Simple Chicken Satay Fried Rice 30 8 386 Cook Time

Beautiful and creamy, peanut buttery goodness with a quarter of the fat than original oily satay! Using a typical chicken satay recipe, we mixed rice into it?

Ingredients

Instructions

• 1 tablespoon  coconut oil • 1 kg | 2lbs chicken thigh fillets, trimmed, roughly chopped • 1 large onion, sliced • 2 teaspoons minced garlic • 1 large carrot, sliced • 1 broccoli, cut into florets • 1 red capsicum/bell pepper, sliced • 1 yellow capsicum/bell pepper, sliced • 1 cup snow peas, trimmed • 1 large zucchini, sliced • 1 can light coconut milk • 3 tablespoons peanut flour/butter • 1 tablespoon natural crunchy peanut butter • 1 tablespoon brown sugar • Salt to season • 2 cup steamed brown rice

1. Heat oil in a large non-stick pan or wok. Add chicken, onion and garlic and stir-fry, until chicken is browned. 2. Add all vegetables, coconut milk, peanut flour and butter and sugar. Mix to combine. Simmer, uncovered, for about 15 minutes, or until chicken is tender and sauce has reduced and thickened. 3. Season with salt and mix in rice.

Creamy Mushroom Chicken Pasta 50 6 479 Cook Time

Seared chicken strips are mixed through this One-Pot Creamy Mushroom Chicken Pasta, with garlic, mushrooms AND parmesan cheese!

Ingredients

• 4 chicken thigh fillets , no skin or bone, trimmed of fat • 1 teaspoon dried basil • Salt and pepper to season • 1 tablespoon olive oil, divided • 1 medium yellow onion , chopped • 4 cloves garlic , minced (or 1 tablespoon minced garlic) • 1/3 cup dry white wine • 8- ounces | 250-grams brown or cremini mushrooms, sliced • 1- quart | 1-litre chicken broth (or stock) • 1 (12-fl/oz | 375-ml) can evaporated milk* • 1/3 cup milk (I use 2%) • Extra salt and pepper, to taste • 10- ounces |300-grams uncooked penne pasta (just over 4 cups) • 1 cup fresh grated parmesan cheese • A handful of fresh parsley , chopped

1. Season chicken thighs with dried basil, salt and pepper. Heat 2 teaspoons of oil in a large saucepan or pot over medium-high heat. Add the chicken thighs and sear on both sides until golden brown, cooked through and no longer pink. Remove and set aside. 2. Add the remaining oil to the pot. Fry the onion and garlic until the onion becomes transparent, stirring occasionally (about 2 minutes). Pour in the white wine and allow to simmer for 5 minutes, or until beginning to reduce down. 3. Add the mushrooms and cook for a further 3 minutes, while stirring occasionally. Then, add the broth, milks (or cream if using), salt and pepper, and bring to a gentle simmer. Add the pasta and simmer until pasta is al dente, about 15 minutes, while stirring occasionally. 4. Stir in the parmesan cheese until it melts through the sauce. Remove from heat and allow to sit for 5 minutes to allow the sauce to thicken. Slice the chicken into strips and stir through the pasta. 5. Garnish with fresh parsley and extra parmesan, if desired 6. Enjoy!!

Some Tips Using evaporated milk ensures a creamy result with half of the fat of normal creamy pasta recipes. Sear the chicken thighs first to enjoy the crispy texture through the creamy pasta. Using freshly grated parmesan cheese enhances the flavour in the sauce. 60
