequer, portas nem janelas, e parte das paredes e do telhado estava destruída”, recorda António Pinto Ribeiro, diligente guardião do Terraço das Quitandas. Não obstante, com paciência, paixão e respeito pelas técnicas e materiais de antanho – as traves dos tectos, por exemplo, são ainda de pau ferro – recuperou-se o esplendor de outrora, e o Terraço das Quitandas abriu portas em 2009.

Overlooking the sea that surrounds the Island of Mozambique, this unique hotel bears witness to multiple landscapes, sometimes tangible through the senses, such as Cabaceiras and the dhow breaking the horizon, other times through the imagination that inspires the fantasy of those who linger there to get some rest. At the Terraço das Quitandas, travelers find, more than a charming hotel overlooking the Indian Ocean, which lies idly at its feet, a place of introspective beatitude and in which reverberates, in each corner of the building, the history of the Island itself - this simple repository of cultures that is today a World Heritage Site.

The thick walls, placed around the large inner courtyard, are themselves a document of the golden times in which the Terraço das Quitandas was established as a trading post on the dawn of the eighteenth century, and two steps away from the heart of the City of Stone and Lime. The intervention was long. “When it was purchased in 2000, it didn’t even have doors or windows, and part of the walls and roof was destroyed”, António Pinto Ribeiro recalls, diligent guardian of the Terraço das Quitandas. However, with patience, passion and respect for the techniques and materials of yore - the ceiling beams, for example, are still of ironwood - the splendor of a long-lost time has been recovered, and the Terraço das Quitandas opened doors in 2009.

A paixão é notória na decoração das seis suites climatizadas e zonas comuns (sala de estar e de jantar) composta de peças e padrões de origens diversas, numa fusão que resulta harmoniosa e cujo denominador comum é, para lá do bom gosto, o conforto e a sensação de estar em casa. Onde não falta, sequer, sala de jogos e biblioteca. A vera magia do lugar esconde-se, porém, na varanda florida voltada para o mar e no apartamento da cobertura.

Da primeira, saímos retemperados e de alma lavada pelo tranquilo movimento das marés; do segundo, que emerge do amplo terraço branco, interiorizamos a singularidade da Ilha de Moçambique ao vermos, de um lado, o espraiar do oceano que a rodeia e, do outro, todo o casario plurissecular da Cidade de Pedra e Cal. Inesquecível. Tal como o próprio Terraço das Quitandas que, muito mais do que um hotel, é uma experiência. A repetir.

The passion is evident in the decoration of the six air-conditioned suites and common areas (living room and dining room), composed of pieces and patterns of different origins, in a fusion that is harmonious and whose common denominator is, more than good taste, comfort and the feeling of being at home. Where there is even a games room and fully-furnished library. The true magic of the place is hidden, however, on the flowered balcony facing the sea and the penthouse apartment.

Regarding the former, we left replenished and with our soul cleansed by the calm movement of the tides; regarding the latter, which emerges from the wide white terrace, we internalize the singularity of the Island of Mozambique when we see, on the one hand, the ocean sprawl that surrounds it and, on the other, all the multi-secular houses of the City of Stone and Lime. Unforgettable. Much like the Terraço das Quitandas which, much more than a hotel, is an experience. To be repeated.

Talvez pela fachada, cuja traça denuncia o gosto indiano, talvez pela sala de jantar, com singelo bar ao fundo e paredes de reboco índigo onde moram quadros e fotografias de outrora, eventualmente pela simpatia do serviço – sorridente e atento sem ser intrusivo, mas seguramente pela cozinha honesta que oferece, o Karibu é uma referência na Ilha de Moçambique.

A fundação do restaurante, na Avenida da República da Cidade de Pedra e Cal, remonta a 1999, mas foi há dois anos e meio que Jorge Forjaz o resgatou da decadência. Por pressão da paternidade: “Sempre vi os restaurantes como escravatura consentida e não queria isso para mim”, confessa o homem que aportou na Ilha para apostar na hotelaria, ramo em que trabalhou em Joanesburgo, África do Sul. “O restaurante era só para apoio do hotel que pretendia abrir”. Como nunca franqueou as portas do sonho, o nascimento do primogénito mudou-lhe a perspectiva. De resto, “a oferta não era muita e achei que podia fazer a diferença”, diz Forjaz. E fez.

Ao que não será alheio o próprio imóvel. “No tempo colonial, era uma loja indiana de gravatas e roupa íntima feminina, com atelier de costura

Perhaps because of the façade whose design denounces an Indian influence, perhaps because of the dining room, with a simple bar in the background and walls of indigo plaster where paintings and pictures of yesteryear reside, eventually because of the staff’s friendliness - smiling and attentive without being intrusive, but surely because of the honest cuisine that it offers, the Karibu is a reference in the Island of Mozambique.

The restaurant’s opening, on Avenida da República da Cidade de Pedra e Cal, dates back to 1999, but it was two and a half years ago that Jorge Forjaz rescued it from decay. He blames his paternity: “I always saw restaurants as self-induced slavery, and I didn’t want this for myself”, confesses the man who came to the Island to bet on hospitality, an industry he first worked in in Johannesburg, South Africa. “The restaurant was only to support the hotel that I wanted to open”. Since he never crossed the doors of his dream, the birth of his first-born changed his perspective. After all, “the offering wasn’t much and I thought it could make a difference”, Forjaz says. And it did.

For which the building itself will be somewhat responsible. “In colonial times, it was an Indian tie and women’s underwear shop, with a sewing

no primeiro andar”, explica Forjaz, que meteu, literalmente, mãos à(s) obra(s). Dona Amélia, por seu turno, mete a mão nas panelas. Todos os dias, excepto à Segunda-feira. É graças à cozinheira, “regressada à Ilha para cuidar da mãe doente depois de correr meio mundo”, que onde antes se vendiam cuecas agora se aprecia uma “fusão culinária das influências portuguesa, moçambicana e indiana”.

Um reflexo, afinal, da Ilha ela própria... E é das águas ao redor que chega o atum para um carpaccio tão memorável como o filete com sementes de sêsamo ou as lulas de escabeche com cebola e soja. O mar, porém, nem sempre é perdulário pelo que, para garantir frescura aos clientes abancados nas dez mesas, o menu se mostra contido.

A carta de vinhos idem: maduros, são dez, entre tintos e brancos; verdes, só dois. Frugalidade aparente que o pudim de abóbora, tão exuberante no sabor, desmente. E bastaria esse, afinal, para tornar o Karibu de Amélia e Forjaz num lugar a revisitar.

It is thanks to the cook “returned to the Island to take care of her sick mother after crossing half the world” that, where before panties were sold, now a “fusion of Portuguese, Mozambican and Indian influences” may be appreciated.

A reflection, after all, of the Island itself... And it is from the waters around that the tuna is sourced for a carpaccio as memorable as the fillet with sesame seeds, or the marinated squid with onion and soy. The sea, however, is not always plentiful so, in order to ensure freshness to the customers seated on the ten tables, the menu is restrained. As is also the wine list: there are ten ripes, from red to white; unripes, only two. An apparent frugality that the pumpkin pudding, so exuberant in taste, belies.

And it would be enough, after all, to make Amelia and Forjaz’s Karibu a place to revisit.

Para grande proveito do palato dos comensais. Nos olhos dessa mulher robusta e de sorriso fácil, que preside ao laboratório culinário do Karibu, adivinham-se as muitas marés, pelas quatro partidas do Mundo que Dona Amélia terá singrado antes de volver à sua Ilha natal. E, nesse excurso global, foi colhendo um saber ecléctico que o seu filete de atum com sementes de sésamo traduz com deliciosa eloquência.

bique, furtado às salsas águas de cristal turquesa pelos pescadores que se aventuram para lá do horizonte e madrugada adentro, transita dos dhow de vela triangular para a cozinha do Karibu bem cedo pela manhã.

Entregue à destreza de Dona Amélia, o peixe é convertido em bifes com três dedos de altura, selados na passagem breve pelo azeite quente que, nesse ápice, lhes deixa incólumes a firmeza da carne, a textura aveludada e, enfim, um genuíno sabor a mar.

Dona Amélia acrescenta-lhe, com parcimónia e comedimento, especiarias não reveladas – andará por ali gengibre, é certo... – mas nada invasivas, antes de embrulhar os nacos promissores nas sementes de sésamo e devolvê-los, assim ataviados, ao borbulhar do azeite para novo escaldão. Tão fugaz e eficaz como o anterior.

E neste processo demora-se menos, Dona Amélia a fabricar, na frigideira do Karibu, o filete de atum com sementes de sésamo, suculento e crocante, do nosso contentamento – chegado à mesa com o mesmo arranjo despretencioso que preside, aliás, ao restaurante como um todo – e dos comensais na degustação desse prato já incontornável na paisagem gastronómica da Ilha de Moçambique.

Delivered to Dona Amelia’s dexterity, the fish is converted into steaks three fingers high, seared briefly in hot olive oil which leaves the firmness of the meat, the velvety texture, and ultimately the taste of the sea, untouched.

Dona Amelia adds undisclosed spices with parsimony and restraint - ginger should be involved, that’s for sure... - but nothing invasive, before wrapping the promising steaks in sesame seeds and returning them thus enveloped to the bubbling olive oil for flash cooking. As fleeting and effective as the last.

And in this process, Dona Amélia takes less time to produce the succulent and crunchy tuna fillet with sesame seeds in the Karibu’s frying pan, to our heart’s content - arriving at the table with the same unpretentious arrangement that pervades the restaurant as a whole - and elating the diners in the tasting of this already unavoidable dish in the gastronomic landscape of the Island of Mozambique.
