Fried rice with bacon

• 4 ounces (125 g) bacon, diced • 4 large eggs whisked • 2 tablespoons peanut oil,
Fry bacon in a wok or large skillet over medium-high heat until crisp and browned. Use a slotted spoon to transfer to a plate with paper towel. Set aside.

• 2 medium carrots diced • 1 onion diced • 4 cloves garlic minced • 1 cup frozen peas thawed • 4 cups cooked and chilled rice
Wipe pan over with a paper towel and heat 1 tablespoon oil. Add the eggs and scramble until fully cooked. Transfer to the plate with bacon and keep warm. Heat remaining oil in the pan. Add carrots and onion to the pan and cook until tender, (about 3-4 minutes). Stir in garlic and cook for an additional minute until fragrant.
(white or brown rice)
Add in the cold rice and peas and cook for 3-4 minutes until the rice begins to soften.
Add the eggs back into the pan. Stir in soy sauce, oyster sauce, butter, sesame oil and hoisin sauce. Cook for 1-2 minutes to melt butter and heat the sauce through the rice.
• 3 tablespoons low sodium soy • 1 tablespoons oyster sauce • 1 tablespoon butter • 2 teaspoons sesame oil • 1 teaspoon hoisin sauce • Sliced green onions for garnish if desired
Garnish with green onions and serve. ENJOY!
Recipe Notes Which rice is best? Day old long grain or Jasmine rice (white or brown) is ideal, BUT you don’t need to have pre-cooked rice in your refrigerator waiting to be turned into fried rice. You can cook rice as you normally would: usually 4 cups water to 2 cups dry rice over stove top OR use a rice cooker following manufacturers instructions. Spread rice out evenly on one or two large baking sheets, pans or trays, cover loosely with paper towel and refrigerate for 30 minutes. For an even faster option, throw it in the freezer for about 15 minutes until chilled (not frozen)!

Easy cheesy garlic bread
Easy and super cheesy garlic bread can be served as an accompaniment or as a dish all on its own! There’s regular garlic bread, and then there’s THIS Cheesy Garlic Bread. Soft on the inside, CRISPY on the edges.

• 14 ounces (400 grams) loaf
Preheat oven to 200°C | 400°F.
French bread, (or Italian), sliced in half horizontally (lengthwise) • 1/2 cup unsalted butter, softened • 6 cloves garlic, finely chopped (or 1 1/2 tablespoons minced garlic) • 2 tablespoons fresh parsley, finely chopped • 1/4 teaspoon salt, (or to taste) • 1 1/2 cups shredded mozzarella cheese • 1/2 cup finely shredded parmesan cheese • 1/2 teaspoon dried parsley
Line a baking sheet with parchment paper (baking paper), or foil. Arrange bread on baking sheet, cut-side up. In a small-sized bowl, combine together the butter, garlic, fresh parsley and salt. Mix ingredients together until well blended. Evenly spoon the garlic butter mixture evenly over both bread halves right to the edges. Top with the cheeses and sprinkle with the dried parsley. Bake, uncovered, for 20 minutes, or until the cheese is melted and bubbly. Broil for about 2 minutes, or until the top is golden and crispy. Slice and serve warm.

For crispy bread on the outside and soft, tender bread on the inside, do not wrap in foil. However, if you like soft bread all over, you can wrap your bread in foil.
