The secret to the perfect roast turkey this Christmas THE secret to the perfect roast turkey is to keep the breast meat moist while the darker leg meat, which takes longer to cook, finishes cooking. For best results cover the breast with streaky bacon rashers, baste well from time to time and protect it with foil if it shows signs of becoming too brown. A 3.6-5kg bird will serve ten to fifteen people; 5-6.8kg 15-20 people and 15-20kg 20-30 people. Ingredients 1 oven-ready turkey 25g butter 2 medium onions, skinned and finely chopped 225g fresh wholemeal bread crumbs 60ml chopped fresh parsley finely grated rind of 2 lemons salt and pepper 1 egg, beaten streaky bacon rashers Method To make the stuffing, melt the butter in a large saucepan, add the onions, cover and cook gently for about ten minutes, until really soft, stirring occasionally. Remove from the heat and add the bread crumbs, parsley and lemon rind. Season and stir in the egg. Wash the inside of the bird with boiling water and stuff at the neck end before folding the neck skin over. Make the turkey plump and as even in shape as possible, then truss it
‘Serve the roast turkey with the traditional accompaniment of thin gravy, bread sauce, small sausage and bacon rolls, roast seasonal vegetables and Brussels sprouts’
with the wings folded under the body and the legs tied together. Weigh the turkey and calculate the cooking time allowing 20 minutes per 450g plus 20 minutes. Place the turkey in a roasting tin, then sprinkle with salt and pepper. Cover the turkey breast with streaky bacon rashers to prevent it from becoming dry. Roast at 180 degrees Celsius (375 degrees Fahrenheit) Gas Mark 4, basting occasionally. Leave the turkey to rest for ten minutes, then carve thin slices of the breast meat by cutting down between the thigh and breast. Serve the roast turkey with the traditional accompaniment of thin gravy, bread sauce, small sausage and bacon rolls, roast seasonal vegetables and Brussels sprouts. Why not finish off your festive feast with an alternative dessert? Christmas ice cream is a delicious option which includes all the best things that go into a traditional Christmas pudding – dried fruit, rum, port and spices. The ice cream mixture of eggs, sugar and cream is very luxurious and needs to be beaten twice while freezing to prevent ice crystals from spoiling the smoothness. Ingredients (serves four to six) 10g mixed no-soak dried fruit 60ml light or dark rum 30ml port
grated juice and rind of an orange 450ml fresh single cream 3 egg yolks 100g caster sugar 150ml fresh whipping cream 5ml ground mixed spice Method Mix the dried fruit, rum, port and orange rind and juice together, then set aside to marinate overnight. Gently heat the single cream in a small saucepan to simmering point. Whisk the egg yolks and sugar together in a medium bowl until pale and thick. Gradually pour on the hot cream, stirring continuously. Strain the mixture into a medium heavy-based or double saucepan and cook over a gentle heat, stirring continuously, for 20 minutes. Do not allow to boil. When the mixture coats the back of a wooden spoon, stop cooking and allow to cool. Whip the cream, until stiff, then fold into the cold mixture with the dried fruit mixture and mixed spice. Pour into a shallow freezer container, then cover and freeze for about three hours until mushy. Turn into a chilled bowl and beat well. Return to the freezer container and freeze for a further two hours. Beat the mixture again, then turn into a 1.1 litre bombe mould, cover and freeze for a further two hours until firm. Transfer to the refrigerator to soften for 30 minutes before serving.

6,000 festive calories? And that’s just on Christmas Day
Temptation: Try to balance festive treats with healthy food options to avoid piling on the pounds at Christmas.
HRISTMAS can be a challenging time of the year for those watching their weight as temptation is on every corner. The average person in the UK will consume around 6,000 calories on Christmas day alone (versus the guideline daily amount of 2,000 calories for women and 2,500 calories for men). In addition to this, over the festive period, which seems to kick off earlier and earlier each year, the average person may consume an extra 500 calories per day, equating to a weight gain of around 5lb by the time January comes around if you’ve been partying since the end of November. The British Dietetic Association (BDA) is on hand to highlight some handy tips to ensure the only thing that gets really stuffed this Christmas is the turkey. I Plan ahead – If you are going to eat out, eat smaller meals beforehand and cut out any other treats. Open one box of chocolates at a time rather than having five on the go and put unopened boxes away out of sight. I Buffet table surfing – Don’t hover by the buffet table and if you do indulge, try and visit only once using a smaller dessert sized plate, avoiding the high saturated fat offerings like sausage rolls and quiche, in favour of fruit, skinless chicken and vegetable crudités. I Office politics – To avoid the office com-
munal chocolate/mince pies etc, take festive fruit like satsumas into work. I Supermarket sweep – When going to the supermarket, make a list and stick to it. Avoid those aisles of temptation. If you want some festive snacks, try plain popcorn, pretzels, and vegetable crudités with a yummy low fat dip. I Big bird – Turkey is a great source of protein and a low fat meat. Most of the fat that is present in a cooked turkey will be found in the skin. Why not take the skin off before you tuck in? I Perfect portions – About a third of your dinner plate should be vegetables, such as unbuttered Brussels sprouts, peas and carrots. Cook for the shortest length of time possible in the smallest amount of water necessary to keep all the nutrients in. Use the veg water for gravy and any leftover veg for a delicious soup. These make a great contribution to your five-a-day and they also help fill you up to stop the urge to snack between meals. I Healthy options – If you want to go that extra step, try dry roasting potatoes on a non-stick baking sheet or use an oil spray instead of smothering them in goose fat. You can also make your gravy using vegetable stock instead of meat juices, accompanied by a fruit-based stuffing with bread sauce made with low fat milk. I Bottoms down – Those who like to
indulge in a drink or two, tend to drink more over the Christmas period. Avoid sweet cocktails and creamy liqueurs. Try alternating your drink with a glass of water or other calorie free drinks and if you do enjoy a short with a mixer, stock up on low calorie mixers and unsweetened fruit juices and beware the home measures. I Pie-eyed – The average mince pie contains about 250 calories and that’s before it’s covered in cream or brandy butter. Remove the lid to cut calories. Christmas is also the time of year when most houses have boxes and boxes of chocolates and biscuits to hand. While we all like to enjoy the odd treat now and then, balance this with some healthy options, such as satsumas piled high in a bowl, dried fruit, figs and nuts. Sian Porter, consultant dietician and spokesperson for the BDA, said: “Christmas should be a time for festive fun and special food. You shouldn’t feel guilty about treats now and then, you just need to make sure that they are treats and not the whole sum of your food intake. Stock up on some healthy alternatives too for some balance. “This time of year, it is so easy to unwittingly consume a lot more calories than normal. Make plans to get yourself and the family active – dancing, shopping and post-meal walks all will help to burn off some calories.”
