Red, white, and blue are synonymous with the month of July in this great country. American flags wave in the sky and adorn porches, parade routes, and picnic tables all month long.

Speaking of picnics, turn to the Elk’s Cookbook and see our special From the Ground Up summer series, highlighting two of your favorites: cucumbers and summer squash. Finding these on your table is sure to evoke memories of get-togethers in previous years with our parents, grandparents, family, and friends. They are a confirmation that summer is really here!

Following our From the Ground Up series, the Elk’s Garden explores the varieties of summer squash and how to ensure a great harvest. Don’t miss Jillian Wood’s recipe for Squash Relish, a perfect addition for any summer menu.

As I prepare for this year’s July 4th holiday, I made a promise to myself not to just “celebrate” but instead remember to “treasure” our freedom, something we often take for granted on a daily basis. It only takes a glance at the world news to realize how blessed we are. America: it was worth fighting for over 250 years ago and I am forever thankful.

Continuing our From The Ground Up Summer Series, here are our featured vegetable recipes for July: Squash and Cucumbers!

S

o many squash, all ready to harvest at the same time! Every gardener has too many zucchini in

July. Here is how to handle the zucchini surplus problem elegantly plus turn an abundance into a delicious dish your family and friends will request again!

ZUCCHINI & SHARP CHEDDAR FRITTERS W/ HERB BUTTERMILK DIP From The Ground Up Series | July 2026

INGREDIENTS

DIRECTIONS

PREP 15-20 MIN | COOK APPROX. 10 MIN

• 3 medium zucchini (about 1½ lbs), grated • 1 cup sharp cheddar, shredded • 2 eggs • 1 cup flour • Salt, black pepper, garlic powder • Oil for pan-frying • ½ cup buttermilk, 2 T mayo, fresh dill or chives (for dip)

STEP 1

Salt the grated zucchini, let sit for 10 minutes, and then squeeze dry in a clean towel — this is the only important step.

STEP 2

Mix zucchini, cheddar, eggs, flour, and seasoning until combined.

STEP 3

Heat a thin layer of oil in a skillet over medium-high. Drop heaping spoonfuls into the pan, press flat, cook 3 minutes per side until golden.

STEP 4

Stir together buttermilk, mayo, and herbs for the dip. Serve fritters immediately.

PREP 15-20 MIN | MARINATE UP TO 1HR

• While it seems like you could just throw some cucumbers in vinegar and call it a day, there is just a little more to make this dish awesome.

STEP 1

Lightly peel the cucumber (leave a few strips of color for visual interest). Slice the cucumber and onion as thinly and evenly as possible.

STEP 2

Enjoy immediately or store in the fridge for up to a week.

Toss the slices with a T of salt (preferably kosher) and let them rest for 20 minutes, tossing occasionally. Drain and discard any liquid that accumulates.

STEP 3

Submerge the cucumbers and onions in a mixture of ½ cup of white vinegar and 1 cup of water; add granulated sugar to taste. Initially salting the cucumbers allows the vinegar to permeate more quickly, so these can be enjoyed in as little as 5-10 minutes (but marinate up to 1 hour for best flavor).

ABOUT THE PILGRIMAGE Roots for the WV Wildflower Pilgrimage began in 1962 under

Knowing I couldn't experience everything the event offered, I focused on ferns and signed up for Friday's "Ferns, Ephemerals and Avifauna of Black Fork" tour. On recommendation, I opted for the Historic Jenningston-Gladwin & Artist Joan Crawford Home Tour for Saturday. Once I got my tour sign-ups out of the way, I settled into the cabin I was sharing with fellow garden club members and made my way to the first of two

The information given during that workshop was very inspiring and well presented, I looked forward to putting it to use the following day on the fern tour on the Black Fork River.

RESTORATION AT THE ROXY THEATER CONTINUES 25045–A New Clendenin, Inc. (ANC) is working on the next phase of restoration at the historic Roxy Theater in the Town of Clendenin. ANC has expressed its great debt of gratitude to the Dr. O.M. and Ruth A. Harper Foundation, the Wehrle Foundation, the WV Department of Tourism, Commission on the Arts program, and the WV State Historic Preservation Office for their ongoing, generous financial support of this endeavor.

Completed phases have resulted in a new roof, repaired rear exterior wall, facade and marquee restoration, utility hook-ups, sewer line replacement, and work in the new lobby, restroom, and concession area to restore walls and floors in an ADA-compliant manner. This current phase will include a new exterior door and exterior steps beside the stage, plumbing for a restroom in the stage area, construction of the stage frame, and continuing work in the lobby.

ANC is actively seeking Phase VI funds which will be used to: Install spiral stairs up to sound booth on the 2nd floor; install electrical conduits from the back of the stage area extending up to the sound booth; rough-in plumbing for both toilets in the front and one toilet on the stage; construct wood framing for the 2nd floor walls around the sound booth; install HVAC system; insulate the bottom of the roof trusses; and rough-in electrical outlets and switches. Completion of Phase VI will be a major step in readying the theater for occupancy.

ig things are happening on the Elk River Trail, and we couldn’t be more excited to share them with you! This

spring marked an exciting milestone with the opening of

the new Elk River Trail Visitors Center at our Dundon Trailhead, located at 12 Buffalo Creek Road in Clay. Following a successful soft opening on May 21, the center is now officially open and wel-

coming visitors from across the state.

The new visitors center serves as both a welcoming hub for trail users and a tribute to the rich railroad heritage that helped shape this region. Inside, visitors can explore a small museum showcasing the history of the railroad and its impact on the Elk River communities. Whether you’re a history enthusiast, a longtime resident, or someone discovering the area for the first time, the exhibits offer a glimpse into the stories that helped build our region.

We were honored to celebrate this exciting occasion with Governor Patrick Morrisey and other state and local leaders at the opening ceremony. Their presence highlighted the growing recognition of the Elk River Trail as one of West Virginia’s premier outdoor recreation destinations and underscored the importance of investing in outdoor recreation, tourism, and community development.

COUSINS IN THE GARDEN Summer squash and cucumbers have a lot in common because they belong to the same botanical family, Cucurbitaceae. Both plants grow on trailing or vining stems, produce bright yellow blossoms, and develop from pollinated flowers into delicious vegetables. They also have soft, edible seeds contained within a hollow seed cavity.

One thing they cannot do without is pollinators. Bees play a critical role in transferring pollen from flower to flower.

GROWING SUMMER SQUASH IN WEST VIRGINIA Raising squash in West Virginia is highly rewarding. Our warm summers and favorable growing conditions allow these plants to thrive.

Wait until all danger of frost has passed and soil temperatures reach 65–70°F before planting. Choose a location with full sun, rich well-drained soil, and water consistently at the base of the plant. Wet foliage can increase the likelihood of powdery mildew.

Squash grows best in soil with a pH between 6.0 and 6.7. West Virginia gardeners can take advantage of free soil testing through the WVU Soil Testing Laboratory.

Many gardeners recommend planting squash in “hills,” or mounded rows, to improve drainage and help warm the soil.

A FREEZER-FRIENDLY TIP If you enjoy fried squash year-round, try this simple method: coat sliced squash in a flour-and-cornmeal mixture, arrange the pieces in a single layer on a cookie sheet, and freeze. Once frozen, transfer them to freezer bags. They stay firm and can be fried straight from the freezer without becoming soggy.

HAVE YOU TRIED PATTYPAN SQUASH? Another interesting summer squash is pattypan, which resembles a small flying saucer. We haven’t grown or cooked it ourselves, but I’ve read that it’s excellent when hollowed out,

The same article recommended dehydrating shredded zucchini instead of freezing it. Once dried and crisp, it can later be added to zucchini bread, muffins, soups, stews, and casseroles.
