About Japanese-style Teppanyaki Flat Top Grill Plancha Cooking

The key to teppanyaki cooking is that it is quick and simple and incorporates the cook as an integral part of the dining process, rather than relegating him or her to the kitchen or the grill. One of the essential features of teppanyaki cooking is the entertaining way the food is cooked and served to waiting diners – very relaxing, yet stimulating. Seeing the fresh food, watching someone cooking – or interacting in the process – and smelling the delicious aromas is a sure thing to whet everyone's appetite. Naturally, at home there is no grand performance like in a restaurant. However, this sociable style of cooking does afford the host/cook with the opportunity to show off their cooking skills and knowledge of ingredients. The word teppanyaki derives from “teppan”, which originally means “iron plate”, while “yaki” translates to “grilling”. Today teppanyaki-style cooking can be performed on an electric stainless steel flattop grill, which can be used both, indoors and outdoors. The food is being cooked where it is to be eaten. The diners are involved in the process by their presence and interaction, making the meal a very convivial experience. Teppanyaki-style cooking can easily be adapted to the Western style of barbecuing or grilling and is a tasty alternative for those who are seeking a change from traditionally prepared steaks and sausages. Most of the preparation of a teppanyaki meal is done beforehand, and the cooking begins when all the company is seated around the table. Then the sampling of small amounts of tasty delights starts, as they are cooked and served. Many believe that it is even more fun to eat straight from the teppan. About CDS-Design How a German Automobile Tuning Legend Revolutionizes Cooking Back in the 80's, industrial designer Paul Schacht was amongst the first tuning professionals in Europe, who transformed the legendary Mercedes Benz 190 into a “Hot Rod”, literally. For many years, Schacht's fine Benz held the World Record for the fastest Sedan ever to roll right off the conveyor. But this was only the beginning. Many more models followed, all created to perfection along the lines that good design must have state-of-the-art engineering inside. Next to his passion for fast automobiles Schacht has a taste for excellent food, and cooking it, too. Following his perfectionist logic, cookware has to live up to his standards, too. Perfect it was, yet just by the measures the pieces were originally designed for, thus performing one only specialty use. “How come one needs to utilize a vast number of different pots, pans and other cookware just to produce a decent, fresh and healthy meal?” he was wondering. That said, Schacht went to work. Along his motto “Impossible is not part of my vocabulary”, he dove into experimenting and developing. His goal was to translate this philosophy into making cooking and dining a fun, interactive social “Experience”. After many months of intensive research, trials and errors, he achieved the impossible: Paul's “Hot Table” came to fruition and was ready to transform his new concept into reality. State-of-the-art yet genially straight-forward, robust technology performs magic: The center of the seamless stainless steel tabletop dips down slightly when hot, thus forming a shallow indentation; imagine a type of wok flatter than usual. The perimeter of his “Hot Table” safely stays cool to allow for table settings. Switched off, the indentation vanishes like nothing ever happened.

Schacht's patented SHALLOW DIP TECHNOLOGY feature makes for a piece of “Cooking Furniture” of the Third Kind, which he affectionately calls his Hearth of the Third Millennium. “In the past years modern technologies have shown us that everything is possible. Mankind needs to get ready for a small cooking revolution.” Paul remarks chuckling. Gourmets and gourmands are certainly in for sizzling seasons. His grandfather, Paul Schacht I, founded the family business in 1887 in Stendal, Germany, manufacturing fancy horse carriages and offered leather upholstery as well as paint services. When the automobile gradually took over, the company quickly adjusted to the demand of this new industry era. A number of CDS designed products are still part of standard equipment of Mercedes Benz and BMW automobiles today.

How it works When switched on, the one-piece surface divides into

forming a shallow concave pit up to ~450ºF|230ºC

WHEN ON the cooking center gently bows downward

. . . as if nothing ever happened. No more need to get up! Cook-N-Dine uniquely combines cooking procedures without the use of pots or pans, efficiently utilizing just one central heat source.

Cleaning is quick and easy! Just add a little water on low temperature and wipe clean with a soft rag or paper towel. No chemicals necessary; it’s just like cleaning stainless steel cookware. Stubborn remains can be removed with the help of “Barkeeper’s Friend”. Shine with a few drops of plain vegetable oil.

Cleaning Your CND Teppanyaki Grill Cook Top Food residues can easily be “cooked off” by pouring a little water around the warm cooking center (compare to cleaning your stainless cookware where one brings water to a boil). Warm unit on #5 or until water bubbles when moved around. Use a non-scratch STRAIGHT EDGE (!) stiff spatula (heat-resistant nylon or - best choice: wood). Gently loosen the residues bit by bit, moving the water around to the areas where needed. !!! USE GREAT CAUTION: SURFACE + LIQUIDS ARE VERY HOT !!! Wipe off the remains with a paper towel or soft rag. Utilizing tongs for holding the rag/paper towel may prevent burns. Clean with water until cleanser and food residues are gone. The surface has to be COLD to eliminate the last traces (if any) For heavy duty jobs, shake "Barkeeper's Friend" ² powder over the COLD surface. Using a soft rag or folded paper towel, WORK COMPLETE SURFACE ALONG THE GRAIN (visible structure in the metal), EDGE TO EDGE - in LONG EVEN STROKES, !!! NEVER EVER in circles !!! Use gentle, even pressure. Clean up with plain water. For very difficult stains or stubborn remains, you can use a NON SCRATCH (!) cleaning sponge, such as Scotch-Brite Dobie¹, together with BKF. !!! NEVER do circles !!! Use gentle, even pressure. Clean up with plain water. To remove white spots or bluish heat discolorations, use BKF as described, or cut a lemon in half, squeeze lightly and wipe the COLD surface with the cut side of the lemon. You could also make a paste and let it sit on the stain for about a minute. Then rub gently and wipe off all remains with water. Dry with a soft rag or paper towel. For extra sheen or to remove fingerprints, use a few drops of plain vegetable oil and a paper towel or soft rag. You can even use a quick spritz of non-stick cooking spray applied directly onto the surface, or alternatively spray your paper towel to avoid over spray. At last, polish surface thoroughly with a clean, dry rag or paper towel to ensure there is no oil residue remaining, which might stain your clothes. Cook-N-Dine teppanyaki grill cook tops are manufactured in Germany using 60-80% recycled, professional food-grade type 304, German stainless steel, one of the best alloys available worldwide. This stainless steel does not rust when properly maintained. However, with outdoor use or when you live near water, where the air contains a lot of moisture or salt, oxidation can occur over time. To prevent a reaction of the metal, maintain it well and clean regularly with just soapy water to remove all dirt particles adhering to the surface. Those particles can harm even the best stainless steel over a longer period. Ever wondered why the metal parts on a yacht are being cleaned all the time? That said, NEVER EVER use chlorine bleach, cleaners containing chlorine bleach, other powdered cleaners like Ajax³ or any other household acids, as those will break down the metal's stainless features as well. NEVER EVER use regular steel cleaning pads, wire brushes or scrapers because they will destroy the invisible shield of stainless steel and will compromise the stainless features. NEVER EVER use steel wool or oven cleaners as they can cause stainless steel to pit or corrode. NEVER EVER work in circles; always work with the grain in long, straight, even strokes To maintain the sleek appearance of the premium satin finish, avoid using metal utensils and do not chop food nor use sharp utensils directly on the metal surface. Stainless Steel will scratch, plus your expensive knife will not like the hard surface and dull quickly. Did you know that professional teppanyaki chefs never touch the actual metal surface? Their knifes are so sharp they slice through the food like butter without any pressure at all. Minor scratches though – which will accumulate over time from use – will not compromise the functionality of the appliance at all. If desired, the solid surface can be professionally buffed up if desired. Our favorite cleaning agent - Barkeeper's Friend powder - is inexpensive and available at many supermarkets in the cleaning products aisle and at most Home Depot Stores.
