KOPI LUWAK, THE WORLD’S MOST EXCLUSIVE COFFEE Civet coffees are coffees whose ripe coffee cherries have been eaten and digested by small cats and later excreted and found in their stools. The workers on Balmadies Estate gather the coffee excreted by civets, from the ground or from fallen branches. It is then carefully washed and dried in the sun. In India this coffee is also known as “Monkey Parchment” which is quite strange because monkeys do not intervene in the process at all. This coffee is 100% Arabica.
Civet coffees are from the ripe coffee cherries that are eaten and digested by Civets –small cat like creatures that are found in various countries in South East Asia. The coffee seed, with the parchment hull still in place, is not digested by the civet and is excreted in its stools. Wild civets are night cats with gigantic eyes and a diligent snout and they love the taste of totally ripe coffee cherries. They climb up the branches of the coffee trees sniffing out and devouring only the ripest and sweetest cherries. After eating the pulp or outside shell of the coffee cherry they swallow the seeds. In their stomach the enzymes and gastric juices come into contact with the coffee seeds and decompose certain coffee proteins that give coffee its bitter taste, making it more buttery on the palate and the beans acquire a unique flavour.
Kopi is the Indonesian word for coffee and luwak is the local name for civet Once the coffee seeds are excreted by the civet, they are collected by hand, washed and dried in the sun before hulling the parchment layer that protects the coffee beans. After that they are lightly toasted in order to preserve their unique flavour profile.
Sumatra: Kopi Musang This coffee is produced in the Banda Ache region located in the north of the island of Sumatra.
A civet feeding
Civet coffees available in Ingredients:cafè Civets are known by various names depending on the country they are in. For example on the islands of Java and Sulawesi they are called Luwak; in Sumatra and the Philippines, Musang; and in India, Civet. In the Philippines at an altitude of close to 2,000 metros, the indigenous Ibaloi and Kankanaey tribes patiently collect the Musang’s excrements which contain the coffee seeds and then carefully wash them and lay them out to dry in the sun before finally removing the parchment hull by hand and selling the green beans at very attractive prices. This business has had a very positive impact on the civet population because they are now zealously protected by the indigenous people. The civets used to be hunted for the tasty meat India: Balmadies Estate This coffee is gathered on the Balmadies Estate coffee plantation at an altitude of 1,400 metres. The estate is located in the south of India in the Nilgiris region, also known as “the blue mountains of India”.
A farmer from the Sumatra region
At Ingredients:cafè, the Kopi Luwak coffee is produced by civets in the wild. Civet coffee can be found on the islands of Sumatra, Java, Bali, the Philippines as well as in India. Scientific data on Civet coffee The Canadian food scientist, Massimo Marcone, carried out a laboratory analysis and discovered that the civet’s digestive system decreases the coffee’s caffeine content which explains why this coffee does not have the same effect on the human organism as conventional coffees. He also found that the enzymes in their digestive tract lower the bitter taste of the coffee.
The coffee on this estate is produced by means of biodynamic agriculture which is even more natural than organic farming. The bio-dynamic method comprises the principles and practices of organic farming whilst taking into consideration the cosmic movements of the Sun and Moon, in addition to planetary influences, when carrying out all the farming work on the plantation.
The civet in this region is called Luwak or Musang yet only the latter name is commonly used. The Musang stools are picked on the coffee plantations of the highlands of Banda Ache at an altitude of 1,300 metres. This coffee is 100% Arabica.
The enzymes found in the civet’s digestive tract lower the bitterness of the coffee History The first European to discover Kopi Musang was a Dutch Governor in Indonesia in the XV century. At that time up to the last bean of coffee produced in Indonesia was exported to Holland because the Dutch had the world monopoly on the coffee trade. Hence, the local people of Sumatra could not consume the product they themselves produced. However, they found a way to obtain coffee for their own consumption. They noticed that the civets ate coffee cherries and then excreted them so they began to gather these coffee beans and drink them. One day the Dutch Governor noticed a delicious coffee aroma coming from one of the local people’s huts. He went to investigate, tried it and was amazed by its sweet flavour, lack of bitterness and its penetrating aroma. From that day on the only coffee that the Governor drank until the day he died was Kopi Musang. Kopi Luwak Tasting Coffee with an exquisite and delicate flavour Strong with complex aromas. It has a delicate flavour with serene and complex aromas , mild acidity, medium body and a silky texture. The flavour is predominately chocolaty and leaves a long lingering finish on the palate.
Bellaterra coffee is solely and exclusively produced for the enjoyment of Ingredients:cafè customers Villa Sarchi: A genetic variation of the legendary Borbón varietal.
