When ready to serve add 1/4 chopped macadamia nuts to the greens then gradually toss with enough dressing to coat. Divide salad on 4 plates and surround the greens with a sprinkle of macadamia nuts. Serve at once. Note: Sesame vinaigrette dressing is adapted from Elizabeth Andoh’s An American Taste of Japan, Morrow, 1985.

BAMBOO SHOOT AND TAT SOI STIR-FRY I came upon bamboo shoots at Dale & Bette’s organic produce stand at the Sag Harbor farmers market. Here is my interpretation of a delicious stirfry with bamboo shoots. Who knew? Yield: 4 servings

For the stir-fry sauce 1 large clove garlic, finely chopped, about 1 teaspoon 1 tablespoon finely chopped fresh gingerroot 1 tablespoon light soy sauce 1 tablespoon lemon juice 2 teaspoons roasted sesame oil For the stir-fry 3 bamboo shoots, about 1/2 pound* Kosher salt 1 tablespoon peanut or canola oil 1 pound tat soi greens, washed and spin-dried Freshly ground pepper Place the stir-fry sauce ingredients in a mixing bowl and stir to mix. You will yield approximately 3 tablespoons sauce. Peel away the outer layers of the bamboo shoots until you reach a firm, ladder-like center. Cut the shoot into one-inch pieces. Bring a small saucepan of water to the boil, add salt to taste and put in the bamboo shoots. Return the water to a boil and simmer the bamboo shoots for 7 o 8 minutes until tender. Drain and dry on paper towels. In a medium wok or large saute pan swirl the oil to coat the pan and place over medium heat. Add the bamboo shoots and toss the pieces to cook for 2 to 3 minutes. Add 2 tablespoons sauce and toss to mix. Add the greens and toss to mix with the shoots just until the greens are wilted. Add drops of remaining sauce to coat the mixture if necessary. Season with freshly ground pepper; toss to mix and serve warm. Note: Bamboo shoots are available in early spring and no longer available at the farmers market. If friends are growing bamboo trees – pick them at eight inches for the recipe.
