Bake in the oven for 10–15 minutes, or until the fruit is starting to soften and release its juices. Meanwhile, for the crumble topping, roughly crumble the parkin with your fingers into a bowl (or blitz briefly in a food processor to make large crumbs, then tip into a bowl). Add the sugar and butter and rub in lightly with your fingers. When the fruit has softened, scatter the parkin crumble evenly on top. The buttery crumbs should almost but not completely cover the fruit in a thin layer (you are not looking for a thick blanket of crumble). Return to the oven for another 10–15 minutes, or until the fruit is cooked and the fruit juice is bubbling up around the crumble topping.
