10 mins prep ÂŁ1.17 per serving Serves 8-10 INGREDIENTS 1 lemon, peel the zest and cut into thin strips 6 whole cloves 1 x 75cl bottle red wine (preferably Claret) 25ml (1floz) ruby port 1 orange, thinly sliced 1) Place the zest, spices and cinnamon sticks in a saucepan and add the liquid ingredients and sugar. Heat until almost, but not quite, boiling. Remove from the heat. 2) Add slices of 1 orange and lemon, stir and let it sit to allow the flavours to infuse before straining into a jug. Add a piece of cinnamon and slice of orange or lemon to each glass and serve
CHRISTMAS CUPCAKES 25 mins prep 19p per serving Serves 12 INGREDIENTS 150g (5oz) butter, softened 150g (5oz) caster sugar 3 eggs, beaten 1tsp vanilla extract 150g (5oz) self-raising flour 400g (13oz) icing sugar edible silver balls
1) Put the butter and sugar in a bowl and beat until light and fluffy. Beat in the eggs and vanilla, adding a little flour if the mix curdles. Gently fold in the flour. 2) Divide the mix equally between 12 cupcake cases and bake for 15-18 minutes until firm and golden at gas 4, 180C, fan 160C. 3) To make the buttercream icing, place the butter in a bowl with 1-2tsp of boiling water. Add the icing sugar. Place in a piping bag with a large star nozzle and pipe the buttercream onto the cakes. Decorate with silver balls.
NOVELLI SAUSAGE MEAT & SMOKED BACON KOFTAS
15 mins prep 54p per serving Serves 12 INGREDIENTS 2tbsp extra virgin olive oil 1 small onion, finely chopped 425g (14oz) premium sausage meat zest of a lemon 150g (5oz) fresh white breadcrumbs 2tbsp chopped fresh thyme or sage 1 medium free range egg, beaten 12 rashers smoked bacon 12 wooden kebab skewers cracked black pepper (optional)
1) To a hot pan add the olive oil and the onion and fry for about 5 minutes or until softened. Remove from the pan and allow to cool. 2) In a separate bowl mix together the sausage meat, lemon zest, breadcrumbs and herbs. Add the onion and the beaten egg and mix well. 3) Lay each rasher of bacon on a board and gently stretch out with a knife to about double its original length. Divide the mix into 12 equal pieces. Press each piece around the skewer to form a sausage shape and wrap each of these with a rasher of bacon. 4) Roast for 20 minutes and season with cracked black pepper.

INGREDIENTS 8 slices streaky bacon, cut in half 430g pack turkey breasts 2 peppers 2 small red onions 2tbsp clear honey 2tbsp grain mustard 2tbsp olive oil 1tbsp chopped rosemary rice and lemon to serve 1) Take 8 small skewers. Wrap a piece of bacon around each piece of turkey.Thread 2 pieces of bacon-wrapped turkey onto each skewer, alternating with the veg. 2) Mix together the honey, mustard, oil and rosemary. Brush a little onto each kebab. 3) Grill the kebabs for 10-12 minutes, turning occasionally, until lightly charred and cooked through. Serve with rice, plus some lemon for squeezing.

Here in the West Midlands, we have some of the some of the largest student communities in the country with more than twenty universities and colleges of further and higher education. Student life opens up a whole world of opportunities and freedoms - especially for those living away from home for the very first time. With so many competing pressures, the need to balance a new and exciting social life with a demanding programme of study can be a challenge and with this in mind, personal safety is often far from the minds of newly enrolled students. West Midlands Fire Service is keen to highlight the very simple measures that students can take to stay safe, not only from fire, but when out and about on our busy roads and streets, particularly as the dark and wintry nights are now upon us. Whether you are living in halls of residence or in rented accommodation, you should make sure there is a correctly fitted, working smoke alarm on every level of the property. Smoke alarms provide a vital early warning in the event of a fire and although they might seem a pain when they go off at the mere whiff of burnt toast, think of it as a timely reminder of how quickly and easily smoke fills the room. You should also aim to have a well practised escape plan so that everyone knows what to do if the worst happens. This is particularly important at night time because in the event of fire and thick smoke logging, it will be difficult to find your way around. Simple measures you can take include: · Ensuring you know where your keys are – hang them up in an accessible location, or even leave them on a bedside table; · Clearing hallways of bags and clutter and; · Making sure that doors and windows are accessible. The majority of accidental home fires start in the kitchen and one of the most common causes is pans being left unattended on the cooker. Our Firefighters regularly attend house fires where people have returned home after a night out and started cooking, only to find it ends up going horribly wrong. Any type of food can catch fire if it is left on the heat too long, but if it’s fried food you’re craving, particularly chips, the risk is even greater. Oil burns at a much higher temperature so always ensure you use a thermostatically controlled fryer or better still, buy oven chips or get them on the way home, a viable excuse to head to the kebab shop! Candles, especially scented ones can be particularly attractive, but they too should never be left unattended. If you do use candles, place them in a strong, heat resistant holder away from flowing fabrics such as curtains and remember to blow them out before you go out. The careless disposal of cigarettes is another significant factor in many house fires we attend across the West Midlands. If you, or family and friends visiting your property smoke, always make sure cigarettes are put right out, never leave burning embers and make sure the ashtray you are using is fit for purpose and won’t melt or set on fire. There are also many dangers on the road. If cycling, ensure you have the right protective equipment, including a helmet, and check that correctly fitted lights are fixed to the front and rear of the cycle. If driving, act responsibly. Comply with the law and never use a hand-held mobile phone to take calls or text while driving. If you do choose to have a drink, make sure you ‘know your limits’, check and count your units and ensure that you and everyone travelling with you – is wearing a seatbelt.
