LIFE'S ACCOUTREMENT BY KERRY S. BROOKS | PRESIDENT, CEO It is the epicenter of all things. The compass facing North. The canvas on which life's experiences are painted. Hundreds of thousands of books have been written about it. Major announcements have been made in the midst of it. Marriage proposals have been accepted over it. It can be said that food is life's accoutrement. You, like me, every one of us in fact, can reminisce about the best moments of our lives at a dinner table, a bbq, a birthday party, a wine and cheese tasting, a banquet, a fundraising event, a baby shower, or just an old fashioned family conversation accompanied by fried chicken, mashed potatoes, green beans, and sweet tea. It is… glorious delectable food. And in this issue of RESIDE, we celebrate it!

Back in 1979, I worked two jobs to pay for college. In that same year, because I was an education major, I added student teaching to my plate. So it wasn't unusual for my workdays to start at 6 am and end at 10 pm. I was 21 years old and had limitless energy, so it was all good. For about a year of my life, I would come home at the end of the day and find my older brother, Kevin, sitting in our family room watching Night Gallery, or Twilight Zone, or whatever we watched in reruns. Every night in my young and ravenous state, I would raid the fridge. We weren't big cooks in our home, so there was always the need to be creative. One of the cheap foods we seemed to have in abundance was Pillsbury biscuits. Nothing fancy, for sure, just the can that you hit on the counter's edge to hear that classic "pop." Fourteen minutes later, you had your meal. About eleven minutes in your taste buds were fully engaged because of the aroma that only cheap, white bread biscuits could offer, wafting through the late-night house.

That was only the beginning prep for sure. Then came the butter. Sweet, salty, smooth, butter. The more steaming biscuits you sliced into with surgical precision, the hotter the knife became, and the easier it was to spread the butter melting on the searing silver. And the mess… that glorious mess! Then, the pièce de résistance… the jelly. Grape. Only grape. Only Welch's Grape Jelly. And only the most adept and skillful jelly connoisseur could have

the acumen to scoop just the right amount for each and every steaming biscuit. It is a skill that only a chosen few can boast. I was, in a word, gifted. When the plate was ready, Kevin and I would sit down with our feast. A plateful of steaming, butter-drenched, jelly infused… nirvana. My bother and I had little in common, not much to talk about really, even though our love of one another was undeniable. He was an athlete, a proud blue-collar union man. I, a teacher, music major, artistic type. He was straight, I was not, and few would think we were brothers to meet us together. But in those nights, over those biscuits, a big glass of milk, and sci-fi reruns…we bonded, forging memories that still bring a tear to this old man's eye. It could have been any food really, that mattered not. For us, it just happened to have been biscuits. For you, it may be a glass of wine, a plate of your dad's steaming bbq ribs covered in the family's special sauce, a piece of Aunt Nell's red velvet cake, or your Bubbeh's most savory brisket. It may be a full picnic basket on an Autumn day, lean Fit-Meals bought to complement those workouts with your significant other, or a huge bag of White Castles to feed a college dorm cramming for finals. The point is, food is at the center of it all…celebrations, family times, dates, and late-night get-togethers. It is, beyond a doubt, humanity's clearest common denominator. Do not doubt me. If you do, Kevin and I will meet you in the family room in the late-night hour, steaming plate in hand, and you will bear witness to this absolute truth. Bring your own milk. R

hough the U.S. certainly knows how to do barbecue, there is nothing inherently American about smoking and grilling meat. All over the world, one can find top-notch barbecue and, in each place, a tasty local variation on the practice. Think of the variety: There is Korean barbecue, Japanese teppanyaki,

Chinese chuar, Middle Eastern kebabs, South African braaivleis, and Argentine parrilla. It would seem a near-universal condition, cutting through cultural differences, our human love of bringing fire to meat. And, in today’s world, where there is a robust culinary tradition, there are enterprising chefs who have made it high-end. Below is a collection of some of the best top-tier barbecue spots from across our carnivorous globe.

U.S. Though the rivalries and claims of superiority between regions and states can get heated, it is true that there is great barbecue to be found throughout the U.S. In the renowned barbecue capital of Austin, Texas, one must pay homage to Franklin BBQ – founder Aaron Franklin is the first barbecue chef to win a James Beard award. And in New York City is Hometown, much loved for its brisket and lamb banh mi sandwiches, though the brisket tacos are a close second.

SOUTH KOREA In the high-tech, high-speed capital of Seoul, barbecue spots abound. In the Korean context, barbecue is a do-it-yourself endeavor, with tables coming equipped with small grills. At Gombawi, one can find a classic Korean barbecue ambiance, always stocked with high-quality meat, from aged beef to ox tongue to wagyu, and woodburning grills. Located in the city’s chic Cheongdam-dong neighborhood, Saebyukjib is a 24-hour spot with serious quality; alongside your meat grilling on the table, enjoy its delicious ddaro gukbap, a beefbased soup with Chinese herbs and radishes. For big groups, try Two Plus Itaewon, so named because it only offers Hanwoo beef, an upmarket Korean beef, that has been graded 1++, the highest rating.

ARGENTINA In the Argentinian context, the word parrilla (pronounced “pa-ree-sha”) refers to an open-fire hearth for grilling meat. Barbecue in Argentina is almost exclusively a large36 | RESIDE


cuts affair, with big slabs of beef, rarely marinated but copiously seasoned with parrillero salt, thrown directly on a hot grating. The capital Buenos Aires offers plenty of opportunities to get the parrilla experience. Patronized by Rod Stewart, Bono, Steven Tyler, and others, the massive threefloored La Brigada is a Buenos Aires staple, with waiters famously cutting each slab with a spoon to show off its tenderness. The more modern La CarnicerĂ­a, which sources from a family farm in the Pampas, is known for its smoked meats. The not-to-be-missed La Cabrera in the popular Palermo district offers classics like bife de lomo (tenderloin) alongside quirkier delights like the chicken kebabs scented with rum and oranges.

JAPAN Similar to Korean barbecue, yakiniku restaurants involve tableside grilling over a charcoal or gas brazier. In the posh Ginza neighborhood of Tokyo is the sharply designed Tendan, known for its boned beef ribs and grilled vegetables sourced from the Kyoto countryside. In Kobe, the town famed

for its stellar cows, try Wakkoqu, which features set menus offering various cuts, which are cooked in front of you on massive iron griddles. In Kyoto’s always-happening Gion quarter, make time for the small but impeccable Sou, a gourmet restaurant known for its wagyu A5, the highest grade of the famed meat.

AUSTRALIA Centered in Sydney, the country-continent has had something of a grilling renaissance in recent years. At Firedoor, which opened in 2015, one can expect top-notch meats cooked entirely over wood fires. Another spot big on the wood fire is Ester, which is heavy on smoking, from fish to beef to cauliflower. Ester offers a barbecue variation on the sanga, the Aussie word for sandwich, using blood sausage. R
