Since purchasing Elders Real Estate Port Macquarie in 2017, David saw a unique opportunity in a market place that was open for change. How to Make a Tequila Sour SESION TEQUILA | THE BEACH PEOPLE Like a rip tide, the sour pulls you in.

Complex currents of flavour swirling beneath that pillow-soft surface, like a cashmere blanket laced with lime. You can’t help but surrender to the sheer sensuality of it all.

INGREDIENTS

METHOD

60ml Sesión Tequila (vanilla infused with a vanilla pod)

Prep 1 day before: - Cut vanilla pod in half and drop into bottle of Blanco, let it infuse for a minimum of 24hrs

30ml lime juice 15ml egg white 45ml pineapple reduction (pineapple juice heated and reduced by 1/3)

1. Add all ingredients into cocktail shaker

Basil leaf for garnish

2. Add ice and shake

Ice

3. Strain into glass

Vegan option: Replace the egg white with a can of chickpeas.

4. Garnish with a basil leaf

This of course lead to the Coastal Barn style.

My favourite space in my home is no doubt the main hub of the home. The feeling you get as you walk in the front door, being greeted by the beautiful indoor/outdoor space, the big glass highlight windows, which allows the vision of the sky, and all that natural light overlooking the resort style pool/outdoor entertainment area. It really does feel like you are entering your own little villa.

One of my favourite features is the 5.7m high cathedral style ceiling. I just love that once you enter the front door, your eyes are drawn up and out towards the back of the alfresco area where the cathedral ceiling continues out to. The cathedral ceiling provides an added measure of depth and grandness within that space.

There is nothing quite like Port Macquarie though. Its a nobrainer that this is the landscape our team - the Brew Crew - has chosen to give back to the community.

Bringing people together over great food and experiences in our opinion is what community should look like. Based on that idea - if I had to sum up our cafe’s and team into one single word - it’d be ‘accessible’.

Rather than asking our community to come to us for coffees / good vibes / great chats - we want to integrate our caffeineinfused dreams into the community itself. We aren’t just running a group of cafés, we’re making new friends and bringing people together. Building on the delicious and warming foundation of coffee, great food made from local produce and supporting local families we also aim to give them a platform to sell their crafts and products and offer a supportive network of experienced business people. Accessibility goes far beyond just coffee!

The Brew Box is the centre of our businesses. It is a general store in literally the heart of town where you can buy a range of things, including locally

produced gifts, handmade crafts and an indoor plant pantry. Of course you can also grab a coffee or an amazing meal! It was a general store before we existed and we aim to keep the persona alive. Expanding its impact - we host live music and art exhibits and are keen to use this space as a community hub bee hive of activity, strength and support.

A big mission of the Brew Box is to showcase local craftspeople and to support local businesses. We have products hand crafted by high school kids, some senior members of our community and a few in between. We sell a range of gifts from earrings, greeting cards, chopping boards, serving platters, pallet furniture and indoor pot plants.

All handcrafted and with a story. We do what we can because at the end of the day, the community is better off for it.

We have been so inspired by the power of our local community and humbled by our role in bringing people together.

Raspberry, Coconut And Lime Cake JULIA BUSUTTIL NISHIMURA | THE DESIGN FILES INGREDIENTS

METHOD

200g unsalted butter, softened

Preheat oven to 180C. Grease and line a 23 x 13x 8cm loaf pan.

200g caster sugar 3 eggs Juice and zest of two limes 150g sour cream or creme fraiche 100g desiccated coconut 250g self raising flour 125g raspberries, plus extra to serve Lime sour cream glaze 70g sour cream or creme fraiche 150g Icing sugar, sifted Zest of a lime and juice, if needed Shredded coconut, to serve

Cream the butter and sugar with a wooden spoon or in a stand mixer fitted with a paddle attachment until light and fluffy.

Beat in the eggs, one at a time, followed by the zest and juice of the limes. Mix in the sour cream then the coconut. Finally sift in the flour and stir until just combined.

Gently fold in the raspberries and spoon the batter into the prepared cake tin and bake for 50-60 minutes until a skewer is clean when inserted or the top of the cake bounces back when pressed. Allow to cool in the tin briefly then complete cooling on a wire rack.

Make the glaze by combining the sour cream in a medium bowl with the icing sugar and lime zest. The glaze should be pouring consistency, but not too thick. Add in a little lime juice if needed. If it is too thin, add some more icing sugar.

Pour the glaze over the cake and allow it to drip down the sides. Scatter with some shredded coconut and serve with extra raspberries, if desired.

Gara Gorge follows the route of the historic 1894 hydro-electric scheme, along old embankments and through ancient cuttings of granite. At Gara Gorge lookout high above Gara River, with a backdrop of majestic blackbutt and spotted gums, gaze across the rugged wilderness.

There’s great birdwatching along this easy walk, so keep an eye out for rosellas, lyrebirds, and king parrots. You might even strike it lucky and see a koala having a snack in a gum tree.

HOW TO GROW SUNFLOWERS

Spring or early summer, when the soil is starting to warm up, is the best time to sow sunflower seeds. A typical flowering time is about 8–10 weeks. If you’re sowing seeds in a garden bed, you should aim to place them about 60cm apart and 2cm deep. Before you plant, enrich the soil with some compost and give the soil a turn with a pitchfork so it is loose.
