MEET OUR

chefs

The Cowboys Leagues Club is fast becoming a hot spot for diners in the CBD. With so many options to choose from it’s not hard to see why diners are flocking to this Flinders Street venue. Executive Chef Thomas Martyn and Head Chef Anna Spivey have been hard at work lately designing their brand new Club Classics menu which is available Sunday to Wednesday for lunch and dinner. The idea behind it was to create something a little bit extra for the early to mid-week diners. The Club Classics features classic favourites such as chicken kiev, lamb shanks, bangers and mash and a Club T-Bone all for only $14.90 for members. The Cowboys Leagues Club restaurant has a few exciting things ahead for 2014 including a full restaurant revamp. Since Tom and Anna joined forces in March 2012 they have been awarded the esteemed Savour award for best restaurant in a pub, club or tavern in Australia. The award paid tribute to their hard work and Tom and Anna are anticipating big things ahead. One thing Tom and Anna are passionate about is the quality of their food and the freshness of the ingredients. ‘Eating out is all about quality and we aim to always serve our members and guests the best quality and freshest food around’, Anna said.

A personal favourite of Anna’s on the new menu is the NQ Salad which includes coconut crumbed prawns, pawpaw, cucumber ribbons, cherry tomatoes and salad greens with chilli mango dressing and crispy noodles. ‘On a hot Townsville summer day, this salad is sure to entice.’ Anna has had a passion for fresh food since she was a young child before commencing her apprenticeship at 16. One thing Anna loves about working at the Cowboys Leagues Club is the ability to experiment with different recipes and learning different styles of cuisines. Both Anna and Tom enjoy training and inspiring young people who are interested in becoming a chef. Tom believes he brings a relaxed and happy atmosphere to the Cowboys Leagues Club kitchen. “Happy chefs make happy food,” he said. Since the age of 14 Tom has thrived on the busy environment in a kitchen. Tom’s personal favourite on the menu is the lamb rack, as it infuses simple flavours to create a delicious meal. Visit Tom, Anna and the team at the Cowboys Leagues Club for your next meal out and you won’t be disappointed.

NEW SEASON New COACH With the new NRL season about to commence, it is perfect timing for new head coach Paul Green to take the reins of the North Queensland Cowboys.

Residents team in 2012 and last season took the Roosters under-20s to the NYC finals as well as acting as assistant to head coach Trent Robinson.

North Queensland CEO Peter Jourdain said the Cowboys were delighted to have secured such an outstanding coach for the 2014 and 2015 seasons.

A member of the Cowboys squad in 1999 and 2000, Paul is the first former Cowboy to return to the club as head coach.

Paul said he was proud to become the Cowboys’ seventh head coach and return to North Queensland where he played 35 matches across two seasons.

“As everyone is aware, we undertook a very thorough process with filling our coaching vacancy and Paul proved to be the outstanding candidate in a very high quality field,” Peter said.

“For me, it’s exciting to finally get a head coaching opportunity, and to have that opportunity at this club ticks a lot of boxes, professionally and personally,” he said. After a 162-game NRL career and seven State of Origin appearances for Queensland, including becoming the first Cowboy to play State of Origin for the Maroons, Paul switched to coaching with Brisbane and then took Wynnum-Manly to back-to-back premierships in the Intrust Super Cup. He was also in charge of the Queensland

“I’m really excited to be involved in such a great club. It’s a Queensland club and I’m a proud Queenslander and we’ve got some wonderful players.” Paul can’t wait to sink his teeth into the Cowboys squad to see exactly what they are capable of. “There’s no doubt that on our day we can beat anyone in the competition. If we can be consistent in how we play, that will be the real key for us.”

There’s no doubt that on our day we can beat anyone in the competition. “Paul has a fantastic resume and his presentations and discussions with us proved that he has the abilities and qualities we were looking for.”

Peter believes they have the right man for the job and the maiden premiership is a matter of when, not if. “We strongly believe he is the right person to take our club to the next level of performance and our ultimate goal – winning our first premiership.” “He has had a great grounding starting with his playing career then being an assistant coach under Wayne Bennett at the Broncos, two premierships with Wynnum-Manly and then being part of the Roosters under Trent Robinson this year.”

claim this as a tax deduction. Without these generous donations, we simply wouldn’t exist” he added. The Fund assists disadvantaged youth and their families in an area that stretches from Rockhampton in the south to Mt Isa in the west and Cairns and beyond in the north, matching a similar footprint of the North Queensland Toyota Cowboys Football Club.
