Kite Surf Lake Turkana Author: Jamie Hockley Testimony: “As experienced kite surfers who share a passion for East Africa's amazing wildlife and distinct bio-diversity, the 'KiteSafari' expeditions that my wife, Francesca, and I undertake often lead us off the beaten track on a quest to discover new and remote locations. I had the opportunity to kitesurf on Lake Turkana back in 2011. Heavily loaded with all our camping and kitesurfing equipment, the morning of the 12th of November 2019 finally arrived, signaling the start to our next big adventure! After 2,500 km round trip across some of Kenya's most beautiful and rugged landscape, we arrive in Lake Turkana. Lake Turkana is located in the northern frontier district of Kenya, in the Great Rift Valley bordering South Sudan, Uganda and Ethiopia and is famous for being the world's largest permanent desert lake and largest alkaline lake. Archaeologically, Turkana is also renowned for its 'Turkana Boy' discovery and is often referred to as the 'Cradle of Mankind'. After 4 days of intense driving through the distant and mountainous central and northern regions of Kenya, we arrived at Eliye Springs just as the sun was setting on the afternoon of the 15th. To be greeted by the greenish-blue haze of the 'Jade Sea' was a very welcome sight indeed. Nestled into the western shore of the lake, Eliye Springs is an oasis in what would otherwise be hot and arid landscape. Healthy Doum palms scatter the lodge grounds and lakeside camping areas, offering much needed shade during the hotter parts of the day. The early morning rustling of their leaves would often signify the arrival of the wind from the east, and we would know it was time to start pumping up our kites and get ready for a session on the water. The wind lived up to its reputation at the spot and we rode together for 2 of the 3 days spent at the lake. The entire experience was amazing. The landscape and nature are wild and feral, offering both harsh desert conditions and uninhabited crater lakes abundant in crocodile and birds of prey. The Turkana tribe remain true to their cultural ancestry and a visit to one of the local communities is definitely a must for any passing traveler. The trip was a complete success and there is no doubt that in the future we will return together to re-visit the 'Cradle of Mankind'. he Salty Squid is the new beach front place to be when you come to Diani Beach. Located at Kenyaways previously known as Lymingtons, but now Salty Squid is the perfect spot to have a sunny lunch by the beach or a relaxed dinner with the ocean breeze. You will probably meet Oli and HAL when visi ng, they are the new owners. Originally from Cambridge, UK, they were together in primary school and became friends a er few years. A er 20 years of experience in the industry, they decided to se le here in Diani. From restaurants, pubs, mobile bars, cocktails bars, ski chalet, they have been experiencing most of the hospitality op ons in the world. A er travelling around the world for HAL and building his family for Oli, they came to Diani Beach last year to visit friends. Like most of us, they fell in love with Diani and jumped on the opportunity to take over this beau ful restaurant by the beach and start all over again! 10


A er weeks of intense brain storming, renova on, refurbishment The Salty Squid was open. The opening day on the 1st of December was a big success. Most of the Diani residents and tourists were present to try out this new piece of paradise by the beach. The “modern European with a Kenyan twist food” style is just the perfect combina on with the sandy loca on. They are offering fresh, local and organic products with a sustainable thought including minimum waste and ecofriendly items. The restaurant is open to public for breakfast from 7.30am to 11am every day and for lunch and dinner from 11am to 10pm. “We wanted to have a small menu, our goal is to keep the consistency and have a good speedy service”. With their experience with the front and the back of house, they have been through all the culinary jobs, from the dishes to the cooking. Very humble, Oli and HAL said: “You are s ll learning every day and you need to adapt in this kind of work. We are really looking for training and working along with the local who may be interested in learning what we have to share with them!” One good example is the cocktail menu. A er making cocktails in most of the con nents in the world, HAL knows what he is talking about. And the list is impressive! Personally, the fresca is my favourite! Food-wise, I tried the slow cooked beef tacos (tasty and spicy shredded beef with guacamole well presented on a banana leaf), the pork belly candy (fried chunk of pork) and the original salty pepper squid! The rest of the menu is so a rac ve, from fresh sea food to meaty grills and a wide selec on of vegetarian op on, as well as reasonable prices. During your stay in Diani, don't miss out this perfect place, friendly atmosphere and great food! As they both told me: “Eat Fresh, Drink Well, Be Happy!”

Couscous Recipe

250g couscous 4 vine-ripened tomatoes Half a cucumber 1 bunch spring onions, sliced 1 bunch of fresh parsley Grated zest of a lemon 6 tbsp olive oil 2 tbsp lemon juice 1 crushed garlic clove

1. Prepare the couscous: Put the couscous into a large bowl. Pour over the boiling water or stock and stir. Cover with a plate or cling film and leave to stand for 5 mins until all the liquid has been absorbed. Separate the grains by roughing them up with a fork. 2. Finely dice the vine-ripened tomatoes and the cucumber. Slice the spring onions and finely chop the parsley, then add everything to the couscous with the grated zest of a lemon. 3. Whisk the olive oil, lemon juice and the garlic with plenty of seasoning and drizzle over the couscous. Toss well and serve with some grilled fish, meat or chicken.

The launch event took place on 6th December, in their office at Links Road, Petro City Complex- 1st floor. Among the chefs and entrepreneurs in attendance was Chef Maliha Mohammed, the recent Guinness World Record Breaker in cooking for the longest duration, as the Guest of honor. According to the Sheffield Africa MD, Dr. Suresh Kanotra, their aim with the new showroom is to bring their solutions and live product demonstrations closer to their current and potential clients in Mombasa. “We started serving the Coast Region since our incep on as one of our core markets in Kenya. Given that our solu ons are custom-made and require live demonstra on, one needs to touch the product and see it in ac on to truly realize the quality and workmanship in our cra s. Seeing the product's design in person and the product in ac on brings an en rely different perspec ve that may further impress a client,” said Mr. Suresh. “We will now be able to host live cooking, laundry and cold room demo sessions, and provide our clients at the Coast an opportunity to fully experience the innova ve concepts that they plan to incorporate in their businesses,” he added. Being a full commercial kitchen facility provider, Sheffield also serves restaurants, institution kitchens and corporate kitchens. With Caffesserie and Kokkos Café & Bistro, the Aga Khan Academy, Hare Krishna, and corporate kitchens for Mombasa Cement and Mombasa Maize Millers as part of their clientele. IT'S THE TIME OF THE YEAR AGAIN! The Kenya Kite Cup 2020 will be held from the 17th to the 19th of January at Nomad Beach Bar & Restaurant. This year again, the freestyle kitesurfing competition organised by H2O Extreme promises to be a fun and exciting weekend for everyone on the beautiful Diani's beach! For 3 days, competitors will perform freestyle movements which will be judged on their difficulty and fluidity. On Saturday evening, the famous Hawaiian dress-up party will kick off at 8pm: prize for the best costume! On Sunday, the spectators will be able to “auctioned” a downwind relay race by team. For extra entertainment of the spectators, stalls selling local craft will be on site and raffles tickets will be on sale throughout the whole weekend with amazing prizes to win!
