THE HISTORY OF COFFEE The first coffee plant was discovered in Yemen in the 15th century. This magical fruit was boiled in water, resulting in a drink that was thought to have medicinal properties. Ethiopian warriors were known to consume coffee to provide them with energy in battle. As the fame of the coffee plant was spread to other lands by Arab traders, its centuries long journey was about to begin.

TASTE THROUGH THE AGES From tropical islands to power centres of international trade, coffee was hailed not just as a drink but as a magical concoction that would stir conflict and controversy as it travelled around the world.

The coffee story begins in Ethiopia. There is evidence of coffee existing as far back as the 13th century in the Kingdom of Kaffa in Ethiopia. It is not until the 15th century that hard evidence of coffee consumption appears in the nearby region of the Sufi monasteries of Yemen.

By the 16th century, coffee had reached the Middle East and North Africa and by the second half of the 16th century the first cafés began to appear in Constantinople (now Istanbul, Turkey). These cafés soon became meeting places for diplomats, artists, authors and intellectuals.

Venice was a popular trade hub and the Venetians were the first to import coffee from the Middle East. There was initial controversy over the drink until Pope Clement VIII approved it for consumption by Catholics. The first European coffee house was opened in 1645 in Venice, not far from De'Longhi’s home town of Treviso.

These Venetian cafés were a huge hit and soon started to spread. The British India Trade Company and the Dutch East India Trade Company introduced Europeans to coffee and they embraced it with gusto. Coffee is an intimate part of the modern European lifestyle.

Australians enthusiastically adopted the magical bean in all it’s varieties – the café culture in Australia is second to none. The Flat White is an Australian invention and Australian baristas are prized by the world’s most fashionable cafés from TriBeCa in New York, to Soho in London.

THE BEAN CHOOSE WISELY. TYPE MATTERS.

WHOLE BEANS ARE THE BEST BEANS.

The Arabica bean is milder but more flavoursome and aromatic. Robusta beans are commonly used in blends, and contain almost double the caffeine found in the Arabica variety.

Always buy whole coffee beans rather than pre-ground coffee. Whole beans retain their aroma, character and freshness. Grind your beans fresh and only grind as much as required.

THE PERFECT EXTRACTION Using the colour of the crema as your guide, you can determine your preferred grind. FRESHER FOR LONGER.

Crema is the reddish-brown foam that sits on top of an espresso. The darker the crema, the finer the grind – but beware – if the grind is too fine it may burn, creating a dark crema and a bitter taste.

For a full-flavoured coffee every time, store your coffee beans in an airtight container in a cool, dark, dry environment (like your pantry). Never store coffee beans in the fridge or freezer as this will diminish the flavour and aroma.*

THE WATER

FIND THE BALANCE

HOT HOT HOT!

A typical cup of coffee is 98% water so the quality, temperature and amount of water used will have a big impact on flavour.

Warm your cup with some hot water before making your coffee. The cup will retain heat and maintain the ideal temperature for your coffee. Alternatively, place the cup on the cup warmer located on the top of the fully automatic coffee machine.

A CLEAN START, EVERY TIME. Before preparing your coffee, the machine will automatically go through its rinse cycle, making sure that the coffee spouts are clean and free of coffee residue.

FILTERED AND FRESH. Always use fresh, filtered water. The quality of the water will affect the taste of your finished coffee.*

COFFEE TO WATER THE PERFECT RATIO

TURN UP THE HEAT (NOT TOO MUCH!)

NOT ALL WATER IS CREATED EQUAL

The brewing ratio, or coffee to water ratio, is an important factor in getting the flavour right. Too little coffee will result in a weak taste, while too much coffee will result in an overpowering taste.

The brewing temperature should be between 83ºC and 92°C to achieve the perfect extraction. Water less than 83°C will result in under-extracted coffee, while boiling water over 100°C will burn the coffee.

Soft water is better able to absorb flavours and nutrients from coffee. Meanwhile, the high levels of minerals and residues in hard water make it less able to extract coffee flavours and nutrients. Choose soft or filtered water to make your coffee wherever possible.

THE MILK CHOOSING THE TASTIEST MILK.

GO FOR COLD. Refrigerated milk will produce a denser, thicker froth, so keep milk refrigerated at all times.

SPOT THE BUBBLES.

Milk with higher fat content will generally result in a silkier texture and better flavour.

SMOOTH AND SILKY Milk-based coffees rank high in Australian coffee culture. De'Longhi has developed the LatteCrema milk delivery system to produce a dense and creamy froth with a smooth silky texture, perfect for milk-based coffees. The cleaning function on the carafe ensures that milk residue is washed away after every cup. Alternatively, for the traditional barista experience, the optional milk frothing wand can be used to prepare your milk to your specific taste manually.

The density of milk froth is visible on the surface and in the body of a coffee. When poured, the perfect milk will be creamy, shiny and thick and will blend evenly with barely discernible bubbles.

The LatteCrema System delivers milk froth with a perfect body, compact and soft. The ‘microbubbles’ remain until the last pleasurable drop.

For a creamy cappuccino the foam volume should be 1.5 times more than the liquid part. The LatteCrema System produces a perfect silky foam to liquid milk ratio.

The perfect cappuccino temperature is around 6368°C. LatteCrema delivers the perfect temperature in every cup. The double-walled insulated carafe also ensures that milk is kept cold for up to three hours outside the fridge.

THERMOBLOCK (WATER)

The correct temperature is a vital element in producing a barista-quality coffee. Too hot, and the coffee will be burnt and taste bitter. Too cold, and the flavour will be weak and watery. De'Longhi’s dual Thermoblock system ensures that both the water and the milk are heated to perfection. The Thermoblock heats coffee to 88°C and milk to 60°C, resulting in the perfect milk-based coffee temperature of 63-68ºC. THERMOBLOCK (WATER)

An extraction temperature of between 83°C and 92°C is fundamental to releasing and preserving the full aroma of a freshly-ground coffee. Our dedicated Thermoblock system heats the water, while an advanced electronic system guarantees the precision of the optimal brewing temperature.

The dedicated steaming system works independently from the coffee preparation process to quickly generate steam for either silky, smooth hot milk or velvety soft milk foam. The high-precision electronic control ensures the necessary quantity of steam is generated at the optimal temperature to create the perfect in-cup results.

To ensure our coffee machines operate to a consistently high quality, we have developed a full range of original accessories for maintenance and cleaning.

SELF CLEANING

A natural and efficient calcium and lime scale remover. Regular descaling of your coffee machine ensures the efficiency and longevity of your machine. How often you need to descale your machine will depend on water hardness and frequency of use.

Keeps the Instant Frothing Device (IFD) LatteCrema System clean by preventing build-up of milk fat within the IFD. A weekly clean is recommended.

Reduces lime scale, and filters out impurities. De'Longhi recommends replacing the water filter every two months; depending on how often you use the machine.

The drip tray, grounds container and Instant Frothing Device are all dishwasher-safe.

The brewing unit is easy to remove, wash under cold running water and insert back into the machine.

The coffee spouts will automatically rinse when the machine is turned on and off, eliminating build-up of coffee residue.
