Recipes from our kitchen to yours! Wild Rice with Cranberries and Caramelized Onions
2 cups chicken broth 1/2 cup brown rice 1/2 cup wild rice 3 tablespoons oil 3 onions, sliced into thin wedges 2 teaspoons brown sugar 1 cup Craisins 1/2 teaspoon orange zest, finely grated (optional)
Combine chicken broth and both rices in saucepan. Bring to boil. Reduce heat, cover, and simmer 45 minutes or until rice is tender and liquid is absorbed. While rice is cooking, cook onions in oil until they are a caramel color - 25 - 30 minutes - stirring often. Stir in craisins and cook over low heat for 10 minutes or until craisins plump. Gently fold onion/cranberry mixture and orange zest (if using) into cooked rice. Submitted by Linda Lichtensteinr
