The Art of Cultivating Simple Pleasures and Living Well

Spectacular suites

and ultimate retreats

Considering the importance given to the size and quality of the master bedroom in today’s homes, it’s interesting to note that it’s a relatively recent addition to the American home. Up until well into the 20th century most homes were much smaller than they are today, as were the rooms within. Houses were strictly utilitarian, and large rooms would have been difficult to keep warm with only a fireplace as a source of heat. As the middle class began to grow in the 1950s, homes began to be seen as more than simply shelter. Soon bigger houses were built, and many began to have a larger, master bedroom. Even so, they were rarely as spacious as they are today, and the ensuite bathroom remained a bit of a novelty up until the mid-1980s. Continued on page 10.

Simple twists to classic favorites assure a healthy and delicious new year. See page 14 for recipes.

Serendipity, an artful eye for design, and superb craftsmanship were all a part of creating this spectacular master suite. Nurtured by an infallible sense of style, the homeowners paid close attention to details, but also encouraged the creativity of skilled artisans and designers. “The beauty of our home is that we really let creative people create.” Clockwise from upper left: [1] The exquisite ceiling mural, with colorful wreaths depicting the four seasons, was by an artist introduced by Jeff Cohlmia, of Cohlmia Interiors, also the source of the stunning Marge Carson bedroom collection. Painted in subtle shades of green and gold, the mural was also tea-stained to give it a beautiful aged patina. Silver leafing embellishes the crown molding throughout. [2] A glamorous crystal chandelier is a sparkling accent to the platinum painted barrel ceiling with gold overlay. The dramatic use of marble on the floors and continued up the walls is heightened by the fact that it is book matched, a process whereby the massive blocks are cut and numbered sequentially so the veins will match when the tile is laid in place. The result is a luxurious look that showcases the skills of all that had a part in bringing the materials and design together. [3] An adjacent sunroom is tastefully appointed in shades similar to those used in the bedroom, with the addition of a soothing, pale blue. Although grand, the elements that comprise this gorgeous suite facilitate ease and comfort, as any proper haven should. Furnishings from Cohlmia Interiors.

A Peaceable Kingdom Welcoming Wildlife Water sources are key to a successful garden habitat for wildlife. ust like humans wildlife needs plenty of fresh water to survive, but when winter temperatures dip into the freezing range, this may be harder to find. Wild birds can quench A Western Meadowlark, the Kansas their thirst by eating state bird, forages for seed in fields and snow, but this repastures in winter. quires large amounts of energy, which they need to keep themselves warm. Birdbaths are pretty common in summer, but very few folks think of providing water in winter. “Water is so essential to the well being of wildlife,” says Nick Clausen of Backyard Nature Center. “but it can also be extremely tough to find when daytime temps don’t rise much. It’s at times like this that open water can be life saving,” says Clausen. If you already have a birdbath, then you’ll want to consider your options for heating it. While there are plenty of different types of birdbath heaters or deicers available, Clausen has found those with thermostats in them to be safer and more efficient. A heated birdbath, kept filled through the freezing cold of winter may be the only ready source of unfrozen water for wildlife in your entire neighborhood, so it will be well used. The thermostatically controlled units will turn on when the temperatures drop below freezing and automatically turn off when the temperature rises, so they only cost pennies a day to use. “If you don't have a handy plug, consider getting a birdbath that won’t break with winter's ice and then just try to fill it each morning with warm water,” says Clausen. “The birds Continued on page 4.

Contrasting solid maple, raised panel cabinets in distressed black are striking against the natural wood tones while furniture style accents like turned legs on the peninsula, corner cabinets with glass doors, and staggered height upper cabinets complete the understated elegant feel of this space. Baltic Brown granite also highlights the light cabinetry color, introducing new shades of olive green and terra-cotta. A coordinating backsplash using a mix of natural slate and linear glass tiles brings to life the colors in the granite while respecting the rustic elegance of the beamed ceiling. Updated lighting in an oil rubbed bronze color blends perfectly with

Before the updated kitchen sink and faucet finishes. Bronze hardware on the cabinets showcase an eclectic blend of country chic cups and classic pulls. his time of year more time is spent indoors and you may begin to notice a worn or dated look to your rooms. They analyze each room in your home and help you use what you already own in a better way. A visit from one of their skilled designers will put you on the path to a warm, comfortable home. Nelson Designs is unique in all the products they carry and in the fact that they offer everything from all types of tile and wood flooring to furniture, draperies, and accessories. This allows you to see the products together and coordinate the whole look without going all over town trying to pull it together. Their designers will guide you through the process and help you create the perfect ambience for every one of your rooms.

Originally when you entered this home you were greeted by an empty room, but the designers at Nelson Designs saw the potential for creating a warm, inviting space. They knew the tall ceilings and windows were ideal for floor to ceiling drapes, and chose a subtle print that worked well with the other colors used. By adding an oversized clock, they made the fireplace a focal point. Bringing in a pair of chairs, and a side table, created a great space to sit and enjoy the fire.

Nelson Designs understands that people often don’t know what to do with the high walls in their homes. These clients were thrilled with the large pictures placed over a console with lamps on each end. The art picked up the greens and coppers used elsewhere, and the lamps added another welcoming touch. These homeowners now enjoy every moment in their finished living room and are delighted that it was so easy with Nelson Designs leading the way.

door makes a statement about a dwelling and those inside it. It is a salutation to all who approach it and a grand opportunity to make a good first impression. Doors are replete with symbolism in every culture. This brilliant red door, for instance, beckons approaching visitors inside. Red doors are popular around the world, and symbolize everything from good luck and financial status, to divine protection. In the Chinese philosophy of Feng Shui, a red front door means “welcome.” Since the color red also symbolizes good fortune, a red door is thought to encourage good luck to enter. Scottish homeowners are said to paint their front doors red to signify they’ve paid off their mortgage. In many cultures a red door is believed to protect the occupants from harm. The red door has significant roots in early American tradition, as well. At one time when a home’s front door was painted red it indicated that this was a place where travelers were welcome to stop and rest. Whatever tradition you choose to observe, red doors are the epitome of hospitality, and red and white together are—quite simply—classic.

The Pantry: Sustainable Black Walnuts provide opportunities and bold, wild taste There are good nuts and there are great nuts, but the American Eastern Black Walnut is the ultimate nut. Does food need to do more than taste good? If it's nutritious—that’s a huge bonus. But what if the food actually did all of this and had a social conscience? Get ready for food that gives back. As growing numbers of consumers are savvy about what's going into their food, sustainable and ethical ingredients, farmers, and companies are starting to emerge. Why sustainable? The use of pesticides, artificial preservatives, genetic engineering, and over-processed ingredients can potentially add up to serious health risks. All-natural foods make this a non-issue. Furthermore, it feels good to support products that are kind to the earth, sustain local communities, and practice fair treatment of workers. The good news: You don’t have to give up taste to give back! Black Walnuts are—and always have been—a 100% natural, sustainable, all-American, hand-harvested food. Unlike English walnuts or other commercially grown tree nuts, Black Walnuts are a wild crop, growing naturally in the fields of the Midwest. The nuts simply grow—without chemical fertilizers—from trees located right where squirrels planted the nuts. Every fall, hundreds of ambitious families and groups earn incremental income by gathering Black Walnuts (in the green hulls) from the wild and turning them in at hulling stations. 8

“We feel blessed with the opportunity to do something special,” says Brian Hammons, president of Hammons Products Company, of Stockton, Missouri, the primary provider of Black Walnuts. “We’re able to provide a market and income for people who harvest a raw resource—a gift from the land. This also contributes to the economy of rural towns in middleAmerica. Black Walnuts are a tradition and resource that’s renewed every year.” There is very little waste in the processing of Black Walnuts—even the outer shell is repurposed for earth-friendly filtration, abrasive cleansers, and cosmetics. The unique earthy flavor of the Black Walnut is derived from the roots of the wild tree. The result is a nut with a full, untamed natural flavor. Today, Black Walnuts are featured in trendy urban bakeries, traditional holiday fare, signature chef recipes, and even recently on the “quintessentially American” menu at the White House’s State Dinner for China’s President Hu Jintao. White House Executive Chef Cristeta Comerford selected the all-American ingredients based on attributes of “affordability, sustainability, health, and delicious foods.”

According to a Hammons spokesperson, “There is a huge interest in black walnuts in China.” And, as Brian Hammons, noted, “The president of China requested a meal that reflects the best America has to offer—and nothing embodies that better than the bold flavor of American Black Walnuts.” Nutritious, flavorful, and good keepers when refrigerated or frozen, black walnuts are a tasty addition to everything from appetizers to desserts. This Black Walnut Pie is a perfect, all-American, winter dessert.

Black Walnut Pie 1/2 cup non-dairy butter (such as Earth Balance) 1 1/2 tsp dry Egg Replacer plus 2 tbsp water, whipped lightly 1/2 cup (packed) golden brown sugar 1/2 cup golden syrup, such as Lyle's Golden Syrup) 1/4 cup almond milk 1/4 teaspoon salt 1 cup coarsely chopped black walnuts, toasted 1 9-inch pie crust

Preheat oven to 375°F. Meanwhile, whisk egg replacer and brown sugar in medium bowl until well blended. Whisk in golden syrup, almond milk, and salt. Stir in remaining melted brown butter, leaving most of darkened solids behind in bottom of measuring cup. Stir in walnuts. Pour filling into warm crust, distributing walnuts evenly. Bake pie until the filling is browned, and set at the edges (center will still move slightly when pan is gently shaken), 25 to 27 minutes. Cool pie completely in pan on rack. The center of filling will set as the pie cools. The pie can be baked a day before you are planning on enjoying. Simply cover loosely and store at room temperature until ready to serve.

This exquisite, contemporary ensuite embodies all the function and style of successful design. The luxurious walk-in shower combines the natural beauty of copper-toned slate on the outside with rain forest brown marble and mosaics inside. The spacious bathroom’s travertine floor and towel racks are heated, and the floating, espresso-stained, Alder wood cabinets are topped with quartz. There is also a sit down make-up center, built-in clothes hamper and trash storage, and frosted privacy doors into the bathroom, as well as into the actual water closet. An island bureau and shelving for the walk-in closet, and wall-mounted television cabinet in the master bedroom were also custom designed and built. Designer Rick Anderson attributes the success of this extensive remodel to the singular rule he’s followed for over 35 years of sales and design for The Kitchen Place—he listens. “It’s all about building a relationship, and then creating a unified design with a natural flow that best fits the client’s individual lifestyle,” says Anderson.

Today, the master suite, consisting of a principal bedroom with its own private bathroom, and practically mandatory walk-in closet, is one of the most important for most homebuyers. In fact, the trend in new home remodels is now toward having two master suites. The extra master suite is viewed as a value-added upgrade and as the perfect way to accommodate frequent guests, live-in relatives, or even owners that prefer having their own private spaces. Perhaps no room in the home is as important to your sense of well-being as that very private place, the bedroom. It is here, at the end of the day, that you finally have time for yourself. It is here that you will spend at least a third of your lifetime, and it is here that your very personal sense of welcome should be at its best. This inner sanctum, like your inner thoughts, is a place where you want to feel totally comfortable. The secret to creating a space that’s comfortable to you is in pleasing the Continued on page 11.

The homeowner’s needlepoint pillows and crocheted afghan were the inspiration behind this cheery bedroom brimming with bright colors and textural touches. The fabric-covered wall is a stunning backdrop for the double row nail trimmed headboard covered with a plush woven cut fabric that has a pattern that simulates a subtle stripe. The repeated use of red toile with black faille trim for the bolster and the bedskirt, which is skillfully pleated to create a consistent repetition of the pattern, creates an energizing and vivacious look. The side chair, with a custom apple green and white striped slipcover is a perfect complement to the arched floor lamp and decorative wooden shutter room divider.

From the entry niche, to the sumptuous bath, this masterful suite was achieved by a collaboration of the distinguished talents of Design Studio, Ltd., and The Kitchen & Bath Gallery. Expansive windows, graced with woven grass shades, allow for a seamless relationship with the environment outside and set the tone for this nature-inspired, and aesthetically pleasing retreat. Soothing colors, such as that selected for the coarse linen used to upholster the headboard and for the matching bedspread, are accented with restraint with an interesting antique Asian painted sideboard, red Asian-style glazed ceramic lamps on the rattan side tables, and patterned chenille pillows. In the bath, maple wood cabinetry, with a painted finish and brown glazing, is warm to the eye and the touch. The crown molding and surround softens the large expanse of glass. A vanity on the opposite wall has electrical outlets inside the cabinets, accessible from the countertop, plus storage for grooming accessories that keep clutter under control. The extensive use of Durango travertine, for the countertops and heated tile floor, maintains the serene ambience throughout. Together these distinctive elements create a calm, restorative retreat with a decidedly, sophisticated feel.

Natural materials and inspired design principles combine to create a feast for the senses.

This kitchen was designed to be efficient for two. Whereas before these avid cooks were running into each other, now there’s plenty of space for them to cook together. By moving the stovetop from a center island to the outer wall, The Kitchen Place created what essentially are two parallel galleys. The new island between gives them the space they need for prepping, as well as meeting one of their “must-haves,” a place for plating their gourmet meals before serving them in the adjacent dining room. The most stunning aspect of this new kitchen is the unique use of vertical-cut bamboo. Bamboo offers a distinctive alternative to traditional hardwood cabinetry, and when each door is trimmed at the top and bottom with ash and walnut, and then crowned with mahogany, which was also used for the toe kick and the island, the result is a feast for the senses. The countertops are finished with Caeserstone Quartz in a Jerusalem Sand pattern that was honed to give it a soft, low-luster appearance. The spacious island, with plenty of storage accessible from both sides, and outlets on one end, is topped with Yellow River granite, boasting an ultra 2 1/2”thick beveled edge. The influence of nature can also be seen in the selection of the tumbled stone used to tile the wall, the earth-toned marble mosaics applied in horizontal bands, and the Indian multi-colored slate floor. Working closely with the homeowners, The Kitchen Place was able to create an imaginative kitchen that reflects their lifestyle and tastes, and accommodates their dual passions for cooking.

“For 66 years, The Kitchen Place has emphasized long-standing relationships, with a process that revolves around our customers as we tailor-fit each step to every remodeling or new construction need.”—Pat Lang, President/Owner

Quiet Spaces Bath Indulgences Transforming the bathing experience from the purely functional to the perfectly sublime often rests in details that extend, expand, and soften time spent in the tub. he languorous bath smoothes away the hard edges of the day, and sense-fulfilling amenities hold the necessarily hard surfaces of the bathroom at bay. The right bath linens, ideally warmed by a conveniently adjacent heated bar, can make all the difference. Other invigorating accessories include scrubbers that both exfoliate the skin and open the pores; again, natural choices—sisal scrubs, loofahs made from the dried dishcloth gourd, and natural sponges are the best. Grainy gels and creams also work tingly wonders, and they are skin-type-specific and often wonderfully scented. On the subject of scents, bath and aromatherapy oils are a multi-faceted and fabulous bath indulgence, because they offer physical, sensory, and psychological benefits. Essential oils should always be diluted with a carrier oil, then added to warm bath water and swirled for even dispersal. Submersing the body in their soothing essences while inhaling their heady fragrances results in a sensory high that is both immediate and prolonged; the warm water doubles their efficacy and facilitates greater absorption. Perfumed candles, singly or massed about in the room, also infuse the air with a synergy of scent and sight. Soap is essential as water to the bath, and, while soaps also smell good, their primary cachet resides in those properties that allow them to both cleanse and nourish the skin. The best soaps are milk-, honey-, or olive oil-based, and they are as gentle as they are moisturizing. These bath luxuries are triple-milled for density, which not only ensures that they last a long time but also hold their shape as they shrink. Other indulgences include a convenient surround or across-the-tub tray to hold the wealth of amenities essential to the deluxe bathing experience; however, some would insist that a yellow rubber duck bobbing cheerfully in the water is the ultimate— and indispensable—bath indulgence!

Shades of Green: Gold Certified Hardware It may seem that thinking green has little to do with choosing hardware for your home, but “the times they are a changin.” t turns out that from the manufacturing process to the final product there is plenty that can be done to create hardware that’s stylish and environmentally friendly. It was to this end that Rocky Mountain Hardware made a commitment to not only how they make their product, but also to where they make it— here in the USA—and, to just how green they could make their facilities. The Lighter Side of Winter The Front Porch Wichita

hen the heavy-laden tables of the holidays are finally cleared, you may find yourself making resolutions to try to eat a little healthier. On the other hand, winter has just begun, and you’re still in the mood for foods that are warm and hearty. With a few twists to what are usually summertime favorites, it’s easy to create a delicious supper that’s worthy of family and friends, and delivers all the warmth you’ll need for those long winter nights. Delight your taste buds and warm yourself with a campfire favorite, Sloppy Joes, transformed into flavorful, Lentil Josies. Fill your kitchen with the aroma of gently spiced, ovenroasted potato fries. Reinvent coleslaw with the bounty of winter gardens—red and green cabbage, tossed with apples, and toasted walnuts to add a flavorful crunch—dressed simply with a white wine vinegar. And, finish with an ever so creamy, yet surprisingly light, almond pudding topped with sweet Italian Amarena cherries. You, and your guests, will soon be resting by the fire with a plentiful feeling of comfort and contentment.

Lentil Josies & Oven Fries Fresh ciabatta buns are a great choice for this flavor-packed mixture of lentils simmered in a rich tomato sauce. Offer creamy horseradish and whole grain mustard to spice up the works, and serve with a crisp dill pickle. The trick to making crunchy Oven Fries is in parboiling them first and then gently tossing them to rough up their surfaces, which will quickly crisp in the hot oven.

Lentil Josies & Oven Fries Oven Fries

Josie Sauce

Lentil Josies Lentils 2 cups dried lentils 4 cups water 1 bay leaf 1 cinnamon stick 1 teaspoon salt

Rinse and pick through the lentils. Add the water and spices to a large pan with the lentils and bring to a boil. Reduce the heat, cover, and simmer for approximately 40 minutes, yet still firm to the bite. They will finish cooking in the tomato-based Josie Sauce. Check midway to make sure there is plenty of water. When the lentils are mostly cooked, remove from the heat, remove the bay leaf and cinnamon stick, and add the tomato sauce mixture.

2 tablespoons olive oil 1 1/2 cup onion, minced 1 cup carrots, diced 1/2 cup green pepper, diced 1-2 jalapeno peppers, deseeded and minced 2 cloves garlic, minced 2 teaspoons ground cumin 1/2 teaspoon cayenne 1 teaspoon dried oregano 2 tablespoons ketchup 1 tablespoon mustard 2 tablespoons soy sauce 1-28 ounce can tomatoes, chopped

Heat the olive oil in a large sauté pan over a medium high heat. Add the onion, carrot, and peppers and sauté until the onion begins to turn translucent. Add the garlic, cumin, cayenne, and oregano and cook for about a minute, to release the flavors. Add the ketchup, mustard, soy sauce, and tomatoes. Bring the mixture to a boil and reduce the heat, cover, and simmer for approximately 15 minutes. Add the cooked lentils and continue cooking on a low heat until the lentils are done, but not mushy. If you are preparing a day ahead, you can add the lentils, but then remove from the heat and refrigerate. Reheat and finish cooking, adjust seasoning as desired, and serve

Rainbow Slaw

4 medium sized russett potatoes 1 whole garlic bulb, cloves separated, but not peeled 3 tablespoons olive oil 1/2 teaspoon salt 1/4 teaspoon cayenne pepper

Preheat oven to 450 degrees. Clean potatoes, but leave their skins intact. Cut each potato in half lengthwise. Then slice each half into 4 wedges. Place in a steamer over water in a large pan. Bring the water to a boil; remove from the heat, and let sit for 2-3 minutes. You want to just start to soften the outsides of each potato wedge. Gently rub the wedges together, by tossing them together. This will rough up the smooth edges, exposing more areas to brown and crisp. Place the potato wedges and garlic cloves on a large baking sheet. Toss with the olive oil, salt and Continued on page 15.

Using organic produce makes all the difference in this dish, from the red and green cabbage, to your favorite variety of apple. And, if you can, please try to toast the walnuts yourself. The aroma and flavor are out of this world. In fact, you may want to toast a few extra for the cook!

Almond Pudding with Amarena Cherries

Rainbow Slaw 2 cups red cabbage, grated 2 cups green cabbage, grated 1 apple, chopped (Fuji is good) 1/4 cup white wine vinegar salt to taste 3/4 cup toasted walnut pieces 1/4 cup cilantro, chopped (substitute parsley if desired)

Mix the cabbage and apple together in a large, non-reactive bowl. Add the vinegar and a little salt, and toss to coat well. Cover and place in the refrigerator to chill for 30 minutes to an hour. The cabbage mix will stay crisp for several hours. When ready to serve, add the toasted walnuts and cilantro, mix well, and adjust seasoning as desired. Serves 4.

Cherries and almonds were made for each other, but when the cherries are a dark red variety with a flavor that's both sweet and scrumptiously bitter (or amare in Italian)— preserved in a rich syrup made from the juice of the same fruit—well, that’s a match made in heaven.

cayenne. Bake in oven for approximately 15-20 minutes, or until nicely browned, turning over at least once after cooking for 10 minutes. You can remove the garlic pieces before serving, although there are plenty of garlic aficionados who would love to add them to their plate.

To Assemble 4 ciabatta buns 1 jar creamy horseradish 1 jar whole grain mustard 4 whole dill pickles, sliced in half lengthwise

Spread horseradish and mustard on each bun, spoon 1–1 1/2 cups Lentil Josie Sauce on each. Serve with plenty of Oven Fries and a sliced dill pickle. Serves 4.

Almond Pudding with Amarena Cherries 3 cups almond milk, divided use 1/4 cup cornstarch 1/3 cup sugar 1/4 teaspoon salt 1/2 teaspoon vanilla extract 1 teaspoon almond extract 1/3 cup Amarena Cherries Dark Belgian Chocolate Thins, available at World Market

Pour 2 1/2 cups of the almond milk into a medium saucepan. Whisk the cornstarch into the remaining milk to dissolve, and then pour the cornstarch mixture into the pan. Add the sugar and salt, stir thoroughly, and bring to a low simmer. Continue to cook, stirring constantly, until thickened, approximately 5 minutes. Remove from the heat and stir in the vanilla and almond extracts. Let cool for a few minutes then pour into 4 individual serving dishes and cover with plastic wrap, placing it upon the surface to avoid a film from forming. Chill in refrigerator for at least 2 hours. Can be made up to this point the day before. When ready to serve, remove plastic wrap, and spoon 1 generous tablespoon of Amarena Cherries on top of each. Step it up with details, color, and design

hen these homeowners recently moved to Wichita they found a home they liked, but the traditional interior—walls with dark brown faux texturing, and a lot of oak—lacked the natural feeling they wanted, and didn’t quite showcase their more contemporary furnishings and art. Fortunately, they found exactly what they needed with the qualified team at Guthridge Nighswonger. By designing new accents and finishes for the existing structures, Guthridge Nighswonger was able to create an entirely new look without the major demolition usually associated with remodeling. They began by bringing in a nature-inspired palette of colors to create a more soothing environment. The entry area, where a dated stairway detracted from the views, was completely transformed. The round coves were replaced with clean, square edges, the oak spindles were exchanged for twisted, powder-coated aluminum balusters, and the ball-topped posts given a complete makeover with multiple layers of 21 different pieces of woods, including an eye-catching application of purpleheart. The kitchen became the next proving ground for the changes that Guthridge Nighswonger could achieve by adding details and design. The black trim from the exterior of the home was repeated inside with stunning results. The addition of customized black convex trim gave the cabinetry an entirely new appearance. The winning combination of wood and metal was continued with aluminum plates mounted around the new mantle, and above the kitchen windows. Painting the kitchen island black, adding accents of red, and bringing in new lighting fixtures made the transformation complete. Finishing touches of a few details, colors, and designs in the other living areas of the home, created a natural flow from room to room. “I was used to remodelers or contractors that simply came in and built,” the homeowner said, “but Guthridge Nighswonger was able 1702 S. Laura, 264.7900 to provide design know-how along with the inspiration we were looking for, to achieve a real transformation without a major remodel. They were a joy to work with,” she adds.

If you can dream it, we can build it. Exceptional and dependable workmanship, integrity, and quality.
