Well worth the time, this delicious cheesecake is a stunning show stopper. It serves a crowd and is a decadent finale to your holiday dinner. Garnish with fresh raspberries and mint leaves for a festive flair.
FILLING INGREDIENTS: 1 lb. dark chocolate ½ cup butter 4-8 oz. packages cream cheese, softened to room temperature 1 cup sour cream 1/3 cup granulated sugar 1/3 cup buttermilk 1 fl. oz. red food coloring 4 eggs 2 egg yolks
RED VELVET CHEESECAKE
CRUST INGREDIENTS: 1 ¼ cups crushed chocolate graham crackers 1 cup semisweet chocolate chips 1 cup slivered almonds ½ cup brown sugar ½ cup butter, melted
Directions: 1. Preheat oven to 250° F. Wrap the exterior bottom and sides of a 10” spring form pan with heavy-duty foil. 2. Melt 1 lb. of dark chocolate and ½ cup butter in saucepan on low heat. Set aside. 3. To make crust: Place chocolate graham cracker crumbs, chocolate chips, almonds and brown sugar in food processor and process until well ground. Add melted butter and continue to process until mixture starts to come together. Pour into a 10” spring form pan and press evenly along the bottom and three quarters of the way up the sides. 4. To make filling: In a large mixer bowl add cream cheese, sour cream, sugar, buttermilk, red food coloring and melted chocolate/butter mixture. Beat on medium to high speed until smooth. 5. Add eggs and egg yolks and beat on low speed until just combined. Pour into crust-lined spring form pan and spread around evenly. 6. Place the spring form pan into a shallow baking pan and carefully pour very hot tap water into the baking pan until it comes up the sides of the cheesecake pan about one inch, taking care not to splash water into the cheesecake. 7. Bake for one hour, until set on the sides or the cheesecake reaches an internal temperature of 160 degrees. 8. After removing cheesecake from oven, carefully remove from water bath and let cool on a wire rack for 15 minutes. Run a small knife around the edge to loosen the sides. Let cool for another 30 minutes on rack, and then remove the side of the pan. Loosely cover and refrigerate for 4 hours before serving.

CANDY CANE MARTINI
With a presentation this impressive, your guests would never guess just how simple this holiday beverage is to create. This quick and easy holiday recipe is essentially a liquid candy cane in a glass that any party goer would enjoy.
INGREDIENTS: 1 ¼ oz. of vanilla vodka 1 ¼ oz. of white creme de cacao (must be white) ¾ - 1 oz. of peppermint schnapps 2 ½ oz. of half and half
OPTIONAL GARNISHES: Grenadine or raspberry sauce White or red sugar
Shake vanilla vodka, white creme de cacao and peppermint schnapps vigorously in a shaker. Pour half and half into shaker and stir. Drink will become frothy if you shake it with the half and half. Wet rim of martini glass with water and dip in white or red sugar for added sweetness. Swirl grenadine or raspberry sauce down the middle of the glass. This makes the glass look like a candy cane. Pour liquor and half and half mixture into martini glass.

INGREDIENTS: 1 oz Captain Morgan Spiced Rum .5 oz DeKuyper Buttershots Liqueur (or other Butterscotch liqueur) .5 oz Bailey’s Irish Crème .5 oz Bailey’s Hazelnut Liqueur 2 oz Eggnog Whipped crème and cinnamon to garnish
Combine all liquors and eggnog in a martini shaker with ice. Cover shaker, and shake vigorously until well mixed. Pour drink, over a strainer, into your favorite holiday glass. Top with whipped crème and a sprinkle of cinnamon. Enjoy!
