Sapphire

We start this sensory journey into the world of emotions with the stone that is the symbol of this first edition: the sapphire. This precious gemstone, through its distinctive colour blue and the properties attributed to it, symbolises the element of water. It is the stone of wisdom and spiritual power, bringer of prosperity and peace. It makes the wearer less disorganised, helping them to focus on and pursue their goals. It encourages you to change the aspects of your life that you don’t like and inspires calm, serenity, faith and love of truth. According to Greek mythology, the sapphire, September’s birthstone, was first brought to Earth by Prometheus. Legend has it that when, he stole fire from the gods, he also took possession of a blue sapphire. Over the centuries, astrology and mythology have also attributed the title of “stone of wisdom” to this gemstone, thus linking it to the god, Saturn, the “Wise old man”, the equivalent of the “Hermit”, the ninth card of the Major Arcana of Tarot cards. This figure embodies the ability to be guided by wisdom along the difficult path hindered by the trials and tribulations that life places in our way. The sapphire is also a sign of generosity, benevolence, loyalty and control. According to the legend, it was this specific stone which made the beautiful Helen of Troy so loved and desired. The famous ring belonging to King Solomon was also created with this gemstone, on which was engraved the seal that allowed him to control the demons. The sapphire is a magical and mysterious stone, capable of amplifying the talents of the wearer and helping them to believe in themselves. Let’s allow ourselves to be guided on our journey by its serenity and sparkle… let’s discover the element of water with it and all that it entails.

Dear guest, I am your host. I was born in the magnificent pine forest of the Gulf of Follonica, overlooking the sea. Hi, Francesco! Tell us who you are. My name is Francesco Sommer. I was born in Genoa and I am forty-one years old. I have been working in the hotel industry since I was eighteen. I worked for a major group of hotels and resorts for many years which gave me the opportunity to enjoy excellent professional and life experiences abroad. I have lived and worked in large, leading resorts in Tunisia, Mexico, Dominican Republic, Capo Verde, Greece, Egypt, France and lastly, I worked for six years in Mauritius. I love the sea and the Beach Resort lifestyle in all its facets. What is your role at The Sense Experience Resort? I am the Resort Manager. What are the values of The Sense? We put our guests at the centre of the experience, endeavouring to offer a new, fresh, top-quality product. The goal is to enable our guests to enjoy a luxury vacation whilst maintaining a friendly, pleasant

and youthful atmosphere. What sets The Sense apart from other resorts? There are lots of aspects that make The Sense Experience Resort unique. The staff have all been carefully selected. The style of welcome that we offer is based on discretion, professionalism and the utmost willingness to fulfil our guests’ needs. The location is unique: we are a Sea Facing Beach Resort to all intents and purpose. There is a beautiful park behind the buildings, thus guaranteeing direct access to the sea and an open view onto the Gulf of Follonica. Nothing separates the bedrooms from the beach. The food and drink offer is meticulously prepared, designed to give our guests a taste of top-quality local products and the wine list is capable of satisfying all preferences with 200 labels to choose from. The activities and experiences proposed are sophisticated and the intent is to make our guests feel the experience as well as participating in it.

What can guests expect from a holiday at The Sense? Full immersion in a wellbalanced and welcoming atmosphere; the ideal place to revive their senses. The scent of the pine trees, the refined taste of our dishes with their sophisticated simplicity, silence accompanied by the sound of the waves, soft jazz music in the background, cleanliness and tidiness guaranteed by our high standards, being recognised by our team thanks to personalised services... they can definitely expect to want to come back again. Tell us briefly about your typical day at The Sense. I like to take care of all the operational aspects and management of the Resort. I willingly take part in all the main activities of the structure. I am at the guests’ disposal in the morning during breakfast, and at lunch and dinner. I generally inspect the park, beach and communal areas at some point during the day.

At mid-morning, I have an operational meeting with all the managers in which we share the main activities of the day and week ahead and in which we swap notes about the topics linked to running the hotel. I like to welcome our guests personally when they arrive, so that I make myself available and accessible straight away for whatever they may need. I constantly maintain an active and positive relationship with all the staff, providing support for activities when necessary. In the quiet periods, I take care of office work, correspondence and paperwork. What do you think a guest at The Sense should definitely not miss out on? A stroll in the park, a dip in the pool, a chat with Chef Franco about the menu, the smile of our Front Office Manager, Alessandro, some advice from our Maître D’/ Sommelier, Stefano, dinner in the Eatè Restaurant with our second Maître D’/Sommelier, Saverio, a sunset sipping one 12

Which of the many qualities of The Sense do you value the most? The organisation, attention to detail, the common goal of making our guests happy, having an owner who supports and believes in what we do and who, as we all do, puts the guests and the well-being of the employees at the centre of THE SENSE project. The Eatè Restaurant was conceived for people who like trying different culinary experiences and zero miles products, sampling the best dishes in the Tuscan tradition, reinterpreted with a gourmet twist by our chef, Franco Manfredi, and his staff. To complete the food and wine experience in our magical part of the world, a careful selection of fine wines, both local and international, has been expertly paired with our food. Hello, Franco! Tell us a little bit about yourself.

What do you like most about your job?

Hi, my name is Franco Manfredi, class of 1968. I was born in Viareggio and I live in Pietrasanta, in the heart of Versilia. I took my first steps in the world of cooking in 1981. Here, I had the good fortune and pleasure to meet teachers who made me fall in love with this profession and immediately helped guide me towards places where I could learn the basic techniques. Given its complexity, this profession must be backed up by a lot of technique and immense passion.

The things I like most about my job are undoubtedly working with my team in creating dishes and seeing the result in the eyes of our guests, happy to have taken part in a pleasant dining experience.

What is your role at The Sense? I work as chef in the kitchen of the Eatè restaurant in The Sense Experience Resort. What is your idea of cuisine? My idea of cuisine is based on selecting top-quality products combined with just a few ingredients to make my dishes unique in their simplicity.

What is your relationship with the ingredients and the local area? An almost morbid curiosity has arisen from by passion for cooking, for seeking out the primary ingredients. I have developed a profound respect for them over the years: I choose them with care and try to enhance them in every dish without ever masking their natural flavour. I also firmly believe in the relationship of direct collaboration with farmers and cattle breeders. With regard to the local area, I love Tuscany because it lets me discover different ingredients every day, constantly providing me with new dishes to offer my customers. What can guests of The Sense expect at the Eatè Restaurant?

The guests who come to the Eatè Restaurant can expect first-class cuisine in which nothing is left to chance and in which the flavours of the sea are mixed perfectly with those of Tuscany. Everything will be carefully and tastefully presented in each dish that we offer. What is your secret in the kitchen? My secret in the kitchen is my team! I believe that a positive environment boosts my creativity and that of the entire team. Thank you, Franco! One last question: can you tell us which is your favourite dish in the Eatè Restaurant and why you prefer it? One of my favourite dishes on the menu in the Eatè restaurant is “La trasparenza di mare in vetro” (The transparency of the sea in glass). The reason is that, with this type of cooking, I manage to capture the intense fragrance of the flavours used to serve to the guest. It is a dish that succeeds in satisfying all the senses, in perfect keeping with the style of The Sense. 19

Mullet fillet in mussel sauce. Recipe from Chef Franco Manfredi

With this dish, we bring products from our sea to the table, delicately enhanced by references to our local area. A simple, delicious, light second course. In perfect keeping with the style of The Sense, I recommend using fresh products, so the dish will be even more tasty. Don’t forget to pair it with an excellent glass of white wine. Ingredients: Filet of Orbetello mullet, Piombino Mussels, Vanilla Basil, Yellow Cherry Tomatoes. Preparation: Carefully clean the mussels. Then, cook them until they open, flavouring them with garlic, chilli pepper and white wine. Once ready, remove the shells, filter and preserve the cooking liquid. In a non-stick pan, gently fry the mullet skin-side down until it is crisp. Then, turn the fillet over and add the mussel cooking liquid. Add the basil, tearing the leaves by hand. Add the mussels minus the shells and the yellow cherry tomatoes chopped in half. Finish by adding salt and pepper as required. Serve in a deep dish with slices of bread rubbed with garlic and a drizzle of extra virgin olive oil. 21

This thirst-quenching and energy-filled smoothie is perfect for anyone who wants to start the day with an extra spring in their step or needs a healthy, nutritious mid-afternoon snack. Let yourself be bowled over by the taste of detox and healthy eating. Be Natural, Be You! Ingredients: White peach, Spinach leaves, White melon, Ginger, Green apple. Preparation: Cut a few slices of melon, peel the peach and apple as well as the outer part of the ginger. Then, blend all the ingredients in the glass with some ice cubes. Juniper Berries

Juniper berries have a sweet-aromatic taste and, once ripe, turn a black-blue colour with silver highlights. In addition to being the main ingredient of gin, as well as of other liqueurs and grappa, their essential oil is used in the kitchen, both for the taste and their many qualities. They can be used as a spice to flavour sauces and meat or fish dishes, or they can be added to infusions and herbal teas to make the most of their beneficial properties. Thanks to their fragrance, which is reminiscent of pine, they can be used as an alternative to pepper and are excellent in marinades, with game, paté, bacon, cabbage and sauerkraut, but also with grilled fish and poultry. Among the many beneficial properties of juniper berries, we know that they help rid the body of excess water, fight infections, prevent diabetes, aid digestion, alleviate bloating, relieve menstrual symptoms and calm coughs. Fresh juniper berry compresses are also good for the skin, reducing acne and eliminating toxins from the pores. They stimulate all the internal functions of the body, helping to overcome tiredness, depression and dizziness. In short, these berries are a healthy addition to our diet, ideal when you want to experiment with new ingredients and flavours, without, however, sacrificing your waistline and well-being. 27

Pink Pepper

Pink pepper is a spice that grow on an evergreen tree in Latin America. Despite its name, it is not a false pepper because its provenance differentiates it from classic black, white and green pepper. It is a mildly hot spice with a characteristic scent, frequently used in kitchens all over the world, including in Italy. It has a positive effect on the metabolism and is used as an anti-depressant. It has a good anaesthetic effect on toothache, rheumatism and period pains. Its delicate flavour and sweet-spicy scent, with notes of lemon and strawberry, make it perfect for flavouring fish-based dishes, especially thinly sliced, raw swordfish, tuna and salmon. It is an excellent ingredient in yoghurt-, butter-, mascarpone- or fruit-based sauces. Its rich, bright colour makes it an excellent spice which adds a touch of elegance and vividness to the dish, perfect, therefore, for preparing original risottos or unusual desserts. Pink pepper is also one of the spices which, along with black, white and green pepper, make up the famous creole seasoning blend. In Ecuador, its grains are frequently used as a condiment for food, but also to flavour liqueurs and vinegar. In Chile, they flavour wine with them while in Mexico, they are used to prepare pulque, an ancient alcoholic beverage, considered sacred. Preparing a pink pepper sauce to garnish your dishes is very easy. All you need is 50 g of melted butter, 4 teaspoons of crushed pink pepper, 1 teaspoon of chilli powder, 2 finely chopped dried tomatoes and 2 teaspoons of fresh cream. It can be used both fresh and dried. It is highly resistant to heat and after cooking, does not lose or change its characteristic taste. What is The Sense’s recommendation? Try combining pink pepper with chocolate; you’re in for a surprise. 28

Helichrysum

Belonging to the large Composite family, Helichrysum (Helichrysum italicum) is an aromatic plant, commonly found in low Mediterranean scrub. Its name derives from the Greek words helios (Sun) and chrysos (Gold), both because each bright yellow flower head recalls the colour of the sun and also because this very hardy plant only grows in sunny places. This self-seeding perennial plant, about 40 cm high, usually forms dense scented patches along coastal regions. The rich part of the active ingredients is made up of the flowering heads which should be picked from May to September depending on the altitude. The therapeutic properties attributed to Helichrysum are anti-inflammatory, analgesic (reduces pain), decongestant, anti-allergy, photo-protective (protects from the sun’s rays), antitussive (calms coughs) and anti-hepatotoxic (capable of counteracting the toxic effect of some substances on the liver). Helichrysum also grows in our park and is used by our chef, Franco Manfredi, in some of his dishes. He likes it because, in addition to its beneficial properties, it has an aniseed flavour and a scent with balsamic notes reminiscent of licorice. Its bright and unusual colour combines perfectly with delicious shortbread biscuits proposed with the cafeteria, or with the fish from our gulf.

The “Theatre of Silence” is a natural amphitheatre created in the splendid setting of the Lajatico hills, the culmination of a project by the architect, Alberto Bartalini and the famous tenor, Andrea Bocelli. A “silent” project, in a space that for almost an entire year remains intact in its perfect harmony, bursting into life at the end of July for a few days with Italian and international singers from opera, pop music and dance. The brilliant intuition of the Theatre of Silence derives from simple reflections: combining the beauty of the landscape with the musical refinement of Andrea Bocelli, the Tuscan tenor, considered one of the most famous and talented artists in the world. The architect of dreams, Alberto Bartalini, came up with the idea for this theatre, from the contemplation of the conformation of the land: the vision of an extended natural stage and the magic of the landscape in the background. The first drafts were produced during a train journey to Rome when the architect, without having yet revealed the project to anyone, began sketching on a piece of paper the initial drawing of what would become one of the most magical places in all of Tuscany. This natural amphitheatre, situated on a hill one and half kilometres from the town, is a theatre consisting of a lake with a huge sculpture by a contemporary artist, dominating the centre, which changes every year and is chosen based on the theme of the edition. It is all enclosed by a backdrop of Tuscan travertine blocks which are reminiscent of a site of an ancient cult or a Neolithic megalith. A panorama of unparalleled beauty which offers an all-round view of the hills of one of the most beautiful hillsides in the area, that of Volterra. An eco-architecture and Land Art project that did not upset the natural setting in any way, instead it has enhanced it and placed it centre stage.

Among olive trees and fields the colour of ochre, the ceramic monsters of Niki de Saint Phalle are a psychedelic bomb exploded in the bucolic landscape of Tuscany. The Giardino dei Tarocchi (The Tarot Garden) is an artistic park in the Garavicchio (Grosseto) in Maremma Toscana, conceived by the French-American artist, Niki de Saint Phalle. The site features monumental sculptures, between 12 and 15 metres high, dedicated to the symbols of the tarot. This garden, between dream and reality, is a genuine open air museum, perfectly blended into the hilly landscape of Maremma. It is a fascinating, one-of-a-kind park as well as one of the most important examples of environmental art in Italy. Due to its delicate nature and with the aim of preserving the magical atmosphere that reigns inside, visits are possible only in certain periods of the year (from April to midOctober), limited to predetermined time slots accessible only to a small number of visitors. Also, at the artist’s wish, there are no guided tours or pre-established itineraries to safeguard the freedom of movement of visitors. The Tarot Garden is the life’s work of Niki de Saint Phalle, to which she dedicated herself along with her collaborators and her second husband, the Swiss sculptor, Jean Tinguely. The forest of sculptures, representing the 22 cards of the Major Arcana, was created using many different materials: glass, steel, porcelain, etc., all in an anarchic overdose of colours. The figures include the Sphinx, High Priestess, Magician, the Hierophant and so on. These sculptures are reinforced in steel, surrounded by a metal wire mesh and cemented. To finish, they were covered in mosaics by the artist, Venera Finocchiario, who, in Paris, used tiles for them, made with glass from various parts of the world. The Tarot Garden, an esoteric place, somewhere outside time and space, will catapult you into a world of play on light, shapes and reflections.

Tuscany is home to excellent wines, capable every year of producing intense flavours, known and acknowledged around the world. In this region, it is the lush green area of Bolgheri that plays a key role, dotted with vineyards that have produced grapes for generations. The Guado al Tasso cellar, belonging to the Antinori family, dedicated to wine production for over six hundred years, is a place where tradition and innovation harmoniously coexist, capable of recounting the past, present and future in a single glass. It is located in the small and prestigious DOC (designation of origin) area of Bolgheri, on the coast of northern Maremma, and although it was only established in 1994, it already has an international reputation as a new reference point on the international wine scene. The approximately 320 hectares of vineyard, situated at a height of about 50 metres above sea level, are mainly cultivated with Sauvignon, Merlot, Syrah, Cabernet Franc, Petit Verdot and Vermentino grapes, the latter grown in the white and black versions. They enjoy a mild climate due to the proximity of the sea: the constant breeze mitigates the summer heat and winter cold, clear the sky and maintain a high level of sunlight. The soil of clay origin, from clayey-sandy to clayey-silty, enhances the character and personality of the grape varieties through a strong territorial identity. Among the many options available, the Bolgheri Vermentino of Tenuta Guado al Tasso features in our wine list, a white wine with a fine flavour, a native variety, characteristic of the Tyrrhenian coast. The Bolgheri microclimate, particularly suitable for the production of Vermentino, both for the conformation of the land and the proximity to the sea, gives the wine a marked mineral flavour and freshness, as well as enhancing its aromatic component. An inviting and delicate flavour, perfect for pairing with fish and vegetarian dishes.

The only winery in the world designed by architect Renzo Piano, a jewel of modernity and efficiency in the municipality of Gavorrano, right in front of the ancient village of Giuncarico. Kite&Windsurfing

In Follonica, near the Puntone di Scarlino, there is a specific kitesurfing beach where it is possible to take part in various water sports including kite and windsurfing courses. Kitesurfing is a sailing sport launched in 1999 as a variation on surfing which consists in being towed by a kite that uses the wind as a propeller and manoeuvred using a bar. Windsurfing, on the other hand, is a sporting activity as well as a sailing speciality, which consists of moving on the water on a board the driven by the wind on a sail. Puntone Beach, the location where flying over the sea becomes reality, stemmed from the passion of Alessandro, Michele and Roberto, among the first in Italy to do adrenalinerush sports, midway between the water and sky. Let them help you project yourself into the third dimension: flight. Feel free and invincible, experience the thrill of cutting through the waves in completely new way. Sense People: Puntone Beach Puntone Beach, the first kitesurfing school in Italy Hi, guys. Would you like to tell us a bit about yourselves and Puntone beach? The Surf relax Puntone beach began with the passion of Robert, Michele and Alessandro and then, became a genuine profession. We were one of the first groups in Italy to start kitesurfing and Roberto Mocellin even won the first Italian kitesurfing championship. You were the first ones to bring kitesurfing to Italy. Was it difficult to introduce this new sport onto the Italian scene? It definitely wasn’t easy. At the beginning, there was a lot of curiosity, but kitesurfing was viewed as an extreme and “dangerous” sport. Back then, the equipment wasn’t as efficient as it is now and so, it was really difficult to succeed in learning how to do it. Over time, however, curiosity overcame the fear and our Italian dream finally started to take shape, so people began to get more and more interested in this 64

sport. They started turning to us and realising that, once you got over your initial fear, the emotions you could experience were unique and unparalleled. What other activities do you offer other than kitesurfing? One of the many other activities that we do on our beach is hydrofoil, which is the evolution of the kitesurfing board that can glide even in just a few knots of wind. The hydrofoil board is a carbon foilboard that allows you to fly on water at twice the speed. Windsurfing is another sailing sport that is very popular, especially with children, who our qualified instructors can quickly teach in total safety. Our beach also provides canoes and standup paddleboards both for hire and courses. You can even hire the equipment just for a day trip. The courses you offer include ones for children. How important is it for you to convey your passion to your young students? Conveying passion to

young students is really important because they are our future. We firmly believe that sport for young people encourages socialisation as well physical benefits and constantly creates new, healthy friendships. You provide an area on the beach for your four-legged guests, as well as giving them the chance to have a swim. How important is it for you to be pet friendly? We are also a dog beach because we love animals. Which is why we decided, along with the town council, to create a beach that could welcome our fourlegged friends. Here, they can find bowls, fresh water and showers to wash off the seawater and, for swimming in the sea, there is an area equipped for them that is about 150 metres from our beach.

Of all the experiences you offer, which ones would you most recommend? The activity that we obviously recommend most of all is kitesurfing, not just because it is the true soul of Puntone beach, but also because it arouses indescribable emotions. You need to try it to truly understand the thrill that it gives you. For kids, on the other hand, the sport we recommend, above all, is windsurfing because seeing them going out on the water with big smiles on their faces, proud of having dominated the wind, is priceless. Thanks! One last question. We’ve talked about it a lot, but haven’t really got down to the heart of the matter: what emotions does kitesurfing actually arouse? Well, loads, but the biggest one of all is the sense of freedom. Kitesurfing is like flying on water. The adrenalin rushes through your body and gives you a constant high. Once you’ve experienced all that, you’ll never go a day without thinking about the wind! 65

Italian olympic class sailing in Follonica The Gulf of Follonica hosted the C.I.C.O., acronym for “Campionato Italiano Classi Olimpiche” (Italian Olympic Class Championship) from Thursday 17 to Sunday 20 September, one of the main regattas of the Italian Sailing Federation and a key sporting event of major late summer sailing. The regatta involved the participation of over 300 hundred athletes with numerous, highly technical skilled overseas crews entering, proud to take part in the Italian “mini sailing Olympics”. The C.I.C.O. in the unified version with all the sailing classes - in a single location on the same date - reached the 27th edition last year and was hosted for the second time in Follonica with a brand new look, thanks to the work on the breakwaters which allowed the boats to come in and out in any weather conditions. The Italian national sailing team was there in full force including the athletes ready for this year’s Tokyo Olympics. Among the Italian and foreign competitors, there were also World and European champion crews, including the exceptional participation of several medal winners from the last 2016 Rio Games. Follonica has always been a major Italian sailing venue and this year, once again, will host various events over the summer linked to this magical world of the sea and wind.
