Since purchasing Elders Real Estate Port Macquarie in 2017, David saw a unique opportunity in a market place that was open for change. 2 1/4 cups frozen chopped mango 1 1/4 cups frozen raspberries or strawberries 1-2 cups light coconut or almond milk 1 medium lime, juiced 2 Tbsp fresh ginger 1 Tbsp shredded coconut 1-2 Tbsp protein powder of choice 10

1. To a high-speed blender add mango, berries, coconut or almond milk, lime, ginger, shredded coconut, and protein powder of choice (optional).

2. Blend on high until creamy and smooth, scraping down sides as needed. If it has trouble blending, add more coconut, almond milk, or water.

3. Serve as is or layer with coconut yogurt or milk and top with desired toppings. I prefer berries, hemp seeds, and coconut.

4. Enjoy!

WELLNESS, JUST ANOTHER ‘BUZZ WORD’ OR A NEW WAY OF LIFE? At the Lifestyle Group we wholeheartedly believe the latter and, recently CEO and Director of the Elders Lifestyle Group, David Gray had the opportunity to interview and celebrate some remarkable and very talented women in the ‘Wellness’ space on the Mid North Coast.

With life throwing us all a massive curveball over the past couple of years we wanted to show our support to wonderful women everywhere who have shown a huge amount of resilience and commitment to bearing many of the unprecedented challenges that COVID-19 and lockdown has provided. Things like working from home whilst home schooling, dealing with financial changes to household incomes, increased mental health issues and the heartbreak of personal and family social gathering restrictions just to name a few.

The Elders Lifestyle Group Supports Women’s Wellness Campaign was created to connect passionate industry professionals to women of all ages and stages of life within our local community and beyond, sharing an important information and education around self-care practices which includes the mind, body, alternative therapies, family and business, nutrition and personal development.

This month we are delighted to introduce you to two of our wellness guru’s, Julie Jamieson (Yoga with Julz & Headspace) and Kahlee Johnstone (Reform Wellness). Both these women so truly beautiful inside and out, living life with an amazing amount of passion and compassion for all those around them. JULES JAMIESON Jules Jamieson, yoga teacher and passionate mental health advocate has called Port Macquarie home for the past 14 years where she lives with her husband, singer/songwriter and front man of Grinspoon and two teenage children. Apple Pie Overnight Oats MINIMALIST BAKER APPLES

METHOD

3/4 cup crisp, sweet apple, cut into small

Apples: To a small saucepan, add chopped apples, cinnamon, maple syrup, and salt and mix to evenly distribute the cinnamon.

Turn heat on low and cover. Cook, stirring occasionally, for about 10 minutes or until the apples are soft and tender. Remove the lid, turn the heat up to medium, and cook for 2-3 more minutes, stirring constantly, to evaporate some of the juices and create a nice syrup around the apples. Once most of the liquid is gone, turn off the heat and set aside.

bite-size pieces (peeling is optional) 3/4 tsp ground cinnamon 1 Tbsp maple syrup 1 pinch sea salt

OVERNIGHT OATS 3/4 cup unsweetened plain almond milk (or sub other dairy-free milk of choice) 1 Tbsp chia seeds 1 Tbsp maple syrup 1/2 tsp ground cinnamon 2 Tbsp creamy unsalted cashew or almond butter 1 tsp vanilla extract 1/2 cup rolled oats

Oats: In a small bowl or liquid measuring cup, mix the almond milk, chia seeds, maple syrup, cinnamon, nut butter, and vanilla. Add the oats and stir until well-combined.

Get two small mason jars or small bowls with lids. Place about a quarter of the cooked apple mixture into the bottom of each container, add half the oat mixture to each as your middle layer, then divide and place the rest of the cooked apples on top of the oats. Place in the refrigerator overnight, or for at least 6 hours.

Enjoy chilled or at room temperature.

Overnight oats will keep in the refrigerator for 2-3 days, though best within the first 12-24 hours in our experience. Not freezer friendly.
