The Twyford Pantry Happy New Year! Hope you all had a great Christmas celebration however you spent it. Needless to say December 2017 was the best month of my life becoming Mrs Hodges and with all the love and support we received from our family and friends, it was everything we hoped for. Then to visit Rome and come back for Christmas it was truly magical. Like Christmas though it all comes to an end and the New Year kicks in with a focus on the year ahead. Some of you will be on a health kick, some with new ambitions and some happy with how life is anyway. These next couple of months have some lovely dates in the diary to

Lazy Brunchtime Baked Smoked Haddock and Egg Pots (serves 4/half for 2)

I’ve picked some recipes to double up the love and either be used for Valentines or Mother’s Day plus a healthy treat for those of you giving a Vegan diet a go! and put them in a small roasting tin. Divide the haddock between the dishes. Beat the cream with the mustard, lots of pepper and a little salt. Break an egg into each dish and pour over the cream mixture until all the yolks are just covered. Drop another small knob of butter into each ramekin. Pour hot water from a kettle into the roasting tin so it comes 2cm up the sides of the ramekins. Carefully put in the oven and bake for around 2025 minutes or until the eggs are just set. Sprinkle with chives and serve with toast and a lot of love!

Ingredients Small knob of butter 200g skinless smoked haddock cut into chunks 200ml double cream 2 tsp Dijon mustard 4 medium eggs Small bunch chives, chopped Toast to serve
