WHEN THE RINCON BAND OF LUISEÑO INDIANS launched Harrah’s Resort SoCal in 2002 they sought to share the financial blessings of this enterprise. Long the recipients of charitable giving during decades of poverty, they chose to respond to the needs of their neighbors and participate in the health and well being of other North County communities through planned philanthropy. The Rincon Tribal Council, under the leadership of then Vice Chairman Bo Mazzetti, established the Rincon Contributions Committee in 2008. Delisle Calac, tribal member and wellknown Escondido resident, was elected chair—a position he kept until relinquishing it to Tishmall Turner. Turner, also a tribal member— serves as the Tribal Liaison for California State University San Marcos. Over its eight-year existence, the Rincon Contributions Committee has donated more than $2.6 million with average annual contributions at $315,000. When it was formed, the Committee’s first task was to write a policy that established the purpose and funding priorities. PASTRY CHEF MATT LAWA has a great outlook on life, knows how to treat people with respect and has a good sense of humor. If you were to see him outside of the kitchen, you might mistake him for a football player. One might question—how does a man of his stature assemble miniature and delicate pastries? The answer is discipline, passion and years of practice. At the impressionable age of 14, Chef Lawa began bussing tables at a family-owned German restaurant, followed by working on the hotline of an old-school diner with an open kitchen. At the diner, he was able to get to know his customers and discovered what really inspired him—he enjoyed making people happy with food he made for them. It didn’t take him long to realize he thrived in the hectic but rewarding environment of a restaurant—“It fits me,” he said. Subsequently, he became a pastry chef working under Executive Pastry Chef Jean Marie Verhoeven. For nine years, Chef Verhoeven mentored Lawa and taught him the art of French pastry. Chef Lawa’s philosophy of running a kitchen is simple: “Happy employees make a better business,” he stated. He takes his job seriously, but doesn’t take himself too seriously. He believes you don’t have to yell to get high performance from your staff. By giving them the right tools and support, he creates a cohesive team. “The most important thing you have to do is listen to your staff; it goes a long way. I know it’s a fast-paced environment, but sometimes you just have to stop and listen,” he said. When Cuba Gooding Jr. was waiting in line at Pink’s, a television station happened to be filming there and asked if he’d give an interview. He agreed, but under the condition that he wouldn’t lose his place in line. Pink’s

anniversary with a weeklong fundraiser “Chili Dogs for Charity.” Pink’s sold its famous chilidogs for 75 cents for 75 minutes over seven nights. Each night a different celebrity was invited to attend. One hundred percent of the proceeds were donated to a charity of the celebrity’s choice. Pink’s relationship with Harrah’s Resort SoCal began six years ago. The resort was looking for a unique brand with Hollywood roots

Anticipating demand is one of the toughest parts of his position. Bringing in a new brand or product line always incurs some degree of risk. The key is to start small—even with popular, recognizable names in fashion. Kate Spade wallets and handbags started with a single shelf of Bazaar real estate, and Nixon watches and wallets filled one case. If a customer response is positive, often the collections will be expanded. Both brands performed well, and now Kate Spade bags fill multiple shelves, and ESCAPE

Suddenly, the peace was broken by a splash as angler Joey Mayerchik hauled a 10-pound largemouth bass into the air. Radtke and a few others hurried over to check out the catch. “Think that’s about eight pounds?” suggested Radtke. “Looks like 10 to me!” said another angler. Mayerchik asked someone to quickly snap a few photos, and then he removed the
