Welcome Wow, I can’t believe another year has gone by and we are running downhill with no brakes into Christmas 2016. What makes this even more incredible is that it will be the 49th Christmas at our Beaumont store and also my 29th Christmas at Dunell’s! In this time, there have been too many changes to mention, however our most notable events in recent years have been the launch of our website in May 2008, followed by the opening of our town shop ‘La Cave’ in September 2011 and most recently our newest shop in Gorey in December 2015. We were very proud earlier this year to be nominated for two very prestigious awards by the International Wine Challenge. The first being Small Independent Retailer of the Year (we made it to the final 3 in the whole of the UK) and the second, the Regional Merchant of the Year for the South

and South-East of England, the latter of which we were over-the-moon to win. I am also extremely proud to boast an amazing team with an incredible amount of ‘wine-related’ expertise, from ex-sommeliers to wine-makers with a combined experience of over 140 years! Over the years we have built up an enviable portfolio that now boasts over 1650 different wines with over 400 of those coming from Bordeaux alone. We have over 130 in magnum (or larger!) and 110 in halves and quarters and we have wines from as close as England to as far flung as Patagonia. Our spirit offering is almost as impressive with over 450 different lines, including 23 Rums, 31 Gins, 87 Brandies (including Cognac & Armagnac) and a staggering 170 Whiskies. Our Craft Beer selection grows by the day and we now have

over 100 on offer, from the bizarre to the ridiculous! Back in 2011 we introduced to Jersey our ‘By The Glass’ wine-tasting machines. Now with a machine in each shop you can taste 16 different wines before you buy (each shop has its own selection). This new concept has proven extremely popular with people expanding their ‘wine-horizons’ and trying things they wouldn’t ordinarily buy. So, with all of this in mind I would like to introduce you to our ‘New Look’ 2016 Christmas guide, jam-packed with Christmas gift ideas including hampers and decanters, personal wine and spirit recommendations perfect to drink over the Festive period, food and wine pairing tips and loads of Christmas offers. Uniquely, almost half of this blend is Chardonnay, giving a delicacy not usually found in most Rosés. The high quality of the fruit ensures that the final dosage is lower than many Rosés.

PIERRE MIGNON Brut 1er Cru ‘Grande Reserve’ Le Breuil N.V. £24.95 per bottle Christmas Offer £15.95 Champagne Pierre Mignon is a family owned house located in Le Breuil in the Marne Valley. Over several generations, the family estate has grown significantly with vineyards in the Marne Valley, Côte des Blancs and Epernay. Mignon produces stylish Champagnes with a fresh, vibrant character, all of the wines are made within their own cellars where attention to detail and quality is paramount. Their fresh and vibrant character is balanced with a soft and creamy mousse to produce Champagne that is perfect for any occasion. This a crisp, well balanced champagne with citrus hints on the nose overlaid with touches of brioche and yeastiness. The palate is fresh, clean and lively with a creamy mousse and long finish. Devaux are Pinot Noir specialists. The majority of their vineyards are located in the Aube where Pinot Noir is the dominant variety. This location, on the slopes of the Côte des Bars, is important; it gives this variety a lovely Pinot Noir richness on the nose and a long finish, yet retains the finesse. Some Chardonnay is included in the blend; this is grown on the fine chalky soils of the Côte des Blancs and Vitry to give liveliness and elegance. The NV ‘Cuvee D’ is rich and sleek and is, in Anthony Rose’s words, a ‘luxuriously toasty, creamy number.’ The Pinot Noir gives body and length to the wine, while the Chardonnay adds elegance and finesse. Brochard’s wine was cultivated on the south, southwest slopes of Sancerre Blanc vineyard located on some of the best hills of the Loire Valley. Sancerre Classique was grown on 30 year old vines in a blend of 40% limestone, 30% flint and 30% clay.

It’s impossible to talk about Argentinean wine for more than a few minutes without someone mentioning either Nicolas Catena or one of his wines. No-one has done more to put Mendoza on the map, or to raise the profile of Malbec from Bordeaux reject to one of the world’s most fashionable grape varieties.

I’m not a wine expert so it’s important to ask for help. Some time ago Dunell’s pointed me in the direction of this stunning Cianfagna Tintila del Molise ‘Sator’ and it has become a family favourite. The Tintila grape used to be Spanish but for me it’s all Italian now!!! Big and bold as you would expect but able to cope with the spice of my harissa sauce and absolutely perfect with the pasta and steak. It’s special enough to be an occasion wine (for us anyway) but it’s well worth the cost, and cooking over the festive period with ingredients like these our decadence must extend to a special glass or two of true excellence.

The Biscardo Family have been making wine from their base in Soave for over 150 years and the operations are currently led by brothers Maurizio and Martino Biscardo. Renowned for their Proseccos and Corvina based reds in particular, they are also involved in a fascinating project in Puglia. During the course of Maurizio’s long and illustrious career, he has consulted for well-known wineries around Italy and in doing so he came across the vineyards that provide the grapes for their Puglian wines. This is a wine with the know-how and flavour of a great Rioja Alta wine. Made from 90% Riojan Tempranillo, 10% Mazuelo and Graciano. For the winemaking of reservas at Ramón Bilbao, they think about wines that are going to be laid some years, therefore only the right blendings are appropriate to age for a long period in oak cask and gain longevity in this way, and the evolution in the bottle will be slow and fulfilling. Intense garnet red with light brick-red tones on the rim. On the nose it unfolds from the first moment balsamic notes from the wood with a chocolate and coconut background, all of it surrounded with ripen red fruit preserve. There is quite obvious tobacco and cedar wood presence as well. In the mouth it is full and there is a persistent finish.

Erik’s trip to France Languedoc-Roussillon wine trip

Our first visit at Château Montifaud, was one of the most exciting visits of the trip. A family run Cognac house for 6 generations, one of only 12 Cognac houses making every single step of production in-house. After the walkthrough of distillery and private cellars where we have seen and tasted unbelievably old and valuable Cognacs we joined the family for a lovely lunch in Michel’s house (father of Laurent who’s currently running the Château). Amazing Experience! Our next stop on Monday evening was Château Montlau in Bordeaux, located on the top of the hill right across the river Dordogne from St. Emilion. Elizabeth and Armand, current

owners and long standing friends of Neil invited us for dinner. The meal was wonderful and we started with Montlau Blanc, Fontblanche red and 2014 Château Montlau Rouge. Veal grilled on vine cuts was cooked to perfection and all the older vintages of Château Montlau (2002, 1991, 1988) and Hors Serie we tasted complemented it perfectly. Another very memorable visit. Tuesday morning we hit the road and drove to Limoux for quick visit and tasting at Domaine B&B Bouche. Limoux is the oldest appellation in world known for production of sparkling wine using Blanquette Methode Ancestrale. Sweetish sparkling wines made without disgorgement, often cloudy because all the sediment stays in the bottle.

It is unbelievable they can do such a great wines in such a small winery. Wednesday was a busy day with 4 visits planned. The first at Domaine Bertrand-Berge in Fitou was another very positive surprise. A family run Domaine for 6 generations producing Carignan based blends with Syrah, Grenache and Mourvedre. Bio certified, powerful, structured, complex but elegant and not overwhelming. I absolutely loved these wines! Domaine Mont d’Hortes is a winery with long standing wine and barrel making history. Run by oenologist Roc Anglade Mont

Maury is breath-taking wine region located in the Agly valley, surrounded with massive stone hills from both sides and old-vine Grenache everywhere! This AOC is mostly known for their fortified Grenache based red desert wines ‘vin doux naturel’ (naturally sweet wines) made with addition of grape spirit into

respected 5 hectare property right in the heart of Picpoul de Pinet country run by Jean Baptiste de Clock. A perfect example of good single Domaine Picpoul. This ultimate companion for oysters and shellfish is definitely gaining its popularity back. And as a little curiosity Jean can show you fossils of dinosaur eggs found in his vineyards.

After we tasted the wines were invited to the Château for a barrel tasting of their top cuvee and there we met Jean, current owner. He took us on excursion around the winery right when they were sorting, destemming,

Overall it was a fantastic experience seeing all these wine makers in harvest time and been able try wines from barrels, fermenting tanks or to stick your head into a wine press. Lots of good food, great wine and we met some very interesting people and had lots of fun!

This wine is entirely produced from the Greek grape variety of Malagousia that was saved from extinction due to the efforts of Vangelis Gerovassiliou. Further to skin contact to enhance the extraction of aromas, it is partially barrel-fermented and then matures on its lees for a few months, gaining depth in flavour and floral aromas. It has a brilliant straw colour with greenish shades and an aroma of matured fruit such as pear, mango and citrus. On the palate the rich flavours of lemon peel enhance the appealing mouthfeel, adding a well-balanced finish. Best served at 8-10 °C. Food pairing: a perfect match for Mediterranean dishes, seafood, poultry, light-sauced pasta dishes and fresh vegetable salads.

Charles Heidsieck is one of the great names of Champagne and produces some of the finest Champagne wines. The 1995 Blanc des Millénaires is exceptional. It displays all the noble characteristics of mature Chardonnay and has incredible potential for ageing. This property was purchased by Valpolicella producer, Marilisa Allegrini, in 2006. Marilisa has continued to invest heavily in the estate and has brought in winemaker Nicola Biasi to build on Poggio San Polo’s already considerable reputation and impressive levels of quality.

Peter Finlayson’s award winning Pinot Noir from the slopes of Galpin Peak is his ultimate passion and a great expression of the variety. Pinot Noir is unique as it displays both a delicacy and richness, but it is often quoted as a varietal with a character of its own and carries the crown of being the most terroir-expressive of all grape varieties.

Poggio San Polo’s 2010 Brunello di Montalcino is a beautiful wine with a deep sense of aromatic purity and complexity. The bouquet delivers characteristic tones of small berry, forest floor, pressed violets, sweet spice, licorice and cola. Those aromas are both pure and intense, and build in momentum as the wine takes on more air in the glass. This is a fantastic effort with a mouthfeel that is as delicate and light as its it is meaningful and long-lasting. The overall effect is one of elegance and finesse. This is a highly recommendable achievement from a classic vintage.

TASTING NOTES: A confident wine with a firm and polished profile of flavours without being overstated. It is classically old world with good aging potential. Ideally suited to the Canadian winter season in both the Niagara Peninsula and the Okanagan Valley, the magical process of crafting Icewine is guided by nature – triggered by the snap of the wintry elements, the harvest can’t begin until temperatures drop below minus eight degrees Celsius for a sustained period of time. Once the extreme temperatures arrive, Icewine pickers arrive, often in the dead of night, to harvest the frozen clusters. Slowly fermented over the coming months, this delicate nectar will eventually become Icewine. Here we have a nose of peach, apricot, and lime. Rich, sweet core of fruit on the palate and a finish of tangerine, apricot, and honey.

VIGNETI ZABU ‘Il Passo’ 2014 £12.95 Valentino (of Gran Sasso, Vesevo, Masseria Pietrosa and Lamadoro) saw they had great vineyards and a good winery but were missing the necessary expertise to make wines the market required. Valentino and his team of young winemakers have taken the raw materials and transformed them into wines that people want to drink. The vineyards for Vigneti Zabù were planted in 2005 on the hills around Lake Arancio in Sambuca di Sicilia in southwestern Sicily. Tasting notes: Deep coloured and intensely perfumed, this rounded, rich red has generous fruit on the palate, ripe, soft tannins but good structure and a chunky blackberry and spice fruit character. The first thing I should point out is that simply putting a bad wine in a decent glass will not make it taste good, but when it comes to using different glasses for wellmade varietal wines, it’s more about how the glass can enhance the experience for the consumer.

The Wine Bean’s Top 5 Wine Festive Faux-Pas! Serving wine at the wrong temperature

Not decanting or aerating wine

Serve whites chilled and reds at room temperature right? Well, not quite. It could work if you live in a drafty castle with a huge underground wine cellar. But seeing as most of us now live in modern houses or apartments without the underground cellar, we usually store whites in the refrigerator and reds in the kitchen wine rack. Still whites wines should be served at around 10-120c and reds at 15-180c. Consider removing whites from the fridge 10 minutes before serving to allow them to come up to temperature. On the flip side if reds are too warm pop them in the fridge for half an hour or over ice for ten minutes for a quick chill down to their ideal range. The reason for this is simple; the aromas in white wines served too cold will be muted when tasted, and reds served too warm will be overpowered by their alcohol.

Quite simply decanting or aerating is the process of moving the wine from its bottle to decanter. The action of decanting or aerating a wine exposes it to the air and allows the wine to open up and release its flavours and aromas. Also a wine with aggressive tannins will soften with some exposure to air, plus the sediment in an aged wine can be removed whilst decanting. Some people like to decant their Champagne, this can have the same effect on the aromas whilst softening the effervescence of more aggressive Champagnes. If the wine you intend to drink is either very expensive or in a larger sized bottle than will be consumed in one sitting, the use of a clever device called a Coravin® can allow you to enjoy a glass of your favourite premium wine without the need to even open the bottle! The hollow

needle on the device penetrates through the cork and when the wine is poured a small amount of Argon gas replaces the space in the bottle. When the device is removed from the bottle, the cork reseals automatically and the wine can be returned to your cellar or wine rack. Using the wrong glassware I cannot stress the importance of using the correct glassware to serve wine in. It makes a big difference to how the wine is delivered to the mouth and can influence the taste of the wine in a very positive way when done correctly. Food and wine matching Whilst it’s easy to promote the ‘Drink-what-you-like’ theory when choosing wine, do ensure that you don’t pair food with wine that will clash. It is best to avoid tannic reds with oily fish, for example, and to ensure the wine has enough acidity when matching with similarly acidic or fatty foods. Other examples of food pairings would to balance the weight of the wine to the dish, and always ensure the dessert wine matches the sweetness of the pudding you are serving.

Neil’s favourites

My first pick would be the Dead Arm Shiraz 2005 from d’Arenberg in the McLaren Vale, Australia (£39.95).

We have a limited number of this fantastic vintage which just shouts everything that is great about Aussie Shiraz, blackberries, blueberries, toast, spice with super-concentration and length, a definite second glass (or bottle) wine! It is opaque purple/black with an expansive perfume of toast, smoke, spice box, mineral, pencil lead, tar, liquorice, blueberry, and blackberry. Fullbodied, opulent, and

super-concentrated…” My second pick is another stunner the Relentless Shiraz 2010 from Shafer Vineyards in Napa Valley (£79.95), America is a big wine but so elegant. If you’ve ever heard someone say a wine is ‘creamy’ this wine is what they are talking about, it is stunning. Big red and black fruits with spicy, smoky notes slide down the throat with ease. So a couple of perfect ‘treatyourself’ wines that I hope you enjoy as much as I do over the festive period.

Jane’s favourites I am a massive fan of red wines, big styled reds in fact but I still love a chilled glass of rosé from time to time. If I was to choose a ‘go to’ rosé I would definitely choose Mirabeau’s ‘Pure’ Provence Rosé 2015 (£11.95 but on Christmas offer at £9.95). Made from some of the highest vineyards in the Côtes de Provence, Grenache, Syrah and a smattering of Vermentino blend together to create a harmony of cherry and raspberry flavours with beautiful finesse and concentration. I love drinking this on its own but it’s also great with seafood, Asian food and many cheeses. If I fancied splashing out a little more, I would choose Château Miraval’s Provence Rosé 2015 at £16.95 (I do love the Provence rosés). This is the first wine (and unfortunately the last) made

by the somewhat unlikely partnership of the Perrin family of Château de Beaucastel and Angelina Jolie and Brad Pitt, all in strict adherence to organic viticultural practices. Unfortunately, the two are now filing for divorce and have literally just put their 1,200 acre estate on the market, immediately removing the Jolie-Pitt name from its labels. This highly regarded wine is a blend equally shared by Cinsault, Grenache, Syrah and Rolle (a.k.a. Vermentino), with the Syrah partially macerated on its skin by the saignée method. Aromatics of forest floor and wild strawberry with hints of herb, lead to an impressive palate, reassuringly yet deceptively powerful. I’d stock up on wine if I was you, both to enjoy and to also keep as you never know how much this wine could be worth in the future!

I love Billaud Simon Chablis 1er Cru ‘Les Vaillons’ (£22.95) for the exuberant floral and fruit aromas.

My ‘go to’ wine is Ramon Bilbao’s Rioja Reserva from Spain @ £11.95 (Christmas offer £8.95), I keep coming back to it! If in doubt grab a bottle - or a case. Rich red fruits with soft vanilla and spice, velvety mouthfeel, incredibly more-ish and perfectly priced. This is one I really enjoy and I let my friends help themselves too. Rioja is the great Spanish wine region that makes wines with mass-appeal, especially with producers like Bilbao who have a more modern fruit forward style. Ramon Bilbao (voted best

Jose’s favourites It’s my wife’s all-time favourite. She’ll decide the food to enjoy with it, but most likely it’s gambas and lobster. For a nice red, I’d

choose Château Les Ormes de Pez 2008 (£24.95), just because it’s Christmas and I’m thinking casserole, vension perhaps.

Alick’s favourites Spanish Winery by the IWSC) wines are great value, whether you go for the fruity un-oaked Joven, toasty Crianza, Velvety Reserva or the elegant ‘Limitada’ - you won’t be disappointed. This Reserva is so drinkable by itself but also works wonderfully with a wide range of red meats, mature cheeses or curried/spicy dishes. Something a little bit more serious and different is Bouchard Finlayson’s Hannibal from South Africa at £19.95. Bouchard Finlayson is a boutique South African winery that is acclaimed worldwide for being the pioneer of Pinot Noir in South

Africa. Hannibal (the name portrays the link between France and Italy with Hannibal the conqueror’s symbolism of the elephants crossing the Alps) is a really unusual blend of Italian and French varietals Sangiovese & Pinot Noir (and others) from South Africa. This wine is medium-bodied and has powerful olive and black cherry flavours that are complex and layered with cranberries and spice. There is just so much going on in this silky-smooth wine. Great with full-flavoured meat and Italian style dishes. A must try!

Emilio Lustau Dry Amontillado ‘Los Arcos’ £12.95 per bottle Christmas Offer £10.95

amazingly fresh, nothing like the big black sweet PX wines, some quince jelly, trace oxidative notes and wood, cinnamon, fragrant, quite different to normal (palomino) Sherry, and most attractive. Medium-dry, decent tangy acidity balances the sweetness, so doesn’t cloy, that quincey-raisin flavour predominates with slight notes of gingerbread, broader, fatter in style to the palomino wines, with perhaps a little more texture, lovely and clean with a very long finish. Delicious, really friendly.

A highly prized achievement. Du Breuil is our favourite Calvados producer and we have been selling their vast range of products for many years now. Listed as an historical monument, the Château has been entirely restored by its new owners who have been distilling spirits for three generations. They produce calvados from the highly regarded French ‘AOC Pays d’Auge’ appellation. Unlike Calvados “AOC”, Calvados with the AOC “Pays d’Auge” requires cider apples produced in the Pays d’Auge area and a double distillation. Kasia’s favourites Choosing wine for a special dinner has always been a big dilemma…also for me. I am not the typical ‘champagne girl’ but when it comes to Christmas, a good quality bottle of fizz is unbeatable.

This Christmas I will be enjoying the superb ‘Pelegrim’ Extra Dry Sparkling Wine (£19.95) from Kent. England has never made so many delicious, high quality sparkling wines and this is for me the No.1 choice. It delivers complexity of fruit as well as elegance and smoothness as it’s been made and aged in exactly the same way as Champagne. It’s a perfect pairing for smoked salmon, shellfish or oysters but I would happily drink it also on its own. Slow roasted duck is a tradition for me on Boxing Day paired with a new world Pinot Noir but not this

year. I have recently discovered the superb Barolos made by G.D.Vajra and I am sure one of these beauties will be on my Christmas table. Vajra’s ‘Bricco delle Viole’ Barolo (£59.95) is superbly elegant with only a touch of oak not to hide any of its pristine flavours and clearly defined perfumes. I am sure it would be equally delicious with any game, goose or turkey dishes. Christmas without a cheese platter and chocolate brownies wouldn’t be complete for me. This is a simple decision as Maury Rouge (from Domaine Pouderoux - £11.95 per half litre) works wonders with both dark chocolate desserts and varied, hard and blue cheeses. It is a red dessert wine from old Grenache vines that is not overly sweet and is very moreish. It would make a delicious after dinner drink too.

Fiona’s favourites First of all, Christmas tends to be a time when you remember loved ones that are no longer with you.

The medium bodied juicy plum flavours with a hint of liquorice and smoothness go nicely with turkey and all the trimmings.

My mum used to love sherry, so in her honour I love to have an aperitif of Emilio Lustau Dry Amontillado ‘Los Arcos’ (£12.95). Either whilst cooking lunch, or waiting while somebody else cooks lunch! The dry smokey raisin and nutty flavours go perfectly with salted almonds to get the appetite going.

Lastly I really love the much underappreciated Gewurztraminer grape, either Little Beauty Marlborough Gewurztraminer (£15.95) or Mittnacht Gewurztraminer ‘Les Terres Blanches’ (£15.95) are perfect choices. Intensely aromatic with lychee and citrus flavoured with a peppery, spicy finish is mouth coating wine and goes perfectly with spicy food. So what more could you want with your turkey curry on the day after boxing day?

Next, I love Gran Sasso Montepulciano d’Abruzzo ‘Alta Quota’ Colline Teramane DOCG (£14.95).

This Lager takes its inspiration from the German style of lager, Helles (‘lightcoloured’). First produced in Munich in the late 1800s as an alternative to the typical ‘dunkelbier’ (‘dark coloured beer’). Like the first Helles beer this has a sweet, malty flavour balanced with a light aromatic hoppiness that makes it very refreshing. The Naked Golden Oats are grown without husks so that even more sweetness and flavour can be extracted from the grains during brewing. Pale gold in colour with a nose of lemon zest, macadamia nuts and sweet biscuity malt. The taste is crisp Helles-style. Soft, aromatic hops and rich nuttiness from the oats. Smooth and refreshing.

They’re hoping their pioneering IPA can make its mark too. Its fervent hoppy character hails from the unique addition of large quantities of hops at three separate points during brewing. The result is a beer that’s rounded yet refreshing, with delicate floral notes and oodles of zesty freshness. The colour is pale gold with aromas of freshly mown grass, clean grapefruit and pine trees. On the palate it has rich vanilla from the oak, with lots of zestiness and a light bitterness from the hops. The finish is full bodied, but still crisp and refreshing.

Innis & Gunn oak-aged beer is like no other. Their pioneering production process is unique to them, a world first. In fact, it was discovered by accident! Using oak to age beer is unheard of. But, the flavours imparted by the oak barrels (previously used to mature bourbon) lend an incredible depth of taste. Think vanilla, toffee and orange aromas, with a malty, lightly oaked palate; soothing and warm in the finish. There is nothing like this among mass produced beers. Try it and see for yourself... The colour is a warm, golden-honey and the aromas are of caramel and rich roasted malts. On the palate it is incredibly smooth with a delicious toffee character and a light hop fruitiness and the finish is creamy and warming.
