VALUE FOR MONEY This caviar is produced from the Acipenser Transmontanus Sturgeon. The size of the grain is surprising from this species. This is the signature of Iranian craftsmen who share their know-how in Italy. Dark grey, the young caviar is characterised by a soft and firm texture, with a slight touch of iodine. Hints of fresh walnut charm the palate promising a good length.

Our 15g foie gras slices are easy to cook, easy to use and so tasty and crispy. Cooking instructions: season frozen escalopes with salt and pepper. Place the frozen slices in a pre-heated non-stick pan. Sear over a brisk heat for approximately 1 min 30 on both sides until they become lightly brown. When cooked place escalopes on absorbent kitchen paper and season again according to taste.

Australian truffles offer perfect flavour, texture, marbling and ripeness. You can now enjoy tuber melanosporum (the famous “Winter” Perigord truffles) not only in late Autumn/Winter but also in Summer. Our truffles are coming from Manjimup (Western Australia). The Manjimup region has a soft, rich soil and a cool temperate climate. It is a unique and ideal location for cultivation of world-class superior black Perigord truffles.

WAGYU - a Japanese beef cattle breed – derive from native Asian cattle. ‘WAGYU’ refers to all Japanese beef cattle, where ‘Wa’ means Japanese and ‘gyu’ means cow. This selection favored animals with more intra-muscular fat cells – ‘marbling’ – which provided a readily available energy source. Wagyu is a horned breed and the cattle are either black or red in color.

US beef is a 100% quality product in full compliance with European Union standards. Only beef produced from animals raised in accordance with the non-hormone treated cattle program.

Smoked Fish (Mojama)

The fishing tradition a quality guarantee • The origin of fishing activity in Barbate (Cádiz) lies in the deep fish trap, which date back to Phoenician times • This ancestral method is used to catch the Bluefin tuna which swim down the coast in these latitudes on their annual migration to reproduce in the Mediterranean Sea • The Bluefin tuna has the best and largest fillets for Mojama

Mojama preparation • Mojama is cured, wind dried tuna • The tuna meat from the rear of the fish is filleted into long strips, then soaked in salt and washed before being hung out to dry for at least three weeks • It can be prepared in thin slices with olive oil and chopped tomatoes or toasted almonds

Of the 2 qualities, this one is the highest. It’s coming from the central loin, and this part has a more compact structure muscle, which results in a softer and nicer texture with a less marked grain. The marbled is much less marked than the mojama PRIMERA and form concentric circles instead of parallel lines as in the case of the PRIMERA.

As per the mojama EXTRA, it comes as well from the loin. But not from the center. This will results in a marbled much marked than the premium, and a harder texture. The meat structure forms wide open parallel lines while the top quality from the center loin will form concentric circles.

A STRONG HISTORY & FAMILY HERITAGE

Juan Pedro Domecq is a family owned company. Top end food and wine is a family tradition since the first Domecq arrived in Spain in 1816. They started producing sherry and brandies, which are known worldwide. In 1860, they acquired the first stud farm of pure bred Spanish horses for the family. However, the Domecq family always had a second passion, the breeding of animals: 100% Iberico pigs. Mr Juan Pedro Domecq y Díez invented new methods on the breeding, feeding, and sanitary processes applied to his cattle, in search of his dreamt animals. THE PAMPLIE BUTTER Created in 1905, the Pamplie dairy cooperative is located in the French region of Charentes-Poitou, well-known for the high quality of its butter. Pamplie butter benefits from the prestigious Protected Designation of Origin (PDO) label, “AOP Beurre de Charentes-Poitou”. The Pamplie dairy cooperative has developed a specific making process from raw cream, which is gently processed for 2 hours in a traditional stainless steel churn. This slow and artisanal production scheme enhances the cream’s qualities, resulting in a final product renowned for its delicate taste, soft texture and hazelnut notes.

aume des Anges takes its origin in a cave suspended above the Rhône, on a cliff face overlooking the vast land of Les Roches, in Provence. Lavender, wild thyme, rosemary, juniper and more than one hundred plant species grow here.

Baume de Anges farm business started in 2002. All the essences are extracted in the Drôme (except for bergamot, which is grown and extracted in Calabria) from plants grown primarily in Provence - Drôme, Ardèche, Vaucluse and Gard. Some plants are cultivated in the tropics by selected partners.

H OW TO USE IT? 1- you have to shake it well before use. 1. Directly on the plate, spray firmly 10 to 15 cm from the plate (hot and cold dishes, salads, tarts, fruit salad, mousse, etc.) before serving. 2. When cooking, the products are sensitive to heat. Add them preferably at the end. To preserve the rich aromas, use them at temperatures below 100°C. If you use them at higher temperatures, reduce the cooking time or increase the doses.

Croquetas

The new concept of croquetas offered by Don Bocarte is based on the combination of two textures, two flavours and two colours inside the same croqueta. All croquetas are made from the finest raw materials available on the market. Texture and creaminess provided by the milk and cream from Cantabria (North Spain). Don Bocarte kept the traditional process for the preparation, finishing the croquetas by hand, which give it a homemade look.

H OW T O P L A C E Y O U R O R D E R All orders can be placed via email, fax, over the phone. Voicemail orders may be left on our answer phone after office hours. These orders will be processed on the next working day, and delivered at the next available opportunity. We require you at the time that you are placing your order to state company name, account number, name of person placing the order and item codes. The Company will NOT accept any liability for errors resulting from orders placed over the telephone.

DELI V ER IE S All goods are dispatched and delivered by our own BRC approved refrigerated transport. Deliveries are made Monday to Friday 6am to 2pm. Minimum order for free delivery is £50 to Central London and Central Birmingham,

£100 to Greater London and for outside London and outside Birmingham. The customer is responsible for providing a safe delivery area as Classic Fine Foods will NOT accept responsibility for any goods stolen or damaged after delivery. We prefer a signature at the time of delivery however if this is not available and if no contact was made within 24 hours of delivery then Classic Fine Foods may see it as proof of delivery. Title to the Goods shall remain vested in Classic Fine Foods UK Limited and shall not pass to the Buyer until the purchase price for the Goods has been paid in full and received by Classic Fine Foods UK Limited.

Credit terms are offered only to applicants which meet our criteria, and negotiated terms must be adhered to. Please ask your Sales Executive for a copy of our Credit Application. New customers will be supplied on Cash on Delivery basis only. All requests for monthly credit facilities must be made by completing an ‘Application for Credit Form’ which can be obtained on request. Deliveries are available to non-account customers, provided payment is made prior to the goods leaving our warehouse (formerly known as COD).

Every effort is made to despatch our consignments in perfect condition, however Customer Service must be informed within 24 hours of delivery on 0207 627 9666 for London office and on 0121 311 1211 for Birmingham office for claims of damage, loss, quality etc. No credit notes will be issued until the validity of the claim is established.
