In 1946, Sherwood Moss was diagnosed with cerebral palsy, and the ripples from that moment have been far-reaching indeed. Aspire of WNY has been a leader in providing innovative, person-centered programs and services for children and adults with developmental and other disabilities for nearly 70 years. Their constant efforts to raise awareness and funds for neurological ailments saw a nearly 35% decrease in the number of cerebral palsy cases by 2003. Their constant hard work and dedication in the face of such formidable diseases has been nothing short of incredible. This year, Aspire is proud to celebrate their third annual Ski The Valley event being held at Holiday Valley Resort. While this fundraiser to benefit children and adults with disabilities features activities for skiing and snowboarding enthusiasts, there are plenty of fun options for everyone who attends. Tubing, live music, a basket raffle, and a meal in a dedicated area of the Main Lodge will be offered. Aspire’s Ski The Valley event, presented by Independent Health, takes place on Sunday, Feb. 28 from 12pm-6pm at Holiday Valley Resort on the top floor of the Main Lodge. Lift tickets for the event allow you to hit the slopes from 8:30am to 10pm with tubing available from 11am-6pm. Ski Lift and Tubing Packages both include a meal, or for those not planning to venture out on the slopes, a meal-only option is available for separate purchase prior to the event through Aspire’s website. “The past two years at Holiday Valley have been a great success,” explains Michael Holley, Aspire’s Vice President of Development. “It’s been gratifying to see so many families participate and we’re thrilled to keep our partnership going with one of the east’s premier ski and snowboarding venues again this year.” Ticket information for Ski The Valley is available by contacting Amanda Rosenberg, Special Events Coordinator for Aspire, at 716-505-5514 or by email: amanda.rosenberg@ aspirewny.org. For pricing information or to register online visit the event website at www.aspirewny.org/events/aspires-ski-the-valley. We all know that even the smallest events can have far reaching consequences. The old adages that stick around the longest tend to have the most truth to them. Don’t believe me? Here’s an example: on March 25, 1945, Sherwood Moss was born to Mr. and Mrs. David Moss. A year-and-a-half later, Sherwood was diagnosed with cerebral palsy. There was almost no assistance for the Moss family as they cared for their son, public welfare not being what it is today. Luckily, Mrs. Mary Moss had a group of friends in the Junior League of Buffalo who wanted to help. Mary mobilized friends, family and other parents of likewise afflicted children to form the Cerebral Palsy Association (CPA) of Western New York on Sept. 19, 1947. Ten years later, the CPA of WNY had fallen on hard times, but not before they passed palsy legislation, opened a young adults center for the cerebral palsied, and even headquartered their operations in a Victorian mansion. In 1958, to better serve the community, the CPA undertook its most drastic expansion yet … to help not only those suffering from cerebral palsy, but all neurological brain conditions including: mental retardation, epilepsy, and traumatic brain injury. Henceforth, it would be known as Aspire of WNY.

PENGUIN PADDLE FOR THE LOUNSBURY ADAPTIVE SKI PROGRAM Saturday, February 20 • Holiday Valley Resort

PHOENIX INTERNATIONAL ADAPTIVE RACE Saturday, March 5 • HoliMont

By Mark Flanagan

By Greg Culver

I love skiing, and chances are that if you live here, you love it too. But for some, injuries or disabilities may prevent them from participating. That’s where the Lounsbury Program at Holiday Valley comes in.

HoliMont has been proud to support the Phoenix Adaptive program since 1996. Challenged individuals have been given a chance to learn and enjoy a snow sports way of life thanks to dedicated instructors. People with a variety of physical and mental conditions take part in specially designed lessons so that they may enjoy the sensation of sliding on the groomed slopes of the Mont.

LASP offers lessons to persons with virtually all disabilities, both physical and cognitive. The key word here is ‘adaptive’. If someone wants to ski, the dedicated Lounsbury volunteers will do everything they can to make it so. The focus of the program has always been on what a student can do, not on what they can’t. A single lesson usually involves two instructors and sometimes three depending on the severity of the student’s disability and the type of adaptive ski equipment required. In the past, some of the clients they’ve worked with have: spinal cord injuries, Down’s Syndrome, Spina Bifida, Cerebral Palsy, Multiple Sclerosis, Traumatic Brain Injury, Visual Impairment, Autism or Developmental Delay. This is a program with humble beginnings. In 1987, local ski patrolman Bill Lounsbury lost his leg to cancer. He lost no time in purchasing a pair of outriggers to keep skiing with just as much enthusiasm as he had before. When he lost his battle with cancer the next year, donations to the ski patrol came pouring in. Not knowing what to do with the money, they eventually decided that it would be best to start an adaptive ski program as a way to honor Bill’s memory. They named it the Lounsbury Adaptive Ski Program. That first year, resources were scarce. They had only 4 instructors and 14 students. Today, the Lounsbury program accomplishes an incredible amount of work through their volunteers. They currently boast over 43 instructors and do nearly 250 lessons each year. They even put on events, of which the most popular is the Penguin Paddle. The Penguin Paddle has roots as humble as the organization itself. In 1989, the four instructors and their friends from Cleveland took a look at the poor conditions outside and decided to have some fun in spite of it. They strapped on some garbage bags and took to sliding down the hill like a penguin might. Onlookers had fun watching the festivities and donations were collected in a coffee can. Since then, the event has grown far beyond what the instructors could have hoped, with nearly 300 participants coming to the Penguin Paddle each year. The Penguin Paddle now is much more organized. Participants interested in registering for this year’s race can do so on event day at Creekside Lodge from 8:30am-12:30pm or at Yodeler from 9am-1pm, with all races taking place on the lower part of Yodeler beginning at 1:30pm. You pay just $1 for a garbage bag and race on your belly against challengers in your age group / category. They also offer lunch for a mere $5, as well as a raffle and silent auction. All the money they raise in these events goes directly back into the adaptive program. The silent auction prizes are typically donated by businesses around the community. Prizes in the past have included “winebags” - a bag containing a bottle of wine as well as one other prize like a gift certificate. The program itself also creates an Adirondack style chair made of old skis as well as a bench made from old snowboards. Apparently, one of the biggest hits year after year is the free groomer ride they auction off. Raffle tickets are available for purchase at $5 or five for $20. This event raffles off a season pass to Holiday Valley, a $500 travel voucher, and a pair of skis donated by Dekedebruns. Program Head Mary Ellen Racich is blown away every year by the support from local businesses and the community at large. “The people and Holiday Valley are very generous,” she told SNOWED-IN. “They give so much and always come through for the adaptive program.” Marketing Director of Holiday Valley, Jane Eshbaugh is always happy to do it. “The Penguin Paddle is one of our favorite events. It’s a fun time for all, especially the adults who have a chance to act like kids as they slide down the hill on their bellies. And best of all, it is a great fundraiser for the Adaptive Program that benefits so many people in our area.” Registration starts at 8:30am on event day, Saturday, Feb. 20. Helmets are required to participate in the races. I would encourage you to check out what promises to be one of the most fun events Holiday Valley puts on and remember that the proceeds could not go to a more noble cause.

Using a wide range of specialty equipment, a big bag of teaching techniques, years of skiing experience and humongous hearts, the Phoenix Instructors offer a lifestyle to those who may otherwise miss out. Lessons are catered to the needs of the individual and includes family members and how they can contribute to the success of the student. There may be some hand holding, but these folks don’t take the easy road. The goal is to empower the participants and provide them a sense of accomplishment, good health and overall wellbeing. I was a lifty in the early 90’s and remember a paralyzed man that was out every weekend. He had a sled type rig and we would stop the lift and hoist him into the seat. At the top, he would lift the bar and launch off the chair like a kayaker, scooting along with custom short poles and then skidding the back of the sled to make turns. I spoke to him on occasion. The sled was cool but his real desire was to carve and edge again. One day he showed up on a new contraption called a mono ski. Strapped into a seat and balanced on a shock that was mounted on a wide ski, he could now load onto the chair with less help and without stopping or slowing it. The trick was the top. This poor guy would eat it time after time trying to unload. It was painful to watch and I knew he was getting discouraged. I would run out of the top shack and help him up. You could tell he was embarrassed but I assured him that anyone who saw him was amazed at his determination. By the end of the season he was unloading off the lift and railing turns from edge to edge. Every run was finished with a sweeping carve, a beard full of snow and a smile that has been etched into my memory. Later, as a snowboard instructor, I became friends with some of the adaptive teachers and was always impressed by their dedication and creative methods of teaching. In my new role at HoliMont, I’ve been pleased to set up special rigs for our Phoenix program. I watch parents unload kids and gear on snowy mornings as they head up our special elevator to start a day of shredding the slopes. Not once have I seen a frown on a face as they prepare for their lessons. The culmination of these lessons are showcased during an annual event dubbed the Phoenix International Adaptive Race. Competitors from the USA and Canada will make their way to HoliMont on March 5, 2016 to test their skills and go for the gold. The event is open to the public and for over 10 years it’s offered excitement for those competing, supporting and spectating. Please come out and support these amazing individuals and their coaches and cheer them on to victory in a competition where everyone is a winner. By Spencer Timkey There are no days off. Much like snowmaking and grooming at Holiday Valley, the Lift Maintenance crew works early mornings and late nights to ensure the lifts keep spinning. They don’t get a lot of credit, but they deserve it. “My guys come in at 7am on the weekdays and 6:30am on the weekends,” said Jim Curtis, head of the lift maintenance crew. “When they get here, they go check out all of the lifts for the day and make sure they’re ready to go. Safety inspections, line checks, making sure snowmaking hasn’t iced up the cables - it’s all part of the checks we do to start the day.” Once the bottom opens up, a crew member will ride the line to the top and unlock that. Once all of that gets done and the lifts get a full rotation, they’re open to the public for use. “I assign all of the lists. There are ones for daily, weekly and monthly. The crew will float from lift to lift until all of them have been checked - typically, we have four guys on during the week and five on the weekends.” With Mother Nature deciding she wanted to wait on winter and dump all of the snow on us at once (not complaining), the crews have been busy doing not just typical lift checks, but more labor-intensive things as well - such as shoveling snow off of the lift house roofs and de-icing the cables. “If a lift goes down, we’ve got 15 minutes to get it back up and running,” Curtis explained. “If the problem can’t be solved within 15 minutes, we shut it down for a full diagnosis.” But what happens if there are skiers/snowboarders on the lift when it shuts down? “We’ve got auxiliary motors for every lift,” Curtis said. “It’s a combination of gas and electric, but the point is that we can run it until we’ve cleared off all of our guests. If (knock on wood) that motor fails, then we work with Ski Patrol (the red jackets) to do a full lift evacuation. Fortunately, the latter happens very rarely - if ever - because of how diligent we are in keeping the auxiliary motors working.”

As complex as the fixed lifts are, the detachable are even more so. These are Mardi Gras, Tannenbaum and Morning Star - the high-speed quads. With thousands of different moving pieces, the lift crews have to be well versed in the mechanics of the beast.

“When we hire, we look for guys that have a pretty solid mechanical background because of how complex some of this stuff is,” Curtis said. “If they’ve got electrical, even better. The winter side of it is easy, because we just need to go through our checklists. The real work starts when the season ends, because we’ve got to take every grip off, do some nondestructive testing, etc. The crew works really hard over all four seasons to make sure our lifts run smoothly day-in and day-out.” Holiday Valley hosts a service training seminar every year, where crews from multiple resorts across the state will come and go through different techniques and training. There is also a rotating seminar that goes across the state, one of which Curtis teaches. He sends two of the crew to Jiminy Peak every winter, where there’s more lift maintenance training. They work with Ski Patrol every year to get lift evacuation techniques dialed in and refreshed. “I like to call my crew the unsung heroes of the resort,” Curtis said. “Everyone here plays such an integral part in how successful of an operation we are. We see the instructors, snowmaking crew, groomers, etc. - but a lot of guests don’t see my guys working. They deserve a lot of credit, and I’m lucky to have them.”

By Spencer Timkey Another winter, another season of progression for the terrain parks at Holiday Valley. With five different spots around the resort that have terrain features installed, we’ve come a long way from when there was a single rail sitting on the middle of Snoozer. While a severe lack of snow throughout the East Coast left the resort with priority snowmaking in other areas, the park crew has done an admirable job getting its parks up and running in the rail park at the bottom of Mardi Gras, Fiddler’s Elbow and the Riglet Park. Head builder Chris Perks got creative through the fall, building new features for both beginner and advanced riders and skiers. With a lifetime of park riding in his memory banks, Perks brings the type of creative vision necessary with terrain park builds. “With Fiddler’s, we wanted to set up more of a skate park flow,” Perks said. “Spacing features out enough where the rider can maintain his speed while throwing down. The run is an awesome grade for that type of build - not too steep, but just enough downhill grade to keep it moving.” The snowmaking crews pumped enough snow onto Fiddler’s to get some features in and get the park season going. When temps finally dropped low enough to lay the hammer down, the park crew pulled the Elbow apart to allow the HDK Klik guns to do their thing – that is, to get enough workable snow in there so Perks and crew could build a full run including a jumpline. “We like to work with at least 2-feet of base,” he said. “We’ve got a couple of really fun lines envisioned, so now we’re just letting the boys blast snow so the real fun can begin.” The rail park at the bottom of Mardi Gras, the most visible terrain setup at the resort, is chalk full of new features Perks put together this fall. With four or five of those new elements in now, kids have been hiking the park and taking advantage of a multitude of different features to play on. Burton Snowboards’ Riglet program, a nationally-branded marketing plan designed to get more groms, has made its way to Holiday Valley. All small features on flat land, the Riglet Park is built in such a way to make kids feel comfortable with hittable features. “The Outpost, which is traditionally on the other side of Creekside, is being moved to where the women’s tee-box is on the No. 1 hole - moving it closer to the action,” explained Mike Nenno, terrain park manager. “We’re also going to be installing some more intermediate features on Snoozer, with hopes that kids can progress from the Riglet Park right up.” More good news … Holiday Valley’s grooming fleet just added a new operator. He goes by the name of Paul Grainger, and he’s no stranger to the area … or to park building.

“I’ve been operating snowcats for 15 years now,” Grainger told SNOWED-IN. “I started out at Squaw Valley, I built terrain parks for Aspen Ski Co. at Snowmass for ten years, then for Vail Ski Co. at Vail for four years.” Following a two-year hiatus from the industry, Grainger couldn’t shake the urge to get back into a machine. And although he’ll be helping with regular grooming responsibilities under the direction of Ed Imhoff of Holiday Valley’s grooming department, Grainger will also be assisting Perks with park builds and park maintenance. “I spent the last two winters away from cats. I missed building,” Grainger said. “I grew up here skiing Holiday Valley thanks to my father, Richard Grainger, who is still on the volunteer Ski Patrol at 78-years-old! I have a deep love for Holiday Valley, operating snowcats, and building parks. I’m happy to be back at it now that I am home after 26 years out west.” Holiday Valley is pretty happy to have Grainger home as well. With Perks and Grainger at the helm of park building, coupled with Holiday Valley’s dedicated team of on-hill park diggers overseen by park manager Mike Nenno, the good just got better.

CHASING THE DREAM

Former HoliMont Snowboard Team Racer One Gate Closer to the 2018 Olympics

One-on-One with Megan Farrell HEGEMAN: HoliMont, per capita, seems to have more people on racing boards than any other ski area in the region. Was being around that many like-minded racers one of the primary reasons you developed a love for hard boot racing? Do you think you’d be where you are today without that HoliMont upbringing? FARRELL: The HoliMont race team always had a great reputation going into USASA Nationals. We had a very talented bunch of riders who pushed one another to do better. I believe that being on the team taught me great discipline and drive. As of right now, two of the four riders on the Canadian National team are from HoliMont so I think that speaks for itself. HEGEMAN: What’s your favorite thing about racing? FARRELL: I often get asked what my favorite thing about racing is and I’m always left with mixed feelings about my answer. There’s so much that I love about racing, it’s hard to pinpoint one thing exactly. I love the speed, the adrenaline, the focus, the sound you hear hitting the gate, and that feeling you get when you complete a clean, smooth turn where you pull all of the energy and force and drive it into your next move so that you are constantly moving forward and down the hill - no time to stop or think.

By Dash Hegeman Take a moment to be completely honest with yourself, and then answer these two questions: How do you define commitment? And how old were you when you first realized what true commitment was? Megan Farrell didn’t know what commitment was at the age of two when her parents first put skis on her and introduced her to the slopes of HoliMont in Ellicottville, NY. And it’s safe to say she didn’t know what commitment was two years later when the self proclaimed “speed demon” pestered her parents into allowing her to follow in the footsteps of her older siblings and cousins, who were participating on HoliMont’s snowboard race team, and trade her skis in for a snowboard. As Megan aged however, and her love for snow and speed blossomed, she found herself in a position that very few people ever find themselves. It was in grade 10 where, with her Ontario Snowboard Club, she began competing in United States of America Snowboard Association (USASA) events. And she wasn’t just competing. Megan was succeeding in the world of alpine snowboard racing. “I was always competitive with snowboarding and trained all day, every weekend my whole life but up until this point, I didn’t have an understanding of what went on in the race world in Canada,” stated Farrell. “By grade 11, I was on the team and racing in NorAms (North American races). The point where I wanted to commit myself to the sport was when I was in grade 12.” It was at that point that she was chosen to be a forerunner for the 2010 Vancouver Olympic Games. And it was there where she got to watch fellow Canadian Jasey-Jay Anderson win a gold medal in the parallel giant slalom for Team Canada. It was then that Farrell knew she wanted to commit herself to the same level of excellence as Anderson. She wanted to dedicate herself towards chasing her own Olympic dream. And now, as the only female athlete in her discipline on the Canadian National Team, that dream is now potentially just two short years away. Just twenty-three years old, an age where most young people are just a couple years into the job force or pursuing higher education, Megan’s Olympic dreams currently consume her everyday life. A graduate of Queen’s University with a degree in Environmental Science, Megan has put typical career aspirations on hold in order to work out, train, travel, and hone her snowboarding skills. It’s not an easy lifestyle by any means. But true commitment is rarely easy. Megan knows that her pursuit is not a typical one. But she also knows that greatness is not accomplished by being typical. This season will be instrumental in Megan’s life and if it is a successful one, it could fundamentally alter her future. To follow and help support Megan in her quest, check out https://pursu.it/ campaigns/144.

HEGEMAN: Do you have any pre-race rituals that you go through? FARRELL: I wouldn’t say I have any rituals that are race specific. I go through a checklist to make sure I have all of my equipment and make sure I get a good night’s sleep the night before. I try to make race day as much like a training day. HEGEMAN: It sounds like last season you really started to come into your own on the competitive circuit. What are a few of your favorite moments from last year? FARRELL: My favorite moment from last year had to have been when I won Canadian Nationals for slalom. My parents were both there cheering me on at the bottom and it was a night race so there was more excitement than ever. The race was also near Quebec city so I got to celebrate in one of my favorite places. Some of my other moments that I really loved from last season was just the training. I arranged my schedule to have no Friday classes so I could go to HoliMont every weekend and got to enjoy snowboarding again. I was also lucky enough to go to Sierra Nevada in Spain with my dad to compete in University Games which was another great memory. HEGEMAN: Describe your feeling when you found out that you were selected to the Canadian National Snowboard Team? FARRELL: I had a feeling that I would be selected for the team now that I had finished school and won the NorAm title that season, but until it is confirmed you always worry. I was entirely relieved and happy when I found out. I had been running my snowboard schedule for the past 4 years and knew that I would need help to take it to the next level when doing it full time. HEGEMAN: In what way has being on the National Team most impacted your snowboarding? FARRELL: The National Team is huge. I have a new coach, Pat Gaudet, and he has helped make me 110% faster than I have ever been. HEGEMAN: In some ways, two years seems like a fairly long time but when your single focus is making it to the Olympics; I would imagine that 2018 must feel right around the corner for you. What one thing do you feel you need to improve on the most in order to make it to the Olympics? FARRELL: 2018 is soon. I think right now I just need some mileage in gates. Since being in school for 4 years, I missed training in gates. Any chance I had to be on snow was freeriding so I need to work on my timing and control in the course. HEGEMAN: You are now traveling the world and racing on some pretty big stages. What’s it like going back to Ellicottville to race at HoliMont and Holiday Valley? Are you more “nervous” in Japan or back home in front of a lot of people you know? FARRELL: I’ve been racing in events all over the world since I was in grade 11 so it’s not a new thing to be in World Cups. I’ve been going to some new places and training with different countries but it is more or less normal for me now. The things that would make me nervous are the people competing in the race, not the people watching it. That being said, I am more nervous in a World Cup format just because I know I have to be at the top of my game and can’t afford any slip-ups. HEGEMAN: Who is your favorite snowboarder? FARRELL: I don’t have one favorite snowboarder. I have a lot of aspects or techniques of riders that I like. Snowboarding is great in that every race is different - every hill, set, snow, etc. all changes the way to ride fast and so you have to be flexible and be able to adapt in all conditions. HEGEMAN: It sounds like you’re now leading quite the regimented lifestyle between work, diet, training ... what food have you given up that you miss the most now? FARRELL: I’ve been an athlete my whole life so I have always tried to keep myself in check as part of my daily routine. Now that I am officially a national team athlete once again, I have not really given up any specific food but I have been more conscious about what I eat pre and post workouts to make sure I am optimizing gains. HEGEMAN: Finish this sentence: When I am not engulfed with training or snowboarding, I most want to be … FARRELL: hiking.

GET DIALED IN ... WITH AMERICA’S BEST BOOTFITTERS AND YOUR TICKET TO SPEED ... AT MSG By Pat Morgan Now that the snow has returned to Ellicottville, the slopes and downtown have sprung back to life. HoliMont and Holiday Valley are filled with skiers from near and far, which of course leads them into the village when the ski day has concluded. One of the longtime mainstays which is a stop for many of these visitors, is none other than Mud, Sweat n’ Gears, locally owned and operated by Kimberly Reading and Miguel Azcarate for the past 16 years. This husband and wife team have intertwined themselves in the local community and ski industry for years, which is evident by the well stocked, impeccably decorated interior of their 18 Monroe Street location. The shop has received several awards from the ski industry, including twice being named a ‘Gold Medal Ski Shop’ by SKI Magazine. Truly a specialty shop, you’ll undoubtedly find some unique and top-ofthe-line products during your visit. Of course you’ll find all the biggest and best brands at MSG (over 80 to be exact) like Rossignol, Volkl, Tecnica, Lange, Head, Nordica and more, but what truly sets them apart from many shops (and something they like to hang their hat on) is the service they can provide their customers. MSG is a proud member store of America’s Best Boootfitters, with a majority of their staff attending Masterfit University, a program which trains shop employees how to specialize in custom bootfitting. You see, boot fit is arguably the most important part of skiing, with a variety of factors to consider. Warmth and comfort are paramount to most customers, however, the staff at MSG can also take things a step further with stance alignment, custom foot bed production, and more. When your boot fits perfectly, it enables you to be a more controlled skier, make higher quality turns, and simply enjoy your experience on the slopes so much more! The pride and joy of 18 Monroe Street, however, is without a doubt what lies in the back shop. Dubbed the ‘Speed Factory, MSG invested in some of the most cutting edge machines on the market, produced by Montana of Switzerland. To put into perspective how impressive these machines are, they’re the same ones used by leading World Cup ski manufacturers for their athletes’ equipment. What does this mean for you? These enable their enthusiastic and experienced shop technicians (who are all avid skiers and riders) to provide the widest array of services around. If you’re familiar with ski technology and maintenance, you of course have heard of getting your base stone ground. MSG has the ability to take things a step further with base technology, thanks to this Crystal Glide machine. Whether you’re looking to simply strip your base down and add a standard crosshatch, or you’re looking for a directional chevron pattern for race day, this machine can do it all. The icing on the cake in the Speed Factory is a machine called the Wax Future machine. This highly advanced infrared waxing machine is truly something special. Traditionally, hot waxing has taken place with an iron or hotbox method, but this machine takes things a step further by infusing the wax deep into the base, ensuring you get even more out of the aforementioned base grind. Whether you’re a skier, snowboarder, or simply an outdoor enthusiast, Mud, Sweat n’ Gears has something for everyone. From high performance ski demos, that perfect sweater for après ski, or a variety of accessories ranging from goggles to cameras, you’ll leave with carefully selected brands that their incredible staff are proud to outfit you with. For a full list of offerings, pictures of product and more, visit their website at mudsweatgears. com. Or give them a call at 716-699-8300 to schedule an appointment for gear fitting, or to find out more about their products!

Historical Legend of Valentine’s Day By Kristina Barlow, N.D., C.S.T.

“A popular account of Saint Valentine of Rome states that he was imprisoned for performing weddings for soldiers who were forbidden to marry. According to legend, during his imprisonment, he healed the daughter of his jailer, Asterius. An embellishment to this story states that before his execution he wrote her a letter signed, “Your Valentine” as a farewell. In 18th century England, it evolved into an occasion in which lovers expressed their love for each other by presenting flowers, offering confectionery, and sending greeting cards (known as “valentines”). In Europe, Saint Valentine’s Keys are given to lovers “as a romantic symbol and an invitation to unlock the giver’s heart”. –Wikipedia

ESSENTIAL OILS: VALENTINE’S DAY “KEYS” TO UNLOCK THE HEART Essential Oils are aromatic extracts from various parts of many different plants. These concentrated compounds are easily and highly penetrable through the olfactory nerve, the lungs, the skin and the digestive tract. Through these routes of entrance they absorb into the bloodstream for rapid movement and use anywhere in the body - mentally, emotionally and physically. Recorded use for essential oils and aromatherapy date back 6,000 years! It is amazing to watch how their comeback is helping so many people all over the world. Here is a step-by-step guide for using Authentic Essential Oils as Valentine’s Day “Keys” to Unlock Your Heart … and the hearts of your loved ones! Valentine’s Day Love Potion Roll-On: Clove + Bergamot + Lavender with Carrier Oil. Clove essential oil imparts a sense of warmth and cheerfulness and restores your sense of optimism and enjoyment of life. Bergamot is cooling and refreshing for the critical and exacting person who begins to suffer from digestive and skin problems, and whose nerves have become edgy and raw. Lavender is calming and helps you to accept your sensitivity and ability to express yourself. Online Essential Oil Personality Quizzes: Go to naturessunshine. com (no need to sign in), Members, Education and Quizzes. There are two quizzes here: “Which Essential Oil Are You?” and “Finding Your Essential Blend”. I took these two quizzes myself! I am Pink Grapefruit. This is one of my very favorite oils! I use it every day as a “perfume”. And, the best Essential Blend for me is the Inspire Uplifting Blend. I love this blend too! Citrus with Spicy Undertones. I just added it to my diffuser as I write this! Essential Oil ASSESSMENTS at Nature’s Remedy: Come visit us at Nature’s Remedy in Ellicottville for a 20-minute essential oils assessment in order to understand which oils would be best for your daily use. This assessment is $15 and can be done with any of our employees in the store and may be followed up with a 60-minute aromatherapy consultation. WHAT DOES THIS ASSESSMENT ENTAIL? 1) Our 5-minute Biofeedback Scan utilizes a computerized program to assess general imbalances within the body at the time of the scan. Then it suggests which essential oils can be used to heal the body and bring it back into balance. For example, I did a BioScan on myself and 25 out of 76 biomarkers were out of balance. The suggested oils

for this imbalance were Bergamot, Eucalyptus and Cinnamon. A second scan will suggest other foods and nutrients (vitamins, minerals, super foods, amino acids and herbs) that can be added to the essential oils to maximize healing and health. 2) Inhalation Test - Single oils. We have 38 Essential Oils here at Nature’s Remedy. 28 Single oils are divided into six scent families: citrus, herbal, floral, spice, wood and cool. 10 oils are Blends. We have testers of all the oils available to smell. The 28 Single oils are inhaled and your favorite oils are set aside. Each of these oils are inhaled again until you discover your top 3-4 favorite oils. Your body will like and crave these particular oils because these are the oils that will tune or balance you internally. 3) Every essential oil has a Therapeutic Profile and a Psychological Profile. We have you read about your top 3-4 oils in order to understand why and how these oils will help you when used on a daily basis. Everyone loves the psychological profiles! For example, Pink Grapefruit is great for people who are selfconscious and unhappy about their appearances. Using this oil can help to improve your sense of self-worth and help you to become more empowered and positive about yourself and what you can do! Frankincense is great for those who live in the fast lane and get overwhelmed by responsibilities. It will help to reprioritize your life and concentrate on the areas that will bring about greater satisfaction and happiness. 4) Inhalation Test-Blends. We then have you inhale the 10 wonderful Blends. Usually 1-2 of these Blends will stand out to you. My favorite Blends are Inspire and Core. They can be used on the skin, inhaled, in diffusers, in homemade body products and with natural cleaning products. Inspire includes Pink Grapefruit, Orange, Lemon, Spearmint, Peppermint, Cinnamon, Bergamot, Ginger, and Vanilla for a mood elevator and energy promoter. Core includes Atlas Cedar, Spruce, Ho Leaf, Blue Tansy, Frankincense, and Chamomile to promote a calm, restorative and balancing connection within yourself and nature.

Ellicottville Celebrates Winter with Blues and Brews

Crowds consumed the 14731 during the weekend of Jan. 22-24, when many of the downtown watering holes hosted three days of lively Blues bands and tasty brews. A celebration of winter’s excitement in a ski town, this annual event is produced by the Ellicottville Chamber of Commerce, who partnered this year with the Buffalo Niagara Brewers Association to offer a variety of craft brewers on-hand for thirsty visitors to enjoy.

WINTER BURRATA APPETIZER PAIRED WITH BLOOD ORANGE HEFE WEIZEN With Chef Joshua McDowell of EBC Okay, okay, I know it was a slow start, but winter is finally here! And from the looks of the crowds of skiers and snowboarders on the slopes, and the hustle and bustle in the shops and restaurants downtown, it appears that we are all taking full advantage of the season. It’s about time! I, for one, am truly thankful to get out and enjoy the wintertime activities with my friends and family in Ellicottville. Here at EBC, we welcome back our regulars, our seasonal visitors, and some new friends who have discovered for the first time this quaint, apres ski town that so many of us fell in love with years ago. Here at EBC, we’ve also welcomed some new menu items, fit for ski season … Before we get going, let’s start out with a definition for those of you that are not aware of just exactly what we’re going to be talking about in this article … “burrata”. Burrata is a fresh Italian cheese made from mozzarella and cream. The outer shell is solid mozzarella, while the inside contains both mozzarella and cream, giving it an unusual, soft texture. It is usually served fresh and at room temperature. The word burrata means “buttered” in Italian. Our featured menu item this time around is the EBC Winter Burrata Appetizer paired with the Blood Orange Hefe Weizen, which is currently under production and bottling here at the brewery. The beer itself is fantastic (it is one of my absolute favorites!) The blood orange hefe is an uber refreshing wheat beer brewed with English hops, Napa Valley (antioxidant rich) blood oranges, Midwest wheat, and the finest Canadian barley malt. This beer carries a slight bitterness with a crisp, clean taste of citrusy blood orange, followed by an earthy finish. The hefe pairs perfectly with our burrata appetizer for many reasons. First and foremost is flavor profile alignment. The burrata hits almost every tastebud that our hefe weizen doesn’t from the sweet aromatic thyme infused honey drizzle, to the salty prosciutto, creamy burrata cheese, peppery arugula, Bambinella pears, and garlicky French baguette. With the combination of beer and our carefully crafted burrata, we leave nothing to the imagination. Our goal was to hit the savory, sweet, salty, and sour categories of our tasting abilities … and I believe we did just that! (This, by the way, is head Brew Master Dan Minner’s favorite lunch combo, and is also a great way to stave off the dreaded disease Scurvy, as this dish is full of Vitamin C!) So stop in at EBC after an exhilarating day of skiing, snowshoeing, tubing, shopping, or whatever it is you’re doing in Ellicottville, and give our unique specialty combination of blood orange hefe and soul warming winter burrata appetizer a try. Until next time folks, be safe out there on the slopes.

ELI YOUNG BAND

One of Country Music’s Hottest Bands will Headline Seneca Allegany Casino

A Conversation with James Young HULICK: I believe you guys have played the Seneca Niagara venue before and this time around you will be playing the Seneca Allegany venue. YOUNG: Yes! We love playing casinos; it’s always a good time.

HULICK: The Seneca Allegany property is located in what we call the “snow belt” area … YOUNG: Awesome!

HULICK: (laughs) Do you guys ski? You’ll be close to Ellicottville, which is a

beautiful village that has skiing. YOUNG: Yes, we do! We don’t get a chance that often, but we love to ski! We’re all Texas boys so we’re not used to snow (laughs), but we would love to hit the slopes.

HULICK: Did you see the picture of the frozen car on the news near Buffalo? YOUNG: I did! Remind me not to stand too close to the lake when we get

there. That’s some crazy stuff right there!! Maybe you all are used to that, I don’t know. (laughs)

HULICK: (laughs) Your newest album, “10,000 Towns”, has gotten great

.............................. SATURDAY | FEBRUARY 27 @ 7pm By Melanie Hulick The Eli Young Band, formed in Texas by four college friends - Mike Eli (lead vocalist), James Young (guitarist), Jon Jones (bassist) and Chris Thompson (drummer) - have been playing music together for 15 years and are happy with not only their musical success but with their personal lives as well. “The dynamic of the EYB has changed a little bit over the past 15 years,” said Young when I caught up with him recently. “We’re all happily married and Jon and Mike each have a three-year-old and I have an 11-month-old son that rocks my world in a good way,” he added. The band have toured with some of country music’s elite performers like Jake Owens, Toby Keith & Kenny Chesney as an opening act, and are looking forward to returning to the smaller, more intimate venues on this tour as the headliners. “We like having fun with the audience, and playing at a casino allows us to do that in a way you can’t in an arena or stadium,” stated Young. Having paid their dues, these guys are now enjoying their success with number one hit songs like “Crazy Girl”, “Even If It Breaks Your Heart” and “Drunk Last Night”. Their hit “Crazy Girl” garnered them the win of the coveted Academy of Country Music’s Song of the Year Award in 2012, which we talk about in the following conversation. The band has been described as a brotherhood, having come up the ranks together as opposed to an overnight sensation, which seems the norm in today’s music industry. I asked Young if that is what keeps them together where other bands don’t share the same path. “We started out as friends first and we’ve had every argument and every fight … we’ve been through everything together, and so now it is still the way it was back then … we’re friends first and the music thing is an added bonus.”

..............................

Tickets to The Eli Young Band’s performance at Seneca Allegany Casino in Salamanca start at $15 and can be purchased through www.senecacasinos.com (click on Seneca Allegany). For more information on the band album, visit www.eliyoungband.com.

reviews and debuted at #1 on the Billboard Top Country Albums Chart, was #5 on the Billboard 200 and captured the #1 spot on the iTunes Country Albums Chart when it was released. That’s a pretty good streak. YOUNG: Well thank you. We were very excited about that record. We have a couple great songs on there. We’ve had a very blessed career.

HULICK: That album was actually the first time all four of you participated in

writing some of the songs. YOUNG: It was. We never write the same way and this one the four of us actually sat down together and wrote a couple of the songs. It was a whole new experience for us.

HULICK: Your first ACM (Academy of Country Music) Award was for the song “Crazy Girl” which won the Song of the Year Award in 2012, as well as the Song of the Year in 2011 on the Billboard Country Chart. I saw the ACM’s when they announced your name and you guys were so totally blown away! YOUNG: We were! We were honestly, totally shocked! We’ve been doing this for the better part of 15 years now and the reaction you saw was totally honest … we were truly shocked. We started out as this little garage band from Texas that we started in college and kept beating down the doors in Nashville and Texas and anywhere that would have us, so getting that award was not only validation but very humbling and amazing.

HULICK: You are up for the ACM Award for Vocal Group of the Year in April.

This is your third consecutive year you’ve been nominated isn’t it? YOUNG: Yes! It’s always amazing to be nominated, as cliché as that sounds, but it really makes you feel like you are part of the club.

HULICK: Do you have any new projects in the works? YOUNG: We’re working on a new record. It will be our first full record in a year or so, so we are excited about putting out new music and doing what we do.

HULICK: Where were you when you first heard yourselves on the radio? YOUNG: You know back in the day we used to get a lot of local love from

growing up in Texas. The local stations would play our music, sometimes on a late Sunday night (laughs) … and I would say that was the first time we had one of our songs played on the radio. We knew it was coming so we all gathered our families and listened to it together. Later on, with “Crazy Girl”, we’d be driving and it would come on and it’s a feeling that never gets old.

HULICK: Was there a point when you guys thought … we’ve made it … this is what we’ve been working toward and dreaming of? YOUNG: There’s definitely been some “pinch me” moments in the band like playing the late night TV shows. But I think we’ve always had the mindset of what we wanted to do next. We always said let’s keep doing this and take it as big as we can. We’ve kind of followed that mantra for the past 15 years. But for my parents, I will tell you that they thought we really made it when we played on the Bachelor four or five years ago! (laughs) ... Everybody in my family was like … you all made it now! You played on the Bachelor … you all is big time now! (laughs)

HULICK: (laughs) That’s funny! YOUNG: Of all the things we’ve done in our career, it was the Bachelor that … HULICK: Sealed it for the family! (laughs) YOUNG: (laughs) Yeah!!

BEEFEATERS AT THE HISTORIC CARNEGIE LIBRARY First established in 1901 as part of the famous steelmaker Andrew Carnegie’s philanthropic efforts to establish free public libraries across the country, the Free Library of Bradford, Pennsylvania was built on land donated by the City of Bradford. Located at the corner of Congress and West Corydon Streets, the Bradford Public Library operated for over 90 years in the beautiful building built of locally produced Hanley brick. In 1991 the library moved to a new location. This historic library building is now home to Beefeaters Restaurant. Beefeaters, a locally owned restaurant, offers a dining experience in professionally decorated rooms which previously served as the reading room, adult library, and children’s reading room, and the upstairs private reading room. The location of their full service bar is where you once checked out books from the librarian. Beefeaters is famous for their roast beef. All dishes are sliced to order at their beef bar located in the dining room (the reading room). A local favorite is “Beef on Wick,” a delicious sandwich of tender sliced roast beef nestled on a salted Kǜmmelwick bun, served alone or with American or German potato salad. You can also order French dip ‘Au Jus,’ slices of tender beef on a hard roll, served with ‘au jus’ sauce for dipping. The roast beef dinner features slices of tender beef smothered with gravy, served with your choice of potato, tossed salad, rolls and butter.

Dine inside the historic Carnegie Library, now the popular Beefeaters Restaurant.

The restaurant offers a selection of salads, shrimp, lobster, fish and chicken entrees along with traditional pasta dishes such as fettuccini alfredo and spaghetti and meatballs. Vegetable stir fry entrees, served over rice, are also available. For date night, start out with a signature daily drink special such as their Orange Pomegranate Martini. For an app, consider either the tasty Greek calamari or an order of fresh mushroom caps stuffed with a special seafood dressing topped with sharp cheddar cheese. Follow this with a cup of their homemade soup of the day. For the main entrée, we recommend their mouth-watering Prime Rib or Beef Au Jus, which is roasted very, very slowly to lock in all the natural flavors, with a fresh side salad and your choice of starch. End the evening with a slice of their graham cracker cream pie or maybe a deliciously decadent desert dripping in chocolate. For Valentine’s Day, Sunday, Feb. 14, Beefeaters will be hosting a special brunch from 11am3pm, along with their regular menu from 3pm-10pm. Beefeaters is located at 27 Congress Street, Bradford, PA. Regular hours are 11am-10pm Monday through Saturday. For information or reservations for groups, please call 814-3629717, thebeefeatersrestaurant.com.

We’ve said it before, and we’ll say it again: There is no other place like Ellicottville. Whether you live here, or own a vacation home here, or just visit on the weekends, you’re probably well aware of the sense of community it possesses. The type of benevolence that shines through when someone needs help. On Sunday, Feb. 28, Ellicottville rallies around Donna Woodarek. A longtime employee at Holiday Valley and lifelong Ellicottville resident, Donna personifies the work ethic and friendly vibe our town has become beloved for. The community was stunned to hear of Donna’s Stage-4 lung cancer diagnosis, and immediately jumped to action. “If you’re an employee or a guest who’s been coming to Holiday Valley for a while, you know who my mom is,” said Jaimie Woodarek, Donna’s daughter. “We put this benefit together to help her get through a pretty difficult time. The support so far has been overwhelming, and we’re so appreciative of everything everyone has done so far.” The benefit will take place at the Cornell Cooperative Extension building (located across the street from the Ellicottville Fire Hall) at 1pm on Sunday the 28th. A Chinese auction, 50/50 raffle, ‘Spin-to-Win’ and other fundraising activities will take place, as well as food and a $2 donation per draft beer. Jaimie and the rest of those involved have been diligent about spreading the word and posting the many different auction items on the Benefit’s Facebook page (search: Benefit for Donna Woodarek). And there are some really good items up for grabs, including a 20 gauge shotgun donated by Mansfield Arms & Ammo, gas cards from Hoag’s, an ultimate cutting combination (band saw, cutting station, 2 batteries, a charger, a bag and 3 packs of blades) from Meritool, Outdoor Tech wireless speakers from The Boardroom Snowboard Shop, custom stained glass art from Mat Snyder, woodworking from Emily Arena … just to name a few! “Katie Rinko will be providing sound and DJing, while Gary London, Randy Lee, Johnny Mac and Pete Gilroy will perform,” Jaimie said. “We’re having various other local artists who are still showing interest, so if you’d like to come play let us know!” Tickets for the Benefit are $10 apiece (which includes your food) and can be purchased beforehand or at the door. If you’ve got anything you’d like to donate, if you would like to pre-purchase tickets, or if you want more information about the event, don’t hesitate to head to the Benefit’s Facebook page for additional details and contact information. See you there!
