Mint leaves or known by the scientific name Mentha piperita is an herb that is well known throughout the world, especially since many are used for a variety of products such as breath fresheners, chewing gum, toothpaste, mouthwash and oil wind. One of the major health benefits of mint leaves is the effect on the body’s digestive system. Mint oil is a stimulant, so it may be useful in treating depression, stress and headaches. The mint leaves are also used as a condiment and decorative items that are used in a variety of culinary dishes and drinks.

A native of Naples, Florida, Drew Hedlund has been working in restaurants since his youth. “I’ve done it all,” he shares, “from working as an expediter to serving tables to working behind the scenes in the kitchen.” After graduating from Johnson and Wales University in 1999, he served as the Resident Chef of Dewees Island and as the Chef de Cuisine at the former 101 Pitt in Mt. Pleasant. Hedlund teamed up a second time with 101 Pitt’s Jim Epper at Fleet Landing just after its opening and has served as Head Chef for over 11 years. He’s an active participant in the SC Aquarium’s Sustainable Seafood Initiative and helped Fleet achieve the SSI’s Partner of the Year award in 2011. When he’s not cooking, you’ll find Drew spending time on the water with his favorite folks: his wife, Kelly, and his sons, Kiernan and ory.

Ruby Lee’s proprietor Tim Singleton is capitalizing on the successful formula of sports bar, blues music and soul food restaurant he launched on Hilton Head’s North end, with Ruby Lee’s South at 19 Dunnagan’s Alley. The decision to expand to another location came about because, “The concept has show us it’s pretty foolproof,” Singleton said. “We’ve been turning people away every night.” Reservations are strongly suggested. Singleton said he’s catering to Ruby Lee’s “diverse, sophisticated audience” with entertainment seven nights a week, featuring favorite local performers like jazz and blues saxophonist Earl Williams; Deas Guyz; Lavon Stevens; pop, soul and R&B singer/songwriter Steel and the Ear Candy Band; and blues guitarist Eric Culberson out of Savannah. Ruby Lee’s charges a $7 entertainment fee, per person, per show because, “That’s how the band gets paid,” Singleton explained. “We’re out to serve our clientele,” he said, with a private dining room for parties and functions. David Young, the chef at Ruby Lee’s South, has added to the core menu of soul food favorites with a roasted whole flounder

and whole crab entrees. What’s Ruby Lee’s key to success? “Doing the right thing by people by serving them well, and giving them a bigger bang for their buck,” Singleton said. Gourmet Chocolate Covered Strawberries Recipe by Brooke McLay
Most chocolatiers will charge you an arm and a leg for such goodness, but we’ve uncovered some secrets for making gourmet chocolate-covered strawberries right in your kitchen. Just gather together a few simple supplies, set the timer for 20 minutes and you’re just three steps away from incredible, gorgeous chocolatecovered strawberries. Ingredients 16 oz fresh whole strawberries 1 1/2 cups good quality milk, dark or white chocolate chips (9 oz) Betty Crocker™ Decor Selects candy sprinkles, nonpareils or colored sugars Directions Step 1. Wash the strawberries. Strawberries shouldn’t be washed far in advance. Washing them just before you use them guarantees maximum freshness and minimal bruising. Run each strawberry under cold water. Don’t rub the berries. Just allow a light stream of water to dribble over each strawberry for about 10 seconds. (The exception to this is if you see obvious signs of dirt. In that case, carefully rub the dirt off with a soft basting brush or clean washcloth). Place the washed strawberries on a clean paper towel. Allow to air dry completely before dipping in melted chocolate. Step 2. Melt the chocolate. Again, this might sound like a simple task, but there are a few secrets to properly melting chocolate. While a double-broiler is the safest method,

we’re going for the quickest option, which is melting the chocolate in a microwave. Use good-quality chocolate. It may not be true of everything, but when buying chocolate, you usually get what you pay for. If there’s ever been a time to splurge, it’s now. High-quality chocolate will turn your strawberries from ordinary to extraordinary. Use a microwave-safe glass bowl. Never microwave your chocolate for more than 30 seconds at a time. When following our recipes for gourmet strawberries, you’ll be melting chocolate chips for 30 seconds, then stirring them. Melting, then stirring. Melting, then stirring. Chocolate will melt before it really gets hot to the touch, so you want to warm it just enough to melt it, but not enough to cause the milk solids in the chocolate to separate. Step 3. Dip the strawberries. With clean strawberries and smooth, melted chocolate, you’re ready to start dipping! Before you begin, make sure you’ve set out a large piece of parchment paper. Parchment paper offers a completely non-stick surface, which allows the underside of your chocolate strawberries to cool with a smooth, flat surface. To dip the strawberries, pull all the leafy greens carefully into your fingers,
then submerge the red flesh of the strawberry into the chocolate. Gently swirl the strawberry around the pool of chocolate, making sure all sides are evenly coated. Lift the strawberry from the chocolate and place it carefully on the parchment paper. If you’re going gourmet, now’s the time to decorate your strawberries! Sprinkle on your favorite nonpareils,
crushed candies or sparkling sugars. Allow the strawberries to cool completely at room temperature. (Putting the strawberries in the fridge to speed up the cooling might cause the chocolate to develop spots due to the dramatic drop in temperature). Once the chocolate is hardened, eat and enjoy. Or wrap your strawberries in a pretty box, and surprise someone you love!

GETTING AROUND THE LOWCOUNTRY It’s easy to get to beautiful Beaufort County - just a short drive from I-95 or US 17. Both roads run north-south along the east coast of the United States and connect to other interstates and major highways. Driving south on US 17, exit onto US 21 at Gardens Corner and enjoy the scenic marsh views going approximately 20 miles east into the downtown Beaufort area. Driving south on I-95, take Exit 33 at Point South and connect to US 21 for a direct route into the center of Beaufort. Driving north on I-95, take Exit 8 onto US 278 toward Hilton Head Island and directly into the Bluffton area and the southern part of Beaufort County. This route connects to SC 170, across the Broad River into the city of Beaufort in the northern part of the county.
